Product Usage Instructions

Ensure that the equipment is installed by a qualified installer following all federal, state, and local codes.

  • Make sure the equipment is provided with a ventilation system in compliance with NFPA96.
  • Place the equipment on a non-combustible surface with adjacent non-combustible surfaces. Avoid placing items under the equipment.
  • Remove all packing material, tape, and protective plastic from the equipment.
  • Clean any glue residue left over from the plastic or tape.
  • Save the original packaging for future shipping needs.
  • Use a food-grade cleaner to remove the protective coating from the griddle surface.

To reduce risk of injury or damage to the equipment

  • Use only grounded electrical outlets that match the voltage on the nameplate.
  • Use the equipment in a flat, level position.
  • Do not use an extension cord with this equipment.
  • Let equipment cool before moving.
  • Do not spray the controls or outside of the equipment with liquids.
  • Do not clean the equipment with steel wool.
  • Keep the equipment and power cord away from open flames, electric burners or excessive heat.
  • Do not leave the equipment unattended.
  • Do not operate the equipment in public areas and/or around children.
  • The equipment may be hot, even though the pilot light is not illuminated.
  • Do not operate the equipment if it is damaged or is malfunctioning.

Function and Purpose
This equipment is intended to be used for contact grilling food in commercial food service operations only. It is not intended for household, industrial or laboratory use.

INSTALLATION

This equipment must installed by a qualified installer under all federal, state and local codes. Failure to install this equipment properly can result in injury or death.

Applicable Codes and Standards United States

Vollrath recommends all commercial cooking equipment be provided with a ventilation system in compliance with NFPA96.

  • Cooking equipment that uses or produces grease (e.g. fryer, griddle), must be provided with hoods that are designed to capture grease and provide fire protection.
  • Equipment must be installed under the requirements and approval of the AHJ “Authority Having Jurisdiction.”

Clearance and Environment Requirements

  • This equipment must be placed on a non-combustible surface.
  • Adjacent surfaces must also be non-combustible. Do not place any items under the equipment.

Unpacking

  1. Remove all packing material and tape, as well as any protective plastic from the equipment.
  2. Clean any glue residue left over from the plastic or tape.
  3. Save the original packaging. Use this packing to ship the product if repairs are needed.

Install the Included Legs

  • The included legs must be installed. Operating the equipment without the legs could damage the equipment and create a fire hazard.

FEATURES AND CONTROLS

  • A: Temperature Control Dial. Sets the temperature of the heating surface. The “0” position is off.

  • B: Pilot Light. Indicates the surface is heating. The light will turn off when the griddles reach the set temperature. The light will cycle on and off as the equipment heats to maintain temperature.
    This is not a power indicator light.

  • C: Drip Trough. Opening on the front of the grill allows grease or oil to drain to the drip tray.

  • D: Griddle Plate. Cooking surface.

  • E: Drip Tray. A container under the drip trough that collects grease and oil from the grease trough.

  • F: Adjustable Leg. Supports the equipment. Used to level the equipment.

BEFORE FIRST USE

Hot surfaces and food can burn skin. Allow the hot surfaces to cool before handling. Do not drop or spill water onto the cooking surface as it can spray or splatter.

Before using, the equipment it must be thoroughly cleaned, burned in and seasoned.

Clean the Griddle

  1. Use a food-grade cleaner to remove the protective coating from the griddle surface.

Burn-in the Griddle

  1. Turn the temperature to the maximum setting.
  2. Allow the griddle to heat for 30 minutes. Smoke may appear due to the heating elements burning in. This is normal.
  3. After the 30-minute burn-in period the equipment is ready for use.

Season the Griddle

  1. Allow the griddle to cool or heat to approximately 200° F.
  2. Rub cooking oil or similar onto the griddle with a clean cloth.
  3. Heat the griddle to 350 – 400° F and allow it to operate for approximately 30 minutes.
  4. Turn the temperature down to approximately 200° F and allow the surface to cool to the set temperature.
  5. Use a clean cloth to remove any excess oil and wipe the griddle clean.
  6. Rrepeat the process.

Cooking

  1. Verify the drip tray is in place.
  2. Turn the temperature control to the desired temperature and preheat the griddle for 15 minutes.
  3. Cook the food.
  4. Empty the drip tray periodically to ensure it does not overflow.
  5. Do not allow oil or grease to build up on the griddle. Wipe down cooking plates to prevent carbon build-up which could affect the performance of the griddle.
  6. Allow the equipment to cool at the end of each cooking cycle.

CLEANING

Electrical Shock Hazard

Keep water and other liquids from entering the inside of the equipment. The liquid inside the equipment could cause an electrical shock. Do not spray water or cleaning products. Liquid could contact the electrical components and cause a short circuit or an electrical shock.

Hot surfaces and food can burn skin. Allow the hot surfaces to cool before handling. Do not drop or spill water onto the cooking surface as it can spray or splatter.

To maintain the appearance and increase the service life, clean your equipment daily.

NOTICE: Do not clean the equipment with steel wool.
NOTICE: Do not immerse the cord, plug or equipment in water or any other liquid.
NOTICE: Do not use cleaning chemicals or soaps as these can be absorbed by the surface and/or seep into the perimeter of the griddle and affect the flavor of the food. If necessary, use only clean water, oil, and/or a food- grade degreaser for the cleaning process.

Daily

  1. While the griddle is hot (approximately 300° F), scrub the griddle clean with a grill brush or grill brick.
  2. Remove and empty the grease container, and clean the grease trough and exterior of the unit.
  3. Allow the griddle to cool.
  4. If necessary, apply a thin coating of cooking oil to prevent corrosion.

Weekly

  1. Perform the daily cleaning process. Do not apply oil to the griddle.
  2. Allow the griddle to cool completely.
  3. Thoroughly clean the griddle plate with a food-grade degreaser.
  4. Season the griddle. See “Season the Griddle”

NOTICE: Do not allow the griddle to remain unseasoned or without a thin coating of cooking oil to prevent corrosion.

TROUBLESHOOTING
