WHAT YOU SHOULD KNOW!

Attention: The patina has an important protective function. For this reason, play highly acidic foods only in the enameled dip bowl. They could otherwise attack the patina in the fajita pan. Do not leave the fajita pan empty on or in a cooking area. Never pour cold water on the hot material; this could crack the cast iron.

Hello patina: How to burn in your fajita pan!

Your fajita pan is pre-oiled (pre-seasoned).
In order to get the most out of your pan – in other words, to give it the best non-stick properties and solid protection against rust– seasoning is extremely important.
That’s how it works:

  • Clean the cast iron skillet with hot water and mild detergent.
  • Remove grease and production residues with a soft sponge.
  • Rinse thoroughly with hot water and wipe dry.
  • Let dry in a closed grill or oven at low heat for 20 minutes.
  • Brush carefully with a thin layer of refined cooking oil.

TIP: Neutral sunflower or rapeseed oil are good for baking.

  • Let the oil soak in for 10 minutes. Then remove surplus fat with a cotton cloth.
  • ON THE GRILL: Set the grill to the highest temperature for direct heat (infrared ceramic burner on the lowest flame). Place pan upside down (bottom up) on grid.
  • IN THE OVEN: Place pan upside down (bottom up) on oven rack. Place a baking sheet underneath to catch any dripping oil. Set the oven to 250 °C (top/ bottom heat).
  • Allow the cast iron pan to cure for 45 minutes.
  • Turn off the grill or oven and allow the pan to cool completely.
  • For an extra robust patina, repeat the steps from oiling to baking and cooling 1–2 times.

Cleaning and care

The pan, handle, dip bowl, and serving board are not dishwasher safe.
FAJITA PAN
For cleaning (apart from the first cleaning, see above), it is better not to use any dish soap so as not to affect the patina. It is sufficient to remove residue with a wooden spoon or a plastic scraper and rinse the pan with hot water.
After cleaning, dry the cast iron pan thoroughly, and rub it with suitable oil (see above) in order to burn in the protective patina again the next time you heat it up.

HANDLE AND DIP BOWL
You can rinse the handle and the dip bowl with lukewarm water and a little dish soap and wipe dry after each use.
SERVING TR AY
Clean the tray with a damp cloth and dish soap, and let it air dry upright. Rub it occasionally with neutral cooking oil.
