Tips for slow cooking

  • Meat and vegetables retain more juice during slow cooking than traditional cooking.
  • To achieve the best cooking results, fill the pot at least halfway.
  • Small quantities of food can also be prepared, but in this case it may be necessary to adjust the cooking time.
  • When cooking soup or vegetables, leave enough space under the lid.
  • When cooking vegetables and meat, place the vegetables at the bottom of the pot first, then add the meat and other ingredients.
  • Remember that lifting the lid frequently will increase cooking time.
  • Always add warm liquid before cooking frozen foods.
  • Due to the nature of slow cooking, the meat does not turn brown as if cooked in a pan or in the oven. It is not necessary to fry meat or poultry before slow cooking, but you can do so if you prefer your meat like this.
  • Frying minced beef, bacon and sausag es before slow cooking may be desirable if you want to remove excess fat from the meat. The meat should be placed in the inner pot in such a way that it does not touch the glass lid.
  • Lean meat such as chicken or pork tenderloin cooks faster than fibrous an d fatty meat such as beef chuck or pork picnic shoulder. Cooking meat on the bone will increase cooking time compared to boneless meat.
  • Cut the meat into smaller pieces when cooked together with pre cooked foods such as beans, fruit or vegetables (mushroom s, diced onion, aubergine or finely chopped vegetables).
  • Some foods such as carrots, potatoes and beets require longer cooking than meat, so cut them into smaller pieces before adding them to the meat. Make sure you place them at the bottom of the inner co oking pot and cover them with liquid.
  • To achieve the fullest taste when slow cooking, add whole herbs and spices.
  • Beans must completely soft before they can be combined with sweet or sour foods.
  • When cooking in a slow cooker, remember that liquids are not produced in the same way as conventional cooking. Reduce the amount of liquid in recipes which are not designed for slow cookers. Soups and rice are an exception to this rule.
  • Remember that liquids can be added at any time.
  • Add fresh dairy products (milk , sour cream or yoghurt) just before serving at the table.
  • Cooking of rice, noodles and pasta for a long time is not recommended. Cook them separately and only add them to the slow pot for the last 30 minutes.

SOUS VIDE

Temperature 40°C to 90°C, maximum cooking time 72 hours.
Cooking with the Sous vide method is the true culinary art! Although it is basically a very simple method of cooking, this method of cooking is often used by gourmet chefs to prepare complex dishes, varied starters and vegetables. But now you can bring five star cooking quality to your kitchen.

  • The thickness of meat, poultry and fish determines the cooking time. After removing the food from the bag, use a thermometer to check that a safe internal temperature has been reached.
  • Food s afety is always a priority during handling of food and cooking. If you are not sure about cooking correctly, add 30 minutes of cooking time to safely pasteurise eggs or poultry.
  • Frying after cooking gives the food a crispy texture. Once the cooking process has ended, pour some oil into
  • hot pan and quickly fry the cooked meat for 30 seconds on each side.
  • Vegetables will cook more quickly when cut into thin small pieces.
  • Fruit can be cooked using Sous vide to prepare toppings, purees, syrups and more. Cook for 2 to 2½ hours at 70°C and allow to cool in the plastic bag before use.
  • Always use BPA free vacuum bags when cooking food.
  1. Vacuum pack foods into bags of a suitable size.
  2. Fill the inner pan with water and add the sealed bag to the water at room temper ature. Make sure the bags are completely immersed in water.
  3. When cooking multiple bags, use the Sous Vide ” stand to separate the bags.
  4. Place the lid on the appliance and select the SOUS VIDE ” function. This function is most effective when the pot is cove red with the lid.
  5. Connect the power cord to the mains, select the programme and set the Temperature/Time using the + and buttons.
  6. After 10 seconds, the appliance will beep three times and begin the cooking process.
  7.  The cooking countdown does not begin u ntil the desired temperature is reached. When the temperature is reached, the appliance automatically switches to a countdown of the set cooking time.
  8. You can stop the cooking process at any time by pressing the CANCEL ” button.

RICE

Automatic temperature, cooking time 6 to 14 minutes.
We recommend using a ratio of 1:1 (1 cup of water to 1 cup of rice). Rinse the rice in water and add salt. Add butter if you want to improve the flavour and also to prevent sticking.

  1. Connect the power cord to the mains, repeatedly press the Rice ” programme to select L (LOW) mode for white rice or H (HIGH) mode for dark rice and set the cooking time using the + and
buttons. The default time for cooking rice is 10 minutes. You can reduce or increase the time by 1 to 4 minutes.

  2. After 10 seconds, the appliance will beep three times and begin the cooking process. The display will show On ” and the cooking process will begin.

  3. The cooking countdown does not begun until will not start until the water has boiled and been soaked up by the rice.

Do not add more than 9 cups of uncooked rice – the total volume of water and rice in the pot should not exceed 3/4 of its volume.

YOGURT

Automatic temperature, cooking time 4 to 24 hours.

  1. Carefully wash and dry the cooking pot and glass lid.
  2. Pour pasteurised milk mixed with yogurt into the cooking pot, e.g. 2 litres (do not use more than 4 litres of milk at any one time).
  3. Connect the power cord to the mains, select the YOGURT ” programm and set the time using the + and buttons.
  4. Once fermentation is complete, the display will show OFF ”. Remove the cooking pot and store it in the refrigerator overnight in order to allow t he flavour to develop fully.
  5. Add jam if you like and enjoy your very own homemade yogurt!

TIP: The quality of the resulting yogurt is directly proportional to the quality of the milk and yogurt used.

If you use lower fat milk, the resulting yogurt may be thinner. For extra thick yogurt, repeat the pasteurisation cycle twice. You can also use unpasteurised milk, which must first be heated to a temperature of around 70°C for 30 seconds and subsequently cooled to 40°C. Then add high quality yogurt with live active cultures to the milk, mix everything thoroughly and select the “JOGURT” programme. The basic cooking time is set to 8 hours. This time can be changed as you like according to the resulting thickness of yogurt required.

SOUND SETTINGS

Switching the sound off: press and hold down – under “Time” for 5 seconds. The display shows “SOFF”. Switching the sound on: press and hold down + under “Time” for 5 seconds. The display shows “S On”.
