Chefman RJ23-SG-PL Electric Smokeless Indoor Grill User Guide

Welcome!
Whether this is your first Chefman® appliance or you’re already part of our family, we’re happy to be cooking with you! With your new ExacTempTM Smokeless Indoor Grill, you can bring all the flavor of grilling indoors (even into apartments) via one virtually smokeless unit. The heavy-duty grill plate is excellent at absorbing and retaining heat, so it gives your food the same charred grill marks you’d get from an outdoor grill.
The closed environment from the lid cooks everything to juicy perfection. And the integrated probe thermometer lets you cook your food to the perfect doneness.
We know you’re excited to get grilling, but please take a few minutes to read our directions, safety instructions, and warranty information.

From our kitchen to yours,
The Chefman® Team

  12. The power cord is detachable. Always attach the cord to the appliance first, then plug the cord in the wall outlet. To disconnect, turn any control to OFF, then remove the plug from the wall outlet. Disconnect the appliance when not in use.
  13. Do not use the appliance for other than its intended use.

FOR HOUSEHOLD USE ONLY SAVE THESE INSTRUCTIONS

WARNING: Improper use of the grounding plug can result in electric shock.

GROUNDING INSTRUCTIONS
This appliance must be grounded. In the event of an electrical short circuit, grounding reduces the risk of electric shock by providing an escape wire for the electric current.
To protect against electrical shock, this appliance is equipped with a cord having a 3-prong grounding-type plug for insertion into a proper grounding- type electrical outlet. DO NOT alter the plug for use in a 2-prong outlet. If the plug will not fit into an outlet, have a proper outlet installed by a qualified electrician.

SHORT CORD INSTRUCTIONS
A short power-supply cord is provided to reduce the hazards of entanglement or tripping over a longer cord. Longer detachable power-supply cords or extension cords are available and may be used if care is exercised in their use. If a longer detachable powersupply extension cord is used:

  1. The marked electrical rating of the extension cord should be at least as great as the electrical rating of the appliance.
  2. The cord should be arranged so that it will not drape over a countertop or tabletop, where it can be pulled on by children or tripped over unintentionally.

POWER CORD SAFETY TIPS

  1. Never pull or yank on the cord or the appliance.

  2. To insert the plug, grasp it firmly and guide it into the outlet.

  3. To disconnect the appliance, grasp the plug and remove it from the outlet.

  4. Never use the product if the power cord shows signs of abrasion or excessive wear.
Contact Chefman Customer Support for additional guidance and support.

  5. Never wrap the cord tightly around the appliance, as this could place undue stress on the cord where it enters the appliance and cause it to fray and break.

DO NOT OPERATE THE APPLIANCE IF THE POWER CORD SHOWS ANY DAMAGE OR IF THE APPLIANCE WORKS INTERMITTENTLY OR STOPS WORKING ENTIRELY.
DO NOT PLACE THE APPLIANCE ON A STOVETOP OR ANY OTHER HEATABLE SURFACE, EVEN IF STOVETOP IS NOT ON. DOING SO IS A FIRE HAZARD.

OPERATING INSTRUCTIONS

BEFORE FIRST USE
For best results, follow these steps before using your grill for the first time.

  1. Remove all packaging materials, such as plastic bags and foam inserts.
  2. Check to ensure that all parts and accessories are accounted for.
  3. Read and remove any stickers on the unit except for the rating label on the bottom, which should remain on the unit.
  4. Wipe down the interior and exterior with a damp cloth.
  5. Wash the lid, grill plate, and drip tray with warm, soapy water. Dry thoroughly.

HOW TO SET UP THE GRILL FOR COOKING

  1. Set the unit on a firm, heat-resistant surface with at least 2 inches of clearance on the sides and 3 inches of clearance in the back.
  2. Set the water tray in the unit base and fill with 1 cup of water. Set the drip tray over the water tray. Place the heating element on the unit over the drip tray. Place the grill plate over the heating element.
  3. Plug the power cord into the unit base, then plug the other end into a 120-volt outlet. All buttons will briefly illuminate, then the grill will switch to standby mode, with the GRILL TEMP button illuminated in blue and the default temperature of 400˚F (204˚C ) set.

HOW TO COOK IN MANUAL MODE
The directions below are for cooking without the probe; if you would rather grill to a specific internal temperature, see How to Cook Using the Probe Thermometer on page 12.

  1. Ensure the probe thermometer is not plugged into its jack.
  2. With the unit in standby mode, press the + or – buttons to adjust the grill temperature from 250˚F to 450˚F (120˚C to 232˚C) in increments of 5˚F/1˚C. (Press and hold both the + and – buttons at the same time to toggle between Celsius and Fahrenheit.)
  3. Press the TIME button, then use the + or – buttons to adjust the time from 1 to 60 minutes in increments of 1 minute. (NOTE: The timer countdown only displays in minutes unless there is less than 1 minute left. So a cooking time of 10 minutes will immediately display as 9 minutes because it is counting down from 9:59.)
  4. Put the lid on. Press START/STOP. This will begin the unit’s automatic preheat. (PRE will illuminate in red under the temperature display.) As the unit heats, the temperature display will give a live reading of the unit’s temperature.
  5. When the preheat is done, the unit will beep, and PRE will turn off. Place food on the grill plate and close the lid. The timer will begin counting down. NOTE: Though cooking with the lid on isn’t required, it’s recommended because it maintains the grill temperature, further reduces smoke, and reduces splattering.
  6. When the timer is halfway done, the unit will beep, and FLIP will display on the panel. Flip foods as needed.
  7. Pressing the START/STOP button during cooking will stop the heating and return to Standby Mode.
  8. When time is up, the unit will beep, and END will display on the panel. Carefully remove the food. Check for doneness and enjoy. Most cuts of meat, poultry, and fish are best when they rest for a few minutes before serving.

HOW TO COOK USING THE PROBE THERMOMETER
Unlike an instant-read thermometer, the probe thermometer stays in your food through the entire cooking cycle, constantly monitoring the temperature until it reaches the target.
If using the probe, follow these instructions to program the unit.

  1. Insert the probe horizontally into the thickest part of your food (see drawings below). Be sure the tip of the thermometer isn’t touching bone. If you’re cooking multiple pieces (for instance, several chicken breasts), put the probe in the largest one.

HOW TO COOK USING THE PROBE THERMOMETER

  2. With the unit in Standby mode, plug the other end of the thermometer into the thermometer jack on the unit. PROBE TEMP will light up in blue.

  3. Use the + and – buttons to set your desired target internal temperature for the food, from 115˚F/45˚C to 175˚F/80˚C. (Press and hold both the + and – buttons at the same time to toggle between Fahrenheit and Celsius.) Alternatively, you can select one of the preset function buttons: CHICKEN, MEAT, or FISH. The unit will automatically set the target internal temperature. If you’re cooking meat, you can specify your preferred doneness: Rare, Medium-Rare, Medium, Medium-Well, or Well. (Press MEAT repeatedly to toggle through the selections.) For chicken, there are two different temperature settings: white meat (165˚F/74˚C target) and dark meat (175˚F/80˚C target). Press the CHICKEN preset once for white and twice for dark.

  4. Press the GRILL TEMP button, then use the + and – buttons to adjust the grill temperature from 250˚F/120˚C to 450˚F/232˚C in increments of 5˚F/1˚C. NOTE: You must select the grill temperature even if you’re using a preset.

  5. Put the lid on. NOTE: The lid can close over the probe’s wire, but make sure it is not closing on the probe itself.

  6. Press START/STOP. This will begin the unit’s automatic preheat. (PRE will illuminate in red under the temperature display.) As the unit heats, the temperature display will give a live reading of the unit’s temperature.

  7. When the preheat is done, the unit will beep, and PRE will turn off. Place the food in the unit and close the lid. (Though using the lid isn’t required, it’s recommended because it maintains the grill temperature, further reduces smoke, and reduces splattering.) NOTE: Though you can close the lid over the probe cord, be sure not to close the lid on the actual probe.

  8. During cooking, the temperature display will alternate between a live reading of the current temperature of your food and the current temperature of your grill.
NOTE: If the probe comes unplugged from the jack during cooking, it will beep until plugged back in.

  9. When the internal temperature is halfway to the target temperature, the unit will beep, and FLIP will display on the panel. Flip foods as needed.

  10. When the target internal temperature is reached, the unit will beep, and END will display on the panel. Carefully remove the food.

  11. Carefully slide the probe out of the food—the probe will be hot—and enjoy.

PRESET FUNCTION CHART

The below chart indicates target temperatures for the preset functions. Note that if you select MEAT – Medium-Rare both “Medium” and “Rare” will illuminate on the display, and similarly “Medium” and “Well” for a Medium-Well selection. For Chicken presets, only the target temperature will indicate which selection is active (press the CHICKEN button to change).

COOKING TIPS

  1. Preheating not only the unit but also the grill plate is essential to getting the great grill marks that are a hallmark of grilled food. CAUTION: Be careful when adding food after preheating as the interior of the grill will be hot.
  2. Don’t overcrowd the grill plate. Too much food, especially if tightly packed, can inhibit browning. A better bet: Cook food in batches.
  3. Use silicone or wood utensils. to avoid scratching nonstick surfaces.
  4. Follow food-safety guidelines for doneness. Because grill temperatures and food sizes can vary, do not rely only on recipe timing when cooking food. Check foods for doneness against current safety guidelines before serving.

CLEANING AND MAINTENANCE

  1. Let the unit cool completely before cleaning. Detach the power cord and probe cord from the unit if they are not already removed.
  2. Remove the grill plate, heating element, drip pan, and water tray, and empty the water.
  3. The lid, grill plate, and water tray are dishwasher-safe. Alternatively, they can be hand-washed with mild detergent, rinsed, and dried thoroughly.
  4. Wash the drip tray and probe by hand with mild detergent. Do not immerse the probe cord or plug in water. Rinse and dry thoroughly.
  5. The unit base can be wiped down with a damp cloth as needed.
  6. Reassemble the unit before storing. Wind the probe cord around the cord winder to prevent kinks, and store the winder on the left side of the unit with its magnet.
