combustible surface.
Do not use the pizza oven unless it is completely assembled and all of the
parts are securely fastened and tightened.
The pizza oven should be thoroughly cleaned and inspected regularly. Clean and
inspect the gas hose before each use of the appliance. If there is evidence of
abrasion, wear, cuts, or leaks, the hose must be replaced prior to the
appliance being operated.
Only use parts that are authorized by the manufacturer. The use of
unauthorized parts is dangerous. This may also void your warranty.

HOSE AND REGULATOR
These items are not included with the pizza oven. Only use hose and regulators
approved for LP gas at the above pressures. The estimated life expectancy of
the regulator is 10 years. Change the regulator within 10 years of the date of
manufacture.
Using the wrong hose or regulator is unsafe; always check that you have the
correct items before operating the pizza oven. The hose used must conform to
the relevant standard for the country of use. The length of the hose must be
1.2 meters (maximum) and the inner diameter 10 mm. A worn or dam- aged hose
must be replaced. Ensure that the hose is not bent, clogged, or in contact
with any part of the pizza oven other than at its connection.
LP GAS CYLINDER
The LP gas cylinder should not be dropped or handled roughly! If the pizza
oven is not in use, the cylinder must be disconnected from the appliance.
Place the protective cap on the cylinder after disconnecting the cylinder from
the appliance.
The LP cylinder must be stored outdoors in an upright position and out of the
reach of children. The cylinder must never be stored in an environment where
temperatures can reach over 50°C. Do not store the cylinder near flames,
ignition flames, or other sources of ignition.
DO NOT SMOKE NEAR THE LP GAS CYLINDER.
This pizza oven is designed for use outdoors, away from any flammable
materials. It is important that there are no overhead obstructions and that
there is a minimum distance of 1 m from the side or rear of the appliance. It
is important that the ventilation openings of the pizza oven are not
obstructed. The pizza oven must be used on a level, stable surface. The
appliance should be protected from direct airflow and positioned or protected
against direct penetration by any trickling water (e.g. rain).
No modifications should be made to any part of this pizza oven, and repairs
and maintenance should only be carried out by a registered gas service
company.
CONNECTING THE LP GAS CYLINDER
Before connection, ensure that there is no debris or dirt caught in the head
of the LP gas cylinder, regulator, burner, and burner ports. Spiders and
insects can nest within and clog the burner and its inlet. A clogged burner
can lead to a fire beneath the pizza oven.
Clean burner holes with a heavy-duty pipe cleaner.
Fit the hose to the appliance using a spanner to tighten it onto the
connection thread. If the hose is replaced, it must be secured to the pizza
oven and regulator connections with hose clips. Disconnect the regulator from
the cylinder according to the directions when the pizza oven is not in use.
The pizza oven must be operated in a well-ventilated area. Do not obstruct the
flow of combustion air to the burner when the appliance is in use. ONLY USE
THIS APPLIANCE OUTDOORS.
BEFORE USE, CHECK FOR LEAKS IN THE HOSE AND/OR CONNECTION THREADS.
Never check for leaks with a naked flame; always use a soapy water solution.
SETTING UP THE PIZZA OVEN
Before the first time using the oven, inspect it thoroughly for leaks as
instructed. Light up the oven and keep the burner at Max ( ) for about 20
minutes. This will remove the storage grease from the oven. Let the oven cool
down for about 15 minutes. Clean the pizza stone. The pizza oven is now ready
for use.
CHECKING FOR LEAKS
Make 2–3 fluid ounces (6–9 dl) of leak detecting solution by mixing one part
dishwashing liquid with 3 parts water.
Ensure that the control valve is “OFF”.
Connect the regulator to the LP gas cylinder and ON/OFF valve to the burner.
Ensure that the connections are secure, and then turn the gas ON.
Brush the soapy solution onto the hose and all joints. If bubbles appear, you
have a leak, which must be repaired before use.
Retest after fixing the fault.
Turn the gas OFF at the LP gas cylinder after testing.
If leakage is detected and cannot be repaired, consult your gas dealer to fix
the leak.
RECIPE FOR NEAPOLITAN PIZZA DOUGH:
This recipe provides a base for 4 pizzas.
Ingredients:
595 g (ca. 9 dl) of 00 pizza flour
385 g (ca. 4 dl) of water
18 g (ca. 3 tsp) of fine sea salt
1 g (ca. 1/3 tsp) of dried yeast
To achieve the best result, we recommend weighing all ingredients on a scale.
You can also make the dough without a scale. Put the cold water into a bowl.
Mix the dry yeast with the flour and stir them in the water. You can use a
food mixer or knead the dough by hand. Knead the dough for about 15 minutes
until it becomes smooth and no longer sticks to the bowl or hands. Add the
salt last and knead for a moment. Grease an airtight rising container with
olive oil, shape the dough into a ball and let it rise in room temperature for
8 hours. You can also use the bowl, but remember to cover it with plastic
film.
Divide the risen dough into four portions. Shape the portions into balls. Let
them rise in an airtight container greased with olive oil for another hour in
room temperature. After this, shape the pizza bases by hand and add your
favorite toppings!
LIGHTING THE PIZZA OVEN:
- Check that the battery is installed in its case at the back wall of the oven.
- Connect the pressure regulator to the gas bottle.
- Open the regulator or the gas bottle valve (if the gas bottle has a threaded valve).
- Push the control knob in and turn it to .
- Hold the control knob in until the oven burner lights up.
If the burner does not light up, light the pizza oven with a long match.
LIGHTING THE OVEN WITH A MATCH IF THE BATTERY-OPERATED PIEZO IS NOT WORKING
- Connect the regulator to the gas bottle.
- Open the regulator or the gas bottle valve (if the gas bottle has a threaded valve).
- Hold a lit match next to the burner.
- Push the control knob in and turn it to .
Warning! Never lean over the oven when lighting or using it.
If the oven burner does not light up within 10 seconds, despite several
attempts, turn the control knob to OFF and shut down the gas supply from the
bottle. Wait for 5 minutes, at the minimum, before retrying to light the oven.
This way, the gas accumulated in the oven will be ventilated out.
USING THE PIZZA OVEN:
- Place the pizza stone into the oven.
- Light the burner as instructed.
- Set the burner to full power and keep the oven on for 25–30 minutes.
- The pizza stone is now sufficiently hot for baking pizza.
- You can check the stone’s temperature with the Mustang infrared thermometer (611808).
- Put the pizza in using a spatula. The Mustang product selection also includes a variety of spatulas.
- Set the burner power lower using the control knob.
- Turn the pizza by 90 degrees after 25–30 seconds.
- Turn the pizza by another 90 degrees after 25–30 seconds.
- The pizza will be ready in about 90 seconds from putting it in.
- Toward the end of the baking, you can raise the pizza a bit higher, close to the oven’s ceiling, if you want to bake the top-pings some more.
- As you gain experience, you will find the suitable range for baking your pizza.
- If you are baking multiple pizzas at a time, you should set the burner to full power between the pizzas. Lower the power when baking.
- You may need to set the power higher in cold weather than in warm weather.
CLEANING THE PIZZA OVEN
For the pizza oven to remain in good condition and to use it in the best possible way for many years, you need to clean and maintain the oven and its parts. Do at least the following after each use, as soon as the oven has cooled down.
Clean the steel parts of the oven in the following way:
- All steel parts of the oven must be cleaned regularly with water and soap and a damp cloth.
- Dry the cleaned surfaces carefully.
- Do not wipe the texts and symbols printed on the control panel with anything other than a damp cloth. Do not scrub the surface or use detergents. Detergents may dissolve the texts and other labels on the control panel.
- Treat all steel parts at least 2–3 times a year with steel cleaner and care products sold in general stores, such as the CRC 5-56 multi-purpose spray. This way, you can prevent permanent stains and rust spots on the steel surfaces. Use all instructions of the cleaning product’s manufacturer, and also test the prod- uct’s suitability for the oven’s steel surfaces. It is recommended that you test the cleaning and care products on a steel part that is not directly visible, such as the back corner of the top, before using the products. This way, you can ensure that the cleaning product is suitable for the steel surfaces.
- Only use cleaning and care products on the oven’s external surfaces.
Cleaning the pizza stone:
- Let the oven cool down before taking out the stone. Please note! Rapid changes in temperature may cause the stone to break.
- After use, always dry the pizza stone carefully so that it is not left damp.
- Clean the stone by brushing away food stains, and finish by wiping it with a dry cloth.
- Since the pizza stone will be heated extremely hot and kept in a hot oven or grill for long periods, it does not require disinfection, as bacteria will die during the heating.
STORAGE
Store the pizza oven indoors and with the regulator removed from the gas
bottle. The gas bottles must be stored as specified in their separate
instructions.
Before long-term storage, clean the oven and the stone carefully.
Store the oven in a dry and warm place.
