INTRODUCTION
Dear Customer,
Thank you for purchasing our product, the Salente Cuco ll /Ario II/ Friteo II
multifunctional pot, which will save you time and money. Cuco II is the name
for a multifunctional pot without fryer, Ario II is the name for a
multifunctional pot with fryer, Friteo II is the name for a separate lid with
fryer.
Our products help you cook delicious meals. However, before you begin, it is
very important that you read this entire manual and make sure that you are
thoroughly familiar with the operation and safety precautions of this
appliance.
Team Salente
Customers who purchase the Cuco ll cannot use the preset functions of the hot
air fryer. These functions are only available with the Friteo ll lid.
IMPORTANT SAFETY PRECAUTIONS

Read all instructions carefully to avoid injury.

This appliance is not intended for use by persons with impaired physical, sensory or mental abilities or persons lacking experience and knowledge, unless they are under the supervision of a responsible person or have been properly instructed in the use of the appliance. Do not leave it unattended with children or pets. Keep the appliance and cable out of the reach of children. Anyone who has not fully read and understood all operating and safety instructions contained in this manual is not authorized to operate or clean this appliance.

ALWAYS PLACE THE CONSUMER ON A LEVEL, HEAT RESISTANT SURFACE, it is only intended for use on a solid surface, such as a kitchen counter. DO NOT recommend operation on unstable surfaces. Do not place it on hot gas or electric burners or in a heated oven. Do not use it in a confined space or under hanging lockers. Adequate space and ventilation must be provided to prevent damage to property caused by steam released during operation. Never use the appliance near flammable materials such as dish towels, paper towels, curtains or paper plates.

Do not let the power cord hang over the edge of a table or counter and do not touch hot surfaces.

The short length of the power cord is chosen to reduce the risk of it being grabbed by children, to reduce the risk of getting tangled in the cord or tripping over a longer cord.

NEVER OPEN THE PRESSURE CAP BY FORCE. Never attempt to open the lid during pressure cooking. Any pressure in the appliance can be dangerous. Do not open the appliance until all internal pressure has been released from the inner vessel. If the lid is difficult to open, it means the appliance is still under pressure do not force it open.
Once the pressure is released, open the pressure cover as instructed. Always open the lid away from the face and body to avoid being burned by the hot steam. -
The lid should rotate freely and any resistance means the lid is misplaced or under pressure.

Always connect the cable to the appliance first and then plug the cable into the socket. To unplug the appliance, press the CANCEL button before unplugging the appliance from the socket.

This appliance cooks under pressure. Scalding may occur if used incorrectly.
Before starting operation, make sure that the pressure cap is properly closed and that the release valve is free of debris. -
Extra care must be taken when carrying the appliance with hot oil or other hot liquids. RECOMMENDED: DO NOT lift OR move the CONTAINER if it is under pressure or if the contents are hot. Use the included scoop to remove the contents from the inner container.

Always check the pressure relief devices for blockages before use.

ATTENTION, HOT SURFACES: Extreme heat and steam are generated when using this appliance. Do not touch hot surfaces. Use handles or knobs. To avoid injury, do not touch hot surfaces or the pressure relief valve on the lid during operation. Appropriate precautions must be taken to prevent the risk of personal injury, fire and property damage.

DO NOT use this appliance for any purpose other than its intended use.

NEVER use the lid handle to lift or move the cooker. When lifting or moving the unit, use only the black handles located on the side of the unit base.

NEVER fill the container above the maximum fill level of the inner container (FULL CUP). Overfilling can lead to blockage of the release valve, which can cause excessive pressure to build up.

WARNING: To reduce the risk of electric shock, cook only in the supplied removable inner container.

Certain foods such as rice, beans, applesauce, cranberries, barley, oatmeal or other cereals, split peas, noodles, macaroni, rhubarb and spaghetti expand and foam when cooked, so special cooking instructions must be followed. Pay special attention to the amount of fluids. DO NOT fill the inner container more than half full when cooking these foods.

DO NOT fill the appliance above the maximum fill level at 2/3 full. When cooking foods that expand during cooking, such as rice or dried vegetables, do not fill the appliance 1/2 full above the recommended level. Overfilling can cause a risk of blockage of the pressure relief valve and excessive pressure (see recipe).

Use of accessories not recommended by the appliance manufacturer may cause injury.

To ensure that the appliance can be unplugged quickly, NEVER plug the app liance into an outlet located under the kitchen counter.

WARNING: Spilled food can cause serious burns. Keep the appliance and cable out of the reach of children. Never leave part of the cord hanging over the edge of the kitchen cabinet and do not use an extension cord.

DO NOT use the appliance outdoors.

DO NOT turn on the appliance if the cable, socket or appliance is damaged. If the appliance starts to fail during use, immediately disconnect the cord from the socket. Do not use or attempt to repair a malfunctioning appliance. Contact Customer Service (contact information can be found at the end of this manual.

To avoid the risk of explosion and injury, only replace the rubber seals (dynamic sealing ring) as recommended by the manufacturer.

Unplug the appliance when not in use. Allow the appliance to cool for approximately 30 minutes before handling, cleaning or storing.

NEVER IMMERSE THE APPLIANCE OR CABLE IN WATER. If the appliance falls or is accidentally immersed in water, unplug it immediately. Do not touch the water when the appliance is plugged in and immersed in water. Do not immerse or rinse the cord or plug of the appliance in water or other liquids.

DO NOT place the appliance on a hot hob as this could cause fire or damage to the appliance or hob and home.

To prevent electric shock, DO NOT pour any liquids on the control panel of the appliance containing electrical components.

Replace the damaged power cord with a new one to avoid dange r.

Keep the power cord away from hot surfaces. DO NOT plug in the power cord or operate the unit controls with wet hands.

NEVER connect this appliance to an external time switch or separate remote control system.

This appliance may not work properly if the mains is overloaded with other appliances. This appliance should only be plugged into a 230V mains supply.

The appliance must not be operated by children, even under adult supervision.
Injury due to temperature, escaping steam or electric shock could occur.
Overheating protection
In the event of a failure of the internal temperature control system, the
overheating protection system will be activated and the appliance will not
operate.
In this case, disconnect the power cable. Allow the appliance to cool
completely before restarting or storing.
Automatic shutdown
The appliance has a built-in shut-off device that automatically shuts off the
appliance when the cooking timer reaches the set time. You can always switch
off the appliance manually by pressing the CANCEL button.
Electromagnetic fields
This appliance complies with all standards relating to electromagnetic fields.
When properly handled and in accordance with the instructions in this manual,
the appliance is safe based on all available standards and measures.
ATTENTION: Connecting the power cable
– Always connect the power cord to the appliance first before plugging it into
the socket. Plug it into a 230V socket with no other appliances in the same
socket.
Plugging other appliances into the outlet will cause the circuit to overload.
If the network is overloaded with other appliances, the appliance may not work
properly.

COMMENT: Do not tilt the lid when inserting or removing it. Lift or lower the lid straight up or down to make sure that the contact on the lid has made contact with the contact on the main part of the appliance.

OTHER ACCESSORIES
COOKING IN THE PRESSURE
Before using for the first time, remove the parts and accessories from the packaging and make sure that all parts described in the manual are included. Only then dispose of all packaging materials.
Do a test boil with water only to make sure the appliance is working properly.
- Place the appliance on a clean, flat surface.
- Attach the condensate collector to the side of the main part of the spotter by inserting it into the grooves (see Figure B).
- Insert the inner container into the main part of the appliance and fill it with water, no more than the MAX mark on the inner container.
- Connect the power cord to the main part of the appliance and then to a power outlet. The appliance is automatically switched on when plugged into the mains.
- Fit the pressure cover to the main part of the appliance. Rotate the pressure cover counterclockwise by about 30° and back again until the lock mark on the cover is in a vertical line with the mark on the main part (see figure).
- Once the pressure cooker lid is fitted, select the Pressure button on the panel and select the Beef program with the rotary knob. Confirm this program by pressing the rotary pushbutton twice. The LCD display turns orange and turns red when the desired pressure level is reached. !!! DO NOT ATTEMPT TO OPEN THE LID IF THE LCD DISPLAY IS ORANGE OR RED.
- When the programme is finished, the appliance will beep and the time 00:00 will be displayed. Press the CANCEL button and then press the button to release the pressure (see figure). Allow all pressure to escape from the appliance and open and remove the pressure cover. !!! When operating the release valve, stay away from the release valve area to avoid exposure to steam.
WARNING: DO NOT LIFT THE APPLIANCE TO OPEN THE PRESSURE LID.
COMMENT: Do not use metal utensils in the inner pot.
WARNING: AVOID BURNS! DO NOT TOUCH THE STAINLESS STEEL OUTER SURFACE.
USE ONLY THE BLACK HANDLE ON THE LID TO OPEN. THE CONTENTS OF THE UNIT ARE
HOT. ALWAYS OPEN THE LID AWAY FROM THE FACE AND BODY.
For cooking mode PRESSURE a CANNING three pressure levels can be selected
using the rotary knob. Low, medium and high pressure, these are then displayed
on the LCD by the indicators LOW, MED and HIGH.

SOUS VIDE
In traditional cooking methods, the heat is transferred from the hot burner or
oven to the pan and then to the food, which is heated from the outside to the
centre. With guesswork and a little luck, you can sometimes get good results,
but the food is often overcooked on the surface and sometimes undercooked
towards the middle. The heat generated by the pan or air inside the oven is
usually much hotter than it needs to be. If you don’t remove the food at
exactly the right time, the results will be inconsistent.
Sous vide cooking uses precise temperature control to achieve results that
cannot be achieved with any other cooking technique.
SOUS VIDE COOKING PROCEDURE
- Place the flavoured food in a resealable bag.
- Remove the air from the bag before closing it. For better results you can use a vacuum packer.
- Pour water into the inner pot so that the MAX limit of the inner pot is not exceeded.
- Press the Sous Vide button and use the rotary knob to select the desired preset cooking programme and confirm the programme by pressing the rotary knob. To change the cooking temperature or time, press before confirming the program Press the Temp or Time button and then confirm the selection by pressing the rotary knob.
- Press the rotary knob to start the cooking programme. The LCD display will turn orange. Once the desired temperature is reached, the appliance will beep and the timer will start counting down.
- Carefully place the food bag in the water. Be careful not to drop the bag into the water.
- When the timer expires, remove the sealed food bag with tongs. Do not use your hands as the water will be hot. Do not press the Keep Warm button.

SOUS VIDE TIPS
COMMENT: Do not put food in water without putting it in a resealable
bag.
- You can add spices to the food and coat it before bagging it.
- When cooking, always use vacuum-sealable, BPA-free or quick-closure bags.
- The thickness of the meat, poultry or fish determines the cooking time. After removing the food from the bag, use a food thermometer to ensure that a safe temperature has been reached.
- If you are unsure of the doneness, add 30 minutes to the cooking time for safety and hygiene reasons (for example, to pasteurise eggs or poultry).
- Make sure that the sealed food bag is submerged at all times to fully cook the food. Attach a weight suitable for food preparation or sous vide (not included) to the food bag.
- Frying after cooking gives the food a finished look and texture. To do this, throw butter into a hot pan and quickly sear the cooked meat for 30 seconds on each side.

SLOW COOKING
Slow cooking is realized without pressure. You can select one of the preset programmes for cooking, where you can change the cooking time and temperature. You can also use the CUSTOM program with time and temperature settings of your choice.

HOT AIR FRYER
Customers who buy a Cuco ll cannot use the hot air fryer function. These functions are only available with the Friteo ll lid.
COMMENT: Do not tilt or angle the lid when inserting or removing it. Lift or lower the lid straight up or down to make sure that the electrical contacts in the lid and on the main part of the appliance have made contact.
- Place the appliance on a clean, flat surface.
- Insert the inner container into the main part of the appliance. Place the stand in the inner container.
- Put on the frying lid. The frying lid does not lock, as is the case with the pressure lid.
- Connect the power cord to the main part of the appliance and then plug the cord into a power outlet.
- Switch to the Air Fryer programme. When a program is selected, the LCD display turns blue. The Air Fryer programme will not work if the pressure cooker lid is fitted on the appliance.
- Use the rotary pushbutton to select one of the following slots and confirm by pressing the rotary pushbutton.
- For each selected program, you can additionally change the time and temperature using the Time and Temp buttons. Press the rotary knob to confirm the selected programme, time and temperature.
- When the cooking cycle is complete, a rotating icon appears on the red LCD display for 2 minutes while the fan cools the air fryer lid.
- When the program and cooling are finished, the fan stops running. Remove the fryer lid. This will be hot, so place it next to the main part of the appliance with the heating element facing upwards.

CANNING
Cooking allows you to prepare and preserve your favourite foods, including fruits, jams, jellies, vegetables and even meat. Canning is a great way to get out-of-season food on the table in an economical way. Canning allows you to eat healthy, continue a family recipe or simply save money.
WHY PRESSURE CANNING
WHY COOK UNDER PRESSURE?
Pressure canning can be used for all foods, especially those that are low in
acid, such as vegetables, meat and seafood. We recommend choosing the exact
time, temperature and method specified in the manual to protect the food from
harmful bacteria, moulds and/or enzymes. Food enzymes can promote the growth
of moulds and yeasts, which then cause spoilage of food. These substances can
be destroyed by reaching a temperature of 212 °C during steam preservation.
However, other contaminants such as salmonella, golden staphylococcus and
clostridium botulinum, which causes botulism, can occur. A temperature of 240
°C is required to kill these harmful bacteria, which is only ensured during
the pressure canning process.
For cooking mode Pressure a Canning three pressure levels can be selected
using the rotary knob. Low, medium and high pressure, these are then displayed
on the LCD by the indicators LOW, MED and HIGH

CANNING PROCEDURE
- Insert the inner container into the main part of the appliance. Place a wire rack (can be sold separately) on the bottom of the inner pot. Insert filled and sealed jars.
- Pour hot water into the inner container with the jars until the water level reaches a quarter of the height of the walls of the jars. However, the water may be filled up to the maximum level marked on the inner container.
- Follow the relevant instructions in this manual to fit the pressure cap to the main part of the appliance. Plug the appliance into a socket.
- Press the Canning button. The pressure is automatically set to 80 kPa. Select the cooking time listed in the table above.
- When you have finished canning, press the steam release switch to release the pressure.
JOGURT

Insert the inner container into the base.

Pour 2 litres of whole or 2% milk into the inner pot.
-
Press the Yogurt button. The LCD display will show “7:00”. Press the rotary button. To change the time, press the Time button and use the rotary pushbutton to select the desired time and press the rotary pushbutton again. “HEAt” will appear on the display, indicating that the milk is heating up.

Once the appliance reaches 82 °C, it stops heating and “Cool” is displayed on the LCD.

When the milk temperature reaches 43° C, the appliance beeps and the LCD display shows “Add”. This sign calls for the addition of a yoghurt starter. Using a ladle or measuring cup, remove 1 cup of milk from the inner pot. Mix 1 cup of milk with 2 tablespoons of yogurt or yogurt starter. Then return the milk mixture to the inner pot with the remaining warmed milk and stir gently.

Press the Yogurt button again. Use the rotary knob to select between the default preset times. Press the dial to confirm the time.
COMMENT: If you do not press the Yogurt button, the appliance will beep continuously and after a while switch to standby mode. -
Put the glass lid on the appliance.
-
Leave the appliance undisturbed and let the yogurt incubate for 4-10 hours.
-
After incubation, remove the yoghurt and store in a container in the refrigerator.
TIPS
– Incubation can be shorter (up to 4 hours) or longer (up to 10 hours)
depending on the desired density of the yoghurt. The longer incubation time
leads to a thicker and tarrier yoghurt.
– For a thicker Greek-style yoghurt: After incubation, spoon the yoghurt into
a colander lined with cheese cloth and set over a bowl and leave the yoghurt
in the fridge to drain for at least 1 hour (thicker yoghurt should be left to
drain overnight).
Discard the whey (the liquid that passes through the cheese cloth) or keep it
for yourself.
– Yoghurt can be stored in the fridge in covered glass, ceramic or plastic
containers for up to two weeks (the taste will be at its best during the first
week).
FREQUENTLY ASKED QUESTIONS
1. What is the material of construction?
This appliance has a stainless steel housing and an inner container made of aluminium.
2. How is the appliance assembled/disassembled?
This appliance is supplied fully assembled with the float valve, release valve and inner lid already fitted in the pressure cover. Fit the condensate collector before starting operation.
3. What is the starting time?
Each cooking mode has a default time that is displayed once you select the desired mode. Before the timer on the LCD display can start counting down the time, the appliance must first reach the correct pressure and/or temperature for the mode.
4. How long does it take for the appliance to reach full pressure and for the clock to start counting down?
When the appliance reaches the desired pressure, the LCD display changes from orange to red and the cooking time starts counting down. The time required to achieve the desired pressure setting depends on the volume, concentration and ratio of solid to liquid inside the vessel, usually 5 minutes.
5. Can you change the cooking time from the default setting?
Yes, I am! You can change the cooking time by pressing the Time button and selecting the desired time with the rotary knob and then pressing it to confirm.
6. Can you leave the appliance on when you are not at home?
The appliance has a delayed start function, but it is not recommended to leave it on when you are not at home.
7. Can you put frozen food into the unit without defrosting?
Yes, I am! When cooking frozen food, remember to add an extra 10 minutes on average to the cooking time.
8. How do I turn off the appliance?
Press the CANCEL button on the control panel and disconnect the power cord from the power outlet and the main part of the appliance.
CARE AND CLEANING

Allow the appliance to cool to room temperature before cleaning.
-
Unplug the power cord from the power outlet and then move it directly from the base of the unit. Do not twist or pull the power cord at an angle.

Clean the outside of the appliance with a soft, damp cloth or paper towel. Do not immerse the power cord, plug, unit base or fryer lid in water or pour water into the cover.

If the appliance is fitted with a pressure cooker lid, press the steam release button and wait until all pressure has been released. Then open and remove the lid. Wash the appliance with water and degreaser and rinse the internal parts of the appliance well. If necessary, use a small pin to remove any clogs that may have
formed during cooking. Check that the inner spring section moves freely when you apply pressure. Check that it is free of dirt.
COMMENT: Before each use, check that the rubber seal of the pressure cover is clean, flexible and not torn. If it is damaged, replace it before putting the appliance into operation. -
Rinse the top and bottom of the lid with warm water and make sure the float valve and pressure relief valve are not dirty. Both valves should move freely up and down, with the float valve stopping only when the rubber seal of the float valve meets the lid. Dry.

If a frying lid has been used, let it cool and then clean it with a damp cloth.
ATTENTION: Do not immerse or rinse the frying lid in water. Clean it only with a damp and moistened cloth. -
Remove the inner container after each use. The inner pot can be washed in the dishwasher, but to prolong its use you should wash it by hand with warm water and a soft cloth or sponge. Rinse it and dry it with a towel. Do not use harsh chemicals or wire.

To clean the condensate collector, remove it, clean it with warm water, let it dry and then reinstall it.

COMMENT: The following parts are dishwasher safe: Inner pot, measuring
cup, spoon. We recommend hand washing all parts to prolong their life. Any
other service should be performed by an authorized service representative.

may be released during this process. DO NOT FORCE OPEN THE APPLIANCE. Do not
put your face, hands or body near the valve opening.

the appliance from the mains and allow it to cool down.
