-
Brush any excess espresso grounds from the Portafilter rim.
-
NOTE: When grinding, the amount of ground espresso in the Filter Basket may be less than expected..
-
NOTE: The Grind Size and Grind Amount may need to be adjusted to achieve the desired extraction rate.
-
NOTE: It is normal for the Filter Basket to be overfilled with ground espresso. Once tamped and packed the ground espresso will form a puck and the Filter Basket will no longer be overfilled.
TAMPING TIPS:
- Try to level the espresso grounds before adding any pressure or tamping. A more level and evenly tamped espresso will result in a more flavorful extraction.
- Tamp first with about 15 pounds of pressure to begin to form a puck shape from the ground espresso.
- Once the puck begins to form increase the pressure to somewhere between 20 and 25 pounds.
- The amount of pressure is not as important as applying consistent and even pressure.
- Too much pressure can cause an over-extracted bitter brew. Finding just the right amount of pressure when tamping requires some experimentation.
- Never twist when pushing down so the packed coffee is not disturbed.
- Lift up slowly and evenly with a slight twisting motion when lifting. This will “polish” the espresso puck.
- Inspect the grounds and make sure they are packed even and tight and there are no loose spots.
- With loose and uneven grounds, the water will find holes and gaps rather than extracting flavor and the brew may become watered down and less flavorful.
- Brush any excess loose grounds from the edge of the Portafilter.
BREWING ESPRESSO
- This Espresso Maker is intended to grind coffee beans and brew espresso-based beverages using ground coffee. Do not utilize the
- Espresso Maker in any manner beyond the intended use. Always use fresh coffee beans. Always use fresh water and never use any other liquids.
- Follow the steps in the GRINDING COFFEE BEANS section on page 10 to grind espresso into the Portafilter.
- NOTE: Before brewing an espresso, it is strongly recommended to run a brew cycle without espresso in the Filter Basket to warm the internal pump and tubes, the Portafilter and Filter Basket. When the parts are warm, the temperature of the brewed espressO will be hotter.
- It is also recommended to brew espresso into pre-warmed cups. Place cups on the Cup Warmer with the bottom of the cup touching the warmer.
- NOTE: It is not necessary to use the Built-In Grinder on this Espresso Maker. Pre-ground coffee from another burr grinder can be added to the Portafilter Filter Basket and tamped according to the TAMPING TIPS on page 11. The recommended grind size is 400-500-microns.
- Align the handle of the Portafilter with the unlock marking on the left side of the Group Head. The 3 tabs on the Portafilter must align with the notches in the Group Head.
- Raise the Portafilter into the Group Head and rotate it counterclockwise until the handle of the Portafilter is aligned with the lock marking t. Ensure the Portafilter is securely locked in place.
- Place one or two pre-warmed espresso cups on the Drip Tray.
- NOTE: If using one cup make sure the cup extends under both sides of the Portafilter to catch the brewed espresso. If using two cups center each cup under opposite sides of the Portafilter channel.
- Press the Single Shot Button if using the Single Filter Basket or press the Double Shot Button if using the Double Filter Basket. The light ring around the button selected will illuminate and the brew cycle will begin.
- NOTE: The dispensed volume for the Single Shot Button and the Double Shot Button are preset volumes recommended for this machine.
- The Single Shot Button will dispense approximately 1.2 oz (35mL) of liquid and the Double Shot Button will dispense approximately 2 oz (60mL) of liquid.
- NOTE: It is possible to adjust the dispensed volume for the Single Shot or Double Shot Buttons. If the dispensed volume is adjusted, the new volume will become the default for that specific button. To set a new volume, press and hold either the Single Shot Button or the
- Double Shot Button and release when the desired volume is dispensed. The volume dispensed when the button is released will become the new default volume for that specific button. Press the Single Shot Button and Steam/Hot VWater Button at the same time to return the dispensed volume to the original manufacturer setting.
- NOTE: The exact amount of espresso dispensed into the cup varies depending on the type of espresso used, the grind size, the grind amount and the force used to tamp the espresso.
- NOTE: During proper espresso extraction the Pressure Gauge will reach between 5 and 10 bars of pressure (approximately 70-150 psi).
- NOTE: When the brew cycle ends, the Espresso Maker may need to reheat before a new breW cycle can begin. If reheating, the light rings will blink during the process.
- Press the Power Buttonto turn the appliance off. Disconnect the Plug from the wall outlet.
- Remove the Portafilter from the Group Head. Excess water will flow and drip into the Drip Tray. Empty the Portafilter and clean it with warm water ( Cleaning and Maintenance). Alternatively, refit the Portafilter into the Group Head and press the Single Shot Button to rinse the Portafilter.
- WARNING: The Portafilter is hot.
- NOTE: To brew another espresso, ensure the Water Tank is filled. Refill the Water Tank if necessary. Always empty used grounds from the Portafilter and use freshly ground espresso for a new cup. Never reuse ground espresso.
- AUTO-OFF: The Espresso Maker includes an auto-off feature. After 25 minutes of inactivity, the Espresso Maker will enter off mode. To activate the Espresso Maker again press the Power Button O.
ESPRESSO EXTRACTION AND RECOMMENDATION TABLE
The espresso flavor extraction depends on many factors including type of bean, the freshness of bean, level of roast, size and amount of ground espresso in the Filter Basket and tamping pressure. While there are recommendations for starting points included in this manual experimenting with each of these variables will help reach the ideal flavor extraction for each individual. If the espresso grind is too coarse or loosely packed the water will find the gaps, creating a poor extraction and resulting in a watered-down and less flavorful espresso beverage. If the espresso grind is too fine or overly packed the espresso will become more bitter. If water cannot get through tightly packed grounds the Portafilter may back up. This could cause damage to the Espresso Maker or require additional cleaning or maintenance. The recommended grind size is between 400 and 500 microns and the lAMPING IIPS on page 11 include a recommended tamping process and pressure.
Ideal Extraction | Under Extracted | Over Extracted | |
---|---|---|---|
Ground Size | 400 – 500 microns | >600 microns: too coarse | <400 microns: too |
fine
Ground Amount:| 7-8 grams for Single
Filter Basket
14-15 grams for Double
Filter Basket
| |
Tamping Pressure| Start at 15 pounds of even pressure finish with 20-25 pounds
of even pressure.| Light or uneven pressure results in too loosely packed
puck.| Over 30 pounds of pressure results in too tightly packed puck.
Brew Time / Flow| An ideal extraction would be between 20 and 30 seconds of
brew time and even volume
dispensed from each side of the Portafilter channel.
| A fast fow (15 seconds or less) means the grounds are too coarse or the puck is not well packed. Uneven volume dispensed from the Portafilter
channel could mean the puck is
packed unevenly.
| A slow fow or no fow means the grounds are too fine or the puck is packed with too much force. Uneven volume dispensed from the Portafilter
channel could mean the puck is
packed unevenly.
Ideal Extraction | Under Extracted | Over Extracted | |
---|---|---|---|
Brew Color | Medium to dark brown is the ideal color profile. | Clear to light | |
brown indicates less extraction and too much water. | Very dark brown indicates |
a
possible over extraction.
Taste| Experience the balanced favor nuances of the proper extraction.| Watered down or weaker taste
from an under extracted shot.
| Bitter or burnt taste from an
over extracted shot.
Recommended Adjustments| | • Use a finer grind size.
• Increase the grind amount.
• Increase the tamping
pressure.
| • Use a coarser grind size.
• Decrease the grind amount.
• Decrease the tamping
pressure.
TIPS:
- Experiment with all the variables to achieve the desired extraction.
- Take espresso extraction to another level with additional equipment such as a coffee scale, a tamp with pressure gauge, a dosing tool, or a grind sifter with calibrating sieves.
- Use freshly ground, quality coffee beans for the best possible extraction.
- Wait at least 5 days after the roast date to grind coffee beans. This allows a proper degassing period after the roasting process.
- Enjoy the coffee beans within 21 days of the roasting date.
- Buy coffee beans in small batches and store them in an airtight container placed in a cool location with no direct light and low humidity.
- Every time a different espresso blend is used clean the Bean Hopper and Conical Burr Grinder and recalibrate the grind size and grind amount.
STEAMING AND TEXTURING MILK
-
When preparing milk for an espresso-based beverage there are two stages. The first stage is to aerate the milk and expand the milk volume. The second stage is to swirl the milk to create a silky texture.
-
Fill the Frothing Pitcher with 3 to 4 oz (90 to 120 mL) of fresh cold milk.
-
NOTE: Always purge the Steam Wand before steaming milk.
-
Using the black grip on the Steam Wand, rotate the Steam Wand counterclockwise so that the tip of the Steam Wand is over the Drip Tray.
-
Press the Hot Water/Steam Button /. The light ring around the Hot Water/Steam Button will lluminate solid when ready.
-
Use caution. Hot steam and hot water generated when operating the Espresso Maker can cause burns.
-
Rotate the Steam/Hot Water Dial counterclockwise to the steam position e. Purge the Steam Wand for a few seconds then rotate the
-
Steam/Hot Water Dial clockwise to the off position O to stop the flow of steam.
-
NOTE: When the Espresso Maker is producing steam from the Steam Wand, a pumping noise may be heard. This is normal.
-
Insert the tip of the Steam Wand 4″ to ” (1 – 2cm) into the milk.
-
Rotate the Steam/Hot Water Dial counterclockwise to the steam position.
-
Keep the tip of the Steam Wand just below the surface of the milk and create a clockwise-spinning vortex. As the milk volume increases, slowly lower the Frothing Pitcher while maintaining the vortex. Texture the milk until the desired volume is achieved.
-
When the Steam Wand is at the proper depth there will be a slight hissing sournd.
-
When the bottom third of the Frothing Pitcher is too hot to touch, the milk has reached the proper temperature. The ideal milk temperature is 140°F – 150°F (60°C 65°C).
-
Do not texturize milk longer than 70 seconds.
-
Keeping the Steam Wand in the milk, rotate the Steam/Hot Water Dial clockwise to the off position O then remove the Steam Wand from the milk.
-
Using the black grip on the Steam Wand, rotate the Steam Wand over the Drip Tray and briefly turn on the steam to clear remaining milk residue from the Steam Wand.
Set the Frothing Pitcher aside and immediately wipe the Steam Wand with a cloth. -
Gently tap the bottom of the Frothing Pitcher on the countertop to remove any excess air bubbles. Swirl the Frothing Pitcher very slightly to even the texture.
-
Pour steamed milked directly into the espresso. Spoon a layer of micro-foam on top depending on the beverage being prepared.
-
Work quickly before the milk begins to separate.
TEXTURIZING TIPS:
- Position the Steam Wand in the Frothing Pitcher off to one side at a slight angle. It may help to rest the wand in the spout of the Frothing Pitcher.
- Use a food thermometer to accurately measure the milk temperature.
- Full fat milk is best when starting. It will provide more stability when texturing. Low fat, or no fat, milk is less forgiving and can easily be over-aerated.
- Milk alternatives can be used for espresso beverages. Not all milk alternative brands are created to work with coffee. If one brand does not texture well, try another brand.
Espresso
A single shot espresso (or short black espresso) is the foundation to every
espresso-based coffee drink. The volume of a single shot is around 1 0z
(30mL). Serve in a preheated small ceramic or glass cup. Add sugar to taste if
desired. A double shot espresso (or doppio) is simply double the volume of a
single shot.
Americano
Also known as a long black, an Americano is a double shot of espresso topped
with hot water. Use the Double Shot Button to brew 2 oz (60mL) of espresso
into a larger mug. Top with hot water by double tapping the Hot Water/Steam
Button to dispense 5.5 oz (160mL) hot water from the Hot Water Outlet over the
espress0.
Latte
Start with a 2 oz (60mL) double shot of espresso. Steam 5 oz (150mL) milk in
the Frothing Pitcher and pour over the espresso. Layer around 1omm of
microfoam on top. Add sugar, nutmeg, cinnamon, vanilla, or other flavors for
different latte variations.
Cappuccino
A cappuccino is 1/3 espresso, 1/3 steamed milk and 1/3 frothed milk (foam).
Start with a 2 oz (60mL) double shot of espresso. Steam 4 0z (150mL) milk in
the Frothing Pitcher so that it doubles in volume creating a steamed milk
layer and a frothy milk layer. Pour over the top of the espresso.
Flat White
A flat white is an espresso made similar to a latte or cappuccino with just a
thin layer of microfoam. Start with a 2 oz (60mL) double shot of espresso.
Prepare steamed milk in the Frothing Pitcher and layer around 5mm of microfoam
on top of the espresso.
