HOW TO MAKE HOT CHOCOLATE BOMBS
INGREDIENTS
- 12 ounces high-quality semi-sweet chocolate bars or chips, such as Ghirardelli
- 6 tablespoons hot cocoa mix
- 1 cup mini marshmallows
- Sprinkles, for decorating (optional)
- 6 cups whole or 2% milk
EQUIPMENT
- Chefs knife and cutting board
- Measuring cups and spoons
- Nostalgia Hot Chocolate Bomb Mold
- Digital probe thermometer
- Large heatproof bowl
- 4-quart pot
- Pastry brush or small paint brush
- Small piping bag (optional)
- Muffin papers, for packaging (optional)
- Nitrile or Latex gloves
DIRECTIONS
Melt The Chocolate:
- First, set up a double boiler. Fill a 4-quart pot halfway with water and set over medium-high heat. Find a heat proof bowl that fits securely on top of the pot without touching the water.
- Next, set 1/3 of chocolate chips aside (about 4 ounces). Transfer the remaining 2/3 (8 ounces) to the bowl and fit over the double boiler. Melt the chocolate in the double boiler, stirring often with a silicone spatula to help with melting. Keep an eye on the chocolate temperature — it should not get too hot to touch, you can check this using the digital probe thermometer .
- Remove the bowl from the double boiler. Add the reserved chocolate chips in 3 increments, stirring until fully melted after each addition. Continue mixing until the chocolate is between 88 and 91°F. (You can check this using the digital probe thermometer)
Creating The Hot Chocolate Bombs Using Silicone Mold
- COAT THE SPHERE MOLDS USING THE MELTED CHOCOLATE. Drop 1 tablespoon melted chocolate into half of the silicone sphere mold tray. Using a brush, spread the chocolate up the sides and over the edges of the molds by just a bit. Let molds sit at room temperature until the chocolate has hardened (5 to 15 minutes). Then reapeat Vagain; Brush the spehere molds with more melted chocolate (about 1 teaspoon each). At this point molds should have a thick, but not too thick of a chocolate coat in each sphere mold, IT IS IMPORTANT that the chocolate is evenly spread in the molds. Let sit at room temperature until completely hardened, (another 15 to 30 minutes.) Seen below
- FILL HALF THE SPHERES WITH COCOA AND MARSHMALLOWS. Place 1 tablespoon hot cocoa mix, 1 heaping tablespoon mini marshmallows, and 1/2 teaspoon sprinkles (if desired) into 3 of the 6 half sphere molds. Seen below
- PAINT OR PIPE A BORDER OF CHOCOLATE ON THE UNFILLED SHELLS AND ASSEMBLE THE BOMBS. Wearing nitrile or latex gloves, gently release the remaining 3 unfilled shells from their molds, but keep them resting in the well. Using a brush or a small piping bag coat the edge of one of the unfilled chocolate half spheres with reamining melted chocolate. (If the chocolate has cooled place it back briefly over the double boiler until warmed back to between 88 and 91°F.) Seen below
- Once the half mold has a thin line of chocolate on the edge take the marshmallow-filled shell and hold gently together with the half chocolate unfilled sphere mold to form a full sphere; you now have a fully assembled hot chocolate bomb! Very carefully place the sphere back in the mold dish and let sit at room temperature to harden (This will be atleast 15 minutes). Seen below
Decorate And Serve:
- DRIZZLE WITH ANY REMAINING CHOCOLATE AND ADD SPRINKLES Before storing, you can decoratively drizzle the bombs with any remaining chocolate and add sprinkles if desired. Use gloves when decorating or moving the cocoa bombs to prevent fingerprints and reduce chances of melting.
Storage: Store hot chocolate bombs in an airtight container at room temperature for up to 2 weeks.
