Taco Party Beef Short Rib

IN THE BOX:

(1) Guacamole
(2) Blue and white totopos
(3) Blue tostadas
(4) Marinated tuna (fish, sesame, soybeans)
(5) Coriander
(6) Tortillas| (7) Refritos mix
(8) Queso blanco (milk)
(9) Short rib in pasilla sauce (celery)
(10) Pickled red onions (sulphites)
(11) Short rib rub
(12) Salsa La Maya

COOKING INSTRUCTIONS

Bring the short rib (9) up to room temperature.
Preheat the oven to 200°C/180°C fan/gas mark 6.

  1. Tip the short rib and sauce onto an oven tray. Cover with tin foil and cook in the oven for 30 minutes.
  2. Spoon two-thirds of the guacamole (1) into a bowl. Place the totopos (2) alongside.
  3. Lay out the tostadas (3) (you’ll find three in your box – eat them all or use the third as a backup). Top each with roughly 1 tbsp guacamole. Divide the tuna (4) between them and garnish with half the coriander (5).
  4. Dry-fry the tortillas (6) one at a time over a medium heat for 30 seconds on each side. Alternatively, place on a microwavable plate and cover with a damp paper towel. Microwave on medium in 30-second bursts until warm through. Stack the tortillas and cover to keep warm.
  5. Warm the refritos mix (7) in a saucepan over a medium-low heat for 6–8 minutes, stirring occasionally. Transfer to a bowl and top with the queso blanco (8).
  6. Warm a serving plate in the oven for a few minutes, then transfer the short rib to the plate. Arrange the pickled onions (10), rub (11), coriander, salsa (12) and limes (in wedges) around the plate so you and your amigo can help yourselves.
  7. To serve, use two forks to pull the short rib apart, mixing the sauce through evenly. Build your tacos by filling each tortilla with some short rib and all the tasty toppings.

STORAGE AND USE-BY DATE
Transfer all components to the fridge as soon as received. Ensure all chilled items are cold on arrival.
