Thank you for purchasing this Hendi appliance. Read this user manual carefully, paying particular attention to the safety regulations outlined below, before installing and using this appliance for the first time.

Safety instructions

  • Only use the appliance for the intended purpose it was designed for, as described in this manual.
  • The manufacturer is not liable for any damage caused by incorrect operation and improper use.
  • DANGER! RISK OF ELECTRIC SHOCK! Do not attempt to repair the appliance by yourself. Do not immerse the electrical parts of the appliance in water or other liquids. Never hold the appliance under running water.
  • NEVER USE A DAMAGED APPLIANCE! Check the electrical connections and cord regularly for any damage. When damaged, disconnect the appliance from the power supply. Any repairs should only be carried out by a supplier or qualified person to avoid danger or injury.
  • WARNING! When positioning the appliance, route the power cable safely if necessary to avoid unintentional pulling, being damaged, coming into contact with the heating surface, or causing a tripping hazard.

Special safety instructions

Intended use

  • This appliance is intended to be used for commercial applications, for example in kitchens of restaurants, canteens, hospital and in commercial enterprises such as bakeries, butcheries, etc., but not for continuous mass production of food.
  • The appliance is designed for slowly preparing or regenerating food, by means of a controlled process. Any other use may lead to damage to the appliance or personal injury.
  • Operating the appliance for any other purpose shall be deemed as a misuse of the device. The user shall be solely liable for improper use of the device.

Grounding installation

This appliance is classified as protection class I and must be connected to a protective ground. Grounding reduces the risk of electric shock by providing an escape wire for the electric current.
This appliance is fitted with a power cord with grounding plug or electrical connections with grounding wire. The connections must be properly installed and grounded.

Preparation before use

  • Remove all protective packaging and wrapping.

  • Check that the device is in good condition and with all accessories. In case of incomplete or damaged delivery, please contact the supplier immediately. In this case, do not use the device.

  • Clean the accessories and the appliance before use (See == > Cleaning & Maintenance).

  • Make sure the appliance is completely dry.

  • Place the appliance on a horizontal, stable and heat resistant surface that is safe against water splashes.

  • Keep the packaging if you intend to store your appliance in the future.

  • Keep the user manual for future reference
    NOTE! Due to manufacturing residues, the appliance may emit a light odor during the first few uses. This is normal and does not indicate any defect or hazard. Make sure the appliance is well ventilated.

  • Follow always the HACCP regulations.

Operating instructions

(Fig.1)

Start
  • Connect the plug to a suitable electrical power outlet and the press the green ON/OFF switch at the rear side to the “I” position. Press the standby button (1).
  • The oven will beep one time and then all indicator lights, (7) to (11), and display (6) will be ON for 0.5 second. After that, indicator light (7) is ON to show that the oven is ready for operation (in standby mode).
Selection Function
  • When the oven is in the stand-by mode, you can choose the function by “Selection Button” (2), and the indicator lights (8), (9), (10) & (11) will be ON to show which function is chosen.
    • (8) is ON → chamber temperature is selected for adjustment.
    • (9) is ON → Internal core temperature is selected for adjustment.
    • (10) is ON → timer is selected for adjustment.
    • (11) is ON → hold temperature is selected for adjustment.
  • You can then change the value by the adjustment buttons (3) & (4).
  • You can also change the control values when the oven is in the operation mode by pressing the selection button (2) and then change the values by the adjustment buttons (3) & (4). After changing the values, the oven will continue the operation (in operation mode again).
  • Whenever the standby (1) button is pressed, all previous settings (chamber, core, hold temperature) will be cancelled. The oven is in standby mode again.

NOTE: If improper control values have been input when the oven is in standby mode (for example if the chamber temperature has been set lower than the surrounding temperature or the TIMER has been set to 000), the oven will beep 6 times after you press the “Start / Pause Button” (5) and then enters into the Hold Mode.

  • Internal food temperature (9): Up to 100°C (Provided that internal food temperature < chamber temperature)

  • Hold temperature (11): Up to 100°C (Provided that hold temperature < chamber temperature)
Operation
  • When the oven is in the stand-by mode, start the appliance by pressing the ”Start / Pause Button” (5). The “Operation indicator light (12) and hold temperature indicator light (11) will be ON. After few seconds, the display (6) will show the PRESET temperature and the ACTUAL temperature of the chamber alternatively (the oven is in the operation mode).
  • During operation, change the control values by pressing the “Selection Button” (2) and then change the values by “Adjustment Buttons” (3) & (4). After changing the values, the oven will continue operating.
  • The appliance has 2 ventilation openings – one in the door, one in the back. These are intended for regulating the humidity in the oven chamber. They can be closed with the integrated sliders. As a rule of thumb: if the food should retain moisture keep them closed, if the food should become crunchy/crispy, keep them open. This results in moisture loss. Experience by experimentation will yield the best results.

NOTE: This appliance has stainless steel pan and tray holders, suitable for GN 1/1 containers, grids and trays as well as 600 x 400 mm bakery trays (all are not included) on 3 levels.

You can cook the food in two different operating methods:

A. Baking with timer

You can set the chamber temperature, timer and hold temperature. The oven then starts heating until the ACTUAL chamber temperature reaches the PRESET chamber temperature. On this moment the timer starts counting (a beep will sound). When the timer counting has been finished (3 beeps will sound), the oven enters into Hold Mode. The oven will let the chamber temperature drop slowly until it reaches the hold temperature and keeps it stable (Hold Mode).

B. Baking with core probe

You can set the chamber temperature, internal food temperature and hold temperature. The oven starts heating until the ACTUAL chamber temperature reaches the PRESET chamber temperature. Then the oven keeps the chamber temperature stable until the ACTUAL internal core temperature reaches the PRESET Internal core temperature. The oven will then let the chamber temperature drop slowly until it reaches the hold temperature and keeps it stable (Hold temperature mode).
NOTE: there is no timer function in this case.

Pause

When the oven is in operation, the oven will PAUSE if the “START/PAUSE” (5) button has been pressed and resume operation (with temperature settings unchanged) when the “START/ PAUSE” button is pressed again.

Switch OFF

When the oven is in the operation mode or hold mode, you can switch off the oven by pressing the standby button (1) (the oven is in standby mode now). Power indicator light (7) is still ON, but all other indicator lights (8) to (11) will be off. Switch off: turn off the green ON / OFF switch at the rear side to the “0” position. If not present, then remove the plug from the socket.

If needed reverse the door

It is possible to reverse the door according to the following instructions.

  • Switch off the appliance and disconnect the power supply.

  • Wait until the appliance has cooled down.

  • Remove any food trays inside the chamber.

  • Lay down the appliance on the side so that the hinge of the door is on the top. (Fig.2)

  • Use a flat screwdriver to loosen the screw and remove the door hinges. (Fig.3)

  • Remove the door.

  • Use a flat screwdriver to unscrew the bolt on the door’s frame top part and reverse the bolt position. (Fig.4)

  • Lay the appliance sideway on the other side.

  • Reassemble the door. (Fig.5)
    If needed reverse the door

  • Reinstall the hinge. (Fig.6)

  • Position the oven in horizontal position and reconnect the power supply.

Cleaning & maintenance

  • ATTENTION! Always disconnect the appliance from the power supply and cool down before storage, cleaning & maintenance.
  • Do not use water jet or steam cleaner for cleaning and do not push the appliance under the water as the parts will get wet and electric shock might be resulted.
  • If the appliance is not kept in a good state of cleanliness, this can adversely affect the life of the appliance and result in a dangerous situation.
  • Food residues should be regularly cleaned and removed from the appliance. If the appliance is not cleaned properly, it will reduce its lifespan and may result in a dangerous condition during use.
Cleaning
  • Clean the cooled exterior surface with a cloth or sponge slightly dampened with a mild soap solution.
  • For reasons of hygiene, the appliance should be cleaned before and after use.
  • Avoid water contacting the electrical components.
  • Never immerse the appliance in water or other liquids.
  • Never use aggressive cleaning agents, abrasive sponges, or cleaning agents containing chlorine. Do not use steel wool, metallic utensils, or any sharp or pointed objects for cleaning. Do not use petrol or solvents!
  • No parts are dishwasher safe.
Maintenance
  • Check the operation of the appliance regularly to prevent serious accidents.
  • If you see that the appliance is not working properly or that there is a problem, stop using it, switch it off and contact the supplier.
  • All maintenance, installation and repair work must be carried out by specialised and authorised technicians, or recommended by the manufacturer.
Transportation and Storage
  • Before storage, always make sure that the appliance has been disconnected from the power supply and completely cooled down.
  • Store the appliance in a cool, clean and dry place.
  • Never place heavy objects on the appliance as this could damage it.
  • Do not move the appliance while it is under operation. Disconnect the appliance from power supply when moving and hold it at the bottom.
