Important safety information

The appliance may be used only for the intended purpose and in accordance with this instruction manual. No claims of any kind may be pressed for damage resulting from improper use. You are therefore advised to read the instruction manual carefully before use. It contains instructions for using, cleaning and looking after the appliance. We accept no liability for any damage resulting from non-observance. Keep this instruction manual in a safe place and pass it on to any subsequent user together with the appliance. Please also note the warranty information, which is enclosed separately. The safety precautions must be observed during use.

Additional safety information
  • The appliance should be connected only to earthed wall sockets that have been installed in accordance with the regulations. The power cable and plug must be dry.
  • Do not pull or clamp the connection cable over sharp edges. Do not leave it dangling. Protect it from heat and oil.
  • Only use an extension cable if it is in perfect condition.
  • Never pull the mains plug out of the socket by the power cord or with wet hands.
  • Do not carry the appliance by the cable.
  • Do not place the appliance on hot surfaces such as hotplates or near open gas flames because this could melt the casing.
  • Only set the device up on smooth, dry, heat resistant surfaces which are free of dust.
  • Do not place the appliance on water-sensitive surfaces. Splashed water may damage such surfaces.
  • Caution: steam escapes from the appliance! Do not operate the appliance underneath sensitive furniture (e.g. wall cupboards).
  • Caution: The appliance gets hot! Risk of scalding from escaping steam. Do not move the appliance or pull on the mains cable during operation.
  • Warning, risk of damage! Only operate the appliance with clean water. Other liquids or floating foods in the water tank (4) can damage the water pump or clog the water circuit. Only cook food in vacuum film suitable for sous vide and make sure the seal is tight. When using the slow cook insert, make sure that no food gets into the water tank. However, should food get into the water tank, switch the device off immediately, allow the water to cool and drain and clean the water tank as described in the “Cleaning and care” chapter.
  • Only fill the water tank (4) as far as the marking for sous vide and for slow cook.
  • Do not use or store the appliance outside, in damp rooms or within reach of children.
  • The appliance must be supervised when in use.
  • When the appliance is not being used, pull the mains plug out of the socket.
  • Do not cover or block the steam outlet in the water tank (4)).
  • Make sure that the top of the main appliance (5) is free of contamination and fluid before placing the water tank on it.
  • Note: When you remove the water tank from the device after use, a small residual amount of water will spill from the pump onto the top of the main appliance. This is normal. Remove the mains plug and empty the main appliance into the sink.
  • Stop using the appliance and/or pull the mains plug out of the socket immediately if
  • The appliance or the mains cable is damaged
  • You suspect that the device may be defective following a fall or similar incident. In such cases, take the appliance in for repair.
  • No liability is accepted for any damage resulting from misuse, incorrect operation or improper repair. Warranty claims are likewise excluded in such cases.

Use of Sous Vide Cooker

Sous vide (French for under vacuum) or vacuum cooking is a method for the cooking of meat, fish, vegetables and fruit in special plastic pouches (vacuum pouches) at relatively low temperatures of under 100°C. The vacuum packing and the slow cooking process massively reduces oxidation and retains minerals, vitamins and flavours within the food. The influence on the flavour of the food from adding herbs and spices is also more intense and salts and intrinsic flavours are preserved. Meat also stays moist. As, because of the relatively low temperatures, there can be no Maillard reaction with sous vide cooking, there are also no crusts formed on the food. Crusts can be achieved before or after the sous vide cooking by quick frying in the pan using a kitchen blowtorch. The sous vide method pasteurises the food at 60°C to 62°C, which also extends shelf life.
Note: After pasteurisation, the food in the vacuum pouches must be eaten immediately or cooled in ice water and stored in the fridge at below 7°C or frozen at -18°C. Unpasteurised food must reach the target temperature and be served within 4 hours. Make sure that unpasteurised foods are not consumed by people with compromised immune systems, children or pregnant women.

Using the Slow Cook insert

The Slow Cook insert (2) allows food to be gently cooked for longer periods of between 3 and 12 hours at temperatures below boiling point. This prevents the food from burning. In order to enable optimum heat transfer from the water bath to the Slow Cook insert, it is most suited to foods with a large amount of sauce, e.g. stews, goulash or soups.

Before using for the first time

Cleaning
Before using the appliance for the first time, clean all parts except the main appliance (5) thoroughly and dry them. Please also note the cleaning notes in this instruction manual.
Vacuum packing the food
Before cooking, the food must be vacuum packed in pouches suitable for sous vide and sealed. When sealing, make sure there are no spaces near the seal as these can prevent a proper
hermetical seal.
Cooking times and temperatures
Please note that the cooking time depends on the thickness and temperature of the food. The cooking time is longer for frozen food.
Note: The temperatures and times listed in the appendix are approximate values for nonfrozen foods and can be adjusted to taste but not reduced.

Sous Vide cooking

  1. Place the filled vacuum pouch on the meat and vegetable holder (3). The removable top shelf prevents the vacuum pouch floating up because of residual air or air bubbles produced during the cooking process. For larger portions, the three internal metal rods can simply be removed.
    Note: Make sure that the vacuum pouches touch each other as little as possible so that the food is surrounded by water as much as possible. This ensures consistent results.

  2. Place the water tank (4) on the main appliance (5).
    Note: The appliance will not work without the water tank.

  3. Place the loaded meat and vegetable holder into the water tank. Then fill the water tank with as much clean water as is required to completely cover the vacuum pouch. Note the MAX marking “Sous Vide” on the back of the water tank.

  4. Connect the appliance to the mains. The appliance is now in standby mode. Press the on/off button (7) to switch the appliance on.

  5. Next, use the selector knob (12) to set the temperature you want and confirm by pressing the selector knob. The default setting for the appliance is 60°C. Temperatures can be sent in the range from 35°C to 90°C.

  6. The preset cooking time is 00:00 hours. Confirm this cooking time setting or set your own cooking time using the selector knob and confirm by pressing the selector knob.

  7. Now press the start/stop button (8) to start the heating process. The icon lights up and indicates that the appliance is working. Once the pre-set temperature is reached, a beep sounds and the timer begins to count the minutes and hours forwards. If a cooking time is set, the timer begins to count the minutes and hours backwards (countdown). The maximum cooking time is 72 hours.
    Note: You can program up to two temperature and cooking time settings permanently. To do this, press the settings button (9). The icon flashes. Now press the knob. You can set the desired temperature and cooking time for the first custom program. Now press the start/stop button (8) to save the values and start the heating process.
    Warning: Do not go below the temperatures and cooking times shown in the cooking time chart.

  8. Press the start/stop button (8) to pause the cooking process. In this case, the icon flashes until the cooking process starts again.

  9. Press the on/off button (7) in order to stop the cooking process and put the appliance into standby mode.
    Note: When you remove the water tank from the device after use, a small residual amount of water will spill from the pump onto the top of the main appliance. This is normal. Remove the mains plug and empty the main appliance into the sink.

Slow Cooking
  1. Fill the Slow Cook insert (2) with the desired food. In order to retain cooking fl avours, the food should be quickly fried fi rst.

  2. Place the water tank (4) on the main appliance (5).
    Note: The appliance will not work without the water tank.

  3. Then fi ll the water tank with clean water at least to the MIN marking and no higher than the MAX marking “Slow Cook” on the back of the water tank.
    Note: the water level around the Slow Cook insert should correspond to the fi ll level inside the Slow Cook insert in order to ensure optimum heat transfer to the food being cooked.

    • Low fi ll level in Slow Cook insert = water to MIN marking
    • Medium fi ll level in Slow Cook insert = water between MIN and MAX markings.
    • Maximum fi ll level in Slow Cook insert = water to MAX marking
    • Caution! Do not fi ll beyond the MAX marking “Slow Cook” as this could lead to water being forced up into the Slow Cook insert.
  4. Then insert the Slow Cook insert into the water tank. Top up with a little water if required. You can now slow cook using a pre-set custom cooking time or individually programmed temperature and cooking time settings. Proceed as described in the section on “Sous Vide cooking” in steps 4 to 9.
    Note: When you remove the water tank from the device after use, a small residual amount of water will spill from the pump onto the top of the main appliance. This is normal. Remove the mains plug and empty the main appliance into the sink.

Setting the temperature unit (°C/°F) and water hardness

  1. Place the water tank (4) on the main appliance (5).

  2. Connect the appliance to the mains. The appliance is now in standby mode. Press the settings button (9) and hold it down for at least 3 seconds. If the appliance is already in standby mode, press the settings button (9) and hold it down for at least 3 seconds.

  3. The °C icon fl ashes. By twisting the selector knob (12), you can change the setting to °F. In this case, the preset temperature of 60°C is replaced with 140°F. Confi rm your selection by pressing the selector knob again.

  4. Instead of the time, the preset water hardness H4 now fl ashes on the display. By twisting the selector knob, you can adjust this to H1 to H4 according to the water hardness where you live.
    Note: You can fi nd out your water hardness from your council or from your energy and water provider or online.

  5. Once you have confi rmed the water hardness set, it is permanently saved in the device.

  6. Then press the on/off button (7) to put the appliance into standby mode.

Cleaning and care

Cleaning
Pull out the mains plug and allow the appliance to cool down. Do not immerse the appliance in water, the surfaces can be cleaned using a damp cloth and a little washing-up liquid. Do not use any sharp or abrasive cleaning agents.

Scale indicator
Lime scale deposits increase the time it takes the Sous Vide Cooker to heat up. They also lead to energy losses and impair the service life of the appliance. The automatic scaling indicator determines the time for the next descaling cycle. Depending on the level of use and hardness level of the water, you are prompted to run a descaling process by the fact that the descaling light is permanently lit.
Descaling agent
Use a commercially available descaling agent that is also suitable for fifi lter coffee machines. Do not use regular or concentrated vinegar because this may damage the materials in the appliance. Use of descaling agents based on citric acid may lead to the formation of precipitates that seal the lime scale layer or clog up the lines in the appliance. Descaling with citric acid also takes too long, as a result of which complete descaling cannot be guaranteed. Our warranty does not cover damage caused by using unsuitable descaling agents or failure to follow the descaling instructions. Handle descaling agents carefully to prevent damaging furniture or clothing.

Descaling the appliance
Place the water tank (4) on the main appliance (5). Connect the appliance to the mains. The appliance is now in standby mode. Press the on/off button (7) to switch the appliance on. Press the settings button (9) and hold it down for 3 seconds. “CALC” is now shown on the display instead of the temperature. Now press the start/stop button (8) to start the descaling process. The settings cannot be changed.
Warning: The symbol only goes out once the descaling process has been completed. Once you have finished the descaling process, press the on/off button (7) to put the device into standby mode.

However, the foods should never be cooked for less than the recommended time.   • This product is supplied with a 13 A plug conforming to BS 1363 fitted to the mains lead. If the plug is unsuitable for your socket outlets or needs to be replaced, please note the following. If the plug is a non-rewireable one, cut it from the mains lead and immediately dispose of it. Never insert it into a socket outlet as there is a very great risk of an electric shock.

  • The replacement of the plug at the mains lead has to be done according to the following instructions:
    Important : The wires in this mains lead are coloured in accordance with the following code: blue Neutral brown Live As the colours of the wires in the mains lead of this appliance may not correspond with the coloured markings identifying the terminals in your plug, proceed as follows:

  • the wire which is coloured blue must be connected to the terminal which is marked with the letter N or coloured black,

  • the wire which is coloured brown must be connected to the terminal which is marked with the letter L or coloured red. Do not connect any wire to the terminal which is marked with the letter E or by the earth symbol , or coloured green or green and yellow.

  • If a 13 A (BS 1363) plug is used it must be fitted with a 13 A fuse conforming to BS 1362 and be ASTA approved. If any other type of plug is used, the appliance must be protected by a 10 A fuse either in the plug or adapter or at the distribution board. If in doubt – consult a qualified electrician.

  • Never use the plug without closing the fuse cover.

The appliance complies with European directives 2014/35/EU, 2014/30/EU and 2009/125/EU. At the end of its life, this product may not be disposed of in normal household waste, but must instead be taken to a collection point for recycling electrical and electronic appliances.

The materials are recyclable in accordance with their labelling. Reuse, recycling and other ways of reutilising old appliances make an important contribution to protecting our environment.
Please ask your local authorities for information about the appropriate disposal point. End users are personally responsible for deleting any personal data that may be stored on appliances they are disposing of.
