AROMATIC LID FOR FUSIONTEC POTS
The Aromatic lid from WMF was developed espe-cially as an accessory for WMF Fusiontec pots and for the popular, aroma and nutrient-preserving, gentle stewing of meat and vegetable dishes at a low temperature.
Functional principle of the Aromatic lid
The Aromatic lid works according to the princi-ple of the condensation of
steam. After frying the food and adding a little liquid (water, stock or broth
etc.), place the Aromatic lid on the pot to close it tightly. During even
cooking at approx. 80°C, inside the pot the added liquid evapo-rates, rises,
condenses on the structured surface of the lid’s underside and drips back down
onto the food.
Thanks to this continuous cycle, the aromas are concentrated in the pot and
the ingredients are cooked very gently. You can intensify this process further
by filling the lid with ice or cold water.
Filling the Aromatic lid
The Aromatic lid may be filled no more than half with ice or cold water.
Please observe the follow-ing values for this:
Durchmesser | 22 cm | 24 cm | 28 cm |
---|---|---|---|
Eis / kaltes Wasser | 150 g | 200 g | 250 g |
Refilling the Aromatic lid
When used as intended, the Aromatic lid is fun-damentally designed so that the
water / ice added to the lid is largely retained. However, if the cooking time
is longer and / or the cooking setting is too high, the quantity can reduce
considerably. In this case, you may refill the lid.
Regulating the temperature
When heating up the pot and frying food, it is best to use a high cooking
setting. Then after deglazing the food with liquid, reduce the heat to a low
setting to keep the temperature in the pot as constant as possible at around
80 °C. If no thermometer is available to measure the tem-perature, you must
make sure that the added liquid does not boil, and that only a little steam is
rising. Then close the Aromatic lid.
Important safety instructions
- Due to its function, the Aromatic lid is heavier than other cookware lids. Therefore, always place it on a secure surface.
- When you lift the lid, it may tip over because of its weight and the liquid may spill onto the lid’s surface. The hot water can cause burns. There-fore, avoid jerky movements or tilting the lid.
- Reduce the cooking level after frying / deglaz-ing the food. Over a high cooking setting, the temperature of the water in the lid can reach up to 85°C and can cause injuries if not han-dled properly. Over a low cooking setting and a temperature of approx. 80 °C in the pot, the water in the lid heats up to a generally harm-less temperature of approx. 55 °C. Nevertheless, you must still take care to avoid contact with the hot water.
- The Aromatic lid was specially developed for this purpose and, in terms of its heat conduc-tivity, was designed in such a way that the handles remain well below the permissible tem-perature of 55 °C, even after one hour of cook-ing time. This value may increase with high cooking settings and/or long cooking times. We recommend using pan holders.
- Avoid removing the Aromatic lid during the cooking process.
- Keep other people who have not been instructed on how to use the Aromatic lid, and especially children, away during the cooking process.
