The following 6 recipes will guide you through the different coffees you can
create with the GAVO Manual Grinder
Setting 1 – Extra Fine
Turkish Coffee Recipe
- Thick and rich, a coffee to be enjoyed slowly with good company, that’s Turkish coffee.
- Often prepared in a cezve (jez-vey), it can be also be prepared using an Ibrik, using very finely ground coffee beans without filtering it.
- You can use any roast, however lighter roasts with brighter compounds can make the difference with this brewing method.
- Set your GAVO manual coffee grinder to option 1 to grind it Extra Fine.
Ingredients
- 2 tablespoon of ground coffee, light-roast extra fine (Don’t try to make this coffee with regular ground coffee)
- 6-8 oz of cold water
- 2 tablespoon of sugar (optional)
Equipment needed
- Cezve or Ibrik
- Spoon
- Stovetop
Instructions
- Fill the cezve with cold water until it reaches the neck of the pot.
- Add extra fine ground coffee to the Turkish coffee pot.
- Add sugar if you like it sweet. (Optional)
- Heat the cezve over low heat until it’s about to boil. Then, remove the cezve from heat.
- Scoop out the foam with the spoon and add it to your serving cups.
- Stir the turkish coffee in the cezve and return the cezve to stovetop.
- Repeat steps 4, 5, and 6 twice more but, for the last round, don’t return it to stovetop.
- Pour the coffee very slowly into the serving cups so the foam rises to the top, let the coffee settle for a few minutes, then serve.
Tips
- Use fresh ground coffee, grind it right before you brewing
- Use cold filtered water, avoid trying this recipe with warm and hot water.
- You can also add 1 – 2 pods of cardamom to add a little bit of spice. Remember to grind it up finely as well.
- Honey, milk, or cream are a good alternative to sugar.
- Set your stovetop to the lowest heat, stirring two or three times until it starts to rise, don’t let it boil.
Setting 2 – Fine
Home Espresso Recipe in a Moka Pot
Originated in Italy, Espresso can be made with a wide variety of coffee beans
and roast degrees. Extremely popular in southern Europe, especially in Italy,
France, Spain, and Portugal.
Espresso is served on its own, and is also used as the base for various other
coffee drinks, including caffè latte, cappuccino, caffè
macchiato, caffè mocha, flat white, and caffè Americano.
Set your GAVO manual coffee grinder to option 2 to grind it Fine.
Ingredients
- Coffee Beans, medium-dark roast bean to get the right full-bodied flavor.
- Water
Equipment needed
- Moka Pot
- Stovetop
Instructions
- 2Grind coffee beans extra fine, Option 2 on your GAVO manual grinder.
- Unscrew the top chamber from the bottom chamber of the moka pot. Remove the filter basket.
- Add water to the bottom vessel.
- Place the filter basket on top of the water.
- Fill the filter basket with finely ground coffee.
- Screw top back on to the bottom chamber.
- Place Moka pot on the stovetop on low heat.
- When you hear a gurgling sound, turn off the heat. This is the sound of the coffee rising into the top chamber.
- Pour and enjoy!
Setting 3 – Medium-Fine
Aeropress Recipe
Invented by Alan Alder, AeroPress is a manual coffee maker, a piston-style
brewer that forces coffee through a thin paper filter directly into a cup.
It brews just a single serving of coffee at a time, but its size and durability
make it a favorite device among travelers and campers.
James Hoffmann’s Ultimate AeroPress Recipe
Ingredients
- 11g Coffee Beans, Light roast , medium grounds, grind it on setting 3.
- 200ml Water 99C/210F
Equipment needed
- An aeropress
- Paper aeropress filter
- Scale
- Timer
- Filtered water
- Stirring device
- Mug or decanter
Instructions
- Set brewer in standard position on a server. Don’t rinse or preheat the brewer (it doesn’t make any difference).
- Start a timer, add 200mL water, aiming to wet all the coffee during pouring.
- Then immediately place the plunger on top of the brewer, about 1cm in. This creates a vacuum to stop the coffee from dripping through.
- Wait 2 minutes.
- Holding the brewer and the plunger, gently swirl the brewer.
- Wait 30 seconds.
- Press gently all the way, it takes about 30 seconds.
- Drink and enjoy!
Setting 4 – Medium
Chemex Recipe
Sophisticated with a timeless design, Chemex is an elegant looking coffee
brewing device.
A manual pour-over style glass coffeemaker invented by Peter Schlumbohm in
1941. Although simple, the glass flask with wooden collar and leather tie
radiates pure sophisticationEquipment needed
Chemex Coffeemaker
- Chemex Filters
- Scale
Ingredients
- 20g Coffee Beans, medium roast, medium grind – grind it on setting 4.
- 280ml of Water 93C/199F
Instructions
- Bring enough water to just below a boil (~200° F / ~93° C ) in order to brew the coffee and pre-heat the Chemex.
- Weight out 20 grams of coffee and grind it medium.
- Pour hot water generously around the paper filter, eliminating any paper taste and pre-heating the Chemex, then throw the rinse water out – you only want brewed coffee in your final drink.
- Pour just enough water to saturate the pre ground coffee evenly (about 40 grams) and rest for 30 seconds or however long it takes for the bloom to discontinue.
- Start timer immediately for a 4 minute steep.
- Pour the remaining water continuously and evenly onto the grounds and in a circular fashion, moving inward and outward within the circle to push the grounds toward the walls. The coffee level should rise just above the grounds.
- Be careful not the pour the water directly on to the filter at any point and try to maintain a constant volume of water throughout the entire process.
- After the coffee has drained into the Chemex carafe, typically around 4 minutes, you should be able to see consistent walls of grounds with an even bed toward the bottom of the filter.
- Trash the paper filter and grounds.
- Pour, enjoy.
Tips
As ground coffee is losing aroma in as little as 30 seconds, it is essential
to freshly grind your beans every time you brew yourself a coffee, set your
grinder to option 4 to have the perfect grind for brewing a Chemex.
Pouring the final 20 grams of water directly in the center may improve final
extraction and walls.
Setting 5 – Coarse
French Press Recipe
The French press coffee making process involves combining coarse ground
coffee with boiling water and steeping it in a French Press before plunging the
grounds to the bottom of the carafe. The results is a richer cup of coffee.
Equipment needed
- French Press
- Spoon (for stirring)
Ingredients
- 31g Coffee Beans, dark roast, Coarse, grind it on setting 5.
- 465ml of Water at 93C/199F
Instructions
- Preheat your french press with hot water, make sure to include the plunger as well. Although this is optional, I highly recommend having a warm carafe for extracting all the flavors into your cup. While your french press is warming up (for ~30 seconds), it’s a perfect time to grind your coffee beans. Use your burr grinder to grind coffee grounds with the coarseness of sea salt. After 30 seconds, empty hot water from your carafe. Now, your French Press is warmed up!
- Add freshly roasted coffee to your carafe. Give a gentle shake to make sure that the grounds are evenly leveled.
- Pour over hot water (200° F) in a circular motion to ensure that all the grounds are submerged. Fill up your carafe till about half full.
- Start your timer and wait for 30 seconds. This process is called Blooming! During Blooming, your coffee grounds will release gases like carbon dioxide, which will allow a much better extraction when you add the rest of the water. After 30 seconds, the blooming process is complete, and your coffee will become bubbly and increase in volume. Please give it a gentle stir with a wooden spoon (anything of your choice) to break the crust
- Pour over hot water to fill the carafe rest of the way. Add the lid and lower plunger just a bit till the mesh slightly touches the water surface. Do not push the plunger all the way down yet.
- Start your timer and wait for four minutes while your coffee is brewing.
- Almost there! Now, you can press the plunger all the down. Please make sure to push it gently and slowly without applying extra force. Next and right away, decant your coffee into a favorite cup or a container. Please do not leave it sitting in a carafe to avoid over-extraction and, therefore, bitterness in your coffee.
Tips
To reach 200° F temperature without a thermometer, boil water, and let it sit
for 30 seconds. That’s it!
Grinding is super important. Always use Burr Grinder to grind your coffee with
the coarseness of sea salt.
Setting 6 – Extra Coarse
Cold Brew at Home Recipe
- Cold-brewed coffee, or cold brew, is coffee made by steeping ground coffee in room-temperature water for several hours, usually 12 to 18 hours or even longer, then straining out the grounds and chilling it before serving it either as-is, over ice, or diluted with water.
- Cold brewing extracts the flavor along with the caffeine from the coffee beans, producing a rich, flavorful, and stimulating brew. As with conventional coffee, milk, cream, and/or sugar are frequent add-ins with cold brew as well.
- Cold brew aficionados say that the flavor of cold brew is much smoother and milder and lacking in the acidic quality of ordinary brewed coffee. This is because cool water doesn’t bring about the chemical changes that produce the acidity as well as the bitter flavor associated with hot coffee.
Equipment needed
- Cold Brew coffee maker or Container
- Cheesecloth or flour sack cloth
Ingredients
- 113g Coffee Beans, dark roast, Extra Coarse, grind it on setting 6.
- 907ml of Water
Instructions
- After grinding your beans – combine the coffee and the water.Transfer the coffee grounds to the ColdBrew coffee maker (or container) you’re using to make the cold brew. Pour the water over top. Stir gently with a long-handled spoon to make sure the grounds are thoroughly saturated with water.
- Steep overnight – Let the coffee steep for about 12 hours. The coffee can be left on the counter or refrigerated; steeping time is the same.
- Strain the coffee – Line a small strainer with cheesecloth or flour sack cloth and place over a large measuring cup or bowl. Pour the coffee through the strainer.
- Store the coffee – Transfer the coffee to a small bottle or jar and store in the fridge for up to a week.
- Serve the coffee – Dilute the coffee with as much water or milk as you prefer. Serve over ice or warm for a few minutes in the microwave.
COFFEE COCKTAILS
Espresso Martini
Our GAVO grinder set on option 1 will give you the freshest and most aromatic tasting espresso, perfect for this all time classic.
Ingredients
- Syrup
- 100g golden caster sugar
Cocktail
- ice
- 100ml vodka
- 50ml freshly brewed espresso
- 50ml coffee liqueur (we used Kahlua)
- 4 coffee beans (optional)
Instructions

STEP 1
Start by making the sugar syrup. Put the caster sugar in a small pan over a medium heat and pour in 50ml water. Stir, and bring to the boil. -
STEP 2
Turn off the heat and allow the mixture to cool. Put 2 martini glasses in the fridge to chill. -
STEP 3
Once the sugar syrup is cold, pour 1 tbsp into a cocktail shaker along with a handful of ice, the vodka, espresso and coffee liqueur.
Shake until the outside of the cocktail shaker feels icy cold. -
STEP 4
Strain into the chilled glasses. Garnish each one with coffee beans if you like.

Long Island Iced Coffee
This deliciously boozy Long Island Iced Coffee is every coffee lovers dream! It’s the perfect coffee cocktail recipe for an after-dinner drink!
Ingredients
- ½ oz Baileys
- ½ oz Kahlua
- ½ oz vodka
- ½ oz rum
- ½ oz tequila
- 2 oz cold brew coffee, or iced coffee 2 cups ice
Instructions
STEP 1
Combine all of the ingredients in a cocktail shaker with 1 cup of ice and
shake vigorously.
STEP 2
Strain into a glass with another cup of ice.
Notes
A ½ oz is equal to 1 tablespoon, which might make measuring out the booze
easier for those that have limited bar equipment.
Calypso Coffee
Now, if you’re into rum and coffee, look no further. The Classic Calypso Coffee
Cocktail will get your there, great for an after dinner digestif
Ingredients
- 150ml strong black coffee 25ml coffee liqueur 25ml dark rum
- 1 tsp golden caster sugar ice
- 25ml double cream
- 1 coffee bean
Instructions

STEP 1
Pour the coffee into a heatproof glass or mug. Stir in the liqueur, rum and sugar and mix until the sugar has dissolved. -
STEP 2
Put a handful of ice in a cocktail shaker and add the cream. Shake a few times, just until the outside of the shaker feels a little frosty, then slowly strain the cream on top of the liqueur coffee – use a bar spoon or pour over the back of a teaspoon to help you slow down the pour and ensure the cream floats. -
STEP 3
Garnish with a coffee bean and serve.
Coffee & Cream Cocktail
Perfect for lovers, as you can serve this creamy after dinner cocktail with chocolate to compliment your taste buds.
Ingredients
400ml Tia Maria , chilled
16 tbsp (approx 250ml) double cream cocoa , for dusting
Instructions
STEP 1
Pour the Tia Maria into small cocktail or liqueur glasses. Carefully pour the
cream into the glasses over the back of a teaspoon so it floats on the surface
of the Tia Maria and makes a separate layer. Dust the cream with cocoa by
shaking it through a tea strainer, and serve.
Dark & Stormy Coffee Cocktail
Dark and stormy is considered a classic. Spice it up with a freshly brewed espresso and pair it with your favorite ginger beer.
Ingredients
- 25ml dark rum
- 25ml tequila
- ice
- ginger beer
- 2 tbsp freshly brewed espresso
Instructions
STEP 1
Fill a highball glass with ice and pour in the rum and tequila. Stir then top
with ginger beer. Slowly pour in the espresso.
Cold Brew Coffee Cocktail
A perfect mix of cold brew coffee, bourbon and cream!
Ingredients
- 1.25 oz bourbon
- .50 oz triple sec
- 2.50 oz strong cold brew coffee
- .50 oz maple syrup
- 1 oz heavy cream
- orange peel for garnish
Instructions

STEP 1
Combine coffee, bourbon, triple sec and maple syrup with ice in a shaker. -
STEP 2
Shake to mix. -
STEP 3
Strain into a rocks glass over ice, and top with cream. -
STEP 4
Add orange peel for garnish.
Ramune Ice Coffee
Simple whisky cocktail made with bitters, a great balanced bitter to sourish tasting cocktails.
Ingredients
- 100g honey
- 30ml Japanese whisky (we used Suntory Toki)
- 3 dashes of coffee bitters
- ice
- lemon peel twist, to garnish
Instructions
For the honey syrup
- STEP 1
Put the kettle on to boil. Pour the honey into a heatproof bowl, stir in 100ml boiling water until combined and leave overnight until completely cooled and syrupy. Will keep in a sealed container in the fridge for up to a week.
For the cocktail

STEP 1
Pour the whisky and 15ml of the honey syrup into a stirring glass, measuring jug or pint glass. Shake over three dashes of the bitters, then fill the glass with ice. Stir with a bar or other long spoon for 10-20 seconds (the longer you stir, the softer the taste of alcohol – stir longer for more dilution). -

Strain the cocktail into a martini or coupe glass, then garnish with a lemon peel twist.
Black Russian Cocktail
Russians love vodka. Here’s a simple and delicious recipe, make sure to
garnish with maraschino cherry, perfectly served as a digestif.
Ingredients
- 50ml vodka
- 25ml coffee liqueur
- ice
- 1 maraschino cherry
- cola to top up, chilled (optional)
Instructions
STEP 1
Put the vodka and the coffee liqueur into a tumbler filled with ice and stir
gently for 30 secs – 1min. Add the cherry and serve. Top with a splash of
chilled cola if you prefer a longer drink.
Reverse Espresso Martini
Who doesn’t love a martini ? Switch it up on the classic espresso martini
by adding Irish cream and a shot of coffee to keep you going.
Ingredients
30ml freshly brewed espresso 50ml vodka
25ml Irish cream
Instructions
STEP 1
Freeze the espresso in an ice cube tray until frozen solid. Pour the vodka and
Irish cream into a cocktail shaker filled with ice. Stir together for about 1
min then strain into a tumbler. Put 4-5 coffee ice cubes into the drink to
serve.

Fudgy Cappuccino Crinkles
A soft chocolate cookie that’s baked with coffee and cinnamon and rolled
around in powdered sugar making it the perfect cookie to enjoy with a cup of
coffee.
Ingredients
- 1/3 cup butter , softened
- 1 cup brown sugar , packed
- 2/3 cup unsweetened cocoa powder
- 1 tbsp instant coffee granules / you can also grind your beans, using your manual coffee grinder, setting 1-2
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 2 egg whites
- 1/3 cup vanilla low-fat yogurt
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar , sifted
Instructions
- Pre-heat oven to 350 degrees. Lightly grease or use parchment paper on your cookie sheets; set aside.
- Beat butter with an electric mixer on medium speed for 30 seconds. Add brown sugar, cocoa powder, coffee granules, baking soda, and cinnamon. Beat until combined, scraping the bowl down the sides when needed. Beat in egg whites and yogurt until combined. Beat in as much flour as you can. Stir in remaining flour.
- Place the powdered sugar in a shallow bowl. Drop dough by a teaspoon (dough will be sticky) into the sugar and roll into balls.
Place 2 inches apart on the prepared cookie sheets and bake for 8-10 minutes or until the edges are firm. ( I found that 8 minutes was the perfect time with my oven). Transfer to a wire rack and cool.
Easy Tiramisu
Creamy, delicious and unbelievably EASY tiramisu recipe made with coffee
soaked lady fingers, sweet and creamy mascarpone, and cocoa powder dusted on
top.
Ingredients
- 1 1/2 cups heavy whipping cream
- 8 ounce container mascarpone cheese ,room temperature
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups cold espresso
- 3 Tablespoons coffee flavored liqueur ,optional (Kahlua or DaVinci brands)
- 1 package Lady Fingers ,Savoiardi brand can be found in the cookie aisle at your local grocery store, or online
- Cocoa powder for dusting the top
Instructions
- Add whipping cream to a mixing bowl and beat on medium speed with electric mixers (or use a stand mixer). Slowly add sugar and vanilla and continue to beat until stiff peaks. Add mascarpone cheese and mix just until combined. Set aside.
- Add coffee and liqueur to a shallow bowl. Dip the lady fingers in the coffee (Don’t soak them–just quickly dip them on both sides to get them wet) and lay them in a single layer on the bottom of an 8×8” or similar size pan.
- Smooth half of the mascarpone mixture over the top. Add another layer of dipped lady fingers. Smooth remaining mascarpone cream over the top.
- Dust cocoa powder generously over the top (I use a fine mesh strainer to do this). Refrigerate for at least 3-4 hours or up to overnight before serving.
Notes
- Alcohol: Tiramisu can be made with or without alcohol. This recipe calls for coffee flavored liqueur because I like that it enhances the coffee flavor, but other options are marsala wine or brandy.
- Make Ahead Instructions: Tiramisu is even better when made in advance, allowing the flavors to blend! It will keep in the refrigerator for 2 to 3 days.
- Freezing Instructions: Make completely, but don’t dust with cocoa powder. Cover tightly with plastic wrap and then tinfoil and freeze for up to 3 months. Thaw in the refrigerator overnight and dust with cocoa powder a few hours before serving.
Chocolate Chip Coffee Cookies
Deliciously soft, thick and chewy coffee-infused cookies that are loaded
with chocolate chips, and topped with a sweet coffee drizzle!
Ingredients
For the Cookies
- 2 cups (250g) plain/all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cornflour/cornstarch
- 1/4 teaspoon salt
- 1/2 cup (115g) unsalted butter, melted
- 1/2 cup (100g) caster/granulated sugar
- 1/4 cup (50g) light brown sugar
- 1 large egg
- 4 tablespoons instant coffee granules*
- 1 cup (175g) chocolate chips
For the Coffee Drizzle
- 1/2 cup (62g) icing/powdered sugar
- 1/2 teaspoon instant coffee granules
- 1 tablespoon water
Instructions
For the Cookies
- Preheat the oven to 180C/350F/Gas 4, and line a baking tray with parchment paper, or a silicone mat. Set aside.
- Whisk together the flour, baking powder, baking soda, cornflour, salt, and 2 tablespoons of instant coffee granules. Set aside.
- Whisk together the melted butter and sugars until combined. Add the egg and mix until combined.
- Dissolve the remaining 2 tablespoons of instant coffee granules in 1 tablespoon of hot water, then add to the wet ingredients, and mix until combined.
- Add the dry ingredients, and mix until just combined. Fold in the chocolate chips.
- Roll the dough into 1.5oz balls, and place onto the prepared baking tray. Bake for 10 – 12 minutes.
- Allow to cool on the baking tray for 5 – 10 minutes before transferring to a wire rack to cool completely.
For the Coffee Drizzle
- Whisk together the icing sugar, coffee granules, and water until smooth and combined. Drizzle over the cooled cookies
Tips
*Use a coffee you absolutely love to drink! The taste is everything in this recipe. If you’d like a weaker coffee taste, skip the 2 tablespoons of coffee in the dry ingredients.
Cookies stay fresh, kept in an airtight container, at room temperature for up
to 1 week. Cookie dough balls can be kept in the fridge for up to 5 days, or
frozen for up to 3 months. Bake from frozen for an extra minute.

Ingredients
- 225 g or 1 ¾ cups Plain / All purpose flour (sieved)
- 2 Teaspoons baking powder
- ¼ Teaspoon salt
- 175 g or ¾ cup softened butter
- 200 g or 1 cup regular sugar
- ⅔ Cup or 150 ml Milk
- 2 Large eggs (lightly beaten)
- 4 Teaspoons of coffee granules dissolved in
- 1 Tablespoon hot water.
Instructions
- Heat oven to 170C, 325F. Grease and line your baking tin. See here for how to line.
- Get all your ingredients ready, i.e dissolve the coffee, sieve the flour, and add the salt and baking powder to the flour etc.
- Start with making the cake batter by creaming the butter and sugar until a pale light color.
- Slowly add the beaten eggs to the mixer, on a low-speed setting, a bit at a time. If the mixture starts to curdle or split, add a spoonful of your sieved flour, keep on adding the eggs, and a bit of flour if necessary until all the eggs are added.
- Keeping the mixer on a slow speed, add the coffee mixture, milk and the rest of the flour.
- Transfer the cake mixture to the greased and lined loaf tin. Then place in the oven for 1 hour to 1 hour 5 minutes. Check to see if it is cooked, using a skewer. Every oven varies, so keep an eye on your cake!
- Have a cup of tea!
- Allow to cool. Store in an airtight container. You can also freeze half or all of it, wrap in parchment paper, then place in a zippy bag. Defrost as normal and enjoy! It will still be moist.
Cappuccino Load Cake
Deliciously soft, thick and chewy coffee-infused cookies that are loaded with
chocolate chips, and topped with a sweet coffee drizzle!
Ingredients
For the Loaf
- 175g unsalted butter, softened, plus extra for greasing
- 5 tbsp single cream
- 2 tbsp instant coffee
- 100g golden caster sugar
- 75g light brown muscovado sugar
- 3 large eggs
- 1 tsp vanilla extract
- 175g self-raising flour
- ½ tsp fine salt
For the Frosting
- 150g mascarpone
- 5 tbsp icing sugar
- cocoa powder, for dusting
Instructions
- Preheat the oven to 350° F.
- Combine the first 6 ingredients (eggs, coconut milk, coconut butter, coffee, maple syrup, and vanilla) in a bowl. Mix them together. I always use my favorite kitchen tool, my stick blender, to do the mixing.
- In a separate bowl, combine the almond flour, coconut flour, baking soda, and salt. Stir.
- Add the liquid, a little at a time, to the dry ingredients, mashing and stirring the mixture until smooth. Then, add half the chocolate chips to the mixture and stir them in.
- Pour/push the mixture into the greased baking dish, smoothing it out with a spatula.
- Top with coconut flakes, then chocolate chips.
- Bake for 35 minutes, then allow it to cool. Or eat it right away and burn your tongue. Whatever.
The Best, Boldest Coffee Cake in the World
Jamie Oliver is not particularly well-known for his cake recipes, but he
teamed up with a friend on this one to produce a coffee cake that is dense,
punchy, moist and full of coffee flavor. It gets texture from almonds and is
gluten-free coincidentally since it is a flourless cake. It pairs nicely with
a latte as it is not overly sweetened. The bright acidity and dense body of
espresso is highlighted in this made for coffee cake
Ingredients
- 200g almonds
- 200g dark chocolate
- 175g unsalted butter
- 70g caster sugar
- 4 eggs (separated)
- 20ml strong espresso
Instructions
- Pre-heat the oven to 170 degrees and grease and line a 20cm loose-bottomed cake tin.
- Blitz the almonds in a food processor until just finely ground – don’t over-pulse as they will start to become sticky.
- Melt the dark chocolate and butter together with the espresso in a bowl over a pan of simmering water, making sure the bottom of the bowl doesn’t touch the water, stirring occasionally.
- Meanwhile, whisk together the egg yolks and the sugar until thick and pale – about 5 minutes with a handheld electric whisk.
- Fold the chocolate mixture in to the egg and sugar mixture and then fold in the ground nuts.
- In a separate clean bowl, whisk the egg whites in to stiff peaks and then fold this in to the cake mixture.
- Bake in the oven for 25-30 minutes. If you prefer a gooey chocolate pudding then feel free slightly undercook it.
Vanilla Latte Cake
This Vanilla Latte Cake transforms a classic coffee beverage into a
delicious dessert! Infused with espresso and vanilla, it is perfect for the
coffee lover in your life.
Ingredients
- Vanilla Latte Cake:
- 2 1/2 cups all-purpose flour
- 2 1/2 tsp baking powder
- 3/4 tsp salt
- 1 cup milk room temperature
- 1 Tbsp instant espresso powder
- 3/4 cup unsalted butter room temperature
- 1 1/2 cup granulated sugar
- 3 large eggs room temperature
- 1 tsp vanilla bean paste
Vanilla Latte Buttercream:
- 6 large egg whites
- 2 cups granulated sugar
- 1 1/2 cups unsalted butter room temperature
- 1 tsp vanilla bean paste
- 2 Tbsp instant espresso powder not granules*

Vanilla Latte Cake:
- Preheat oven to 350F. Grease and flour three 6″ cake rounds and line with parchment.
- In a medium bowl, whisk flour, baking powder, and salt until well combined. Set aside.
- In a small measuring cup, combine room temperature milk & espresso powder. Stir until dissolved. Set aside.
- Using a stand mixer fitted with a paddle attachment, cream butter and sugar on med-high until pale and fluffy (approx 3mins). Reduce speed and add eggs one at a time fully incorporating after each addition. Add vanilla vanilla bean paste.
- Alternate adding flour mixture and espresso milk, beginning and ending with flour (3 additions of flour and 2 of milk). Fully incorporating after each addition.
- Bake for 30-35mins or until a toothpick inserted into the center comes out mostly clean.
- Place cakes on wire rack to cool for 10mins then turn out onto wire rack to cool completely.
Vanilla Latte Buttercream:
- Place egg whites and sugar into the bowl of a stand mixer, whisk until combined.**
- Place bowl over a double boiler on the stove and whisk constantly until the mixture is hot and no longer grainy to the touch (approx. 3mins). Or registers 160F on a candy thermometer.
- Place bowl on your stand mixer and whisk on med-high until the meringue is stiff and cooled (the bowl is no longer warm to the touch (approx. 5-10mins)).
- Switch to paddle attachment. Slowly add cubed butter and mix until smooth.***
- Add vanilla bean paste and espresso powder. Whip until smooth.
Assembly:
- Place one layer of cake on a cake stand or serving plate. Top with approximately 2/3 cup of buttercream. Repeat with remaining layers and crumb coat the cake. Chill for 20mins.
- Frost the top and sides of the cake and smooth with an icing smoother.
- Do a swirl pattern on the sides and top of the cake. Rotate the turntable while pressing a small offset spatula into the frosting. Start at the bottom and slowly move up to the top of the cake.
- Pipe small dollops on top using a 6B tip with remainder of frosting. Decorate with whole coffee beans if desired.
