Safety instructions

To avoid the hazard results please follow the instructions below.
- Never allow the power cable to come into contact with heat sources or sharp edges. The power cable should not hang over the side of the working surface. Ensure that no one can step on or trip over the cable.
- The power cable must not be folded, bent or tangled, and must always remain fully unrolled. Never place the device or other objects on the power cable.
- Do not cover the cable. Keep away the cable from operating range and do not immerse it into water or other liquids.
- Check the power cord regularly for damage. Do not use the appliance if the power cord is damaged. If this cable is damaged, it must be replaced by customer service or a qualified electrician in order to avoid dangers.
- The supply cable must be disconnected from the socket only by pulling the plug.
- Never carry or lift the device by the supply cable.
- In any case do not open the device housing. In case of electrical or mechanical modifications the electric shock hazard will occur.
- Do not use any acid agents and make sure no water ingresses the device.
- Never operate the device with moist hands or standing on wet floor.
- Remove the plug from its socket:
- when the device is not used,
- in case of anomalies during operation,
- before cleaning.

Follow the safety indications listed below in order to avoid hazards.
- During operation the surface of the appliance is very hot! Do not touch hot surface with bare hands! During operation of the appliance touch only handles and control elements designed to this end.
- Also, after switching off, the surface of the appliance, as well as the chamber and baked goods in containers, and the very containers, too, remain hot for a long time. In order to take the baked goods out of the chamber, always wear safety gloves.
- When opening the appliance door, exercise special caution, as hot steam may escape.
- Leave the appliance to cool down sufficiently before commencing cleaning.

Follow the safety indications listed below in order to avoid hazards.
- Before starting to operate the appliance, make sure that there are no objects in the oven chamber, like plastic bags, operation manual, or accessories. During operation, never place any kitchen utensils, towels, paper, etc., in the oven chamber nor on the appliance.
- Make sure that the steam outlet is not covered nor clogged.
- Never use the appliance near flammable materials (such as petrol, spirits, alcohol, etc.). High temperatures may cause them to evaporate, and as an outcome of contact with ignition sources deflagrations can occur, which can lead to serious personal injuries and property damages.
- Clean the oven chamber regularly, so that it is always clean: left-over fats and roasting left-overs may incinerate.
- In the case of fire and before taking relevant fire extinguishing action, disconnect the appliance from the electric power supply (pull the plug out). Attention: Do not sprinkle the appliance with water, when it is still live: Electric shock hazard!
Use as intended
CAUTION!
The device has been designed and built for commercial use and should be
operated only by qualified personnel in kitchen facilities.
Every use of the device for a different purpose and/or in a way that diverges
from the intended use is not allowed and is assumed as the use against the
intended purpose.
Any claims against the manufacturer or their authorized representatives as a
consequence of experiencing damage resulting from the use against the intended
purpose are inadmissible.
The liability for damage occurred during the use of the device against its
intended purpose is borne solely and exclusively by the user.
Safety operation of the device is guaranted only when it is used for its
intended purpose and according to the instructions included in this manual.
The fermenting cupboard is designed only for the purpose of accelerating the growth of fresh and frozen baked goods in a bakery.

Any use other than those mentioned in point “1.3 Use as intended“ is assumed
as the use against the intended purpose and is not allowed.
The use against the intended purpose may lead to severe injury or damage
caused by hazardous voltage, fire or high temperature. It is allowed to use
the device to perform only the work described in the instruction manual.
Improper use may cause the device damage.
Any manipulation with the device, assembly or maintenance work may be
performed exclusively by the authorized service staff.

Transport, packaging and storage
Delivery check
Please check the delivery upon completeness and transport damage immediately
after receipt. In case of visible damage do not accept or accept the delivery
with reservation only.
Note the extent of damage on the carrier’s bill of delivery. Trigger off the
complaint. Hidden damages should be reclaimed immediately after notice, as
claims for damages can only be asserted within the effective period for
complaints.
Packaging
Please do not throw away the covering carton of your device as it might be useful for storage purposes, when moving or, in case of damages, when the device must be sent back to a repair center. The outer and inner packing material should be removed completely from the device before installation.
If you liked to dispose the packing, consider the regulations applicable
in your country. Supply re-usable packing materials to the recycling.
Please inspect the device upon completeness. In case any part is missing please contact our customer service center immediately.
Storage
Keep the package closed until installation and under consideration of the outside indicated positioning- and storage markings.
Packages should be stored under consideration of the following:
- do not store outdoors,
- keep it dry and dust-free,
- do not expose it to aggressive media,
- do not expose it to direct sunlight,
- avoid mechanical shocks and vibration,
- in case of longer storage (> 3 months) make sure you check the state of the packaging and the parts regularly, if required refresh or renew.

Installation and operation
Installation
CAUTION!
Any operation connected with installation, assembly, control and maintenance
must be executed by specialised personnel, with necessary professional
training (approved by the manufacturer’s company or vendor) and with
consideration for the regulations in force in the country of installation, as
well as safety regulations for the product and occupational health and safety
regulations.
Installation Instructions
- Before starting installation works and prior to commencing operation, read this instruction manual carefully.
- Defective installation, operation errors and maintenance and cleaning mistakes as well as any modifications may cause the incorrect operation, damage and injuries.
- The manufacturer is not responsible for injuries or damages resulting from nonobservance of the above regulations or tampering and using non-original spare parts.
- Immediately following the reception of the appliance, make sure there are no transport damages, and the packaging is not damaged. In case there are damages observed or elements missing, immediately notify the transportation company or the vendor/manufacturer and provide them with article number and serial number (type plate at the back of the appliance), as well as photo documentation.
- Make sure that there are no elements hindering passages through doors, corridor or other communication paths when moving the appliance to the installation location.
- ATTENTION: The appliance may turn over during transport, which may result in damage to the appliance itself, other objects or personal injuries. During transportation, use transportation measures adequate for the weight of the appliance. The appliance should not be dragged nor tilted, but lifted perpendicularly to the ground and handled in horizontal direction.
Place of Installation
- The appliance must be located in a closed and well-ventilated room (not outside).
- The surface under the appliance must feature load-bearing capacity suitable for the appliance’s weight with maximum load.
- The appliance must be positioned on even surface to avoid its slipping or turning over.
- Remember, that after placing the appliance, there must be enough room to fully open the door of the appliance.
- Place the appliance on a stable and dry surface that features water resistance and high temperature resistance. The place of installation must be easily accessible and sufficiently spacious to allow for easy operation of the device and good air circulation.
- Never position the appliance directly next to walls, furniture, or other objects made of flammable materials. Follow fire protection regulations in force.
- Never place the appliance in the vicinity of flammable materials or containers with flammable materials (walls, furniture, partition walls, gas cylinders): this may pose a fire hazard. If it is impossible, flammable elements should be isolated with non-flammable thermal insulation materials, paying the highest attention to the conformity with fire prevention regulations.
- The appliance is not designed for installation inside a furniture piece.
Preparation for Installation
- Remove external packaging (wooden crate and/or carton box) and utilize it according to the regulations in force in the country of installation.
- Remove the protective film before starting the appliance. Remove the film slowly, so that there are no traces of adhesive left on the appliance. Any traces of an adhesive may be removed with a suitable solvent.
- Remove all accessories, information materials, and plastic bags from the inside of the appliance.
CAUTION!
Never remove the rating plate and any warning signs from the appliance.
Adjustment of Feet
Adjustable feet are delivered with the appliance and must be screwed to its
bottom.
Correct levelling of the appliance provides for correct operation. The
appliance is levelled with the use of feet and verified with a spirit level.
In order to level the appliance, it is enough to screw the feet in or out.
CAUTION!
Never use the appliance without feet!
If the appliance is used without feet, air flow is obstructed and electronic components and external housing walls may not be cooled; this in turn may lead to overheating and damage to the appliance components.
Connection
DANGER! Electric shock hazard!
The device can cause injuries due to improper installation!
Before installation and connecting the local power grid specification should
be compared with that of the device (see rating plate). Connect the device
only in case of compliance!
- Before connecting the appliance to the power supply, make sure that voltage and frequency values on the rating plate are conforming to the characteristics of the existing electric installation. The allowable voltage deviation is ±10%.
- Connect the appliance to an electric mains installation according to the international, national, and local regulations in force.
- The appliance must be connected to a potential equalization circuit (ground). The clamp is located at the back of the appliance, next to the marking .
- Position the appliance in such way that the plug is always easily accessible for quick disconnecting when required.
- Current circuit of the mains socket must feature at least 16 A protection. Only connect the appliance directly to a wall socket; do not use any extension cords nor power strips.
First Start-Up
Before the first start-up electric appliances must be thoroughly inspected in order to confirm the consistency of the appliance and its installation with regulations in force, technical data, and recommendations for safety.
Carefully check the following:
- temperature in the installation location must be higher than +4°C.
- the chamber must be empty.
- all packaging elements must be fully removed, including the protective film on external walls.
- do not block nor obstruct ventilation openings.
Execute a test run, without filling the appliance with food products. Follow indications in section 5.2 ‘Indications for the User’.
Indications for the User
** CAUTION!**
Read this instruction manual carefully, as it contains important safety and
operation indications for the convection oven. Store the instruction manual
properly, to be able to use it at any moment. The defective installation,
operation errors and maintenance and cleaning mistakes as well as any
modifications may cause the incorrect operation, damage and injuries.
Safety Indications
- Never install the appliance in the vicinity of heat sources, such as a grill or a deep-fryer.
- Flammable materials should never be left in the vicinity of the appliance. Fire hazard!
- When cooking or after its finish, the containers for food articles or other containers may be very hot; pay particular attention when handling them in order to avoid burns. They may be touched only in suitable protective gloves. Risk of burns!
- Be particularly cautious when opening the appliance door. Risk of burns due to escaping hot steam.
- When glass parts of the door get damaged or broken, they should be immediately replaced (contact the service company).
- If the appliance is not to be used (e.g. for 12 hours), leave the appliance door open.
- If the appliance is not to be used for a prolonged period of time (e.g., a number of days) disconnect the appliance from mains power supply.
Operation
- Before use clean the device according to instructions in section 6 ‘Cleaning and Maintenance’.
- Water pan for moistening baked goods should be placed at the bottom of the appliance (Fig. to the right).
- To prevent products from drying during fermentation, fill the water pan with cold water. Mind the marking for full filling of the water pan.
- Heat and humidity accelerate fermentation and thus they greatly shorten the time baking time.
- Connect the appliance to a grounded socket and switch it with the ON/OFF switch, by moving it to the up (‘I’) position.
- Set the temperature suitable for a given type of dough for baking, by rotating the temperature controller clockwise to the required position in the range of 30°C – 60°C.
- The orange heating indicator light will be lit, thus indicating the heating up process of the appliance. When the desired temperature has been reached, the orange heating control light goes off. The appliance is ready for fermentation process.
- The prepared, raw baked goods placed on trays are inserted into the appliance on guide rails. Close the glass pane door.
- When the temperature inside the appliance drops, the thermostat should switch the heating on again and the appliance will heat up to the set temperature anew, and thus the temperature in the chamber remains constant.
- Supervise the fermentation process.
- When the expected results are obtained, take the baked goods from the appliance and keep them baking in an oven.
WARNING! Hot surface!
When the temperature setting is high, the trays heat up considerably.
To avoid burns, always take the trays with protective gloves.
After operation set the appliance’s temperature controller to ‘0’, flip the ON/OFF switch to ‘O’ position and disconnect the appliance from electric mains supply (pull the plug out).
Indications and Advices
- The fermenting cupboard should never be used for inducing growth of frozen dough; before the fermentation process dough must be completely defrosted.
- Make sure that the dough does not dry too extensively during defrosting, for otherwise it will not grow enough and may crack.
- Do not allow for excessive growth of the dough. Excessive growth may cause the dough to drop after baking. Optimum effects are obtained when the baked goods are grown in the fermenting cupboard to approx. 75–80% of final size; following this they are placed in an oven in order to finish the baking process.
- If the dough grows too little, the baked goods will not reach the expected size during baking, and will feature too dense (stiff) a structure.
Cleaning and Maintenance
WARNING!
Before cleaning, disconnect the electric power supply and wait for the device
to cool down.
Never use a pressurised water stream nor steam jet for cleaning.
Make sure water does not enter the appliance.
CAUTION!
Do not use corrosive substances nor abrasive agents or cloths/sponges, which
could damage the surface of the appliance.
Do not use agents containing chlorine, such as, for example, bleaches,
hydrochloric acid, etc.
Regular Cleaning by User
- In order to assure reliable operation, hygiene and efficiency the appliance should be cleaned everyday after work.
- Before cleaning disconnect the electric power supply from the appliance and wait for the fermenting chamber to cool down.
- Remove the water pan and wash it in warm water with mild cleaning agent. Rinse the water pan with fresh water and dry afterwards.
- Clean the appliance inside and outside with the use of a damp cloth (sponge) and a commercially available mild cleaning agent. Then use fresh water to wipe it, in order to remove the remains of a washing agent and prevent its flavour to be transferred onto the baked goods.
- Use a soft, damp cloth to wipe the glass pane door.
- When the surfaces are clean, dry them and polish with a dry cloth.
Maintenance
- Regularly (at least once a year), have a qualified and authorized technician verify the appliance. To this end, contact the service company.
- Before executing any maintenance works, switch the electric mains supply off. Wait for the appliance to cool down completely.
- Before moving the appliance into another location, make sure it has been correctly disconnected from mains power supply.
- If the appliance is on a wheeled base, make sure that the electric cords will not be damaged during moving.
- When finished with the operation and after placing the appliance in a new location, make sure that the electric installation has been connected according to standards in force.
Possible Malfunctions
In case of malfunction, disconnect the device from its power source. Before contacting the service or sales agent, verify – based on the table below – whether it is possible to eliminate disruption in operation.

Waste disposal
Old devices
The electric devices are marked with this symbol. You must not dispose of electric devices with household waste. When the device may not be longer used each consumer is obliged to dispose of the device at the dedicated local collection point, separately from household waste.
NOTE!
Electric devices should be used and disposed of properly to prevent the impact
on the environment.
Disconnect the device from the power supply and remove the power cord from the
device.
