Prepare the Board

Prepare the Board

  1. Select the stock for your cheese board and cut it to final size. The board needs to be at least 3/4″ thick but can be thicker. The length and width can be whatever you want, but our example board is 7″ x 10″, which is a good size.
  2. Installation of the Cheese Slicer Kit hardware requires a deep hole in the end of the board to accept the arm, and the hole must be positioned correctly for the hardware to work. The hole must be 1/4″ in diameter x 33⁄4″ deep, and its center must be 3/8″ down from the board’s top face and 53⁄4″ from the front edge of the board. Fig. 1. It’s very important that it be drilled perfectly straight. We recommend using a drill press, clamping your board in a vise and using a drilling guide, or making a jig that can guide the drill bit straight into the material.
  3. Cut a groove the thickness of a table saw blade in the top face of the board to allow the cutting wire to pass all the way through the cheese. Set the table saw blade to a cutting height of 3/8″ and use a miter gauge and a stop block on the fence to cut the slot 3″ in from the end of the board where you drilled the hole. Make sure you cut the groove in the correct face and at the correct end of the board. Fig. 1.
  4.  Round over or chamfer the edges of your board, if desired, and apply a food-safe finish such as mineral oil.

Install the Hardware

Install the Hardware

Install the Hardware

  1. Fit the arm of the hardware into the 1/4″ diameter hole. As you slide the hardware, position the loop at the other end of the cutting wire into the slot and align it with the hole so the arm will pass through the loop. There’s a groove at the end of the arm to keep the wire from slipping; position the loop in that groove. Fig. 3.
  2. Fit the threaded wire tensioning anchor (with wire attached) back into the arm. Fig. 4.
  3. Thread the handle back onto the wire tensioning anchor and begin to tighten. Check the loop at the top of the arm to make sure it is seated in the groove in the arm. Fig. 5.
  4. Tighten the handle to bring the cutting wire fully taut. Your Cheese Slicer is ready for use. Fig. 6.
