Product Information

The SMOKER “MILWAUKEE” is a charcoal grill with a weight of approximately 72.4 kg. It comes with a large grill chamber, a storage rack, a smoke pipe, an exhaust flap, and a small grill chamber with upper and lower parts. The dimensions of the grill when assembled are approximately 171 x 78.5 x 151 cm (B x T x H). The maximum amount of charcoal that can be used is 4 kg, and the small burn chamber can hold up to 2 kg. The product also comes with assembly materials, including nuts, screws, and washers.

Product Usage Instructions

Before using the SMOKER “MILWAUKEE,” check for any damages and do not use if any are found. Read the safety instructions and instructions for use thoroughly before using the product. Keep the operating instructions and give them to any third party who might own the BBQ after you.

Assembly

  • Follow the assembly instructions provided in the user manual.
  • Make sure to use the correct assembly materials, including nuts, screws, and washers.
  • Ensure that the front shelf is not loaded with more than 5 kg of weight.
  • Do not use strong cleaning agents on the product as this may cause damage.

Before Grilling

  • Make sure to place the SMOKER “MILWAUKEE” on a stable and level surface before use.
  • Check that all parts are securely in place before lighting the charcoal.

Grilling

  • Wait until the charcoal is covered with a light layer of ash before placing any food on the grill.
  • For indirect grilling, place the food on the grill and close the lid to avoid flames caused by dripping fat.

This user manual is based on the norms and regulations valid in the European Union. Should you be located outside of the EU, please follow all guidelines and legislation in your country of residence!

Safety instructions

Danger Fire hazard!
Live coals and grill components get very hot during operation and can start fires.

  • It is essential that you have a fire extinguisher and first-aid kit ready and be prepared for an accident or fire.
  • Place the grill on an even, horizontal, secure, heat-resistant and clean surface.
  • Position the grill so that it stands at least 3 meters from highly flammable materials such as awnings, wooden patios or furniture.
  • Do not move the grill during use.
  • Light the charcoal only in an area protected from wind.
  • Fill the large grill chamber with max. 4 kg of charcoal / charcoal briquettes.
  • Use the small grill chamber for smoking only.
  • Fill the small grill chamber with max. 2 kg of firewood.
  • Do not heat up the smoker to more than 260°C.
  • Secure the smoker to prevent it from incidentally starting to roll by itself. Always place it on a flat surface and block the wheels
  • Some foods produce flammable fats and juices. Clean the grill regularly, preferably after each use.
  • Only tip out the ash once the charcoal has completely burned out and cooled down.
  • Never leave the grill unattended during use

Danger Risk of burning and accident!
This product is not intended to be used by persons (including children) with reduced physical, sensory or mental abilities or a lack of experience and/or knowledge.

  • Such persons must be informed about the dangers of the device and supervised by a person responsible for their safety.

  • Any modifications to the product represent a large safety risk and are forbidden. Do not undertake any unauthorised interventions yourself. In case of damages, repairs or other problems with the grill, contact our service point or a professional in your area.

  • Keep children and pets away from the device.
    The grill, the charcoal and grill meat become very hot during use. Any contact can result in serious burns.

  • Keep sufficient distance from the hot parts, since any contact can lead to severe burns.

  • Always wear oven or BBQ gloves when grilling. (Glove Category II with regard to heat protection, e.g. DIN-EN 407)

  • Use only long-handled utensils with heat-resistant grips.

  • Do not wear any clothing with wide sleeves.

  • Only use dry igniters or special BBQ lighter fluid in compliance with EN 1860-3 to start the BBQ.

  • Let the grill cool down completely before cleaning and/or storage.

Danger Risk of explosion!
Flammable liquids poured into the embers cause rising flames or explosions.

  • Never use combustible fluids such gasoline or spirits.
  • Do not put any charcoal pieces soaked in flammable liquids on the embers.

Danger Risk of poisoning!
When burning charcoal, BBQ briquettes, etc., carbon monoxide is produced. This gas is odorless and can be deadly in closed rooms!

  • Use the grill outdoors only!

Danger Health hazard!!
Do not use any paint solvents or thinners to remove stains. Such liquids are hazardous to health and may not come into contact with food.

Danger Hazards for children!
Children may become entangled in packaging foil and suffocate.

  • Never let children play with packaging material.
  • Make sure that children do not place any small assembly parts in their mouth. They could swallow small parts and suffocate.

Danger Risk of injury!
Both the grill and individual parts have some sharp edges.

  • Be careful with individual parts to prevent accidents and/or injury during assembly and use. Wear protective hand wear if necessary.
  • Do not set up the grill near entryways or heavily trafficked zones.
  • Always exercise extreme caution while grilling. You could lose control of the product if you are distracted.
  • Always be attentive and aware of what you are doing. Do not use the product when you are lacking in concentration or are tired and/or under the influence of drugs, alcohol or medication. One moment of inattention while using the product is enough to lead to severe injury

Attention Risk of damage!!
During use, the screws can loosen slowly and impair the grill‘s stability.

  • Check that all screws are tightened before use. If necessary, tighten all screws to guarantee stability.

Attention Risk of damage!!
Do not use any strong or abrasive solvents or scouring pads as such products attack the grill‘s surfaces and leave permanent markings.

Assembly

Preparation
Danger Risk of injury!
Failure to follow these instructions can lead to problems and risks while using the grill.
Follow each assembly step described here.

  1. First, read the assembly instructions thoroughly.
  2. Allow yourself enough time for assembly and find an even working space of two to three square meters.
  3. Small parts such as handles may be pre-assembled.
  4. Do not place a load greater than 5 kg on the front rack.

Required tools

  • 1 x Pliers
  • 1 x Phillips screwdriver
  • 1 x Adjustable spanner

Assembling the Grill

  1. Unpack the grill and remove all wrapping films. Store the packaging material out of children’s reach and dispose of it after assembling the grill according to the applicable regulations.

  2. Remove the lid from the large grill chamber (1) by removing the hinge bolts. Then pull the hinge pins out of the hinges of the grill chamber.

  3. . Connect a long support leg (4) and a wheel support leg (2) to the large grill chamber using eight M6 x 12mm bolts (C), eight M18 washers (D) and eight M6 nuts (A).

  4. Stick the hook of storage rack (3) through the holes in the support legs as shown.

  5. Connect the other two support legs (2, 4) by sticking the hooks of the storage rack through the holes in the support legs. Fasten the parts together using eight M6 x 12mm bolts and eight M6 nuts. Make sure that the wheel is on the side where you can find the connection opening with the small grill chamber. Note:
    Place the assembled grill upright with the help of another person. While doing so, make sure not to exert too much pressure on the legs.

  6. Stick wheel axle (5) through the holes in the wheel support legs.

  7. Fasten wheels (6) on the wheel axle using two M12 nuts (B).

  8. Place exhaust flap (9) over the bolt neck on the upper end of smoke pipe (7). Then place spring (8) on the bolt neck and fasten with a cap nut.

  9. Connect the exhaust pipe to the large grill chamber using four M6 x 12mm bolts and four M6 nuts.

  10. Place the grease collection bucket holder (23) through the hole on the left side in the large grill chamber

  11. Attach sheet metal holder (27) and front rack (19) to the large grill chamber using six M6 x 12mm bolts.

  12. Mount handle (10) to the large grill chamber using four M6 x 12mm bolts and four M6 nuts.

  13. Attach sheet metal holder (14) for the small grill chamber to the support legs using two M6 x 12mm bolts.

  14. Connect lower part (11) and upper part (12) of the small grill chamber using six M6 x 12mm bolts.

  15. Mount vent slide (24) for the small grill chamber using one M6 x 12mm bolt and one M6 nut.

  16. Mount lid stopper (25) for the small grill chamber using one M6 x 12mm bolt and one M6 nut.

  17. Attach the small grill chamber to sheet metal holder (14) and to the large grill chamber using eight M6 x 12mm bolts and two M6 nuts.

  18. Attach sheet metal holder for ash collection tray (13) using six M6 x 12mm bolts and six M6 nuts. Slide ash collection tray (20) onto the rails of the sheet metal holder.

  19. Place 3 charcoal grates (15) in the large grill chamber. Place 3 cooking grates (16) above the charcoal grates. Place one charcoal grate (17) in the small grill chamber and 2 cooking grates (18) above it.

  20. Place thermometer (22) in the opening of the large grill chamber lid.

  21. Connect handle (26) with the lid of the small grill chamber using the supplied 2 bolts and 2 nuts.

  22. .Attach the lids to the small and the large grill chambers. To do so, push the hinge pins through the hinges and affix them using 4 hinge bolts

  23. Now the grill is completely assembled.

important: All bolts must be fastened tight.

The thermal insulation of the ash collection tray handle has been additionally improved.
This concerns part No. 20 in the scope of delivery. In this respect, the following parts have been extra added to the scope of delivery:

Danger Burning and accident hazard!
Bear in mind that the handle of the ash collection tray gets very hot during grilling. Grasp the ash collection tray handle only in oven gloves. Let the grill and the charcoal and ash in the ash collection tray cool down completely before emptying the ash collection tray

Affixing the handle to the ash collection tray

  1. Before you slide the ash collection tray onto the guide rails of the sheet metal holder, you need to mount the wooden handle to the ash collection tray (see Step 18 on Page 10 of the Instruction Manual). The handle has been extra added to the grill parts delivered.
  2. Loosen the two M6x12 bolts and two M6 nuts that are already attached to the ash collection tray
  3. Position the handle on the ash collection tray as shown in the figure below. Fasten the handle using the two M6x12 bolts and two M6 nuts loosened before. Then slide the ash collection tray onto the rails of the sheet metal holder.

Setting Up the Grill

Warning Risk of damage!
The bolts can loosen slowly during operation and affect the grill stability.

  • Check whether the bolts are tight prior to each use. If necessary, tighten all of the bolts again to ensure the grill stands stable.
  • When using the grill, please protect the floor and surrounding walls from possible soiling e.g. through fat splashes.
    • Place the grill on an even, sturdy surface outdoors before use.
    • The grid of the grill is not suitable for sour food (e.g. grill marinades with lemon/lime addition).
      Use instead a stainless steel tray

Before Grilling
Danger Burning hazard!
Only use the grill with the ash collection tray pushed in. Do not pull out the ash collection tray from the sheet metal holder when it is hot or when there are still hot embers or charcoal bits in the tray.

  • Keep the charcoal in the small grill chamber sufficiently away from the vent slide so as to prevent embers or hot charcoal from falling out from the grill chamber.

Danger Health risk!
Do not use any charcoal that has been pre-treated with flammable liquids. Use only highquality pure charcoal or a mix of charcoal and firewood.

Warning Risk of damage!
To prolong the service life of the grill, make sure that the hot charcoal and burning wood do not come in direct contact with the grill chamber walls.

  • Never rub or scratch the outer case of the hot grill during the initial pre-firing procedure.

  • Before using the grill for the first time, smear it with oil and then pre-fire it for at least 3 hours so as to protect the grill body from intensive corrosion and to burn production residues, if any.
    Important: Always store the grill in an oiled condition and covered with a canvass.

  • Prior to first use, wash the cooking grate with warm soapy water. Thenwash it with clean water and dry thoroughly.

  • Rub the outer surfaces of the grill with vegetable oil or use vegetable oil for spraying the grill gently. Do not treat any rust spots and the ash collection tray with vegetable oil.

  • A sheet metal container must be placed under the grease discharge opening at all times. Place an empty open sheet metal container (e.g., a soup can) in grease container holder (23).

  • Observe the instructions for starting the fire. You may use charcoal or firewood.

  • Start the fire with some 3.5 – 4 kg of charcoal. This amount should be sufficient for the pre-firing (conditioning) of the grill. Please use only charcoal & briquettes according to DIN-EN1860-2

  • Put a sufficient amount of a fluid lighter (according to the manufacturer’s instructions) on the charcoal. Open the grill chamber lids and wait 2-3 minutes for the liquid to soak in. Alternatively, you may use common solid firefighters as well.

  • Open the vent slide of the small grill chamber to 1.5 – 2.5 cm. Open the exhaust flap of the smoke pipe half way.

  • Ignite the charcoal with a long match. Let the charcoal burn with the lids open until a bright glowing layer has developed (approx. 20 minutes).
    Warning! The fluid lighter must have burned completely before you can close the lid. Otherwise, flames from the fluid lighter may cause spurs of flame or explosion within the grill once you open the lid again.

  • When the charcoal is glowing intensely, distribute the charcoal evenly in the centre of the charcoal grate.

  • Then cover the lid. Let the temperature rise to 100°C – 200°C and maintain this temperature for 2 hours.

  • Then increase the temperature to 175°C – 200°C. You can do so by opening the slide vent in the small grill chamber and the exhaust flap on the smoke pipe some more and by adding more charcoal or firewood.

  • Maintain this temperature for about 1 hour. Then let the grill cool down completely.

  • Important: Repeat this procedure from time to time to maintain the condition of the grill.

  • Warning: The temperature may never exceed 260°C. The above procedure is necessary to prepare the inside of the grill for food preparation and to fire in the heat-resistant paint on the outside. The grill chamber lid should not be completely closed during the pre-firing procedure. Close it completely only for a few minutes at the end of the procedure.

Operation

Danger Burning hazard!
The grill, charcoal and the food being grilled become very hot during use. Any contact with them can result in serious burns.

  • Keep sufficient distance from hot parts since any contact can lead to severe burns.
  • Always wear oven or BBQ gloves when grilling. (Glove Category II with regard to heat protection, e.g. DIN-EN 407)
  • Use only long-handled utensils with heat-resistant grips.
  • Do not wear any clothing with wide sleeves.
  • Use only dry lighters or special fluid lighters compliant with EN 1860-3 as firelighters.

Grilling

  1. Use large grill chamber (1) for grilling. Remove cooking grates (16).
  2.  Place 3-4 solid firelighters in the middle of charcoal grate (15). Pay attention to the manufacturer’s instructions on the packaging. Light the firelightersusing a match.
  3. Layer maximum 2.5 kg of charcoal or briquettes around the firelighters.
  4. As soon as the charcoal is glowing, distribute it evenly on charcoal grate (15). To do this, use a suitable fireproof tool with a long, fireproof handle
  5. Place cooking grate (11) on the holders in the large grill chamber.
  6. Make sure to place a sheet metal container in the relevant holder to catch waste grease.
  7. Place the food to be grilled on the grate only when the charcoal is covered with a bright layer of ash.

Smoking
You can smoke food by burning firewood or charcoal in the small grill chamber and  placing the food to be smoked on the cooking grates in the large grill chamber. The smoke generated in the small grill chamber draws through the large grill chamber and escapes through the smoke pipe. Do not use more than 2 kg of firewood in the small grill chamber. This indirect method of cooking prevents grease from dripping on embers, which creates flames that may burn the food. Beech wood and fruit tree wood is particularly suitable for food smoking. Make sure that the firewood is stored in a dry, naturally ventilated place (for at least 2-3 years). Do not use oak wood as it is harmful to human health. Inquire with your wood supplier which other types of wood are suitable for smoking food. For smoking, use firewood pieces that are ideally 7 – 10 cm long and 2.5 – 5 cm thick.

  • When smoking food, keep the grill chamber lids closed; otherwise, smoke escapes faster and the cooking time needs to be extended.
  • Before starting the fire, open the vent slide of the small grill chamber to 1.5
    • 2.5 cm. Open the exhaust flap of the smoke pipe half way. You can warm up the grill with charcoal and add firewood later.
  • Read the temperature on thermometer (22) in the lid of the large grill chamber. You can regulate the temperature with the vent slide of the small grill chamber.
  • The ideal temperature range for smoking is from 60°C to 90°C.
  • Fish or poultry meat is suitable for smoking. You can smoke also other types of meat and even some types of vegetables.
  • When using meat or fish, marinate the food to be smoked for several hours before smoking in a mixture of salt, water and spices. Let it dry well before smoking.
  • For larger chunks of meat, estimate approximately 1 hour of cooking per every 500g of meat. In every case, check whether the food being smoked has been cooked well before removing it from the grill. Use a food thermometer for this purpose.

Maintenance and Cleaning

Your grill is made of high-quality materials. To clean and maintain the surfaces, please heed the following instructions:
Danger Risk of burning!
Let the grill cool down completely before cleaning.

  • Empty the ashes once the fuel has burned down completely and is out.

Danger Health hazard!
Do not use any paint solvents or thinners to remove stains. Such liquids are hazardous to health and may not come into contact with food.

Attention Risk of damage!
Do not use any strong or abrasive solvents or scouring pads as such products attack the grill‘s surfaces and leave permanent markings.

  • Let the fuel burn out completely after grilling. This makes the cleaning easier as any excess fat and barbecue residues burn away.
  • Empty out the cold ash and clean the grill regularly, preferably after every use. It is very important that you remove the ash from the grill body before any moisture combines with the cold ash. Ash is saline and, in a moist condition, it will damage the inside of the grill body. If this happens regularly over years, the grill body can sustain damage through rust.
  • Remove the cooking grate and clean it thoroughly with soapy water. Wash it with clean water and then dry the grate carefully.
  • Rub the cooking grates and the charcoal grates with vegetable oil (a thin layer) after cleaning.
  • Use a wet sponge to remove loose residue from the grill.
  • Use a soft, clean cloth for drying. Do not scratch the surfaces when wiping them dry.
  • Clean the inner and outer surfaces with warm soapy water as a general practice.
  • Tighten all bolts before every use to ensure that the grill stands stable at all times.
  • Protect the grill from ongoing weather effects. Since it has been made of steel, it will one day develop some corrosion. If this happens, rub the rusty spots clean and cover them with aheat-resistant paint.
  • NOTE: Your grill will develop a patina after some time of use. If you do not like this rusty look, you can proceed as follows: Remove the rust using a wire brush or a rust removing gel. Then apply an oven lacquer to the surface (heat resistant to at least 600°C). Then your smoker will look like new again.
  • IMPORTANT: Always store the grill in a dry place, protected from moisture.

Disposal

The packaging is made of environmentally friendly materials that you can dispose of at your local recycling centre.

Do not throw away the grill with the household waste! Dispose of it through a registered waste disposal service or at your local waste disposal facility. Comply with all applicable local legislation. If you have any questions, contact your local waste disposal facility
