Product Usage Instructions

Installation:

To install the handle:

  1. Gently slide the rubber seal at the back of the door to the side to reveal predrilled holes.
  2. Insert the supplied screws into the predrilled holes.
  3. Align the handle with the holes and use screws to secure it onto the door.
  4. Replace the rubber seal to ensure the handle is tightly fastened for safe operation.

Operation:

Control Panel:

  1. Press the UV light button to switch on the UV light.
  2. Toggle between temperature and humidity settings using the Temperature/Humidity button.
  3. Show the temperature in the fridge with the Temperature display.
  4. Increase or decrease temperature/humidity using respective buttons.
  5. Show relative humidity in the fridge with a Humidity display.
  6. For the 125L Model, press the Light button to switch on the LED light (automatically switches off after 4 hours).
  7. Press the Power button to turn the appliance on or off.

Operation Steps:

INSTALLATION

Installing the Handle
Your appliance comes with a metal stainless steel handle. For installation, attach it to the door using the screws provided in the package.

  1. Gently slide the rubber seal located at the back of the door to the side. This will reveal the predrilled holes.
  2. Insert the supplied screws into the predrilled holes.
  3. Align the handle with these holes and use screws to secure the handle firmly onto the door.

Location Requirements

  • Ensure the floor is flat, level and able to support the weight of the appliance when it’s fully loaded.
  • Keep the appliance away from direct sunlight and heat sources such as stoves, heaters, and radiators. Direct sunlight can damage the acrylic coating, while heat sources may increase electrical consumption.
  • This unit is designed exclusively for indoor use and should not be installed in a garage or any outdoor setting.
  • Do not place the appliance in hot, wet, or extremely damp environments, or near flammable materials.
  • Adequate airflow is necessary for the appliance’s proper functioning. Maintain at least a 15 cm clearance around the appliance for freestanding setups and ensure that its ventilation openings are not blocked.

Operation

  1. Before first use, ensure the appliance is properly cleaned. Refer to the “Cleaning and Care” section.
  2. Press the “Power” button to turn the appliance on.
  3. Press the “UV” button to sterilise the appliance for at least 2 hours before placing any meat inside.

Setting the Temperature

  1. Press the “Temperature/Humidity” button once. The temperature display will start flashing, indicating it’s in adjustment mode.
  2. Use the “Increase/Decrease” buttons to set the desired temperature. The temperature can be adjusted between 2-14°C in increments of 1°C.
  3. If there is no input within 3 seconds, the appliance will revert to its previous temperature setting and exit the adjustment mode, returning to the regular temperature display.

Setting the Humidity

  1. Press the “Temperature/Humidity” button twice. This will cause the humidity display to begin flashing, indicating that the appliance is now in humidity adjustment mode.
  2. To set your desired humidity level, use the “Increase/Decrease” buttons. You can adjust the humidity between 50-85% in 1% increments.
  3. If there is no input within 3 seconds, the appliance will automatically revert to the previously set humidity level and exit the adjustment mode, returning to the regular humidity display.

Notes:

  • Only place or hang meat in the appliance once the unit has reached your set temperature. This ensures the most effective and safe aging process.
  • For optimal aging results, the recommended settings are a temperature of 3°C (37°F) and an air humidity of 75%. These conditions are ideal for achieving the best maturity in the meat.
  • To toggle between Celsius (°C) and Fahrenheit (°F) on the temperature display, press and hold the “UV” and “Temperature/Humidity” buttons simultaneously for 3 seconds.

LED Light
Press the “Light” button to switch the LED light on. The light will automatically turn off after 4 hours.

UV Light
The UV light is used to sterilise the interior before, during and after the aging process.

  • Press the “UV” button to switch the UV light on.

Notes:

  • The door features a safety switch. When the door is opened, the UV light will automatically turn off. When the door is closed, the UV light will turn on again.
  • If the door is left open for longer than 1 minute, it will emit an alarm sound.

Rating Plate

  • The rating plate, which includes important connection and performance data, is located on the rear of the appliance.
  • Ensure that the appliance is within the ambient temperature range specified for its climate type, as indicated on the product nameplate. Operating the appliance outside the recommended temperature range for its climate type may result in abnormal temperatures or frost formation.

Dry Aging

  • Dry aging beef, pork, and poultry is a meticulous process that demands both time and optimal conditions. It’s important to be patient and maintain the right environment for successful aging.

  • High-quality meat can be stored on metal storage shelves or suspended from meat hooks within the appliance. Make sure to position the meat correctly for even aging.
    Note:
    Carefully ensure that the stainless-steel shelves and/or hanging rack for the butcher hooks are correctly locked into position before you place meat on it or suspend meat from it.

  • Regularly inspect the meat for any signs of mould. Prompt detection is key to preventing spoilage.

  • If the meat hasn’t reached your desired level of aging, it’s advisable to remove it from the equipment. You can then portion the meat according to your needs and proceed with preparation or further aging as necessary.

Notes:

  • It is important not to open the door too much to avoid unnecessarily affecting the climate of the equipment/the humidity of the air.
  • It is recommended to seek advice from a butcher/expert to inform you about the dry ageing process.

Aromas in the Dry Aging Process
The duration of the aging process influences the development of distinct aromas in the meat. Generally, the longer the meat is aged, the more intense and pronounced the aromas become.

~21 days| Subtle, Nutty Aromas:

Typically, after approximately 21 days of aging, you can expect to notice subtle, nutty aromas in the meat, depending on the type used.

~28-35 days| Fungi-like Aromas:

Around days of aging, the meat often develops aromas reminiscent of fungi, varying with the type of meat.

<45 days| Strong, Blue Cheese Aromas:

With extended aging of around 45 days or more, the meat may develop powerful aromas similar to blue cheese, depending on the meat type.

CLEANING & CARE

Before you begin cleaning the appliance, observe the following safety notices:

Interior and Exterior Walls

  • Clean the interior and exterior walls with lukewarm water and mild dishwashing liquid.
  • Never use cleaning or chemical solvents containing sand or acid.
  • Wipe the appliance thoroughly with a soft cloth.
  • Switch on the UV light for 24 hours after each aging process.
  • Use a glass cleaner to clean the glass surfaces and a commercially available stainless-steel cleaner for stainless steel surfaces.

Removal of Stainless-Steel Shelves

  • To remove a stainless-steel shelf, first remove the meat.
  • Use gloves that are suitable for contact with food.
  • Lift the stainless-steel shelf upwards and gently pull it out.

Drip Tray
Check the drip tray (K) for condensed water regularly. It is located on the rear right of the appliance. If necessary, remove the condensed water with a sponge.

Manual Defrosting

  • Defrost the device after each aging process.
  • Turn off the power but do not unplug the power cord. Let the appliance defrost manually. Pay attention to the drip tray and remove the condensed water during the defrosting process.

In case your appliance becomes iced up, follow these steps to defrost it safely:

  1. Carefully take out the meat and wrap it in cling film or place it in a foil bag. Then, store it in a suitable refrigerator. Ensure the appliance is switched off.
  2. Fill a pot with hot tap water (not boiling) and place it on a cloth on the lower metal shelf of the appliance.
  3. The steam from the hot water will gradually melt the ice, usually within about an hour. The resulting melted water will collect inside the appliance and possibly in the drip tray.
  4. Once the ice has melted, remove the pot and cloth. Thoroughly wipe the interior of the appliance and empty the drip tray. Dry the inside with a soft cloth.
  5. Leave the appliance door open for 1 hour to allow proper ventilation and drying.

Metal Components
For hygiene purposes and to ensure optimal performance, follow these steps to clean the appliance’s metal components:

  1. Take out the stainless-steel shelves, hanging rack, collecting tray, and butcher hooks from the appliance.

Carbon Filter

Replacing the UV lamp

Method 1:

Method 2:

Transporting the Appliance
