1 PRODUCT IDENTIFICATION
1.1 Application, general functions and int ended use
This dishw asher is int ended for professional use in t he rest aurant and inst it ut ional cat ering sect or and complies w it h t he relevant safety regulations. How ever, misuse may cause injury and/ or damage, and t herefore t he dishw asher must only be used by suit ably t rained st aff. This dishw asher is designed for use in non-mobile premises and is int ended only for w ashing t ablew are (dishes, pans, t rays, cups, glasses and bow ls) and any ot her it em for commercial cat ering, st able t o t emperat ure and humidit y produced by t he appliance” . Any ot her t ype of use is not permit t ed and may be dangerous. Persons w hose physical, sensory or ment al capabilit ies, inexperience or lack of know ledge render t hem unable t o use t he dishw asher safely must not use it w it hout t he supervision and guidance of a responsible person. The manufact urer is not liable for any injury or damage caused by failure t o comply wit h t he inst ruct ions given in t his manual, misuse, t ampering w it h even a single part of t he appliance, or t he use of non-genuine spare part s.

3 SAFETY PRECAUTIONS AND INSTRUCTIONS
The precaut ions and inst ruct ions below cont ain import ant informat ion and must be read w it h care. The manufact urer does not accept responsibilit y for damage caused by failure t o com ply w it h t he safet y precaut ions and inst ruct ions.
3.1 Correct installation
The dishw asher must be inst alled by an aut horised t echnician. When handling and inst alling t he dishw asher, alw ays w ear t he most suit able personal
prot ect ion equipment (PPE) for t he t ask in hand.
Do not inst all a dishw asher w hich has been damaged during t ransport . If in doubt , consult
your dealer.
If t he pow er supply cable is damaged, do not run t he dishw asher. Do not inst all t he dishw asher in areas subject t o freezing t emperat ures or in at mospheres
w it h explosion risk (ATEX).
Any accessories may only be inst alled on t he appliance if aut horised by t he manufact urer. Do not inst all t he dishw asher next t o appliances w hich irradiat e st rong heat (e.g. gas burners,
st oves, et c.) since t hey could cause damage.
If t he dishw asher is inst alled above t he ground, make sure t hat t he st and and dishw asher
are secured properly and do not const it ut e a hazard.
Elect rical safet y is only ensured if t he dishw asher is connect ed t o an eart h conduct or
compliant w it h t he relevant elect rical regulations. If in doubt , have t he syst em inspect ed by a qualified elect rician.
A circuit breaker and overcurrent prot ect ion device (magnet ot hermal sw it ch or fuses) must
be inst alled in an easily accessible position on t he dishw asher’s pow er supply line. This device must only serve t he dishw asher and must be suit able for it s rat ed elect rical charact erist ics.
Do not connect t he dishw asher t o t he elect rical mains by means of adapt ers or ext ensions,
since t hey do not guarant ee t he safet y required.
If t he dishw asher is connect ed t o t he elect rical mains by means of a plug, it must be of t he
same t ype as t he pow er socket , suit able for t he appliance’s rat ed elect rical charact eristics and compliant w it h t he relevant nat ional regulat ions on elect rical systems. The pow er plug must be easily accessible aft er t he appliance has been inst alled.
Only use new hoses for connect ion t o t he w at er supply. Old hoses or hoses salvaged from
previous inst allations must not be used.
The drain connect ion must be made in accordance w it h t he relevant nat ional regulat ions.
Subst andard connect ions may cause flow back and in some cases pollut ion.
If t he machine is not inst alled in a recess, t he FSG-PRF kit code 917839 should be used t o
make it st able.

3.2 Safe use The st aff assigned t o use t he dishw asher must be suit ably t rained and inst ruct ed. The appliance is not suit able for use by juveniles or persons w it h reduced physical, sensorial
or ment al capacit ies, or t hose wit hout t he necessary knowledge and experience. Such persons may only use t he appliance under t he supervision of a person responsible for t heir safet y.
Do not leave t he dishw asher door open. Risk of t ripping or injury against t he edges of t he
door.
Do not sit or lean on t he open door. This may t ip over or damage t he appliance. The w at er inside t he dishw asher is not drinkable. Do not use t he dishw asher for w ashing or soaking foods. Do not use t he w at er inside t he dishw asher for defrost ing foods, even if t hey are in airt ight
cont ainers.
When using t he dishw asher, remember t hat t he plat es are very hot at t he end of a w ash
cycle.
When t he door is opened, splashed of hot w at er may come out . Knives and point ed kit chen equipment m ust be placed in t he basket w it h t heir t ips
dow nw ards, or horizont ally, t aking care not t o allow t hem t o prot rude from t he basket
The dishw asher is only int ended for use w it h w at er and det ergent s suit able for w ashing in
professional dishw ashers. The use of ot her product s may damage bot h t he dishes and t he appliance.
Do not operat e t he dishw asher w it h organic solvent s or flammable liquids. Never load dishes
dirt y w it h ash, w ax or paint .
When handling det ergent s comply st rictly wit h t he inst ruct ions provided by t he det ergent
producer.
Alw ays keep t he det ergent safet y dat asheet s w it hin reach so t hat t he operat or can consult
t hem easily if necessary.
Sw allowing or inhaling det ergent s may cause serious injury t o t he nose, mout h and t hroat .
If det ergent has been inhaled or sw allow ed, seek medical advice immediat ely.

3.3 Correct maintenance Do not clean t he machine w it h a w at er jet machine, high-pressure or st eam cleaners. Before performing any maint enance procedure on t he appliance disconnect it from t he
mains elect ricit y supply. Touching live elect rical component s, even accident ally, may be very dangerous.
Never open t he dishw asher’s case. Elect ric shock hazard. Only t he aut horised t echnician may
access t he int ernal part s of t he dishw asher.
The dishw asher may only be repaired by t he aut horised service organisat ion. Subst andard
repairs may cause damage or danger for t he user.
No alt erat ions or changes of any kind t o t he appliance’s elect rical circuit s or mechanical
st ruct ure are permit t ed. The manufact urer declines all responsibility for damage arising from unaut horised alt erat ions.
Replace any fault y part s only w it h genuine spare part s. The manufact urer declines all liabilit y
for damage result ing from t he use of non-genuine spare part s.
The pow er supply cable, if fit t ed, must be replaced by t he manufact urer or an aut horised
service cent re in accordance w it h t he t echnical dat a specified on t he w iring diagram supplied w it h t he appliance, t o prevent all risks.

5 PREPARING THE APPLIANCE FOR USE
Convey t he dishw asher t o t he inst allation sit e, remove t he packaging and check t he appliance and component s for damage; any damage found m ust be report ed t o t he t ransport er in w rit ing. The packaging component s (plast ic bags, expanded polyst yrene, nails, et c.) must not be left w it hin reach of children and pet s since t hey are pot ent ially dangerous. All packaging mat erials used are environment -friendly. They can be kept w it hout const it ut ing any hazard, or may be disposed of at a specialist w ast e disposal cent re. The plast ic component s suit able for recycling are marked as follow s: PE – polyet hylene: ext ernal packaging film, bag cont aining t he inst ruct ions, prot ect ive bags. PP – polypropylene: st raps used t o close t he packaging. PS – expanded polyst yrene: corner guards, t op of packaging. Wooden and cardboard component s can be disposed of in accordance w it h t he local regulat ions.
All operat ions described in t his section must be carried out and/ or checked by t he qualified st aff w ho inst all and commission t he dishw asher.
5.1 Positioning and installation
Place t he dishw asher in t he chosen point and rem ove t he prot ect ive film. Level t he dishw asher (w it h t he aid of a spirit level) on it s four feet , adjust ing t hem t o ensure t hat it is st able. If t he dishw asher is inst alled above t he ground, make sure t hat t he st and and dishw asher are secured properly and do not const it ut e a hazard.
The syst ems and premises in w hich t he dishw asher is inst alled must comply w it h t he relevant regulations. If t he dishw asher is inst alled next t o anot her appliance, also check t he recommendat ions provided by t he manufact urer of t he adjacent appliance. Inst allations ot her t han t hose described must first be approved by t he manufact urer. Use only professional furnishings and unit s in t he vicinit y of t he dishw asher. Any ot her t ypes of furnishing may be damaged.

5.2 Connection to the water supply
Check t hat t he int ake w at er pressure, flow rat e and t emperat ure are as st at ed in t he dishw asher’s t echnical charact erist ics. If t he dynamic pressure exceeds t he limit st at ed in t he t echnical charact erist ics, a pressure reducer m ust be inst alled. If t he pressure is low er, it might be necessary t o fit a special pump t o ensure opt imal performance. Connect t he w at er int ake hose t o a connect or w it h ¾” gas t hreaded fit t ing, inserting t he filter ” A” provided. The t ap must be easily accessible aft er inst allation of t he appliance.
Only use new hoses for connect ion t o t he w at er supply. Old hoses or hoses salvaged from previous inst allations must not be used.
If t he w at er supply system has been unused for a long t ime or if w ork has been done on it , before connect ing t he appliance’s int ake hose run t he w at er t o flush t he air and dirt from t he pipes.
FOR M ODELS W ITH A W ATER SOFTENER An ” approved” double check valve or some ot her no less effect ive device providing backflow prevent ion prot ect ion t o at least fluid cat egory t w o shall be fit t ed at t he point of connect ion bet w een t he w at er supply and t he fit t ing or appliance. 5.3 Drain connection
The dishw asher is fit t ed w it h a drain pum p and can operat e w it h drain connect ions on t he floor or w all. Before connect ing t he hose, check t hat t he diamet er and height of t he w all drain connect ion are as st at ed in t he dishw asher’s t echnical characterist ics. When connect ing t he dishw asher’s drain hose, t ake care t o avoid kinks, sharp bends or crushing. Since t he drain w at er t emperat ure can be very high, t he end of t he drain hose must be fixed t o t he drain connect ion using t he hose clamps provided.
The drain connect ion must be made in accordance w it h t he relevant nat ional regulat ions. Subst andard connect ions may cause flow back and in some cases pollution.
No ext ensions must be added t o t he drain hose supplied w it h t he appliance. Any ext ensions might cause drainage problems.

5.4 Connection to the electricity supply
The dishw asher must be connect ed t o t he elect rical syst em by aut horised, skilled st aff, in accordance w it h t he relevant regulat ions. Also comply w it h t he t echnical inst ruct ions for t he connect ion provided w it h t he appliance. The dishw asher’s rat ed elect rical charact eristics are provided on it s t echnical dat a plat e. A circuit breaker w it h cont act gap rat ed for cat egory II overvolt age and an overcurrent prot ect ion device (magnet ot hermal sw it ch or fuses) must be inst alled in an easily accessible posit ion on t he dishw asher’s pow er supply line. These devices must only serve t he dishw asher and must be suit able for it s rat ed elect rical charact eristics. The elect rical prot ect ion devices must undergo a funct ional t est before t he dishw asher is put int o operat ion. If t he dishw asher is connect ed t o t he elect rical mains by means of a plug, it must be of t he same t ype as t he pow er socket , suit able for t he appliance’s rat ed elect rical charact eristics and compliant w it h t he relevant nat ional regulat ions. The pow er plug must be easily accessible aft er t he appliance has been inst alled.

6 FIRST START-UP
6.1 First start-up
The elect rical prot ect ion syst em must undergo a funct ional t est before t he appliance is put int o operat ion. The appliance must be inst alled and/ or inspect ed by qualified st aff, w ho w ill st art it up for t he first t ime and provide t he relevant operat ing inst ructions.
6.2 Preparing for use ( Important )
The rinse aid dispenser is fit t ed on all models, t he det ergent dispenser only on some. If both dispensers are present put t he ext ernal det ergent and rinse aid cont ainers in place and insert t he respect ive int ake hoses on t he rear of t he appliance int o t hem. Red hose: det ergent , blue hose: rinse aid.
Before insert ing t he hoses int o t he cont ainers, fit t he weights (needed t o ensure t hat t hey alw ays draw in liquid from t he bot t oms of t he cont ainers) and t he filt ers ont o t heir ends as show n. If t he det ergent dispenser is not fact ory-fit t ed, it can be ret rofit t ed aft er ordering t he relat ive kit .
IM PORTANT:
Whenever t he t ype of det ergent or rinse aid is changed, it is ABSOLUTELY ESSENTIAL t o flush out t he perist alt ic pumps by placing t he ext ernal int ake pipes in w at er for a few cycles. Alw ays use only product s specifically recommended for use in a professional dishw asher. Failure t o com ply w it h t his recommendat ion leads t o forfeiture of the warranty ent it lement on t he appliance’s w at er syst em. Replacement of t he internal tube of t he det ergent and rinse aid perist altic pumps is recommended every 12 months or 15.000 wash cycles, by t he Aft er-Sales Service.
6.3 Using the w ater softener (on models w ith this feature only)
The quant it y of lime in t he w at er (w hich indicat es it s hardness) causes w hit ish marks on dry dishes and dishes also t end to lose t heir shine over t ime. The dishw asher is equipped w it h an aut omat ic w at er soft ener w hich removes t he subst ances t hat cause hardness from t he w at er w it h t he aid of regenerat ing salt .
The first t ime t he dishw asher is used, a lit re of w at er must be poured int o t he t ank w it h t he salt . Whenever t he t ank is filled, always t ake care t o ensure t hat t he cap is firmly closed. The mixt ure of w at er and det ergent must not get int o t he salt t ank, as t his w ould impair operat ion of t he regenerat ion syst em. In t his case w arrant y cover w ill be forfeit ed.

W hen the display control panel is switched on, the display show s the type of dishw asher (PRF 400, PRF 500, CAPOTE…….), follow ed by the firmw are version and update installed.
If the dishw asher is already pow ered up, press the on/ off button for direct display of the firmware version and update installed.

9.1 Before washing

Use only det ergent s and rinse aids for indust rial dishw ashers. Do not use det ergent s int ended for hand w ashing. We recommend t he use of Smeg product s, specially developed for t his dishw asher.
When t opping up t he t anks, t ake care not t o sw ap t he products; t his might damage t he dishw asher and cause malfunct ions.
Do not mix different det ergent s; t his w ould damage t he dispenser device. Failure to comply w it h t his recommendat ion leads t o forfeiture of the w arranty entit lement on t he appliance’s w at er syst em. Indust rial dishw asher det ergent s may cause serious irrit at ion. Comply carefully w it h t he inst ruct ions provided by t he det ergent producer on t he pack.

The procedure must be carried out w it h t he machine switched off but pow ered. Press and hold dow n t he start / pause but t on. When t he vert ical lines —– appear on t he display, release t he st art / pause but t on and t hen press it again immediately. The procedure is complet e; t here is no audible or visual confirmat ion. It is possible t o check if t he procedure has been carried out correct ly w hen t he machine is sw it ched on again.

12 M AINTENANCE AN CLEANING
We recommend regular servicing by a SM EG aut horised service cent re at least once a year, t o guarant ee opt imal performance at all t imes. N.B.: t he manufact urer accept s no liabilit y for w ilful damage or damage deriving from carelessness, neglect, failure t o comply w it h inst ruct ions, regulations and st andards or incorrect connect ions, w hich lead t o forfeit ure of w arrant y cover.
The dishw asher has IPX4 prot ect ion, but t he use of direct w at er jet s for cleaning is forbidden. Remove t he filt ers (simply lift t hem out as show n here), t aking care t hat no large residues fall int o t he sump underneat h. Clean t hem t o remove residues and rinse w it h plent y of w at er, t hen put t hem correct ly back in place; do not use sharp or point ed t ools. Clean aw ay any limescale deposit s t o prevent excessive build-ups; If possible, leave t he hood or door ajar w hen not in use; Clean surfaces t horoughly and oft en w it h a damp clot h; use neut ral, non-abrasive det ergents w hich do not use chlorine compounds, w hich corrode and damage st ainless st eel. Do not use t he product s ment ioned above even w hen cleaning t he floor underneat h or in t he vicinit y of t he dishw asher, t o ensure t hat fumes or drops cannot damage t he st eel surfaces.

12.1 Cleaning the filter during the day
In case of part icularly heavy-dut y w orking condit ions, t he filt er should be cleaned every 30-40 cycles, keeping t he machine in operat ing condit ions; t o do t his, carry out t he ” part ial t ank pumpout ” rout ine (program ” P0″ )) (TANK UNL).

12.3 Topping up w ith regenerating salt (for models w ith softener)
W arning: use specific salt only, do not use cooking sea salt. Salt must be supplied w hen t he led under t he symbol indicat ed in t he left side pict ure lights up. The salt cont ainer has a capacit y of about 1 kg of granulated salt. Correct procedure to refill the regenerating salt: – st art a tank pump- out, – refill the regenerat ing salt , – fill t he t ank (FILL) – rest art t he tank pump-out – remove any salt residues from t he bot t om of t he t ank, as it may cause corrosion/ rust . This procedure prevents t he w ashing w at er t o ent er t he salt cont ainer (possible damage t o t he decalcifier) and t hat possible residues of salt are left in t he t ank (risk of corrosion/ rust ).
12.4 Routine inspection of the spray arm (once a week )
Remove t he w ashing and rinsing spray arms (upper and low er) as show n in t he figures: – unscrew t he cent ral ring nut 1: – unscrew t he plugs at t he ends; do not unscrew t he nozzles; – clean t he spray arms under clean running w at er; – reinst all t he spray arms. Do not use tools or any objects that could cause damage.
12.5 Lengthy periods out of use
If t he dishw asher is t o be out of use for a fairly long period of t ime, the detergent and rinse aid dispenser devices must be emptied to prevent crystallisation and damage to the pumps: rem ove t he int ake hoses from t he det ergent and rinse aid cont ainers and place t hem in a cont ainer of clean w at er, t hen perform a few w ash cycles follow ed by a complet e pump-out . Finally, t urn off t he mast er sw it ch, close t he w at er int ake valve and leave t he hood ajar unt il t he int erior is complet ely dry. The det ergent and rinse aid int ake hoses must be put back int o t he cont ainers w hen t he dishw asher is ret urned t o service, taking care not to swap them over (red hose = det ergent , blue hose = rinse aid).

13 TROUBLESHOOTING
