TIGELLA RECIPE
Crescent or muffins are typical of Modena, and they are made with flour, yeast, and water. Once the crescent was cooked in hard plates called tigelle, hence the name of this specialty of Emilia. After rising, the mixture of tigelle is rolled and cut with a pasta circular bowl: tigelle is then cooked with TIGELLA MIA, which is made of refractory material. Once cooked, tigelle is stuffed at will, with the typical “Hunza”, a mixture of lard, rosemary, and garlic, or with cold meats, cheese, or vegetables to taste.
Ingredients
1 kg Flour
1 Cup of milk
1 Tablespoon of oil
1 Yeast (for salt) dissolved in warm milk 1 Cup of sparkling water Salt
Crumble the brewer’s yeast in a small bowl (Fig. 1), pour a little warm milk
to cover the yeast: stir to dissolve the yeast (Fig. 2), and let wait for a
few minutes.
Pour the flour into a large bowl, cut a hole in the center, and pour in the yeast mixture (Fig. 4), water, and salt. Mix the ingredients (Fig. 5).
Once obtained a ball, keep on kneading on a plane (Fig. 7) floured surface until the dough is smooth and soft (Fig. 8). Place the dough in a floured bowl, cover with a clean cloth (Fig. 9) and let rise for at least an hour in a warm place.
When the dough is ready (Fig. 10), roll it out with a rolling pin (Fig. 11) in a layer of about 1 cm thick: by using a little mold, obtain some discs of about 10 cm in diameter (Fig. 12).
Preheat TIGELLA MIA as described in the “Preheating” paragraph, by setting the
position “1” on the thermostat for about 15 minutes, then position “2” for the
other 15 minutes.
After preheating has finished, set the position “2½” or “3”, wait 5 minutes,
and place the tigelle (as shown in the figure) on the cooking plate. Close the
top cover and cook for about 3/ 4 minutes. Cut tigelle in half like a sandwich
and fill them since they are still hot: serve immediately.
