INTRODUCTION
Hatco Flav-R-Savor® Tall Humidified Holding Cabinets are designed to hold
prepared foods for prolonged periods of time while maintaining that “just-
made” quality. Hatco Holding Cabinets provide the best environment for food
products by regulating the air temperature while at the same time balancing
the humidity level. Flav-R-Savor air flow pattern is designed to maintain
consistent cabinet temperature without drying out foods. The precise
combination of heat and humidity creates a “blanket” effect around the food.
The air flow rate enables the cabinet to rapidly recover temperature after
opening and closing the door. The use of controlled, moisturized heat
maintains serving temperature and texture longer than conventional dry holding
equipment. Flav-R-Savor Tall Humidified Holding Cabinets are products of
extensive research and field testing. The materials used were selected for
maximum durability, attractive appearance, and optimum performance. Every unit
is inspected and tested thoroughly prior to shipment.
This manual provides the installation, safety, and operating instructions for
a Flav-R-Savor Tall Humidified Holding Cabinet. Hatco recommends all
installation, operating, and safety instructions appearing in this manual be
read prior to installation or operation of the unit. Safety information that
appears in this manual is identified by the following signal word panels:
WARNING
WARNING indicates a hazardous situation which, if not avoided, could result in
death or serious injury.
CAUTION
CAUTION indicates a hazardous situation which, if not avoided, could result in
minor or moderate injury.
NOTICE
NOTICE is used to address practices not related to personal injury.
Read the following important safety information before using this equipment to
avoid serious injury or death and to avoid damage to equipment or property.
WARNING
ELECTRIC SHOCK HAZARD:
- Plug unit into a properly grounded electrical receptacle of the correct voltage, size, and plug configuration. If plug and receptacle do not match, contact a qualified electrician to determine and install proper voltage and size electrical receptacle.
- Turn OFF power switch, unplug power cord, and allow unit to cool before performing any cleaning, adjustments, or maintenance.
- DO NOT submerge or saturate with water. Unit is not waterproof. Do not operate if unit has been submerged or saturated with water.
- Unit is not weatherproof. Locate unit indoors where ambient air temperature is a minimum of 70°F (21°C). This unit is not “jet-proof” construction. Do not use jet-clean spray to clean this unit.
- Do not steam clean or use excessive water on unit.
- Turn power switch OFF and allow unit to cool before draining water pan.
- Do not pull unit by power cord.
- Discontinue use if power cord is frayed or worn.
- Do not attempt to repair or replace a damaged power cord. Cord must be replaced by Hatco, an Authorized Hatco Service Agent, or a person with similar qualifications.
- This unit must be serviced by qualified personnel only. Service by unqualified personnel may lead to electric shock or burn.
- Use only Genuine Hatco Replacement Parts when service is required. Failure to use Genuine Hatco Replacement Parts will void all warranties and may subject operators of the equipment to hazardous electrical voltage, resulting in electrical shock or burn. Genuine Hatco Replacement Parts are specified to operate safely in the environments in which they are used. Some aftermarket or generic replacement parts do not have the characteristics that will allow them to operate safely in Hatco equipment.
FIRE HAZARD:
Locate unit a minimum of 1″ (25 mm) from combustible walls and materials. If
safe distances are not maintained, combustion or discoloration could occur.
Make sure food product has been heated to the proper food-safe temperature
before placing in unit. Failure to heat food product properly may result in
serious health risks. This unit is for holding pre-heated food product only.
Hatco Corporation is not responsible for actual food product serving
temperature. It is the responsibility of the user to ensure that food product
is held and served at a safe temperature.
WARNING
Make sure all operators have been instructed on the safe and proper use of the
unit. This unit is not intended for use by children or persons with reduced
physical, sensory, or mental capabilities. Ensure proper supervision of
children and keep them away from the unit. This unit has no “user-serviceable”

CAUTION
BURN HAZARD:
- Some exterior surfaces on unit will get hot. Use caution when touching these areas.
- Turn off unit and allow it to cool before draining water from water pan.
Locate unit in an area that is convenient for use. The location should be
level to prevent unit or its contents from falling accidentally and strong
enough to support the weight of the unit and contents. Do not overfill water
pan. Overfilling can cause water to leak onto floor and create a slipping
hazard. Transport unit in upright position only. Make sure all water is
drained prior to transport.
NOTICE
- Do not lay unit on side with control panel or damage to unit could occur. Make sure all water is drained prior to laying unit on its side. Use non-abrasive cleaners and cloths only. Abrasive cleaners and cloths could scratch finish of unit, marring its appearance and making it susceptible to soil accumulation.
- Use of distilled water in water reservoir of humidified units is recommended. If non-distilled water is used, reservoir will require periodic cleaning and deliming (refer to MAINTENANCE section for cleaning procedure).
- Damage to unit caused by liming or sediment buildup is not covered under warranty. Clean unit daily to avoid malfunctions and maintain sanitary operation.
- Do not locate unit in area with excessive air movement around unit. Avoid areas that may be subject to active air movements or currents (i.e., near exhaust fans/hoods, air conditioning ducts, and exterior doors).
MODEL DESCRIPTIONZ
All Models
Flav-R-Savor® Tall Humidified Holding Cabinets are made from sturdy stainless
steel with tubular frame welded construction. Features include a digital
temperature controller and Lexan® door(s) or insulated stainless steel
door(s). The door(s) can be hinged left or right. Electrical components,
controls, and the water pan are easily accessible. Units are equipped with
locking swivel casters for easy portability. An attached 10′ (3048 mm) power
cord and plug is standard.
Model FSHC-12W1
The FSHC-12W1 is a single door, upright model. Universal tray slides are
included that will accommodate twelve 18″ x 26″ (457 x 660 mm) sheet pans or
twenty-four 12″ x 20″ x 2-1/2″ (305 x 508 x 64 mm) hotel steam pans on 3″ (76
mm) centers.
Model FSHC-12W2
The FSHC-12W2 has all the features of the FSHC-12W1 but is equipped with two
(2) full doors, one on each side of the unit for pass-through operation.
Model FSHC-17W1
The FSHC-17W1 is a single door, upright model. Universal tray slides are
included that will accommodate seventeen 18″ x 26″(457 x 660 mm) sheet pans or
thirty-four 12″ x 20″ x 2-1/2″ (305 x 508 x 64 mm) hotel steam pans on 3″ (76
mm) centers.
Model FSHC-17W1D
The FSHC-17W1D has all the features of the FSHC-17W1 but is equipped with two
(2) 1/2 size doors for enhanced performance characteristics.
Model FSHC-17W2
The FSHC-17W2 has all the features of the FSHC-17W1 but is equipped with two
(2) full doors, one on each side of the unit for pass-through operation.
Model FSHC-17W2D
The FSHC-17W2D has all the features of the FSHC-17W2 but is equipped with a
total of four (4) doors — two (2) 1/2 sized doors on both the front and back
side of the unit for pass-through operation and enhanced performance
characteristics.

INSTALLATION
General
The Flav-R-Savor® Tall Humidified Holding Cabinets are shipped with most
components installed and ready for operation. The following installation
instructions must be performed before plugging in and operating the cabinet.
WARNING
- ELECTRIC SHOCK HAZARD : Unit is not weatherproof. Locate the unit indoors where the ambient air temperature is a minimum of 70°F (21°C).
- FIRE HAZARD: Locate unit a minimum of 1″ (25 mm) from combustible walls and materials. If safe distances are not maintained, combustion or discoloration could occur.
CAUTION
Locate unit in an area that is convenient for use. The location should be
level to prevent unit or its contents from falling accidentally and strong
enough to support the weight of the unit and contents.
NOTICE
Do not locate unit in area with excessive air movement around unit. Avoid
areas that may be subject to active air movements or currents (i.e., near
exhaust fans/hoods, air conditioning ducts, and exterior doors).

Remove the unit from the carton.
-
Remove all loose items shipped inside the cabinet such as the box containing the adjustable tray slides, the casters/legs, etc…

Remove tape and protective packaging from all surfaces of the unit.
NOTE: Refer to the OPTIONS AND ACCESSORIES section in this manual for options and accessories instructions. -
Install the 5″ (127 mm) casters onto the bottom of the cabinet.
NOTICE
Do not lay unit on side with control panel or damage to unit could occur. Make sure all water is drained prior to laying unit on its side.

Remove all shelf supports, tray slides, heat tunnel, and water pan.
-
Carefully lay the unit on its back side. This step requires two people.
NOTE: Place a piece of cardboard between the cabinet and the floor to prevent marring the cabinet finish. -
Install the two swivel casters to the front of the unit using four mounting screws (provided). Tighten securely.
-
Install the two stationary casters to the back of the unit using four mounting screws (provided). Tighten securely.
-
Return the unit to its upright position. This step requires two people.
-

Install the heat tunnel and water pan.
-
Unpack the adjustable tray slides from the box and install them inside the cabinet. There are 12 or 17 adjustable tray slides for each side of the cabinet. Four shelf supports, two on each side of the cabinet, support the tray slides.
To install each tray slide: -
Align the hooks at each end of the tray slide with the desired slots on the front and rear shelf supports.

Angle the tray slide hooks into the slots and let the tray slide rotate down into position.
-
Place the unit in the desired location.
- Locate the unit in an area where the ambient air temperature is constant and a minimum of 70°F (21°C). Avoid areas that may be subject to active air movements or currents (i.e., near exhaust fans/hoods and air conditioning ducts).
- Make sure the unit is located on solid, level flooring.
- Make sure the unit is at the proper height in an area convenient for use.
Reversing the Access Door
The access door is field reversible to allow it to be hinged on either the right or left side. Use the following procedure to reverse the door.

Remove the four handle screws securing the handle to the door. Remove the handle.
-
Slide the hinge covers off of the door hinges.
-
At each door hinge, remove the three hinge screws that secure the hinges to the cabinet frame. Remove the access door.
NOTE: The hinges remain mounted to the access door. -
Transfer the screw plugs from the hinge screw holes on the opposite side of the cabinet to the open holes where the hinges were just removed.
-
Remove the two strike plate screws that secure the strike plate to the cabinet.
-
Transfer the screw plugs from the strike plate holes on the opposite side of the cabinet to the open holes where the strike plate was just removed.
-
Install the strike plate on the opposite side of the cabinet using the original hardware.
-
Rotate the door 180° and install on the opposite side of cabinet using the original hardware.
-
Install the handle to the door in the upright position using the original hardware.
-
Slide the hinge covers back into place on the door hinges.
OPERATION
General
Use the following procedures to operate a Flav-R-Savor® Tall Humidified
Holding Cabinet.
WARNING
Read all safety messages in the IMPORTANT SAFETY INFORMATION section before
operating this equipment.
Startup
-
Plug the unit into a properly grounded electrical receptacle of the correct voltage, size, and plug configuration. See the SPECIFICATIONS section for details.
NOTICE
Use of distilled water in water reservoir of humidified units is recommended. If non-distilled water is used, reservoir will require periodic cleaning and deliming (refer to MAINTENANCE section for cleaning procedure). Damage to unit caused by liming or sediment buildup is not covered under warranty. -
Fill the water pan with clean water. To fill the water pan:
-
Open the access door.
-
Slowly pour water into the water pan until the water level reaches the fill line on the back of the pan. Do not fill water above this line.
-
Close the access door.
NOTE: Clean the water pan daily to extend the life of the electrical and mechanical components and to keep cleaning easy. If “hard” water is used, the pan will require periodic cleaning and de-liming. Refer to the MAINTENANCE section for de-liming instructions.
CAUTION
Do not overfill water pan. Overfilling can cause water to leak onto floor and create a slipping hazard.
NOTE: On the initial fill, the capacity of the water pan is approximately two (2) gallons (7.6 liters). -
Move the POWER ON/OFF (I/O) switch to the ON (I) position. The heating system will start up.
CAUTION
BURN HAZARD : Some exterior surfaces on the unit will get hot. Use caution when touching these areas. -
Set the air temperature to the desired temperature (refer to the “Setting the Air Temperature” procedure in this section). See the “Food Holding Guide” for recommendations.

On humidified units, set the humidity to the desired level (refer to the “Setting the Humidity Level” procedure in this section). See the “Food Holding Guide” for recommendations.
NOTE: Temperature and humidity settings may vary depending upon product make-up and consistency. The CABINET TEMPERATURE display shows the lowest temperature point inside the cabinet, not the product temperature.
Allow 30-45 minutes to preheat the cabinet with a full pan of water before loading preheated food product.
NOTE: Operating at a high humidity setting for extended periods of time may require the drip trough(s) to be emptied periodically (located at the bottom of the door).
WARNING
Make sure food product has been heated to the proper food-safe temperature
before placing in unit. Failure to heat food product properly may result in
serious health risks. This unit is for holding pre-heated food product only.
**Shutdown
**
- Move the POWER ON/OFF (I/O) Switch to the OFF (O) position and allow the unit to cool.
- Perform the “Daily Cleaning” procedure in the MAINTENANCE section of this manual.
Setting the Air Temperature
Use the following procedure to set or change the air temperature.
- Press the key to enter temperature mode (“tSP” will appear on the CABINET TEMPERATURE display).
- Press the key again to show the current temperature setting.
- Press the key or key to reach the desired temperature. The temperature range is 80°–200°F (27°–93°C) in single degree increments. See the “Food Holding Guide” in this section for recommendations.
- After the desired temperature is set, wait 15 seconds without pushing any keys for the cabinet temperature display to return automatically to operational mode.
NOTE: Temperature and humidity settings may vary depending upon product make-up and consistency. The CABINET TEMPERATURE display shows the lowest temperature point inside the cabinet, not the product temperature.
Setting the Humidity Level
Use the following procedure to set the humidity level on humidified units.
- Press the key to enter humidity mode (“hSP” will appear on the CABINET TEMPERATURE display).
- Press the key again to show the current humidity level.
- Press the key or key to reach the desired humidity level. Humidity range is 0 through 5 (1 is the lowest amount of humidity and 5 is the highest, 0 is no humidity). See the “Food Holding Guide” in this section for recommendations.
- After the desired humidity level is set, wait 15 seconds without pushing any keys for the cabinet temperature display to return automatically to operational mode.
The water pan capacity permits uninterrupted operation for approximately 4-8 hours, depending on the humidity and temperature settings as well as how frequently the door is opened.
WARNING! Electric Shock Hazard — Do not overfill water reservoir.

MAINTENANCE
General
Hatco Flav-R-Savor® Tall Humidified Holding Cabinets are designed for maximum
durability and performance with minimum maintenance.
WARNING
ELECTRIC SHOCK HAZARD:
- Turn OFF power switch, unplug power cord, and allow unit to cool before performing any cleaning, adjustments, or maintenance.
- DO NOT submerge or saturate with water. Unit is not waterproof. Do not operate if unit has been submerged or saturated with water.
- Unit is not weatherproof. Locate unit indoors where ambient air temperature is a minimum of 70°F (21°C).

- Do not clean unit when it is energized or hot.

NOTE: The internal blower motor is permanently lubricated and requires no
maintenance.
Daily Cleaning
To preserve the finish of the unit as well as maintain performance, it is
recommended that the unit be cleaned daily.
NOTICE
- Use non-abrasive cleaners and cloths only. Abrasive cleaners and cloths could scratch finish of unit, marring its appearance and making it susceptible to soil accumulation.
- Clean unit daily to avoid malfunctions and maintain sanitary operation.
- Move the POWER ON/OFF (I/O) switch to the OFF (O) position and unplug the power cord. Allow the unit to cool.
- Remove and wash all food pans.
- Wipe down all the interior and the exterior surfaces using a clean, damp cloth. Stubborn stains may be removed with a good non-abrasive cleaner. Hard to reach areas should be cleaned with a small brush and mild soap.
- Wipe dry with a clean, non-abrasive cloth.
- Clean the Lexan® polycarbonate doors with mild, soapy water solution and a non-abrasive, damp cloth. NOTICE: DO NOT use paper towel or glass cleaner.
- Drain and clean the water pan. Refer to the “Cleaning/Draining the Water Pan” procedure in this section.
Cleaning/Draining the Water Pan
The water pan must be drained for daily cleaning, before moving the cabinet,
and during the “Removing Lime and Mineral Deposits” procedure.
WARNING
ELECTRIC SHOCK HAZARD: Turn OFF power switch, unplug power cord, and
allow unit to cool before performing any cleaning, adjustments, or
maintenance.
- Move the POWER ON/OFF (I/O) switch to the OFF (O) position and unplug the power cord. Allow the unit to cool.
- Lift the heat tunnel (located on bottom of the cabinet) straight up until the two tabs clear the slots. Pull towards the front of the cabinet to remove.
- Remove baffle plate and life water pan out of the well on the bottom of the unit.
- Discard the water and clean the water pan and baffle plate.
- Re-install the water pan with the baffle plate and heat tunnel into the unit.
NOTE: If the water used has an excessive amount of lime or mineral content, follow the “Removing Lime and Mineral Deposits” procedure for periodic cleaning and deliming of the water pan. Unit failure caused by liming or sediment buildup is not covered under warranty.
Removing Lime and Mineral Deposits
Use the following procedure for periodic cleaning and deliming of the water
pan.
NOTE:
- The lime and mineral content of the water used for daily operation will determine how often the deliming procedure must be performed.
- Perform this procedure when the unit will not be used for a period of time, such as the end of the day.
NOTICE
Use of distilled water in water reservoir of humidified units is recommended.
If non-distilled water is used, reservoir will require periodic cleaning and
deliming (refer to MAINTENANCE section for cleaning procedure). Damage to unit
caused by liming or sediment buildup is not covered under warranty.

Move the POWER ON/OFF (I/O) switch to the OFF (O) position and unplug the power cord. Allow the unit to cool.

After the unit has cooled down, perform the “Draining the Water Pan” procedure in this section.

Remove the water pan and baffle plate and fill the water pan with a mixture of 75% water and 25% white vinegar. Do not use flavored vinegar.

Allow the water pan and baffle plate to stand with the de-liming mixture. (The time required will vary depending on the amount of deposits in the pan.)

After the de-liming period, drain the solution from the water pan, and wash the water pan and baffle plate thoroughly.

Re-install the water pan with the baffle plate into the bottom of unit.
NOTE: When installing the water pan, ensure the humidity element is laying flat in the water pan between the water baffles and is not tilted upward. -
Plug the unit into its power source and fill the water pan as usual for daily operation. Refer to the procedure in the OPERATION section of this manual.

OPTIONS AND ACCESSORIES
Full Perimeter Bumper
A full perimeter bumper around the base of the unit is available and must be
factory-installed. The bumper assembly provides protection to the unit and
surrounding wall surfaces while it is being moved.
Tray Slides
Additional tray slides are available as accessories. Use additional tray
slides to increase the tray capacity of the unit when the height of the
trays/product allow.
Upper Cord Location
Units can be supplied with the power cord located on the upper back of the
unit, must be factory-installed.
Cord Wind Bracket
A bracket for holding power cord during transport is available. This option
can be supplied only on units ordered with the transportation package, must be
factory-installed.
Sheet Pans
Full- and Half-size sheet pans are available for added convenience.
Stainless Steel Door
Stainless steel doors are available for all models in lieu of the standard
Lexan® door.
Deluxe Package
The optional deluxe package features flush mount handles and full perimeter Bumper. This package is not available for retrofit.
Transport Package
The optional transport package features a full perimeter bumper, push-pull
stand-off handles, door transport latch and 2″(51 mm) wide casters. This
package is not for retrofit.

Hatco warrants the products that it manufactures (the “Products”) to be free
from defects in materials and workmanship, under normal use and service, for a
period of one (1) year from the date of purchase when installed and maintained
in accordance with Hatco’s written instructions or 18 months from the date of
shipment from Hatco. Buyer must establish the Product’s purchase date by
registering the Product with Hatco or by other means satisfactory to Hatco in
its sole discretion.

LIMITATION OF REMEDIES AND DAMAGES
Hatco’s liability and Buyer’s exclusive remedy hereunder will be limited solely, at Hatco’s option, to repair or replacement using new or refurbished parts or Product by Hatco or a Hatco-authorized service agency (other than where Buyer is located outside of the United States, Canada, United Kingdom, or Australia, in which case Hatco’s liability and Buyer’s exclusive remedy hereunder will be limited solely to replacement of part under warranty) with respect to any claim made within the applicable warranty period referred to above. Hatco reserves the right to accept or reject any such claim in whole or in part. In the context of this Limited Warranty, “refurbished” means a part or Product that has been returned to its original specifications by Hatco or a Hatco-authorized service agency. Hatco will not accept the return of any Product without prior written approval from Hatco, and all such approved returns shall be made at Buyer’s sole expense.
