- Drying trays (x 5)
- On/off switch
- Temperature setting knob
- Base unit
BEFORE USING FOR THE FIRST TIME
- Remove all packagings.
- Place the base unit on a flat stable and heat-resistant surface. Fit all the (empty) drying trays and then the lid onto the base unit. Make sure that there is at least 15 cm free space around the outside of the dehydrator to ensure adequate air circulation in and around the appliance.
- Wash the drying trays and the lid; rinse and dry them thoroughly. Wipe the exterior of the base unit with a damp cloth. The appliance may emit a slight odour of burning the first time when it is used, but this is quite normal.
Product Use
This appliance is suitable for fruits, vegetables, mushrooms, herbs and teas.
Make sure the ingredients you choose for drying are fresh and fully ripe.
PREPARATIONS
- Wash or clean the raw ingredients before drying to cleanse them of any traces of chemicals, dirt, insects, etc.
- Inspect any fruit or veg before placing it onto the drying tray. Remove any food that is discolored, overripe, or damaged, otherwise it could ruin everything on the tray.
- Slice the food to be dried into 6 mm thick slices. Thinner slices will dry quicker but they will shrink more. Slices of unpeeled fruit should be laid with the cut side facing up. Lay each piece separately so that it does not overlap any of the others on the tray.
- Spread the food over the tray in an even layer. Herbs should be dried very carefully, just remove the stalks. They do not need to be broken down any more. Herbs need turning from time to time to stop them sticking to the tray.
- Do not dehydrate wet food. Once rinsed, the food should be allowed to air dry for a while before you begin to dehydrate it.
PRE-TREATING
Pre-treatment can add flavor to food and also controls the enzymes which cause the colour and taste of food to deteriorate. By pre-treating the food you can halt this process and make food last even longer after it has been dried.
Fruit and vegetables can be pre-treated in the following solutions:
- Lemon and pineapple juice: A natural way to reduce unwanted colour deterioration. Simply slice fruit or vegetables straight into the juice, leave for a few minutes and place onto the trays.
- Orange or lime-juice, spices or honey: Simply slice fruit or vegetables into the solution, leave for a few minutes and then place on the trays. For a lovely flavour, sprinkle your ingredients with cinnamon or coconut.
- Table salt: Simply sprinkle food with salt.
- Citric or ascorbic acid: Available from health food shops, these anti-oxidant granules are ideal for making banana chips and apple rings: Dissolve 6 tbs of ascorbic acid in a pint of water; soak for 1-2 minutes and then dry off before placing on the trays.
- Blanching in syrup may help retain the colour of apples, apricots, figs, nectarines, peaches, pears and plums and also gives a sweet taste.
NB: before drying pre-treated food, remove any excess moisture by placing food on paper towels or clean dry cloths. Ingredients should be laid on the trays in a thin layer with space in between each item to allow for thorough drying.
USE
Make sure that the on/off switch is set to “O” (off) before the appliance is plugged into an electrical socket.
-
Spread the food over the tray in an even layer.
-
Place the drying trays with the food onto the base unit and then put the lid on.
-
Plug the appliance into an electrical socket and press the on/off switch to position “I” (on).
-
Set the temperature using the table below as a guide. Drying time will vary according to the type of ingredients, size of the pieces and the tray load. The greater the moisture content of the food, the longer the drying time it will need. All of the included drying trays must be used regardless of whether they contain any food.
Type of food| Recommended temperature
---|---
Flowers| 35-40 ℃
Herbs| 40 ℃
Baked goods| 40-50 ℃
Vegetables| 50-55 ℃
Fruit (apples)| 55-60 ℃
Fruit (pears)| 55-60 ℃
Fruit (apricots, peaches, plums)| 55-60 ℃
Meat, fish| 65-70 ℃
Mushrooms| 40-50 ℃ -
The contents of the lowest tray will be dried the most efficiently, so the trays should all be circulated through the different positions at regular intervals to ensure that all the food is dried to the same degree. For even drying rotate the trays from top to bottom and left to right (see fig1.) every few hours. Please note that the trays will be very hot when in use especially nearest the heating element and you must always wear oven gloves to do this.
-
Check the progress of the dehydration from time to time to ensure that you do not dehydrate the food too much. The food should be removed from the dehydrator when it is dehydrated. The dehydrated food should be stored in a cool, dark place in a suitable container.
-
When you have finished, press the on/off switch to position “O” and then unplug the appliance.

Tips:
- About 6% to 10% of moisture may remain in foods without danger of spoilage. Many dried foods will have a leathery consistency.
- After drying, fruit should be left to ‘sweeten’ or condition for a week before consuming. To condition, place fruit in a non- aluminium, non-plastic container and place in a dry well – ventilated area.
- Make sure food is thoroughly dry before packing.
- Check the dried food once a month for spoilage. If the food was not in its best condition at the point of dehydration the spoilage bacteria may continue to multiply.
NOTES FOR MAINTAINING QUALITY
- Pay attention for the correct amount and time.
- Pack dried foods correctly in air-tight containers in a cool, dry and dark place.
