We know you want to get straight to grilling, but please be sure to read all instructions and warnings in this manual before assembling and/or using your pellet grill. The only thing better than BBQ is BBQ done right!
SAFE OPERATING PRACTICES
General Safety and Installation Warnings
Improper installation, use, adjustment, alteration, service, or maintenance of this grill can cause injury or property damage. The manufacturer cannot be held responsible for damage or injury caused by improper use of this grill. To reduce the risk of fire, electric shock, or injury when using, installing, or servicing your Victory grill, please thoroughly read the warnings found below.

INSTALLATION AND ASSEMBLY
Consult the AHJ (Authority Having Jurisdiction) or a local contractor if you
have any uncertainties about using this grill. The use of accessories or
components not recommended by the grill manufacturer may cause injuries and
will void the warranty. Because of the kamado’s heavyweight, always use 2–3
people when moving the unit. Never move the unit when hot.
OPERATION
This unit is for outdoor use only. Do not operate in a building, garage, or
any other enclosed or partially enclosed areas. This could result in carbon
monoxide buildup, which can cause injury or death.
Every part of the grill will be hot during and for a period of time after use. Use caution, keep children and pets away from the grill, and always use gloves and protective clothing during use. Never touch the kamado body while in use. Take extreme caution when opening the ceramic lid because hot coals can flash should they receive a rush of air. Always open the lid roughly 1–2 inches and hold it there for 5–10 seconds to let oxygen slowly enter the grill. Then slowly lift the lid completely open (this process is also known as “burping” the grill). The use of long, heat-resistant gloves is necessary for safety at all times when using this grill.
Do not touch hot surfaces, and always use the handle to open or close the grill. Always have a fire extinguisher available when using your kamado. If the need to extinguish an out-of-control fire arises, use the fire extinguisher. Do not attempt to close the lid or vents. Never use water on a fire in a kamado grill due to the presence of grease. Use cooking utensils with wood or heat-resistant handles and insulated oven mitts or grill mitts when operating the grill.
Wear proper clothing when operating this grill. Loose-fitting or hanging garments should never be worn while using the grill. Never lean over the cooking surface when lighting or operating the grill. Never use this grill in windy conditions. If located in a consistently windy area (oceanfront, mountaintop, etc.), a wind break will be required. Winds blowing into or across the grill exhaust can affect performance and/or cause various parts of the grill to get hotter than expected. Children should not be left alone or unattended in an area where any grill is in use. They should never be allowed to touch, sit, or stand on any part of a grill.
Never look into the top vent of the kamado while in use. The escaping exhaust is very hot and could cause injury. Keeping airflow through the unit is critical for performance and safety. Never cook with the lid open. Take caution to never spill liquids into the grill when it is hot.
CHARCOAL SAFETY
Place charcoal only in the charcoal plate and nowhere else. Never use lighter
fluid to light coals. Never use gasoline, kerosene, or other highly volatile
fluids as a starter because they present an explosion hazard. Never use an
electric starter in the rain or when standing on wet ground. Once the grill is
lit, do not touch the charcoal to see if it’s hot. Keep grill uncovered until
ready to cook. Never leave coals and ashes in the grill unattended. Always
allow coals to burn out completely and let ashes cool completely before
disposing of.
Dispose of cold ashes by wrapping them in heavy-duty aluminum foil and placing them in a non-combustible container. Be sure no other combustible materials are nearby when disposing of ashes. Extinguished coals and ashes must be placed within a safe distance from all structures and combustible materials.
STORAGE/MAINTENANCE
Do not use the grill as a storage area for flammable materials. Keep the area
clear and free from combustible materials, gasoline, and other flammable
vapors and liquids. Failure to do so can result in injury, death, explosion,
or fire. Do not store any propane/butane (G31-G30) cylinder in the vicinity of
this or any other grill. Do not store anything on the grill, and make sure
food is not forgotten on the grill. Forgotten items could melt or catch fire
when the grill is lit. Do not store items of interest to children in cabinets
above the grill or in the grill. Children climbing on the grill to reach these
items could be seriously injured.
The hinge mechanism and bands should be checked regularly to ensure that the hinge operates properly and the bands are tight to the grill body. Periodic lubrication of this mechanism will also smooth the opening and closing of the grill over time. Take caution when removing/handling anything that has been inside the grill. The cooking accessories, cooking grids, inner trays, and other internal components will be extremely hot. Always use protective gloves and never allow others in close proximity of the grill when handling its hot parts.

PARTS LIST
Prior to assembly, check all parts against the parts list. Piece together on a
soft surface to avoid scratching the paint. For ease of setup, keep the bolts
loosely fastened during assembly and then tighten fully only once construction
is complete.
WARNING:
Do not over-tighten bolts. Tighten bolts with only moderate pressure to avoid
damaging the bolts or components of the grill.
Important:
Remove all packaging before use. Retain the safety instructions and review
them before the first cook. Ensure the lid is closed prior to assembly.
UNPACKING THE UNIT
Your Victory kamado grill requires some setup. We recommend the use of professional help during the installation of your unit because improper installation may affect your warranty. Below are tips for safe and easy unpacking.
- Always use 2–3 people when moving the grill.
- Remove the unit from the box along with all accessories and check that no damage has occurred to the unit or any parts.
- Inspect the hinge upon unpacking. The fasteners may come loose during shipping and might need to be tightened.
- When moving or transporting your grill, never do so by lifting on the hinge of the grill.
- The lower vent can be used for lifting only if gloves are worn.
- Various parts of the grill are shipped with protective packaging and supports, which will need to be simply unpackaged and set in place.

ASSEMBLY

Attaching the caster wheels:
Attach the four pre-threaded caster wheels to each of the four legs by hand- tightening them into the hole. Place locking wheels opposite one another. -
Assembling the cart:
Insert the two crosspieces into two of the four legs. Secure with screws. -
Completing the cart:
Insert the crosspieces into the other two legs. Secure with screws. -
Lifting the ceramic body onto the cart:
CAUTION:
Use a minimum of two people when lifting the ceramic body onto the cart. Lifting by the hinge or the side tables could result in injury and damage to the product.
To place the ceramic body on the cart, first, remove all the items inside the grill to make lifting easier. Make sure the cart is secure and that all the bolts are tight. Press down on the caster levers to lock the caster wheels to ensure the cart cannot move once the grill is set into it. To lift, place one hand in the bottom vent of the ceramic body and the other under the grill, then lift and set it in the cart. Place the kamado on the cart with the bottom vent centered between two of the legs, allowing the vent to open and close without any interruption. -
Attaching the top vent:
Once the grill is securely sitting in the cart, attach the top vent. Align the side notch with the thermometer at the front of the grill, then set it over the top opening. Secure with pre-attached bolt and nut.

Installing the side shelf brackets:
Using the eight bolts that are pre-attached with their corresponding nuts and washers, attach the four table brackets to the ceramic body. -
Mounting the side shelves:
Hook the table hinges into each of the table brackets. Shelves fold up to hold items during grilling. -
Positioning the grids:
Place the firebox, charcoal plate, and the main cooking grid inside the ceramic body. -
Attaching the lid handle:
Use the four bolts that are pre-attached with their corresponding washers and nuts to attach the lid handle to the ceramic body.
Your ceramic kamado is assembled!
Please ensure that instructions in the Curing section are read thoroughly and
followed prior to use.

INSTALLING THE GRILL IN A BBQ ISLAND
WARNING: GRILL INSTALLATION
- This grill must be installed in accordance with all local codes and meet the required 48-inch clearance from combustible surfaces. Combustible surfaces include but are not limited to:
- Wood
- Gyprock
- Paper
- Plants
- Cloth
- Rubber
- Plastics
- Fiberglass
- Keep this grill in a level position at all times.
- This grill is intended for outdoor use in open-air spaces only.
- Never operate this grill in an enclosed or partially enclosed structure, whether permanent or temporary.
- Always have equipment measured by a contractor before building.
LOCATION OF GRILL
Clearance from Combustibles
- This grill must maintain a distance of at least 48 inches from the side, front, and back of all combustible surfaces.
- Never install and/or use this grill on, around, or under any combustible floor or surface, no matter the distance.
- Do not store combustible materials, gasoline, or flammable liquids or vapors around this grill.
Adequate Ventilation
- Ensure there is enough ventilation for the grill, grill cart, and/or island cavity to provide proper combustion and prevent heat buildup.
- Obstruction of this grill’s lower front vent will affect the grill’s performance and could be dangerous.
Covered Enclosures
Do not use this grill inside a building or any other enclosed or partially
enclosed area, such as balconies or pergolas, whether temporary or permanent.
Intended Surfaces
- Use this grill only on a firm, level surface.
- A foot kit is required when placing the kamado anywhere other than on the cart. The feet, which are sold separately, will provide an air gap and decrease the transfer of heat from the kamado to surrounding materials.
- This grill is not designed for recreational vehicles and should not be installed on a boat or other marine craft.
Weather and Chemical Hazards
- Always keep this grill protected from adverse weather, including rain and high winds.
- This grill’s components may corrode faster than normal if exposed to the following elements:
- Saltwater environments (coastal or poolside)
- Pool chemicals
- Garden fertilizers
- Countertop chemicals (stone sealer)
- If this grill is exposed to any of the elements above, more frequent cleaning and covering of the unit is required.
- Never store any chemicals near this grill.
- Moisture that has entered this grill may create mold inside the unit that could spill out the front vent.
Installation Tips
- You will need at least one other person to help you install this grill to avoid damaging it or the island.
- For built-in applications, create a non-combustible surface for this grill to sit on in your outdoor kitchen.
- Any material within the 48-inch clearance zone must be made of non-combustible materials.
- If there is a wall or partition behind the grill, allow an additional 12 inches behind the grill for the lid to open.
- Consider leaving even more space behind the grill to reduce staining of the non-combustible wall caused by smoke exiting the grill.
- Note that if dealing with combustible surfaces, this amount of space does not meet the required 48-inch clearance.
- Make sure there is airflow to the lower vent of this grill.
- Once this grill can physically be installed in accordance with the required clearance from combustibles in all directions, aspects of your outdoor kitchen like the height of the cooking surface and extra space around the unit are subject to personal preference.
- The cooking surface is normally positioned at or slightly higher than countertop height.
- Check with local authorities for building codes and to find out if a permit is required for outdoor kitchen construction.
WARNING: GRILL INSTALLATION
The feet kit does not come standard with this grill, but feet are required
when installing the kamado anywhere other than the cart. Attaching the feet
provides an air gap and lessens the transfer of heat to surrounding materials.

BEFORE FIRST-TIME OPERATION
Prior to cooking on your grill, there are a few more steps you must take to ensure proper use and the best possible grilling experience.
Pre-use Checklist
Please make sure that all of the following are true:
- Minimum clearances are maintained.
- All packaging has been removed.
- All parts and components are properly in place and secured to the unit.
- All exterior surfaces are cleaned.
Curing the Unit
Putting your kamado grill through the curing process is important for its
long-term operation and care. Failure to cure the grill can result in your
unit becoming damaged. For instance, the felt gasket seal can sustain damage
if the first burns are too hot and it hasn’t had a chance to mature with use.
To properly cure your kamado grill, follow the instructions below:
- Place one handful of lump charcoal and one lighter cube or solid firelighter on top of the charcoal plate.
- Open the bottom vent and light the lighter cube using a long-nosed lighter or safety match. Do not use gasoline, white spirit, lighter fluid, alcohol, or other similar chemicals for lighting and relighting.
- Once the lump charcoal is lit, close the lid and leave both the top and bottom vents mostly closed. The temperature should be around 180–225 degrees Fahrenheit.
- Burn until all the fuel is used and the fire has naturally gone out. This process should take approximately two hours.
After Curing
When the grill has been properly cured and has cooled down, it is then
necessary that you do the following:
- Inspect all fasteners. The metal band connecting the lid to your grill will expand from the heat and could become loose, so tighten it with a wrench if necessary.
- Start grilling!
Ceramic “Crazing”
Upon close inspection, the finish of your kamado grill may appear to have
crack lines. This is not the cracking of the ceramic. This is known as
“crazing” and is caused by the different expansion rates between the glaze
finish and the clay. This behavior is normal and expected with all ceramic
kamados.

Limited Lifetime Warranty
Victory warrants that all ceramic parts found in this kamado grill have no
defects in material and craftsmanship for as long as the original purchaser
owns the grill.
5-Year Warranty on Metal Parts
Victory warrants that all metal and cast iron parts found in this kamado grill
have no defects in material and craftsmanship for a 5-year period.
1-Year Warranty on Thermometer and Gaskets
Victory warrants that the thermometer and gaskets found in this kamado grill
have no defects in material and craftsmanship for a 1-year period.
When Does Warranty Coverage Start?
Warranty coverage begins on the original date of purchase and covers the
original purchaser only. Your grill must be registered for the warranty to
apply. Should a defect in material or craftsmanship be found during the
applicable warranty period under normal use and maintenance, Victory will, at
our discretion, replace or repair the faulty component at no cost to you.
However, this warranty does not apply to labor or any other cost associated
with the service, repair, or operation of this kamado grill.
What Does This Warranty Not Cover?
This warranty does not apply to damage caused in the following ways: by abuse
or use of the product other than that for which it is designed; by lack of
proper use, assembly, maintenance, or installation; by accidents or natural
disasters; by unapproved attachments or modifications; or by transportation.
This warranty also does not cover damage from normal wear and tear (such as
dents, scratches, or chipping) or changes to the grill’s appearance that do
not affect its performance (crazing).
This limited warranty is exclusive and in lieu of any other warranty, written or oral, express or implied, including but not limited to the warranty of merchantability or fitness for a particular purpose. The duration of any implied warranties, including any implied warranty of merchantability or fitness for a particular purpose, is expressly limited to the duration of the warranty period for the applicable component. Some states do not allow limitations on how long an implied warranty lasts, so the above limitation may not apply to you.
The purchaser’s exclusive remedy for breach of this limited warranty or any other implied warranty shall be limited as specified herein to replacement. In no case shall Victory be liable for any special, incidental, or consequential damages. Some states do not allow the exclusion or limitation of special, incidental, or consequential damages, so the above limitation or exclusion may not apply to you.
