For 2 people:
4 small new potatoes (same size)
½ glass pearl onions
½ glass cornichons
Pepper from the pepper mill
300 – 400 gr. Raclette cheese
Wash the potatoes thoroughly and boil them in their jackets. Make sure to keep
them warm. Place the pearl onions and cornichons in two separate bowls. Cut
the raclette cheese into pan size slices and place them on a plate.
Place the raclette cheese in the raclette pans and let it melt. Once the
cheese has melted put it over the halved potatoe. Add some pepper and enjoy.
According to your taste you can add additional trimmings, e.g. various kinds
of ham, “Bündnerfleisch” (special kind of smoked meat), salami, bell pepper,
tomatoes, mushrooms, etc.
Serve it with a dry, light white wine.
Enjoy!
