GET STARTED
- fill a pot or container with at least 2.5″ (63mm) of water, or above the Minimum Water Level Line on your Anova Precision® Cooker Pro, and place it on a heat-safe surface or trivet, away from counter edges
- attach your Anova Precision® Cooker Pro to the pot by adjusting the rear screw (do not overtighten screws)
- adjust the height of Anova Precision® Cooker Pro by adjusting the side screw (do not overtighten screws)
- plug in your Anova Precision® Cooker Pro, then start cooking by following the steps on the next page
USING THE DISPLAY
Led indicator modes
The LED light on the front of the device indicates the status of the cooker with different colors:
- White: idle
- Pulsing Blue: preheating Solid Blue: cooking
- Red: low water or error
Starting your cook and setting the timer
- Set or change desired temperature by pressing the Target Temperature button followed by the +/-buttons on your Anova Precision® Cooker Pro
- Set or change cooking time by pressing the Timer button followed by the +/- buttons
- Press the Start button to begin cooking. Cooking can begin with or without setting a Timer
Change between Fahrenheit and Celsius
- Press and hold the Current Temperature button for 3 seconds to change the unit of temperature when you are ready to cook, place your food in a re-sealable bag, lower the bag into your pot, and clip the bag to the side of the pot.
CARE + CLEANING
Unplug your Anova Precision® Cooker Pro before disassembling or cleaning the device.
How to disassemble
- Remove the clamp by loosening the side knob and sliding the clamp down off of the stainless steel skirt.
- Remove the skirt by grasping the stainless steel skirt, and gently twisting it clockwise to unlock it from the upper body. Then carefully pull the skirt downward off the device.
How to clean
- Wash the skirt with mild dish soap or place it in the dishwasher.
- Gently scrub the exposed metal and plastic components with a tooth brush and mild dish soap. When cleaning the unit, do not bend or displace any of the exposed components. Gently wipe clean with a dry cloth.
- Reassemble by sliding the stainless steel skirt over the exposed components, aligning the dots on the skirt with the grooves in the upper body. Gently twist the skirt counter-clockwise to lock it in place.
- Gently wipe the display with a lightly damp microfiber cloth, then gently wipe dry with a dry microfiber cloth.
CONNECT TO WI-FI
- download the Anova Culinary App on your smartphone or tablet
- connect to your preferred Wi-Fi network
- open the app and follow the on-screen instructions to connect to your Anova Precision® Cooker Pro

Frequently Asked Questions
Does anyone utilize this for home brewing?
I use mine for fruit and vegetable fermentations but not for brewing. I use a big Coleman cooler as a vessel with a circulator, and I place my ferment jars in the bath at 95°F. Because of how quickly the fermentation is occurring, it eventually appears to be boiling. At those temperatures, my ferments typically progress far enough in less than a week.
Can this product be used in a liquid that is denser than water, like soup?
No, soup is not intended to be circulated; water is. The main goal of sous vide cooking is to circulate water at a precise temperature while cooking food that has been vacuum sealed.
Can frozen foods be cooked right away from the freezer?
You can, indeed. Naturally, fresh food will take longer, and the length of time will depend on the packaging. I would Google the item you want to cook for temperature and cooking times if the packaging is okay.
How does this heat up 26 gallons? 100 liters.
Yes. And that CERTAINLY IS the goal. The professional is designed to cook, say, 20 racks of ribs in commercial kitchens. I use it with perhaps 15 gallons of water in a cooler. It effectively retains the heat, which reduces the need for electricity.
Can too much meat be cooked sous vide?
With the strength of today’s sous vide circulators, it doesn’t matter how much food you put in a sous vide bath as long as the water can still circulate between the items.
3 hours of sous vide are possible?
A 1-inch-thick steak needs to be sous vide cooked for a minimum of one hour and a maximum of three hours. That is correct! Your steak will come out perfectly whenever you remove it from the water bath within that large window of time, so you have plenty of time to do other things.
When should you salt for sous vide?
Therefore, unless you’re specifically trying to achieve a cured texture when sous vide cooking, it’s usually preferable to add salt after the sous vide cooking phase. It is only advised to salt a steak before cooking it sous vide if it will be served right away.
Does it function with 220V?
A 220v version exists.
Can you cook steak, chicken, duck, fish, shellfish, and vegetables in this precision cooker?
This device is extremely reliable and accurate. I use it to cook beef tenderloins in a hotel kitchen, and they turn out perfectly every time.
If the bag touches the sous vide, is that okay?
Make sure the bag isn’t touching the sous vide machine or cooking vessel to avoid cold spots on the food. Make sure the bags are not pressed together when you are cooking with several.
