Intended Use General Information

  • Examine the device for any visible external damages prior to using it. Never put a damaged device into operation.
  • If the power cable or plug are damaged, then they must be replaced by the manufacturer or its service agent in order to avoid a hazard.
  • This device must not be used by children. The appliance and its connecting cable must be kept away from children.
  • The equipment is not a refrigerator. Do not use the equipment for anything other than its Intended use.
  • The equipment is not suitable for the cooking of meat.
  • Only customer service departments authorized by the manufacturer may carry out repairs on the device, as otherwise the guarantee entitlements will be null and void in the event of any subsequent damages. Improperly performed repairs can cause  considerable dangers for the user.
  • Defective components must always be replaced with original replacement parts.

DANGER – FLAMMABLE
Warning: Risk of fire / flammable materials used. There is a danger of burns and explosion due to excess pressure that is created in the event the device is not used properly.
Observe the following safety notices to avoid dangers of burns or an an explosion:

  • Do not store explosive substances such as aerosol cans with a propellant in this device.
  • Do not damage the cooling circuit of the device.
  • Do not use electrical devices inside the device.
  • Do not use mechanical devices to accelerate the defrosting process.
  • Never use the device to store or dry flammable materials.
  • Never clean appliance parts with flammable fluids. The fumes can create a fire hazard or explosion.
  • Do not store or use gasoline or any other flammable vapours and liquids in the vicinity of this or any other appliance. The fumes can create a fire hazard or explosion.

DANGER – ELECTRICAL
Warning: Danger due to electrical power. Mortal danger exists when coming into contact with live wires or sub-assemblies!
Observe the following safety notices to avoid dangers due to electrical power:

  • Before changing the inner light, turn off the appliance first and then unplug the unit from the wall outlet.

  • Do not operate this device if it has a damaged cable or plug, if it is not working properly or if it has been damaged or dropped.
    If the power cable or plug are damaged, then they must be replaced by the manufacturer or its service agent in order to avoid a hazard.

  • Do not open the housing on the device under any circumstances. There is a danger of an electrical shock if live connections are touched and the electrical or mechanical structure is altered. In addition, functional faults on the device can also occur.

SET-UP & ASSEMBLY  GETTING STARTED

When you first receive your Dry Ager, check for any damage that may have occurred during the transportation of your appliance.
WARNING
Packaging materials should not be used for playing. There is a danger of suffocation.
Keep out of reach of children.
Unboxing

  • Due to the heavy weight of this applicance, we recommend using two people to safely transport, unpack and set down the appliance.
  • Remove the device from the carton and remove the packaging material.
  • The device should only be moved in an upright position.
  • Clean the interior surface with lukewarm water using a soft cloth.
  • Wait at least 24 hours before plugging the appliance into the wall outlet.

Note: If possible, keep the original packaging for the device for the duration of the Warranty period of the device, in order that the device can be re-packaged properly in the event of a guarantee claim.
Disposal of the Packaging
** The packaging protects the device against damages during transit. The packaging materials are selected in accordance with environmentally compatible and recycling-related points of view and can therefore be recycled. Returning the packaging back to the material loop saves raw materials and reduces the quantities of accumulated waste.
Location Requirements
** In order to ensure the safe operation of the device, the setup location must fulfil the following prerequisites:

  • Place your appliance on a floor that is strong enough to support the appliance when it is fully loaded.

  • Place the appliance away from direct sunlight and sources of heat (stove, heater, radiator, etc.). Direct sunlight may affect the acrylic coating and heat sources may increase electrical consumption.

  • This unit is not designed for use in a garage or any other outside installation.

  • Do not set up the device in a hot, wet or extremely damp environment or near flammable material.

  • The device requires an adequate flow of air in order to operate correctly.
    Leave a minimum of clearance of 6″ inches around the appliance.

  • WARNING! Do not close the ventilation openings in the device housing.

  • The electrical socket must be easily accessible so that the power cord can be disconnected easily, in the case of an emergency.

  • The installation and assembly of this device in non-stationary setup location must be carried out by a specialist, provided they guarantee the prerequisites for the safe use of this device.

  • For energy saving reasons please ensure that the door is closed when the appliance is turned on.

Leveling Your Dry Ager

  • On your dry ager there are 3, large feet and 1, adjustable, small foot.
    To level your Dry Ager, adjust the small foot at the bottom.

Handle Installation

  • The device comes with one metal stainless steel handle. To install simply screw them to the door with the supplied screws.
    To do this, slide the rubber seal on the back of the door to the side to lay open the predrilled holes. Use the included screws to install the handle on the door.

Electrical Requirements Guidelines
In order to ensure the safe and trouble-free operation of the device, the following instructions must be observed for the electrical connection:

  • Before connecting the device, compare the connection data (voltage and frequency) on the rating plate with those of your electrical network. This data must agree in order that no damages occur in the device. If in doubt, ask your qualified electrician.
  • The connection between the device and the electrical network may use a 10 foot long (max.) extension cable with a cross-section of 1.5 mm². The use of multiple plugs is prohibited.
  • Make sure that the power cable is undamaged and has not been installed under or over hot or sharp surfaces.
  • This unit is not designed to be installed in an RV or used with an inverter.
  • The electrical outlet must be protected by a 16A safety cut-out switch.
  • The electrical safety of the device is only guaranteed if the device is connected to a properly installed protective conductor system. If in doubt, have the house installation checked over by a qualified electrician.
  • The manufacturer cannot be made responsible for damages that are caused by a missing or damaged protective conductor.

DRY AGER OPERATION CONTROLLER

Press the power button to switch the device on.
B. UV Light Button
The UV light is used to clean the interior before, during and after the aging process. Press the UV Light Button to switch on UV Light. Allow the UV Light to sterilize the interior of your dry ager for at least 2 hours before loading with food product.
Note: The door has a safety switch. When you open the door of the device, the UV light switches off automatically. When you close the door, the UV light will turn on again.
C. Temperature & Humidity
Switch between the setting and display of the temperature and humidity.
C.1 Press the button once, the temperature indicator will flash on the display. You can then adjust the temperature from 34-72ºF (1-22ºC) in 1º increments using the arrows.
C.2 Press the button twice, the humidity indicator will flash on the display. You can then adust the humidity from 50-85% in 1% increments using the arrows.
Note: If you do not change the setting within 3 seconds, the device will return to its previous setting. The device automatically returns to the temperature display.
D. LED Light Button
Press the LED Light Button to switch on LED Light.
Note: The LED automatically switches off after 4 hours.
+ Toggle F°/C°Display
You can toggle between F° and C° temperature display by holding the UV (B) and Temperature & Humidity (C) buttons simultaneously for 3 seconds.

YOUR DRY AGER BASIC OPERATION

For expert tips or questions, have a expert whom you trust inform you about dry aging.
Selecting Your Meat

  • Only use high quality meats that have been handled based on high food safety standards.
  • Use the freshest possible, bone-in meat for dry aging. Avoid dry aging meat that is already more than 2 weeks old.
  • Bone-in cuts are better for dry aging as they reduce excessive moisture loss and help protect the meat.
  • To minimize weight loss during the aging process, use meat with a thick layer of fat. Do not trim fat cap from the meat before aging. The fat cap will help protect the meat as it ages and helps with yield.
  • For true dry aged beef, talk to your local butcher about getting un-aged cuts or “green meat” for your ager. “Green Meat” is meat that has been freshly butchered and not aged.

Preparation

  • Wait for set temperature and humidity ranges to be met inside your dry ager before adding your meat.
  • For ideal aging results we recommend the following setting: temperature 36°F (2°C) / air humidity 75%-80%.
  • Pat your meat dry with clean paper towel before going into the ager
  • Do not season meat before aging. Let the aging process do the work. You only need to season the meat before cooking
  • Be sure to mark or label your cuts of aged meat to keep track of time and yield weights.
  • If using frozen meat, defrost fully before adding to the dry ager.
  • Carefully ensure that the stainless steel shelves and/or hanging rack for the butcher hooks is correctly locked into position before you place meat on it or suspend meat from it.
  • Always clean and sanitize racks and chamber before each use.
    Typical Aging Time
    The optimal time range for aging meat depends on a variety of factors. As a general guide, use the following:

Best Practices

  • Avoid opening the door as much as possible. Opening the door forces the dry ager to work to restore the temperature and humidity after closing the door. Opening the door also creates an opportunity to introduce bacteria.
  • Keep the UV light running at all times. The UV light will not keep the meat clean from bacteria, but it will help keep the air circulating in the chamber sanitary.
  • Check the meat regularly for the presence of bacteria and ensure dark and dry patches of meat are removed before consuming.
  • For optimal dry aging conditions, air circulation around each piece of meat is necessary, avoid overcrowding of meat and sausage within the cabinet.
  • Fill the chamber – The dry ager performs better when the chamber is moderately full. A less full chamber could lead to over drying and lower yields
  • To remove a stainless steel shelf, first remove the meat. Use gloves which are suitable for contact with food. Lift the stainless steel shelf upwards and the gently pull it out.
  • If using racks, place the meat bone side down onto the rack
  • Clean and sanitize racks and chamber in between uses.

WARNING
Failure to follow proper food safety procedures can lead to spoiled food product, damage to the appliance or food borne illness.
Food Safety Procedures

  • Only use meat which is suitable for refinement.
  • Wear gloves which are suitable for contact with food if you touch the meat and the metal shelves or meat hooks.
  • A potential hazard of dry aging is bacteria growth. Make sure to practice proper food safety procedures when handling the meat and equipment.
  • Talk to your butcher about best practices when it comes to food safety and dry aging.
  • Once the aging process has been completed, dark and dry patches of meat must be trimmed and removed before cooking.
  • Do not consume any food that has visible mold, unusual smells, or other potential contamination

Exemption From Liability:
The manufacturer will not assume any liability for damage to refrigerated products, not even in the event of a fault in the equipment during the guarantee period. The manufacturer will also not accept liability for injury to individuals resulting from improperly stored products which are subsequently consumed.

DRY AGER CARE CLEANING

Best Practices

  • You must clean the device thoroughly before and after each aging process.
  • Before cleaning, switch the dry aging cooler off, remove the plug from the wall socket and remove all the meat.
  • Do not use any aggressive or abrasive cleaning agents or solvents.
  • You must use a food-compatible cleaner that is not too corrosive for the surfaces of the device.
  • Do not scrape off stubborn dirt with hard items.
  • If you do not use the equipment for a fairly long period of time, you should remove all the metal shelves, the metal suspension system and the meat hooks and you should clean the equipment thoroughly.

Cleaning: Interior & Exterior Walls

  • Clean the interior and exterior walls with lukewarm water and a little soapy liquid. Never use cleaning or chemical solvents containing sand or acid.
  • Wipe the device thoroughly with a soft cloth.
  • Switch on the UV light for 24 hours after each cleaning process.

Cleaning: Glass & Stainless Steel Housing

  • Use a glass cleaner to clean the glass surfaces and a commercially available stainless steel cleaner for stainless steel surfaces
  • Wipe the device thoroughly with a soft cloth.

Cleaning Accessories: Stainless steel shelves, hanging rod, collecting tray and butcher hooks

  • Remove the Stainless steel shelves, hanging rack, collecting tray and butcher hooks from the device and clean them with warm water and detergent. Thoroughly dry the components.

DRY AGER CARE MAINTENANCE

Manual Defrosting

  • You should defrost the device after each aging process.
    To Defrost: Turn off the power but do not unplug the power plug. Let the device then defrost manually. Pay attention to the container for condensed water(K) and remove the condensed water during the defrosting.

  • Check container for the condensed water (k) regularly. It is located on the rear right of the device. If necessary, remove the condensed water with a sponge.

If Your Device Is “Iced Up”

  • Remove the meat from the device. Cover it with cling film or, if possible, place it in a foil bag and refrigerate it in a suitable refrigerator. Switch off the device.
  • Fill a pot with hot tap water (but no longer boiling) and place the pot on a cloth on the lower metal shelf. Warning: Excercise caution when handling hot pot to prevent risk of scalding.
    The steam will melt the ice within about an hour. The melted water will be collected in the interior of the device and possibly in the container for condensed water (K). Remove the pot and the cloth from the device. Wipe the water out of the interior and empty the drip tray (K). Wipe the device dry with a soft cloth. Leave the device open for 1 hour so the device can ventilate.

Replacing the Activated Carbon Filter

  • You must replace the activated carbon filter once a year. To do this, remove the meat (if necessary), unscrew and replace the filter.

Replacing the UV Lamp

  1. Carefully loosen screws to UV Lamp Cover to access the UV lamp.
  2. To remove the UV lamp. Hold the UV lamp firmly and turn it at a 45° angle and pull old lamp out.

Moving the Appliance

  • If you need to move your dry ager, turn off the appliance first. Remove all content.
    Tape down all loose items inside your appliance. Tape doors shut. Be sure the device stays in the upright position during transportation.

TROUBLESHOOTING

WARNING
Only qualified electricians, who have been trained by the manufacturer, may carry out any repairs on electrical equipment. Improperly performed repairs can cause considerable dangers for the user and damages to the device.

Vibrations coming from applicance & door is not closing.| Appliance is unlevel, fan is damaged or components are loose. Dry ager is touching the the wall or the door is reversed and not properly installed.| Check for any of the described issues and make any neces- sary repairs.
The seal is weak or the shelves are out of position.| Replace seal if damaged or reposition shelving.
The display does not work and/or the buttons are not functional.| Error with controller.| Unplug appliance, wait 2 minutes, plug in the appliance again. If this does not solve the problem, then please contact customer service.
Compressor will not start| Room temperature is lower than set temperature.| Make sure room temperature is warmer than set temperature.
Dew is visible on surface of cabinet.| There is moisture present in the air coming into contact with the appliance.| Wipe away moisture with dry cloth. Remove appliance from damp room, if needed.
Liquid Sound| The sound of compressor starts or stops working.| Check for leaks, as long as there is not leaking present, the appliance is working as expected.
The flowing sound of refrigerant in the refrigeration system.
The evaporating sound of refrigerant in the evaporator.
Condensation formed inside the cabinet| Appliance being used in environment with high level of humidity or the door of device has been left open for a long period or opened frequently.| Wipe off the door and walls and leave the door closed as long as possible.

Note: If you need to send in your equipment for service, you must clean the metal shelves, collecting tray and the meat hooks with disinfectant and remove the remains of any meat from the equipment before shipping.

Disposal of the Old Appliance
If put in non-recyclable waste or were handled incorrectly, they could be detrimental to human health and the environment. Therefore, do not put your old device into the non-recyclable waste under any circumstances.

  • Utilize the collection point, established in your town, to return and recycle old electric and electronic devices. If necessary, contact your town hall, local refuse collection service or dealer for information.
  • Ensure that your old device is stored safely away from children until it is taken away: Before you throw away your old appliance, take off the doors and leave the shelves in place, so that children may not easily climb inside.
  • Blowing gas inside the unit is flammable. The disposal of this flammable material should be in accordance with national regulations.

WARRANTY

  • The performance, workmanship and materials in the cabinet are guaranteed for one (1) year when used for the purpose and under the conditions for which designed.
  • The manufacturer will replace any part found to be defective (upon examination by manufacturer) at no charge when such part is returned to manufacturer with transportation prepaid.
  • All electrical parts are guaranteed for ninety (90) days.
  • All warranties are void if dry ager or parts are damaged by accident or misuse.
  • The description and specifications contained in this literature were in effect at the time it was approved for printing.
  • The company reserves the right to change specifications or designs without notice and without incurring obligations.

Limited Warranty Terms & Conditions

The Dry Ager line that is manufactured by Woodland Manufacturing Inc. carries a 1-year limited warranty from the date of sale, to the original owner only, against defects and workmanship of the cabinet, as well as a 90-day electrical warranty for electrical component parts. There is no specific warranty on the paint, gaskets or damage caused by corrosion.
Conditions of Limited Warranty

  1. During the term of limited warranty, Woodland Manufacturing Inc. obligation shall be limited to furnishing a replacement for covered, failed components, F.O.B. point of shipment. As long as it is within the warranty period, Woodland Manufacturing Inc. will not charge for repair or replacement for parts returned, freight prepaid, if the part of parts are found by Woodland Manufacturing Inc. to be defective upon examination. Woodland Manufacturing Inc. shall not be liable for transportation charges, labor costs or export duties.
  2. Your Limited Warranty coverage begins on the original date of purchase and proof of purchase is required with your warranty registration to validate your warranty.
  3. Repair or replacement of dry ager parts does not extend the warranty beyond 2 years (or 90-day electrical) from the date of purchase.
  4. Woodland Manufacturing Inc. takes every precaution to utilize materials that retard rust by using high-temperature stainless steel. Even with these safeguards, the protective coatings can be compromised by carious substances and conditions beyond Woodland Manufacturing’s control. High temperatures, chlorine, excessive humidity, industrial fumes, lawn pesticides, fertilizers and salt are some (but not limited to) substances that can affect the paint or metal coatings. For these reasons, the limited warranty DOES NOT COVER RUST OR ALUMINUM OXIDATION OF MATERIAL.
  5. There is no written or implied performance warranty on the dry ager appliances as the manufacturer has no control over installation, operation, cleaning, maintenance or type of fuel burned.
