NESCO FG-600 Professional Food Grinder

This product is designed for household use only –
When using electrical appliances, basic safety precautions should always be followed, including the following:

IMPORTANT SAFEGUARDS

  1. READ ALL INSTRUCTIONS BEFORE USING THIS APPLIANCE.
  2. To protect against electric shock, do not immerse the appliance, including cord and plug, in water or other liquid.
  3. Close supervision is necessary when the appliance is used near children. This appliance is not recommended for use by children.
  4. Unplug appliance from power outlet when not in use, before assembly or disassembly of parts, and before cleaning.
  5. Do not operate any appliance with a damaged cord or plug or after appliance malfunctions, or has been damaged in any manner. Call NESCO® Customer Service for examination, repair or adjustment.
  6. Do not place the appliance on or near a hot gas or electric burner, or heated oven.
  7. Only use accessory attachments recommended by the manufacturer.
  8. Do not use appliances outdoors or for other than intended use.
  9. Do not let the cord hang over the edge of a table or touch hot surfaces.
  10. Do not operate the appliance continuously for more than 15 minutes. Allow the appliance to cool for 15 minutes before the second operation.
  11. Do not use appliances to grind frozen foods or bones.
  12. Operate appliance only when all parts are fully engaged and tightened.
  13. To reduce the risk of injury and damage to appliances keep hands, hair, clothing and utensils away from moving parts during operation.
  14. NEVER feed appliances by hand, always use the Food Pusher.
  15. Place appliance on flat and steady support surface when ready for use.
  16. Do not use fingers to scrape food away from the discharge disc while the appliance is operating. Cut type injury may result.

SAVE THESE INSTRUCTIONS

Short Cord Instructions: A short power supply cord is provided to reduce the risk resulting from becoming entangled in or tripping over a longer cord. Extension cords may be used if care is exercised in their use. If an extension cord is used, the marked electrical rating of the cord should be at least as great as the electrical rating of the appliance. The longer cord should be arranged so that it will not drape over the tabletop where it can be pulled on by children or tripped over unintentionally.

NESCO® Food Grinder – Introduction

With your own NESCO® Food Grinder, you control the ingredients. You control the amount of fats, salts and other additives, for a healthier diet. Chunky sandwich spreads, savory appetizers, hearty soups, relishes and homemade sausage. These and other dishes are so easy to make for you and your friends.
You can make sausages from your your favorite recipes. Ingredients and sausage casings can readily be found at your local store. Sausage Seasonings can be found online at Nesco.com.

Before First Use

  1. Read and understand all instructions and keep for future reference.
  2. Remove all packaging and labels.
  3. Clean all parts, except grinder base, following the instructions in the cleaning section.
  4. Wipe the grinder base with a damp cloth.

WARNING: TO REDUCE RISK OF SHOCK HAZARD, NEVER IMMERSE THE GRINDER BASE IN WATER OR ANY OTHER LIQUID.

Grinding Tips

During extended periods of use, fats from meats can build up inside the grinding head causing motor to strain and slow. If this happens turn off grinder and unplug cord from outlet and follow the cleaning instructions.
Coarse Cutting Plate – Use for coarsely ground texture, such as nuts, vegetables or ground meat for chili.
Raw Meat and Fish – These items will have a minimum loss of juices if thoroughly chilled before grinding. When grinding larger quantities, fats can build up inside the grinder head. If this occurs, disassemble and wash parts in soapy water, then reassemble. After grinding meat you can clean the grinding head by grinding a slice of bread.
Remove all bones, tough tendons, nut shells, etc. before grinding.
Nuts – Use the coarse cutting plate and feed nuts into grinder head slowly. Whenever possible, alternate with other ingredients, such as dried fruits or vegetables.

REV: Setting for reversing the auger.

  1. Speed setting for first grind, sausage stuffing, and kebbe making.
  2. Higher speed setting for second grind if necessary.

Assembly & Operating Instructions

  1. Place the unit on a flat and stable work surface and insert the grinding head into the base. Figure 1

  2. Lock the grinding head into place using the head lock/release lever. Figure 2

  3. Insert the auger into the grinding head, the drive end first. Figure 3

  4. Place the cutting blade onto the auger shaft. (The cutting edges should face the cutting disc). Make sure blade is seated over ‘square’ shoulder of auger or the meat will not grind properly. Figure 4

  5. Place the grinding plate onto the auger shaft. (Make sure the notches of the grinding disc fit into the projections of the grinding head). Figure 5

  6. Turn the ring nut on the grinding head and tighten securely. Figure 6

  7. Place the hopper into the barrel of grinding head.

  8. Make sure the power dial is in the “OFF” position and insert plug into 120 volt electrical outlet.

  9. Place a wide, shallow bowl or plate beneath the grinding head to catch ground food.

  10. Turn the dial to the “1” position for first grind. Always have the unit running before adding food. Turn the dial to the “2” position for second grind.

  11. Place food into the hopper and use the food pusher to gently feed food into the auger.
    Do not force food into the grinder head and NEVER use fingers or tools not recommended by the appliance manufacturer to feed food into the grinder head. Figure 7
    IMPORTANT! NEVER PUT YOUR FINGERS INTO THE FOOD HOPPER OPENING WHILE UNIT IS ASSEMBLED.

  12. When you have finished grinding food, turn the power dial to “OFF” and unplug from the electrical outlet.

GRINDER PREPARATION FOR SAUSAGE MAKING:

  1. Insert the grinding head to the base and lock into place using the head lock/release lever.
  2. Insert the auger into the grinding head, the drive end first.
  3. Place the cutting blade and coarse disc onto auger shaft.
  4. Place the sausage cone on the grinding head and loosely screw the ring on the grinding head (Make sure the notches of the sausage-making attachement fit onto the projections of the grinding head).
  5. Attach the ring nut on the grinding head securely.
  6. Place the hopper into the barrel of grinding head.

STUFFING SAUSAGES

  1. Place casing in lukewarm water for 10 minutes. Then slide the wet skin onto the sausage cone.
  2. Place meat mix into hopper and turn the dial to the “1” position.
  3. Use the food pusher to push mix into grinder head. As the casing begins to fill, tie-off the end with string. Evenly distribute meat through the casing and twist into links as it fills.
  4. When finished, turn the dial to the “OFF” position.
  5. Unplug the unit from electrical outlet and follow the cleaning instructions.

KEBBE MAKING:
Kebbe (of Kubbe) is a traditional Middle Eastern recipe comprised of a cylinder shell of meat. The center is stuffed with a spiced lamb filling and the ends are sealed. These are then breaded and deep-fried. The Kebbe attachment makes it easier to shape the cylinder shell.

  1. Attach the grinding head to the appliance. Insert the auger into the grinding head, with the drive end first. Place the Kebbe attachments inside the grinding head. Figure 1
  2. Turn the ring nut on the grinding head and tighten securely. Figure 2
  3. Place the hopper into the barrel of the grinding head. Place kebbe mix into hopper and turn the dial to the “1” position. Figure 3

Cleaning Instructions

  • Before cleaning, turn off any dials or switches and ensure the power cord is removed from the electrical outlet and allow appliance to cool.
  • Wipe the outside area of appliance with a damp cloth and dry with a lint free cloth.
  • Never place appliance in water or other liquids.
  • Wash all parts, except grinder base, in hot soapy water, rinse and set aside to dry. NOTE: PARTS ARE NOT DISHWASHER SAFE.
  • Use care when handling the cutting blade.
  • The cutting blade and cutting plates should be coated with cooking oil after washing and drying. Wrap in grease-proof paper to prevent corrosion.
  • Store appliance in a clean dry place.

One Year Limited Warranty

The Metal Ware Corporation warrants the original purchaser that your product will be free from defects in material and workmanship for a period of one year from date of purchase. Product must be used for personal or sole household usage in accordance with the instructions. Should your product prove defective within one year from date of purchase, contact our customer service team at 1-800-288-4545 with an explanation of the claim. If a viable warranty claim is determined, a customer service member will provide you with the necessary details to have your unit repaired or replaced. Under this limited warranty, we undertake to repair or replace any parts found to be defective at our sole discretion. This limited warranty is void if the unit is connected to an unsuitable electrical supply or dismantled or interfered with in any way or damaged through misuse. This warranty is not transferable.

LIMITATION OF REMEDIES AND DAMAGES:

Except for the limited warranty and remedies expressly stated above, the Metal Ware Corp shall not be liable to you, or to anyone claiming by or through you, for any obligations or liabilities, including, but not limited to, obligations or liabilities arising out of breach of contract, breach of warranty, statutory claims, negligence or other tort or any theory of strict liability, with respect
to the product or the Metal Ware Corp’s acts or omissions or otherwise. Buyer agrees that in no event shall the Metal Ware Corp be liable for incidental, compensatory, punitive, consequential, indirect, special or other damages. Warranty does not cover consequential or incidental damages such as property damage and does not cover incidental costs and expenses resulting from any breach of this warranty, even if foreseeable. Some states or provinces do not allow the exclusion or limitations of incidental or consequential damages, so the above limitation or exclusion may not apply to you depending on the State or Province of purchase.
