Product Information:

The Digital 23e Deep Fry & Candy Thermometer is a versatile kitchen tool that allows you to accurately measure temperatures for deep frying and candy making. It features a stainless-steel probe, a heat/splatter shield, and a vessel clip for easy attachment to pots and pans. The thermometer has a temperature range and various candy stages and deep fry temperatures to choose from. It also has an alert LED and a battery compartment for easy battery replacement. The thermometer is backed by a lifetime limited warranty.

Product Usage Instructions

  1. Before using the thermometer for the first time, remove the battery insulating tab in the battery compartment to prevent battery drain during shipping. Also, remove the protective display film from the display.
  2. To turn on the thermometer, press the POWER ( ) button.
  3. To change the unit of measure, press and hold the MODE (M) button for 2-3 seconds. The thermometer will beep to indicate the change.
  4. To select the desired candy stage or deep fry temperature, press the MODE button. The display will cycle through different options, and the set temperature will be shown at the bottom of the display. The current temperature will be displayed in larger numbers at the center of the display.
  5. Note: Adjusting the temperature manually will remove the preset stage name from the top of the display and replace it with “SET”.
  6. Always wear heat-resistant gloves when handling the stainless-steel probe, as it can get very hot.
  7. Refer to the provided temperature charts for target cooking temperatures for candy making and deep frying.

Operation

Before using your thermometer for the first time, remove the battery insulating tab which is placed between the battery and the battery terminal in the battery compartment to prevent battery drain during shipping (see “changing the battery” below for detailed instructions on removing and replacing the battery). Also be sure to remove the protective display film from the display.

  1. Press the POWER ( ) button to turn the thermometer on.

  2. The unit of measure is preset at °F. This can be changed to °C by pressing and holding the MODE (M) button for 2-3 seconds.
    The thermometer will beep indicating that the unit of measure has been changed.

  3. Press the MODE button to select the desired candy stage or deep fry temperature. The display will cycle through JELLY,THREAD, S BALL, F BALL, H BALL, S CRACK, H CRACK, CARAMEL, DP FRY1, and DP FRY2. Each candy or deep fry stage changes the set temperature located in the bottom portion of the display. The current temperature appears in the center of the display in larger numbers.
    Note: The preset temperatures are temperatures for sea level and should be adjusted based on your elevation. A simple rule of thumb is to reduce the target temperature by 2°F for every 1,000 ft of elevation above sea level.

  4. The preset temperature of any stage can be adjusted up or down by simply pressing the “–“ or “+” buttons. Each press will change the preset temperature by one degree. You can also press and hold the “–“ or “+” buttons to scroll for larger temperature adjustments.
    Note: When the temperature is adjusted up or down the preset stage name will disappear from the top of the display and the word “SET” will appear to the left of the adjusted temperature as the thermometer has entered manual mode.

  5. Once the desired target temperature is set and the cooking process begins, the thermometer will make three different audible alerts. The thermometer will make a 2-beep alert and the red LED will begin flashing when the current temperature reaches 5°F/3°C before the target temperature. When the target temperature is reached, the thermometer will make a 1-beep alert and the red LED will begin flashing. When the current temperature reaches 3°F/2°C above the target temperature, the thermometer will make a fast 2-beep alert and the red LED will begin flashing.
    Note: Press any button to stop the alerts.

  6. After the measurement has been taken you can turn the unit off by pressing and holding the POWER ( ) button. If you forget to turn the unit off, the auto-off feature will automatically turn the thermometer off after 60 minutes.
    Note: The auto-off feature can be disabled by pressing and holding the “-“ and “+” buttons simultaneously for 2-3 seconds. The unit will beep and an “x” inside a circle will appear to the left of the target temperature indicating that the auto-off function has been disabled. To enable the auto- off function press and hold the “-“ and “+” buttons again.
    The stainless-steel probe can get very hot. Always wear heat resistant gloves when handling.
    Using the Vessel Clip and Heat/Splatter Shield

    • The thermometer comes with a vessel clip and heat/splatter shield. The heat/splatter shield helps to shield the unit from heat during the cooking process and also keeps the unit clean by preventing splatter. The heat/splatter shield is attached to the thermometer by inserting the probe into the hole in the center of the shield and sliding it towards the bottom of the thermometer housing. The open side of the shield should be facing up.
    • To attach the vessel clip, slide the probe into the top and bottom holes of the clip. To adjust the clip up and down slide it along the length of the probe until the desired position is reached. If the clip will not slide easily, the clip can be squeezed together to reduce the amount of grip force, allowing the clip to slide up and down. Push the clip down onto the side of the pot and position the thermometer until the tip of the probe is just above the bottom of the pot. Do not let the tip of the probe touch the bottom of the pot.
      Note: The included probe sheath should be used to protect the probe when not in use and during storage.

Changing the CR2032 Battery
To change the battery of your thermometer, use a coin to turn the battery door counterclockwise to align the triangle on the battery door with the raised dot on the side of the thermometer housing. Remove the old battery and insert the new battery with the positive terminal facing up. Place the battery door over the battery compartment aligning the triangle with the raised dot on the side of the thermometer. Press down and turn the battery door clockwise until the triangle is aligned with the dot directly below the battery compartment.

Safe Use and Care

  • Do Not submerge the thermometer in liquid as the thermometer is not waterproof.
  • Do Not submerge the area where the probe meets the thermometer housing in liquid as it is not waterproof.
  • Do Not store in high heat environments or near anything that generates heat. Store in a cool, dry place.
  • Do Not use solvents to clean the thermometer, probe, or included accessories. Use soap and water on a damp sponge or cloth.
  • Do Not subject the thermometer to excessive force, shock, dust, temperature, or humidity. Doing so may result in malfunction, shorter lifespan, and/or damage to the unit.
  • Keep the probe away from direct heat and do not allow it to come into contact with an open flame or come into direct contact with the cooktop burner.
  • Keep thermometer and battery out of the reach of children.

Clean probe in between uses.
Do not leave the thermometer in an oven or grill or use in a microwave.

Warning Messages and Indicators

  • LLL – the object being measured is below the temperature range of the thermometer.
  • HHH – the object being measured is above temperature the range of the thermometer.
  • LO – indicates that the batteries are low and need to be changed.

Note: The temperatures to the left are for sea level and should be adjusted based on your elevation. A simple rule of thumb is to reduce the temperature by 2°F for every 1,000 ft of elevation above sea level.

DEEP FRYING

Note: 325-375°F/163-190°C is the preferred temperature range for deep frying. When food is added to oil, the temperature will drop significantly and the oil will need to be brought back to the desired cooking temperature. Frying at lower temperatures results in increased oil absorption and less than optimal flavors.
