The appliance has 4 pre-set programs. Depending on the environment and ingredients, temperatures may vary a few degrees. A maximum mixture of 1 L/Qt can be processed in this appliance.

(*) the maturing time can be set in hou ly steps from 1 hour up to 10/14
hours.
Note: Before using the appliance the very first time wipe the inside and
outside of the base unit with a damp cloth and dry it. NEVER immerse the base
unit in water and NEVER wash the inner pot (its stainless steel liner), or
power cord. Wash all other parts with detergent and sterilize them for more
than 1 minute with boiling water. Never use abrasives, solvents, or steam
cleaners.
Operating Step
Sterilize all equipment and parts before starting except for the base unit and
connector.
1. Yogurt
1.1. Add 1 quart/liter of milk to the glass container. (Optimal milk
temperature is around 104°F/40 t), or you can use milk at a lower temperature
if you prefer.
1.2. Gently stir in 1/4 teaspoon M/1g of culture starter or the amount
directed by the manufacturer or about 4 tablespoons of unfla-vored store-
bought yogurt.
1.3. Atter the culture is fully mixed, place the lid on the glass container
close the little bear vent, and put the container in the inner pot.
1.4. Put the
cover on the base unit, connect the power supply, and the display will show
‘OF’
1.5. Touch the Function button, and the yogurt indicator will light up,
automatically setting it to culture for 8 hours.
1.6. Do not disturb the unit until the display finishes its hourly count-down
and reads HOP again.
1.7. Remove the cover, release the little bear vent, remove the lid from the
glass container, and check the yogurt. At this point, the yogurt surface
should be curdled Into a ‘Tofu Rower shape and ready to eat or seal and
refrigerate. Increasing the fermentation time will increase the acidity of the
culture, but beyond 14 hours, it will degrade the product.
1.8. To adjust the fermentation time: Immediately after step 1.5, press Timer
repeatedly until the display increases, then decreases until the desired total
hours are reached. Then, press confirm.
You may press the Confirm/Cancel button at any time to cancel, teset,
readjust, then reconfirm your program.
2. Greek Yogurt
2.1. Follow steps 1.1 through 1.4 to prepare the yogurt.
2.2. Touch the Greek Yogurt button, and the Greek Yogurt indicator will light
up, automatically setting the culture time for 10 hours.
2.3. Do not disturb the unit until the 10-hour cycle is complete.
2.4. Once the cycle is complete, refrigerate the glass container of fermented
yogurt for 3 hours to complete the solidification process.
2.5. Sterilize the second glass container, strainer lid, and strainer, and
place the strainer in the sterilized glass container.
2.6. Remove the glass container from the inner pot and slowly pour its
contents into the strainer, then replace the strainer lid.
2.7. Place the glass container with the lidded strainer in the refrigerator
for 6-8 hours according to taste.
PS. The liquid
removed by the strainer has nutritional value and can be consumed as is or
used as a liquid substitute in other recipes.
3. Fruit wine
3.1 Wash carefully and crush juicy, ripe, sweet, fresh fruit or fruit mixtures
according to your preference.
3.2 Add alternate layers of crushed fruit and sugar in to 1 proportions to
fill your sterile glass container just about 80%.
3.3 Put on the lid, close the little bear vent, place the glass container in
the inner pot and put on the cover.
3.4 Touch the
Function button twice and the Fruit Wine indicator will light and
automatically set a 160 hour cycle but only count down the last 99 hours.
3.5 Stir with a sterile spoon every 24 hours for full fermentation then
replace the container lid and reclose the vent.
3.6 Remove the glass container once a day and shake it back and forth
horizontally to ensure complete fermentation. Allow for the escape of the
generated gasses through the little bear vent if they have not already lifted
the lid. Reclose the lid and vent, replace the container in the inner pot, and
close the Cover.
3.7 When the fermenting cycle has returned to OF, pour the contents of the
glass container through the strainer into a lidded storage jar and
refrigerate. Dispose of the filtered out residue and resterilize the strainer.
The product should be consumed within a month for optimum taste.
4.Soft White Cheese
4.1 Sterilize all containers, lids, strainer and utensils coming in direct
contact with ingredients.
4.2 Add 3Cups/300z warm, whole milk, 4T/20z lemon juice/vinegar and a dash of
salt to sterile glass container,
4.3 Stir well, put on container lid, close vent, place in the inner pot and
put on its cover,
4.4 Connect power, press function, choose Cheese and the 6 hour fermentation
time sets automatically.
4.5 Let cool after the cycle ends, then refrigerate the container for 3 more
hours.
4.6 Place the sterilized strainer on the other sterile glass container.
4.7 Pour the cheese base into the strainer, remove the whey, put on the lid
and refrigerate 6 to 8 more hours,
Notes:
- Standard milk sterilization temperature in north America is 161°F for 5 sec. of 145 °F for 30 min.
- Use of vinegar or lemon juice will affect hardness. Salt to taste.
- Above instructions indicate warm, whole milk.
Safety precautions
Please read the Safety Precautions and Instructions carefully before use and keep the Instruction Manual in a safe place so that itcan be checked at any time.
- Before use ensure that the power supply is grounded and the input voltage is the same as that indicated on the bottom of the base unit.
- Use the product on a flat, stable surface that children cannot reach.
- Do not allow children to operate the product unsupervised,
- The power cord is purposely made short to reduce the risk of injury.
- Do not use the device with an extension cord or out of doors.
- Do not allow the power cord to touch hot surfaces or hang over sharp edges.
- If the power cord is damaged or broken it must be replaced by an equivalent cord or one readily available from Bear Customer Service.
- Be careful handling heated parts or objects that may cause injury,
- Handle the glass containers carefully even though they are dishwasher safe and may be sterilized with boiling water.
- Before cleaning unplug the appliance and let all parts cool down.
- Never use abrasives or solvents for cleaning the appliance or its parts.
- Do not immerse or clean the base unit, power cord, or plug in water.
- Clean inside and outside of the base unit with a damp cloth only and wipe dry. Dampen the cloth with a small amount of liquid dish detergent if necessary.
- It is not unusual for moisture to candense on the inner pot during processing. Merely unplug the unit and wipe dry when cool.
- If for any reason water enters the unit contact Customer Service.
- Unplug the appliance when not in use.
Troubleshootin

that in the process of fermentation the volume will increase
•Control the cooking time. Beginners must note and recorder the optimal mode.
The display shows the reset settings without completing the fermentation

are not spoiled and little time has passed after disconnecting, set the
required mode again.
