PUTTING INTO SERVICE

Feet

  • La Mandoline has folding feet and can be easily stored.
  • A non-skid coating covers the foot’s base to ensure secure and steady use.
  • La Mandoline can be used either directly on the working surface or above a container.

Inserting of blades
The blades are very sharp so please always handle the blades by holding them by their handle. Never make any adjustment by direct hand contact with the sharp edge or by using a metal object. This is not only for safety reasons, but it also might damage the blade.

HORIZONTALE DOUBLE-BLADE

  • La Mandoline REVOLUTION has one double horizontal blade one micro-serrated side and one serrated side – to produce slices or crinkles.
  • Choose the cut – slice or crinkle – with the chosen side facing up the Mandolinehandle. EMGA 001150 Ultra Brunoise or Vegetable Mandoline Cutter - Fig 2 The horizontal blade is to be inserted in La Mandoline on the left side. This blade should be pushed all the way in. A soft snap will confirm a complete insertion.
  • To remove the straight blade, press the small pusher on the side of the blade.

JULIENNE BLADES

  • La Mandoline REVOLUTION has different Julienne horizontal blades (with spacings 2-4-10 mm) to produce sticks and French fries.
  • To pick out them easily: each Julienne blade has its own color and is marked to indicate the spacing.
  • Julienne’s blades are stored in a plastic box to fit under the body of the Mandoline.
  • Loosen the upper plate with the tightening knobs before inserting the Julienne blade.
  • Turn over the Mandoline; the dicing «cube system» must be set up. Open the bolts.
  • Insert the blade; the markers on the Julienne blade and those on the Mandoline must fit.
  • When the blade is in its place, lock the bolts.

The slider and its pusher

  • La Mandoline REVOLUTION is delivered with its slider and its pusher. They protect fingers from sharp blades and they must be used at all times. Just slide the slider on the frame of la Mandoline. It can not go off the rails.
  • Food should be placed into the slider (oversized vegetables or fruits should be pre-cut in order to fit in the slider).
  • Place the pusher in the middle of the slider.
  • The hand-held pusher actually pushes the food toward the blades. The interior pushing plate of the pusher has prongs and pins to secure the food in the place. The pushing plate is mounted on a spring which helps to press the food and then slowly releases it as the vegetables or fruits diminish after each cut.

ROTATING CONTROL SYSTEM

  • The slider and its pusher are equipped with a rotating control system to cut easier and more regularly. EMGA 001150 Ultra Brunoise or Vegetable Mandoline Cutter - Fig 5
  • The stop of the slider blocks the rotating movement. This enables to cut regularly.
  • The stop is also used as a rest to stay always in line when Julienne is cut.

The thickness adjustment mechanism

  • The upper plate allows for adjusting the thickness of the cuts.

  • There are two tightening knobs on either side of La Mandoline, which are to be loosened when changing the thickness of the slices (1); there is no need to secure the tightening knobs too strongly, as it is secure once you feel a reasonable resistance.
    Once the knobs are loosened, the upper plate can freely slide up and down and in turn increases or decreases the thickness of the cut (2).

  • Once the desired thickness is obtained the knobs should then be tightened again to produce the new thickness. EMGA 001150 Ultra Brunoise or Vegetable Mandoline Cutter - Fig 9

THE CUTS

ADVICE :

  • For all the cuts in general, place the oblong food product in the slider along its length and slightly inclined on one side.
  • Remove the storage box for Julienne blades during use and replace it for storage.
  • For easier cutting of hard products, press on the central shaft of the pusher during the up-and-down movement.

FOR HORIZONTAL CUTS with the horizontal blade used by itself, REMOVE THE DICING CUBE SYSTEM: move back the slider to place it on the dicing Cube System (1) and lock both bolts on the frame of the Mandoline (2). EMGA

To cut slices, choose the side of the horizontal blade: micro-serrated side or serrated side according to the required cut. No Julienne blade is placed.
Insert the horizontal blade.
Adjust the thickness.

  • Use the serrated side of the horizontal blade. Adjust the thickness to a very thin thickness between 0 and 2 (see the thickness markers from 0 to 10 on the frame); this thickness can be adjusted according to the product consistency. Push up the upper plate(1): place your other hand below the lower portion of the top plate and raise it as much as possible. Then tighten the knobs.   • Place the product in the slider, and place the pusher. Then push the slider down with the pusher (2) and push it then back to the top. Once the slider is completely above the blade, rotate the pusher on a quarter turn, until the top of the slider (3). Maintaining the rotated position push the slider down over the blade and again back to the top (4). Rotate the pusher in the opposite direction. STICKS AND FRENCH FRIES
Insert the horizontal blade using its straight micro-serrated side. Choose the required Julienne blade in its storage box under the Mandoline.
Adjust the thickness (see the markers from 0 to 10 on the frame). Cut the product with up-and-down movement.
Be careful: stay always in line when cutting to avoid cutting dices/ lozenges.

CRINKLE STICKS
It is also possible to cut CRINKLE STICKS: insert the horizontal blade using its SERRATED side. Choose the required Julienne blade in its storage box under the Mandoline: for such cuts, it is possible to use Julienne blades from spacemen 4 mm. DICES

  • Insert the horizontal blade using its straight micro-serrated side.
  • Place the chosen Julienne blade – Be sure that the upper plate is loosened and can freely move.
  • Adjust the thickness according to the vertical DICES markers engraved on the Mandoline frame. Then lock the plate. (ex: if you use the 4-mm blade, adjust the upper plate on the vertical marker CUBE 4).
  • Place the product in the slider, but the pusher on the slider using the side with the longer notch (1), push the slider down (2) and throw away the first cut food products which do not dice.
  • Push the slider then back to the top and once the slider is completely above the blade, rotate it one-quarter turn. The stop of the slider controls the rotation. Maintaining the rotated position push the slider down over the blade (4) and again back to the top. Repeat the movements until the product is completely cut.

DIAMONDS

  • The cutting method is the same as for dice. Just make a smaller rotation than 1/4 turn. EMGA 001150 Ultra Brunoise or Vegetable Mandoline Cutter - Fig 21

ADVICE :

  • For an easy cut, move the slider fast when cutting.
  • Be careful: if the upper plate is too low (if the thickness is too large), the dice don’t come off. Then adjust the thickness.

OPTIONAL: EXTRA-LONG PUSHER (réf.2012.55)
LONG CUTS

The Mandoline REVOLUTION MASTER is supplied with an EXTRA-LONG PUSHER + its slider:

  • to cut long vegetables into sticks (zucchini, carrots, horse radish, …)
  • to cut tagliatelle of potatoes, cucumbers, zucchini,…
  • to cut extra-large French fries, etc.

It is NOT possible to cut waffles, dices, or lozenges with the long pusher.
Composition of the extra-long pusher: the plastic long slider holds the food to be cut and the long rectangular plastic pusher with stainless steel handle protects the fingers from the sharp blade. Barbs on the sole of the pusher enable long food products to be held during cutting.
Use in place of the standard slider and round pusher. Same putting into service.
Cut the food product with up-and-down movement.

CLEANING AND STORAGE

  • The body and the feet of la Mandoline are made of stainless steel and are dishwasher safe.
  • Wipe la Mandoline after cleaning and store it in a dry place.
  • The storage box for Julienne blades placed under the Mandoline can be removed for cleaning.

Slider and pusher (plastic or stainless steel)
For detailed cleaning, the slider can be removed. In order to remove the slider, simply slide it off the mandoline frame.
For detailed cleaning, the pusher can be taken apart. There is a cap at its very top, which releases the shaft separating the ergonomic top from the lower interior plate and freeing the spring. In order to release the cap, it must be loosened with a turn to the left. The stainless steel needles cannot be removed. After cleaning, reverse the operation to reassemble all pusher parts.
Blades
The horizontal blades and the Julienne blades are made of high-quality carbon steel and are dishwasher safe, however, their life span will be increased if hand-washed. A brush may be used to clean between the sharp teeth of the julienne blades.
ADVICE :
For always optimal use, pour some time to time a little quantity of food-grade oil in the dicing Cube System Grease regularly the uprights of the frame for better sliding. EMGA 001150 Ultra Brunoise or Vegetable Mandoline Cutter -

PRECAUTIONS

Buyer is a vegetable/fruit slicer designed to grant you the most security when you make your cuts. However, LaMandoline requires the use of sharp blades which must be cautiously manipulated. Please respect the following advice:

  • The receptacle and its pusher protect fingers from the sharp blades and they must be used at all times.
  • The Mandoline frame and the blades (horizontal blades and Julienne blades) must always be manipulated by their hands.
  • Never make any adjustment by direct hand contact with the sharp edge
  • Keep out of the reach of children.
