Safety instructions

Read through the instructions carefully before use and save them for future reference.

Connect the appliance to 220-240 V AC only. Use the appliance for its intended purpose only.

Always unplug the appliance after use and before cleaning and maintenance.

To protect against electric shock, do not immerse the cord, plug or entire appliance in water or any other liquid. The appliance must not be immersed beyond the marked MAX level.

This appliance may be used by persons (including children aged 8 and upwards) with limited physical, sensory or mental capacity or who lack knowledge/experience of the product, provided they do so under supervision or after being instructed how to use the product safely by a person responsible for their safety, and they have been made aware of the possible risks.

Children should be kept under supervision to ensure that they do not play with the appliance. Children cannot always perceive and understand the potential risks..

Cleaning and maintenance may not be carried out by children..

Place the appliance and the cord out of reach of children if they are under 8 years of age.

Make sure that the cord does not hang over the edge of the worktop surface.

Never place the appliance on or near a hob, naked flames or similar.

Warning! The surfaces of the appliance may get hot during use, so do not touch these surfaces during use.

Allow the appliance to cool down before lifting it out of the container, before cleaning it and before emptying the container.

Do not tilt or move the appliance during use.

The container must withstand a temperature of at least 100°C.

Place the container and the appliance on a stable, moisture-resistant surface.

The water level must be above the appliance’s MIN level and below the MAX level.

If the container contains too much water, the water may overflow when the ingredients are lowered into it. Make sure that this does not happen.

Never leave the appliance unattended.

Always store the appliance vertically after use.

The appliance must not be used outdoors.

Always check the appliance, cord and plug before use. If the cord is damaged, it must be replaced by the manufacturer, an authorised service workshop or a qualified person, in order to avoid posing a hazard.

The appliance is not intended for use with an external timer or a separate remote control system.

Always unplug the appliance before removing it from the water.

After the plug has been pulled out, the appliance will be hot and should not be touched or placed on heat-sensitive surfaces.

Sous vide has been used as a cooking technique in the restaurant sector for many years and is considered to be unbeatable when it comes to preserving the taste and quality of the ingredients.
Sous vide means ”under vacuum”. With a sous vide cooker a lower and more
precise temperature is applied to the food. This means that if you set the
temperature to 58.4°C for example and place a piece of vacuum packed meat in
this, the meat will be cooked to this temperature right through. Cooking times
are longer than with traditional cooking and the vacuum-packed food retains
its nutrients and flavour in a completely different way. Meat becomes more
tender and vegetables have a more concentrated flavour.
Food that is to be cooked sous vide must first be vacuum packed. Otherwise the
juice and flavour will disappear into the water. Note that eggs with shells
should not be vacuum-packed before cooking.
This sous vide cooker is equipped with a circulator, which circulates the
water so as to maintain a precise, even water temperature at all times. You
should be aware that when you cook sous vide the surface of the meat does not
have the cooked appearance you are used to. For this reason, you must quickly
sear the meat for maximum surface flavour. This can be done on the grill or in
a frying pan.
Food safety
Food safety when cooking with sous vide is different from cooking using conventional cooking methods. Do not start the cooking process until you fully understand the specific food handling practices needed to prevent, eliminate or reduce the biological, chemical and physical hazards associated with the food to a safe level.
- Be sure to have clean hands and only use clean kitchen utensils and equipment.
- Ensure that you have fresh, high quality ingredients.
- Only use fresh, well cleaned vegetables and herbs.
- Use separate kitchen tools for different ingredients. You must keep raw food and its kitchen tools separate from cooked food.
- Always prepare the food properly; see the recommendations in the table later in the instructions.
- Serve the cooked food immediately or follow routines for safe storage and cooling. If the food is not served immediately, it should be refrigerated at 3°C or lower.
- The best way to kill parasites in fish and shellfish is to keep them frozen right up to cooking or to buy ready-frozen fish or shellfish. Follow the recommended guidelines for cooking time and temperature to achieve pasteurisation.
The standard for freezing to minimise the risk of parasites is to freeze at:
- a. −35°C for 15 hours, or
- b. −20°C for 7 days, or
- c. at −35°C until frozen through and then store at −20°C or a lower temperature for at least 24 hours.
Before use
Attach the sous video appliance to the pot/container so that the fastening
screw is located on the outside of the container. Note that the water level
must be above the indicated MIN level.Fits pots and containers with minimum 24
cm in diameter and 16 cm in height. Note that the pot must contain at least 5
liters of water when operating. The sous vide appliance has a maximum capacity
of 20 litres for heating water.
Note that maximum water capacity at temperatures exceeding 75̶ is 15 litres to
guarantee that the water keeps the temperature set to get properly cooked
food. Make sure to use the sous vide balls to avoid water evaporation and keep
a constant temperature.
NOTE! The appliance must be screwed onto a container and may not be placed freely. Note that it must also be placed completely straight in the container.
- Start by seasoning and vacuum packing the ingredients to be cooked so that everything is prepared before the appliance is started. Follow the instructions in the manual for the vacuum packer before vacuum packing.
- Fill the pot/container with water above the MIN mark on the circulator, otherwise the appliance will not start and the display shows ”E1”. Note that the water level should be between the MIN and MAX markings when the vacuum-packed ingredients are immersed in the water. Warm tap water can be used to shorten the heating time.
- Place the pot/container on a flat and moisture-resistant surface (preferably on a trivet) and plug the appliance into a wall outlet. A beep will be heard and the display will flash, showing 8.8.8.8. and 88:88. Start the appliance by pressing the power/start/pause button on the display for about 2 seconds, the display will show the presets 56°C and 08:00.
- The appliance is preset for temperature display in °C. If display in °F is desired, press the temperature/time selector button (6) for about 3 seconds to switch between the temperature units. Note that this must be done before starting the appliance.
- Press the time/temperature setting button (6), the display will flash and the desired temperature can now be set depending on what to cook (see table below) using the + and – buttons. The temperature range is 25-90°C.
- Press the time/temperature button again. The timer display will flash and the desired time can now be set using the + and – button (0:10-72:00 hours). If the button is held in, the time will increase/decrease more quickly.
Guidelines for cooking
Raw food and ingredients that are not pasteurised can pose a health risk to immunocompromised persons, pregnant women, small children and the elderly.
- Sous vide cooking below 55°C must not exceed a cooking time of 4 hours. Food cooked at temperatures below 55°C for longer than 4 hours must be discarded.
- To achieve pasteurisation of beef, pork and poultry: internal temperature of 75°C for at least 2 min.
- To achieve pasteurisation of eggs: internal temperature of 75°C for at least 2 min.
- To achieve pasteurisation of vegetables: internal temperature of 65°C for at least 2 min.
- To achieve pasteurisation of fish and shellfish: internal temperature of 65°C for at least 2 min.
- The table below gives suggested temperatures for achieving the desired result. The circulator can be set with a temperature interval of 0.1°C so as to adapt to personal preferences. We therefore recommend using these temperatures as a starting point.
- The guidelines are for food at refrigerator temperature (about +5°C). If frozen goods are used, the cooking time should be increased by 50%.
CAUTION: Foods must not be pasteurised at low temperatures as this may pose a risk to some individuals. This includes pregnant women, young children, the elderly or other people with 56 compromised immune systems.
The times shown above are based on the ingredient thickness that is shown in the table. Using a thicker or thinner piece will affect the cooking time of the food. For example a steak or larger piece of beef 7 cm in diameter needs to be cooked for at least 5 hours at the desired temperature. The maximum thickness of a steak or larger piece of beef that should be cooked at a low temperature is 7 cm in diameter.
Start cooking

When the desired temperature and time have been set, press the power/start/pause button to start heating the water. Current water temperature will be shown on the display during the heating process. In the timer display, ”—-” will appear

Once the appliance reaches the set temperature, the appliance will beep 3 times to remind you to put the vacuum-packed food in the container. Note that the display can show the set temperature before the appliance beeps, but always wait until you hear the beep to be sure that the water has an even temperature.

Place the vacuum bag(s) containing the food vertically in the batch rack
or place the bag directly in the receptacle/pan if you are cooking larger ingredients. Always check that the water can circulate freely around the bag(s). Make sure that the content of the bag(s) is fully under the surface of the water. Cover the water surface with the accompanying sous vide balls to create an insulating effect that helps maintain an even temperature throughout the cooking process. The food is now cooked at the set temperature and for the set time (the timer counts down per minute). -
Press the power/start/pause button and the set cooking time will begin to count down. Cooking is now done according to the set temperature and time.

Cooking temperature and cooking time may change during the cooking. Press the power/start/pause button, then repeat the instructions to change temperature and/or time. Then press the same button again to resume cooking.

To stop or pause cooking, press the power/start/pause button. To resume cooking, press the same button again.

When the set time has passed, the appliance will beep 10 times and the time flashes.

To turn off the appliance, press the power/start/pause button for 2 seconds, one beep will be heard and the display will turn off. If the appliance is not switched off manually, the appliance will keep the process running. The timer display shows how long has elapsed since the set time was passed. The temperature display shows the current water temperature. After approximately 2 hours, the appliance will beep for 30 seconds. The appliance will then turn off automatically and the display will turn off. Always unplug after use.

Remove the vacuum bags from the container.
NOTE! Always empty the container after use and never reuse the same water for cooking.
Cleaning and maintenance

Always switch the appliance off and unplug it before any cleaning or maintenance.
-
Never submerge the control panel or cord into water or other liquids.
-
Do not allow the circulator to stand in water for prolonged periods.
-
The appliance and its parts must not be washed in a dishwasher.
-
Loosen the fastening screw and lift the appliance away from the container.
-
If food has fallen into the water during use, the appliance should be cleaned as follows.
-
Remove the rubber ring from the product. Twist and pull the stainless steel element cover along the channels.
Clean hard-to-reach places using a washing-up brush or toothbrush. Do not use a scouring sponge. After cleaning, adjust the point with the channel and turn the element cover anti-clockwise to tighten it. Make sure it is in the right position. A click will be heard. -
Wipe the control panel with a damp cloth.

Always store the appliance vertically after use.
Descaling
If the water where you live is hard, you should descale the appliance
regularly. The display shows CLn after a total usage time of 60, 120, 180
hours, etc. Descale the appliance as follows: fill a small container with
water (make sure that the water reaches above the MIN level in the appliance).
Add household vinegar as per the table.
It is also possible to use citric acid instead of vinegar. Add 50 g of citric acid per litre of water.
Plug in the appliance. Then set the temperature to 40°C and the timer to 3
hours as per the previous instructions. Press the power/start/pause button to
start heating. After 3 hours have passed, the appliance will beep. Switch off
the appliance and check the descaling results.
NOTE! Do not use ready-made descaling products to descale the appliance.
If there are still limescale deposits present, repeat the same procedure with
a new mixture of vinegar and water (or water/citric acid).
Once you have finished descaling, pour out the water/vinegar mixture and clean
the appliance and receptacle with clean water. Then dry the appliance before
storage.
NB! Make sure that the vinegar mixture or citric acid mixture does not
come into contact with the plastic parts of the appliance.
Troubleshooting
It is also possible to use citric acid instead of vinegar. Add 50 g of citric
acid per litre of water.
Plug in the appliance. Then set the temperature to 40°C and the timer to 3
hours as per the previous instructions. Press the power/start/pause button to
start heating. After 3 hours have passed, the appliance will beep. Switch off
the appliance and check the descaling results.
NOTE! Do not use ready-made descaling products to descale the appliance.
If there are still limescale deposits present, repeat the same procedure with
a new mixture of vinegar and water (or water/citric acid).Once descaling is
complete, pour out the mixture, and rinse the appliance and container with
clean water. Dry the appliance before storage.
NOTE! Make sure that the vinegar mixture or citric acid mixture does not
come into contact with the plastic parts of the appliance.
Disposal of the appliance
Legislation requires that all electrical and electronic equipment shall be
collected for reuse and recycling. Electrical and electronic equipment marked
with the symbol indicating separate collection of such equipment must be
returned to a municipal waste collection point.

proven defective product so that it conforms to its original specifications,
through the repair or replacement of any defective part and the necessary
labour. At OBH Nordicas choice, a replacement product may be provided instead
of repairing a defective product. OBH Nordicas sole obligation and your
exclusive resolution under this guarantee are limited to such repair or
replacement.
Conditions & Exclusions
OBH Nordica shall not be obliged to repair or replace any product which is not
accompanied by a valid proof of purchase. The defective product may be
returned to the store of purchase. This guarantee applies only for products
purchased and used for domestic purposes and will not cover any damage which
occurs as a result of misuse, negligence, failure to follow OBH Nordica
instructions, or a modification or unauthorised repair of the product, faulty
packaging by the owner or mishandling by any carrier. It also does not cover
normal wear and tear, maintenance or replacement of consumable parts, or the
following:
- using the wrong type of water or consumable
- mechanical damages, overloading
- damages or poor results specifically due to wrong voltage or frequency as stamped on the product ID or specification
- ingress of water, dust or insects into the product
- scaling (any de-scaling must be carried out according to the instructions for use)
- damage as a result of lightning or power surges
- damage to any glass or porcelain ware in the product
- accidents including fire, flood, etc
- professional or commercial use
Consumer Statutory Rights
OBH Nordica’s commercial guarantee does not affect the Statutory Rights a
consumer may have or those rights that cannot be excluded or limited, nor
rights against the retailer from which the consumer purchased the product.
This guarantee gives a consumer specific legal rights, and the consumer may
also have other legal rights which vary from Country to Country. The consumer
may assert any such rights at his sole discretion.
