WOOD CHIP FEEDER

  • The wood chip feeder and wood chip tray MUST be in place when the smoker is in use. This minimizes the risk of wood flares up.
  • Wood chips are required to produce smoke and create smoke flavor.
  • Before starting to smoke, place ½ cup of chips in the chip charger. Never use more than ½ cup of wood chips at a time. Used never wood pieces or wood pellets.
  • Insert the chip feeder into the smoker. Wood chips should be level with the top edge of the wood chip feeder.
  • Turn the handle clockwise in the direction of the arrow on the smoker to add chips. Wood chips will fall on the chip tray. Turn the handle counterclockwise to the upright position and leave the chip feeder in place.
  • If wood chips do not smoke at low temperature, raise the temperature to 135 °C. After 8 to 10 minutes, or when wood chips starts to glow, lower the temperature to the desired low setting.
  • You can use dry or soaked wood chips in your smoke. Dry wood chips burn faster and produce a more intense smoke. Wood chips soaked in water (for about 30 minutes) will burn more slowly and produce a smaller one intense smoke.
  • Check the wood chip tray regularly to see how much wood is left. Add more wood chips as needed.
  • Do not leave old ash on the chip tray. When the ashes have cooled, empty the tray. Compartment should be cleaned before and after each use to remove ash and residue.

  • Keep the smoker door closed when adding wood chips. It may flare up if the door is opened. About wood chips flares up, immediately close the door and ventilate, wait for wood chips to burn down, then open the door again. Do not inject water.
  • The wood chip feeder will be HOT even if the handle is not.
  • Never use wood chips or wood pellets.

BURNING
BURNT OFF THE GRILL BEFORE FIRST USE. Some smoke may appear during this time, this is normal.

  1. Make sure the water bowl is in place WITHOUT WATER.
  2. Set temperature to 275°F (135°C) and run in smoker for 3 hours.
  3. Add 1/2 cup of chips to the chip loader during the last 45 minutes to complete the seasoning.
  4. Turn off and let cool.

PUT FOOD IN THE SMOKER

  • Preheat the smoker to the desired cooking temperature for 30 to 45 minutes before adding food.
  • DO NOT cover the grills with aluminum foil, as this will not allow the heat to circulate properly.
  • Do not overload the smoker with too much food. Very large amounts of food can absorb heat, prolong the cooking time and cause uneven cooking. Leave space between the food on the grates and the smoker sides to ensure proper heat circulation. If you use cooking vessels, place them on middle of the shelf to ensure even cooking.
  • Do not open the smoker door unless necessary. When you open doors it releases heat, can extend the cooking time and cause it to flare up. If you close the door, the temperature stabilizes new and prevents it from flaring up.
  • It will produce a lot of smoke when using wood chips. Smoke will show through seams and turn the inside of the smoke black. This is normal. To minimize smoke loss around the door, the door is barred can be adjusted to further tighten the door seal against the body.
  • Loosen the nut on the door latch to adjust it. Twist the hook clockwise to tighten as shown. Fasten the hex nut firmly against door latch (see diagram).
  • Check the grease tray frequently during cooking. Empty the grease tray beforehand it will be full. The grease tray may need to be emptied at regular intervals during cooking.

  • Fill the water bowl to the line with water or liquids such as apple or pineapple juice.
  • You can also add fruit or onion slices or fresh dried herbs to the water to add subtle flavors in your smoked food.
Tip: For chicken or other high moisture foods, little or no liquid is required.
