Introduction

We are pleased you decided in favour of this bread maker and would like to thank you for your confidence. Its easy operation and wide range of applications will certainly impress you as well. To make sure you can enjoy using this appliance for a long time, please read through carefully. and observe the following information. Keep this instruction manual safely. Hand out all documents to third persons when passing on the appliance. Thank you very much.

Intended use
The appliance is designed for preparing a variety of different types of bread, for stirring and kneading dough and for preparing jam for domestic use (in the kitchen, at table, in the office, etc.). Other uses or modifications of the appliance are not intended and pose considerable risks. For damage arising from unintended use, the manufacturer does not assume liability. The appliance is not designed for commercial use.

Only connect the appliance to an isolated ground receptacle installed according to regulations. The rated voltage must comply with the details on the rating label. Only connect to alternating current.

Scope of supply
Check the scope of supply for completeness as well as the product and all components for damage (see product description page 2) immediately after unpacking.

Packing material
Do not simply throw the packing material away but recycle it.
Deliver paper, cardboard and corrugated cardboard packing to collecting facilities.
Also put plastic packing material and foils into the intended collecting basins.

In the examples for the plastic marking:
PE stands for polyethylene, the code figure 02 for PE-HD, 04 for PE-LD, PP for polypropylene, PS for polystyrene.

Disposal/recycling
According to the Waste Electrical and Electronic Equipment Directive, do not dispose this product with your normal domestic waste at the end of its life span. Therefore, please deliver it at no charge to your appropriately licensed local collecting facilities (e.g. recycling yard) concerned with the recycling of electrical and electronic equipment. Please approach your local authorities for how to dispose of the product.

General safety advices

  • Always keep children under 8 away from the product and the power cord.
  • Children from the age of 8 must be supervised when cleaning or maintaining the appliance.
  • Children from the age of 8 and persons not having the knowledge or experience in operating the appliance or having handicaps of physical, sensorial or mental nature must not operate the appliance without supervision or instruction by a person, responsible for their safety.
  • Never leave the appliance unattended during operation.
  • Children must not play with the appliance.
  • Packing material like e. g. foil bags should be kept away from children.
  • Do not operate this unit with an external timer or a separate tele-control system.
  • Prior to each use, check the appliance and the accessory parts for perfect condition. It must not be operated if it has been dropped or shows visible damage. In these cases, the power supply must be disconnected and the appliance has to be checked by a specialist.
  • When laying the power cord, make sure that no one can get entangled or stumble over it in order to avoid that the appliance is pulled down accidentally.
  • Keep the power cord away from hot surfaces, sharp edges and mechanical forces. Check the power cord regularly for damage and deteriorations. Damaged or entangled cords increase the risk of an electric shock.
  • Do not misuse the power cord for unplugging the appliance!
  • Never immerse the appliance, power cord and power plug in water for cleaning.
  • Do not store the appliance outside or in wet rooms.
  • This electrical appliance complies with the relevant safety standards. In case of signs of damage to the appliance or the power cord, unplug the appliance immediately. Repairs may be carried out by Authorised specialist shops only. Improper repairs may result in considerable dangers for the user.
  • Improper use and disregard of the instruction manual void all warranty claims.

Safety advices for using the appliance

WARNING: Hazard of injury and burns!

  • The surfaces of the appliance, the housing lid, ingredients container, baking pan and kneader are getting hot during operation!
  • Hot surfaces as well as the contents of the baking pan firstly stay hot after switch-off!
  • When opening the housing lid, hot steam may escape!

Thus, act with caution!

  • We recommend to use heat-proof potholders for protection when removing the baking pan!
  • Do not use the appliance’s upper side as depositing rack or working top, as it will get hot when operating the appliance! As protection against fi re, do generally not put objects made of paper, plastic, fabric or other infl ammable material on hot surfaces!
  • Do not cover or line the baking pan and the heating elements with aluminium foil!
  • Do only operate the appliance with closed housing lid and never without the inserted ingredients container!
  • Only use the original baking pan respectively original kneader!
  • During operation, do not handle with objects in the baking pan (except in stirring pauses by using a silicone spatula for example) and never reach into the running kneader. To avoid injuries, it is imperative to keep away your hair, hands and clothes from the running appliance.
  • Observe the following when setting up the appliance:
    • Place the appliance on a heat-resistant, stable and even surface (no varnished surfaces, no table cloths, etc.) and do not operate it in the vicinity of sources of heat (oven, gas flame etc.) or in explosive environments, where inflammable liquids or gases are located.
    • Keep a distance of at least 10 cm to all sides and 60 cm above the appliance to avoid damage by heat or steam and to grant an unobstructed work area!
    • Make sure that there is no furniture sensitive to heat or moisture above the appliance.
    • Make sure heat/steam can escape easily!
  • Appliance and accessory parts must have cooled completely before cleaning or moving them!
  • Switch off the appliance and disconnect it from the power supply before replacing accessory or accessory parts which are moving during operation.
  • Do not operate or store the appliance outdoors or in wet rooms.
  • Never immerse the appliance, power cord and power plug in water for cleaning!
  • Always disconnect the appliance from the power socket if it is not supervised as well as before cleaning and in case of non-use!
  • Store the appliance and accessory parts beyond children’s reach.
  • Pull the power plug after each use for safe switch-off.

Equipment features

Programme selection
This bread maker is perfect to make homemade bread from individual recipes. Decide for the ingredients of your bread yourself, very natural and without additives and preservatives. There is a total of 12 programmes plus 1 programme which is freely adjustable. You can decide for the degree of browning and also for the size of your bread (big/small).

Ingredients container
You can programme the ingredients container with the touch of a button – nuts, seeds and other ingredients are added automatically and at the right time.
Note: not all programmes are equipped with this feature.

Operating buttons
Selecting programmes as well as their settings are made via smooth-running pushbuttons. Every time a button is pressed, this will be confirmed with a beep.

Keep-warm function
At the end of the selected programme the appliance automatically switches to the keep-warm function for 60 minutes.
Note: not all programmes are equipped with this feature.

Start time pre-selection
The appliance is equipped with a start time pre-selection up to 13 hours. Thus baking mixtures can already be prepared hours in advance and finished at the right time.
Note: not all programmes are equipped with the start time pre-selection.

ATTENTION: We do not recommend using the start time pre-selection, if easily perishable ingredients (e. g. milk, eggs, etc.) shall be processed.

Non-stick coating of the baking pan
The inner side of the removable baking pan is equipped with a high quality non-stick coating, which is particularly easy to clean and prevents baking or cooking ingredients from sticking onto the surface. Cleaning the baking pan in the dishwasher is not recommended.

ATTENTION: Do not cut or scratch on the surface of the baking pan. Scratched protective coating is not covered by the terms of warranty.

Memory-function
The appliance is equipped with a memory function in case of power failure. If the power supply is briefly interrupted during operation, the appliance is automatically restarted within 10 minutes without pressing the “Start/Stop” button once again.

Prior to initial use

  • For a start, please clean the inside and outside of the appliance as well as the baking pan, kneader, ingredients container and accessory parts. For further information please refer to chapter “Cleaning and care”.

  • Prior to initial use of the appliance, please start the programme “8 – baking” with a time setting of 10 minutes in order to burn-in the protective coating of the heating element.
    Note: Please do not be bothered by the slight, harmless smoke and smell that will occur for a short while. While doing so, make sure that the room is well-aerated. Prevent bad smell to draught into other rooms.

  • After the appliance has cooled down, please clean the interior with a moist cloth.

Assembly of the appliance

  • Prior to assembly of the appliance, always pull the power plug!
  • Open the housing lid. Please use the small grips on the right and left side of the lid. Fit the baking pan slightly sloping (see picture) on the motor drive inside of the appliance.
  • Turn the baking pan clockwise until the stop. Pay attention to the correct position of the baking pan.
  • Fit the kneader on the shaft of the motor drive. Make sure that the flattened side of shaft and kneader are matching.

  • Check the kneader for the correct position. Close the housing lid. To do so, use the small grips on the right and left side of the lid.
  • Fit the ingredients container slightly sloping on the left side. Make sure that the lug of the ingredients container is positioned below the appropriate bar at the housing lid.
  • Press the ingredients container down at the right side, until the container snaps in.
  • Open the housing lid and check if the fl ap of the ingredients container is closed. If necessary, let the fl ap snap in.
    Note: Make sure that the fl ap of the ingredients container is always closed before operation.

Disassembly of the appliance

Warning: hazard of injury and burns!
Appliance and accessory parts have to cool-down completely before disassembling the appliance!

  • Prior to disassembly of the appliance, always pull the power plug!
  • Note: If the kneader is difficult to remove, we recommend to fill the baking pan with some lukewarm water and let it soak (also refer to chapter “Cleaning and care”).
  • Pull the kneader off the shaft (upwards) and remove it from the baking pan.
  • Turn the baking pan counter-clockwise until the stop.

  • Remove the baking pan (upwards) from the interior by means of the foldable bow handle.
  • To remove the ingredients container, press the release button on the right side.
  • Lift the ingredients container sideways and remove it upwards.

Initial operation of the appliance

WARNING: Hazard of injury and burns!!

  • The surfaces of the appliance, housing lid, ingredients container, baking pan and kneader are getting hot during operation!
  • Hot surfaces as well as the contents of the baking pan firstly stay hot after switch-off!
  • When opening the housing lid hot steam may escape!\

Assembly of the appliance!

  • Follow the instructions according to ”Assembly of the appliance“.

Connect the appliance to the power supply

  •  Insert the power cord to a socket. A signal tone sounds. Programme „1“ is displayed. (Standard values: „weight: 900 gr – browning: medium – time: 03:00“).
  • The display lights up, the appliance is ready for operation.

Fill the baking pan

  • Prepare all ingredients that you need for processing.
  • Pay attention to the ratio between liquid and dry ingredients.
  • Open the housing lid. To do so, use the small grips on the right and left side of the lid.
  • Fill the baking pan in the following order:
    1. liquid ingredients (up to approx. 350 ml)
    2. dry ingredients like flour, baking mixture, etc. (up to approx. 500 g)
    3. further ingredients like yeast, baking soda, baking-powder (up to approx. 10 g)
  • Close the housing lid after filling the baking pan. To do so, use the small grips on the right and left side of the lid.
    Warning: With a too big quantity, the dough may overflow and burn on at the baking pan or heating element!

Fill the ingredients container

  • The function of the ingredients container is activated by default. This is shown on the display by „ “.

  •  If you do not need the function, press the button “Extra” for de-activation.
    The de-activation of the function is shown on the display with “ “. Pressing the “Extra” button once again re-activates the function.

  • Important: Before filling the ingredients container, check whether the fl ap of the container is closed!

  • Fill in the ingredients (no liquids and not more than 2/3 of the filling quantity of the container).

  • Close the lid of the ingredients container.

  • Note: not all programmes are equipped with this function.

Selecting a programme

  • Select the desired programme with the button “Programm“ The selection is shown on the display.

Selecting a bread size

  • Select the desired bread size (700 gr / 900 gr) with the button “weight“. Any 700 g bread can also be baked in the 900 g mode; in this case the dough gets kneaded more intensely and the browning will be slightly darker. The selection is shown on the display.
    Note: not all programmes are equipped with this function.

Selecting a degree of browning

  • Select the desired degree of browning (light / medium / dark) with the button “browning“. The selection is shown on the display.
    Note: not all programmes are equipped with this function.

Starting / pausing / ending a programme

Start Stop

Starting

  • In order to start the appliance, press the button „Start/Stop“.
    The appliance starts operating, in the display the colon of the time display is blinking. Furthermore the individual phases of the programme run are shown in the display. The time display of the selected programme runs backwards in the “count-down”-mode.

Pausing

  • * The appliance can be stopped for pausing. For this purpose, press the button „Start/Stopp“. The display shows a flashing time value. In order to continue the programme, press the button “Start/Stopp“ once again.  

    Note: if within 10 minutes no other button is pressed, the operation is continued automatically

Ending

  • Upon termination of the preparation, a 10-time signal tone sounds.

  • The appliance automatically starts the keep warm function for 60 minutes.

  • Once the keep warm time has elapsed, the appliance stops operating.
    This is announced by a multiple signal tone.

  • On the display the runtime “0:00” is shown, the colon in the middle of the time setting is blinking.

  • in case the keep warm function is not desired, follow the instructions of point “Ending the programme prematurely”.
    Note: not all programmes are equipped with the keep warm function.

Remove finished bread/foods from the baking pan

  • Open the housing lid by pushing the two small grips on the right and left side of the lid.
  • Important: Please use heat resistant potholders for removing the baking pan.
  • Turn the baking pan slightly to the left and remove it from the inside of the appliance by using the foldable bow handle (for further information please see chapter „Disassembly of the appliance“).
  • Dump the bread out of the baking pan and let it cool down on a cake rack.
  • If the kneader does not come off the bread automatically, pull out the kneader carefully with the enclosed hook.

Individual programme

  • Programme “13“ is intended for your individual programming. You can set all phases of the programme sequence according to your desires.
  • Select the programme “13” by pressing the button “Programm“ several times. The selection is shown on the display.

Programming the sequence “kneading 1“

Press the button for parameter setting (8).
By pressing the button for start time pre-selection (3), the requested time can be set (time setting from 0 min. to 40 min. possible).

Programming the sequence “rising 1“

Press the button for parameter setting (8).
By pressing the button for start time pre-selection (3), the requested time can be set (time setting from 0 min. to 90 min. possible).\

Programming the sequence “kneading 2“

Press the button for parameter setting (8).
By pressing the button for start time pre-selection (3), the requested time can be set (time setting from 0 min. to 40 min. possible).

Programming the sequence “rising 2“

Press the button for parameter setting (8).
By pressing the button for start time pre-selection (3), the requested time can be set (time setting from 0 min. to 90 min. possible).

Programming the sequence “rising 3“

Press the button for parameter setting (8).
By pressing the button for start time pre-selection (3), the requested time can be set (time setting from 0 min. to 60 min. possible).

Start Stop

For confirmation of the settings, press the button “Start/Stop” now. The settings are saved permanently now. Your individual setting is also kept if the appliance is disconnected from the power socket.

Start time pre-selection

  • Fill the appliance with the desired ingredients and select all settings (programme / weight / degree of browning / ingredients container (active / inactive)).

  • For setting the time for the start time pre-selection, press the button “Zeit“ (time). By pressing the button again, you can adapt the time in a 10-minutes-rhythm. By continuously pressing the button “time”, the time is adapted in an accelerated 10-minutes rhythm. The selection is shown in the display.

  • When the desired time setting is reached, press the button “Start/Stop” for activating the function. Now the selected program is shown in the display, the colon in the time
    display is blinking.

  • Example: It is 8.30 p.m., the bread shall be fi nished at 7 a.m. next day, in other words in 10:30 hours.

  • Select “10:30” as time setting.

  • Note: not all programmes are equipped with the start time pre-selection.

  • Note: We do not recommend using the start time pre-selection if highly perishable ingredients (e. g. milk, eggs, etc.) shall be processed.

Quick start button for programme 8 “baking“

  • Press the respective button to get to programme “8” directly.
  • For setting the desired baking time, press button 3 “Time setting”. By pressing the button again you can adapt the time in 10-minute intervals.

Quick start button for programme 11 “stirring dough“

  • Press the respective button to get to programme ”11“ directly.

  • Pull the power plug after each use for a permanent and safe switch-off.

Cleaning and care

WARNING: Hazard of injury or burns!

  • Always unplug the appliance before cleaning!

  • Never immerse base unit, power plug and power cord in water or clean them under running water!

  •  Prior to cleaning let cool down the appliance and all accessory parts!

  • We recommend to clean the baking pan and the kneader by hand, as the non-stick coating might get damaged by the salts of the cleaning agents in the dishwasher.

  •  The ingredients container is not dishwasher safe.

  • Clean appliance and accessory parts immediately after use so that residues will not dry on.

  • Remove all detachable parts from lid and base unit.

  • Clean the base unit inside and outside with a damp cloth and dry it afterwards.

  •  Clean all accessory parts in hot water with some detergent and dry them thoroughly.

  •  If the kneader is difficult to remove from the baking pan, we recommend to fill the baking pan with
    some lukewarm water and let it soak. Do not remove the kneader by force or with a tool.

  •  For cleaning coarse soilings, use a common household cleaning brush with soft bristles.

  •  Before reassembly and re-use, all accessory parts have to be completely dry.

  • Under no circumstances use steel wool, scrubbing pads, abrasives, solvents or oven cleaners!

  • Never clean the appliance with a steam cleaner!

Error codes

  • Wait for 15-20 minutes until the appliance has reached a room temperature between 15 °C and 34 °C.

“Err“ when starting a programme.| Temperature sensor does not work properly.|

  •  Pull the power plug and do not operate the appliance any more.
  • Contact your customer service.

Troubleshooting

  • The functioning of the appliance is designed for a room temperature of 15 °C to 34 °C.
  • Different temperatures may have influence on the baking result.
Problem Cause Solution

Smoke is coming out of the ventilations slots on the upper part of the housing lid during baking.| If the quantity is too big, the dough can overflow and burn-in on the baking pan or at the heating element!|

  • Pull the power plug.
  • Open the housing lid and let the appliance cool down for 15 – 20 minutes.
  • Clean the baking pan and the heating element.

The bottom crust of the bread is too thick.| You have kept the bread warm in the baking pan too long, thus it has lost too much moisture.|

  • Take the bread out without using the keep-warm function.

It is very difficult to remove the kneader.| The kneader sticks firmly on the shaft of the motor drive and cannot be removed.|

  • Fill the pan with lukewarm water and let it soak together with the kneader
  • Tip: Apply a drop of oil to the shaft before placing the kneader in the baking pan.

The ingredients are not stirred evenly and do bake badly.| 1. The selected programme menu is not suitable.

2. After operation you have opened the lid several times and the bread is dry, without brown crust colour.

3. The stirring resistance is too large so that the kneader almost can’t rotate and therefore can’t stir adequately.

  • Select the suitable programme.
  • Do not open the lid after the dough has risen for the last time.
  • Take the dough off the baking pan and let the appliance run without load; if the kneader does not rotate properly, please contact your customer service.

You can hear the motor noise, but the dough is not stirred.| The baking pan has not been fixed properly or the kneader has not been inserted.

Maybe the quantity of dough is too big to be stirred.

  • Reduce the quantity of ingredients accordingly.

2. The yeast gets in contact with the liquid too early.

3. Excessive liquid makes the dough too wet and soft.

  • Adjust the quantity of the ingredients accordingly.
  • Make sure the yeast does not get in contact with the liquid immediately.
  • Use water with lower temperature (20 °C – 25 °C).

The bread is very heavy and the bread structure is too dense.| 1. Too much flour or too little water.

2. Too many fruit ingredients or too much wholegrain flour.

3. Too little yeast used.

4. Rising time too short.

  • Reduce the proportion of flour and increase water.
  • Reduce the proportion of corresponding ingredients and increase yeast.

The middle part is hollow after cutting the bread.| 1. Excessive water or yeast

  • Adjust quantity of ingredients accordingly.
  • Check the water temperature.

Dry powder is sticking on the surface of the bread.| 1. There are strongly glutinous ingredients in the bread such as butter.

2. The dough has not been stirred sufficiently because of lacking water.

  • Do not add strongly glutinous ingredients to the bread.
  • Check the proportion of water and the mechanical construction of the bread maker.

Interesting facts about flour

In Germany, it is common to determine the type of flour according to a specific type number. The type number indicates the proportion of minerals (shell parts of the grain) in mg per 100 g of flour, which means that the common all-purpose flour – German type 405 – has very little mineral nutrients / shell components, whilst type 1700 has very much of them.
Besides to the traditional bread with wheat flour Type 405, also the combination of different types of flour, e.g. wheat flour type 505 with flour type 1050 and rye flour Type 1150 (plus yeast, plus spices) is very popular.

Wheat flour

  • Type 405: Whitest flour. Best bonding properties. Perfect for fine cakes and fine pastries.
  • Type 550: Somewhat darker. Used for buns and white bread.
  • Type 812: Even darker. Ideal flour for white and dark mixed breads.
  • Type 1050: Dark flour with a strong original taste. Lots of dietary fibres. Bread flour for
  • whole grain pastries/whole grain bread.
  • Type 1700: bruised gain of wheat, dark, strong. For whole grain bread.

Recipes

With the following recipes we would like to give you some ideas and suggestions. Of course, you can also revert to the suggestions in commercial cookbooks or to the recommendations of the manufacturer of bread mixes or create your own recipes. The ingredients are each intended for 700 g or 900 g – but you can also adapt the quantities and the composition to your own needs and personal taste. However, please observe the mixing ratio between dry and wet ingredients. Have fun and enjoy your homemade baked goods!

Notes:

  • Let the bread rest for 1 h before slicing.
  • Please observe the instructions and the sequence as stated on page 29 when filling the baking pan.
  • In case the water temperature is quite high (about 35 °C), the yeast might already start rising during the kneading process. This may form a big air bubble inside the bread. During baking, this bubble could collapse and form an unaesthetic crater on top. Therefore, we recommend using water with room temperature or lukewarm water (20 ° C – 25 ° C).
  • If you use the pause function (button for start/pause/stop) during preparation, you can use a silicone spatula in order to take off flour nests or pieces of dough sticking at the edges of the baking pan and add them to the dough.

Tip: Add some bread spices of your choice by means of the ingredients container.

# 2 “Kurz“ (short) Browning: medium dark or dark| Quick breakfast bread

200 ml lukewarm water              2 tsp. melted butter 150 g wheat flour type 405         ½ tsp salt

150 g rye flour type 1150                1 tbsp. honey

½ pack dry yeast

 | Tip: For a hearty alternative use ½ tsp. of sugar instead of honey.

Fill the ingredients container loosely with chopped onions and small pieces of ham.

# 3 “Weißbrot“ (white bread) Weight: 700 g Browning: dark| Classic white bread

150 ml water                                  450 g wheat flour type 405 1 tsp. sugar

150 ml milk                                    ½ pack dry yeast

40 g melted butter                         1 tbsp. salt

 | Tip: Breads made of wheat flour become voluminous, so don’t use more than a total of about 750 g of ingredients. Butter can be replaced by margarine or by a vegan alternative.

For even more browning choose the 900 g mode.

# 4 “Schnell” (quick) Browning: dark| Zucchini-spelt-bread

350 ml buttermilk                           1 tbsp. salt

# 10 “Konfitüre” (jam)

| Berry jam

100 ml apple juice                       400 g coarsely pureed currants 400 g coarsely pureed blackberries 500 g preserving sugar (2:1)

Tip: For a less sour alternative you can use raspberries instead of redcurrants. Attention: The expiration date is about 2 weeks.

# 11 “Teig rühren” (stiring dough)| Mixing of ingredients for all kinds of doughs and desserts

Tip: There is no heating during this programme.

# 12 “Glutenfrei” (gluten-free) Weight: 700 g Browning: dark| Protein bread

250 g curd                                   75 g grounded flaxseeds 4 eggs (size M)

Tip: Let the bread rest for about 2-4 h before slicing. Best stored in the refrigerator. Preparing double the quantity is an alternative. In this case let the bread still rest for around 2-4 h after the keeping-warm time.
