Precautions and tips for your safety
(for Atlasmotor and Ampiamotor models)
Always unplug the power cord prior to applying or removing the motor from the
machine.
Never remove the electrical plug with wet or damp hands.
Do not leave the machine unattended, especially when it is plugged into the
mains.
Do not use the machine in proximity to heat sources (e.g. stoves) or in areas
where there may be water (e.g. sinks).
Use this device only as described in this manual and for a maximum
uninterrupted work time of 15 minutes.
Use only the cable supplied with the equipment and extensions suited to the
current indicated in the motor rating plate.
This product is intended for use in a domestic environment and at workplaces
such as: kitchen areas of shops, offices and other workplaces, hotels and
other tourist facilities, restaurant kitchens.
When working with the machine equipped with motor, avoid wearing ties, scarves
or long chains; also remember to pull back your hair and hold it with a clip.
Cleaning and maintenance cannot be carried out by children, unless under adult
supervision.
Any repairs to the electrical system must be carried out by skilled personnel.
It is forbidden for unauthorized individuals to access the internal part of
the motor.
Important safeguards
When using electrical appliances, basic safety precautions should always be
followen including the following:
- Read all the instructions.
- To protect against risk of electrical shock do not put (the machine or the motor) in water or other liquid.
- Close supervision is necessary when any appliance is used by or near children.
- Turn the appliance OFF, then unplug from the outlet when not in use, before assembling or disassembling parts and before cleaning. To unplug, grasp the plug and pull from the outlet. Never pull from the power cord.
- Avoid contacting moving parts.
- Never feed food by hand. Always use food pusher.
- Do not operate any appliance with a damaged cord or plug or after the appliance malfunctions or is dropped or damaged in any manner. Return appliance to the nearest authorized service facility for examination, repair or electrical or mechanical adjustment.
- The use of attachments not recommended or sold by the manufacturer may cause fire, electric shock or injury.
- Do not use outdoors.
- Do not let cord hang over edge of table or counter.
- CAUTION! This appliance is not intended for use by persons (including children) with reduced physical, sensory, or mental capabilities, or lack of experience and knowledge, unless they are closely supervised and instructed concerning use of the appliance by a person responsible for their safety. Close supervision is necessary when appliance is used by or near children.
Children should be supervised to ensure that they do not play with this appliance.
This appliance is not to be used by children.
Keep the appliance and its cable out of reach of children.
Save these instructions
This appliance has a polarized plug (one blade is wide than other). To reduce
the risk of electrical shock, the plug will fit in a polarized outlet only one
way. If the plug does not fit fully in the outlet, reverse the plug. If it
still does not fit, contact a qualified electrician. Do not modify the plug
in any way.
The presence of a crossed off wheeliebinindicates that, within the European
Union, the product is subject to separate collection at the end of its useful
life.
These products must not be disposed of together with regular municipal waste.

How to prepare the machine for use
Fix the machine to the work surface by inserting the clamp in the appropriate
hole (fig. 1 ) insert the crank and always turn it clockwise (fig. 2 ).
Inserting the slide
If you have Atlas Slide, insert the slide in the appropriate guides (fig. 3 ).
Connect the motor
If you have Atlasmotor or Ampiamotor connect the motor on the side of the
machine as shown in figure 4 .
If you are using the machine for the first time, clean the rollers with a damp
cloth and then pass a little dough between them which will then be eliminated.
Pull the regulator outwards and turn it to position No. 0 (fig. 5 ).
Once the dough is prepared, pass it several times in the position No. 0,
folding the sheet in half and flouring it at each step, until obtaining a
regular and compact shape (fig. 6 ).
Then pass the sheet once for each number until reaching the desired thickness.
Once the desired sheet thickness is obtained, cut it into pieces about 25 cm
long and lightly flour it on both sides.
Move the crank into the hole of the cutting rollers and pass the sheet to
obtain the chosen pasta format.
Care and maintenance
Do not wash the machine and accessories with water or in the dishwasher.
Clean with a cloth or brush (fig. 7 ). The combs and scrapers under the
cutting rollers are removable, for enhanced cleaning.
To clean the combs and scrapers:

Press the rod downwards and push it sideways to remove it (fig. 8-9 ).

Flip the machine over, making sure to hold the part under the rollers with your hand: the combs and/or scrapers will be removed.
To facilitate removal of the scrapers under the pasta sheet rollers, it is advisable to turn the regulator to position 3. -
Clean using a brush or a cloth.
The combs and scrapers can be washed with cold water, or with a disinfectant for surfaces compatible for food contact (preferably HACCP certified).
Dry the components completely before reinserting them. Do not use products other than those recommended. -
To reinsert everything, repeat the above operations in reverse In case of squeaking, insert a few drops of Vaseline oil suitable for food contact at the ends of the rollers (fig. 10 ).

Basic recipe for fresh pasta
Ingredients for 5 people:
- 250g of 00 flour,
- 250g re-milled durum wheat semolina,
- 5 eggs
Place the flour on a board. Make a well in the centre and crack the eggs into
it. Beat the eggs with a fork and mix with the flour, incorporating a little
at a time, until everything is combined. Work the obtained dough with your
hands to make it elastic and homogeneous.
If the dough is too dry add water, if it is too soft add flour. An excellent
dough should not stick to your fingers.
