Installation Tips
Check your product for damage
Inspect your new smokehouse upon receipt for any damage. Make a notation of any damage on your delivery receipt and report damage to the trucking company as well as to your Pro Smok representative.
Unloading and moving smoker into plant
Make sure doorways are clear and the unit will fit through either standing or lying down. Do not lay down on the control panel or drain. Lay it on either the flat back wall or the flat side wall.
Drain basin and trap
CHECK WITH YOUR PLUMBER, INSPECTOR, THE STATE AND/OR LOCAL MUNICIPALITY TO FIND OUT WHAT IS REQUIRED! Some installations will require a grease trap. Most require an air gap. The top of the drain trap (discharge point) is just below the base of the drain line from the smokehouse. The top of the discharge point should be just above the floor or drain basin, preventing backflow into the smokehouse. The drain connection from the smoker wall is 1″ above the floor and has a slight downward pitch. The drain tube from the smokehouse is 2-3/8″. Do not reduce drain line connections lower than 2″.

trench drain in front of the smokehouse. If
this is the case, please contact Pro Smoker directly for assistance and
guidance on measurements that will work best for your installation.
Plumbing Connections
Cold water connections to smokehouse solenoids

- Whole House style filter with replaceable filter cartridge
- Chimney Condensate Drain Line: 3/4 clear hose and hose clamp, run line to floor drain
Exhaust Connections
Exhaust port connection
Connect the vent drip adaptor using the draw band (both provided with the smoker) to the exhaust port connection.
- 4″ draw band for models 320T-HVE, 500T-HVE, and 500T
- 4″ to 6″ vent drip adaptor for models 320T-HVE, 500T-HVE, and 500T
- 6″ draw band for models 700T and 1100T
- 6″ to 8″ vent drip adaptor for models 700T and 1100T
Exhaust ductwork
Ducting should be as short as possible, with at least 4-6 feet of pipe above your roof line (refer to local building codes).
Product Usage Instructions
Step 1: Checking for Damage
Inspect your new smokehouse upon receipt. If you notice any damage, make a note of it on your delivery receipt and report the damage to the trucking company as well as your Pro Smoker representative.
Step 2: Unloading and Moving the Smoker into the Plant
Ensure that the doorways are clear and that the unit will fit through either in a standing or lying down position. Avoid laying it down on the control panel or drain. Instead, lay it on either the flat back wall or the flat side wall.
Step 3: Installing the Drain Basin and Trap
Before proceeding with the installation, check with your plumber, inspector, and the local municipality to determine the specific requirements for your setup. Some installations may require a grease trap, while all will require an air gap. The top of the drain trap (discharge point) should be just below the base of the drain line from the smokehouse. Additionally, ensure that the top of the discharge point is positioned just above the floor or drain basin to prevent backflow into the smokehouse. The drain connection from the smoker wall should be 1″ above the floor and have a slight downward pitch. The drain tube from the smokehouse should have a diameter of 2-3/8″. Do not reduce the drain line connections to a lower diameter than 2″.
Step 4: Installing the Trench Drain (Optional)
If you are installing the smokehouse in a new building/room or remodelling the concrete floor, you may find it convenient to have a trench drain in front of the smokehouse. In such cases, it is recommended to contact Pro Smoker directly for assistance and guidance on measurements that will work best for your installation.
Step 5: Plumbing Connections
Connect the cold water supply line to the smokehouse solenoids as follows:
- Humidity Solenoid: 3/8 connection (all models)
- Wet Tank Solenoid : 3/8 connection (all models)
- Shower Solenoid:
- 1/2 connection for models 320T-HVE, 500T-HVE, and 500T
- 3/4 connection for models 700T and 1100T
Additionally, ensure that you have a manifold with 3 lines leading to the smokehouse solenoids, a whole house style filter with a replaceable filter cartridge, and a chimney condensate drain line connected to the floor drain.
Step 6: Exhaust Connections
Connect the vent drip adaptor provided with the smoker using the appropriate draw band to the exhaust port connection. The specific sizes are as follows:
- 4″ draw band for models 320T-HVE, 500T-HVE, and 500T
- 4″ to 6″ vent drip adaptor for models 320T-HVE, 500T-HVE, and 500T
- 6″ draw band for models 700T and 1100T
- 6″ to 8″ vent drip adaptor for models 700T and 1100T
Ensure that you have a Class A (or minimum Class B) exhaust connection from the vent drip adaptor through the ceiling. Additionally, connect the smoke pipes from the smoke generator to the smokehouse smoke generator pipe intake using the pipes provided by Pro Smoker.
Step 7: Exhaust Ductwork
The exhaust ducting should be as short as possible, with at least 4-6 feet of pipe above your roof line. Please refer to the local building codes for specific requirements.

Exhaust ductwork
- Ducting should be as short as possible, with at least 4-6 feet of pipe above your roof line (refer to local building codes)
- For best smokehouse performance, straight up and out is best exhaust venting with as few elbows as possible (see footprint drawings)
- If needed, use 45-degree elbows whenever possible
- Simple rain caps (see images below) should be installed
- Care should be taken by the owner to ensure that installation is fire-safe

DAMPER POSITIONS
Your Pro Smoker Smokehouse has 3 dampers. Exhaust Damper, Fresh Air Intake Damper and Smoke Damper.
- In the Drying Program: All 3 dampers are open allowing maximum airflow through the system
- In Smoke Program: The exhaust and intake dampers are open with the smoke damper closed to it’s set position
- In the Cooking Program: The exhaust and intake dampers are closed, and the smoke damper is open
- In Shower Program: All dampers are open
Electrical connections
- CHECK INFORMATION PLATE FOR CORRECT VOLTAGE!
- Single Phase units will require a 4-wire setup (L1, L2, a neutral and a ground)
- Three Phase units will require a 5 wire setup (L1, L2, L3, a neutral and a ground)
- 208, 240 or 480 VAC (as specified) runs to the main distribution block in the control panel. Confirm that the information plate and wiring diagram match the power requirements. If these do not match, all Pro Smoker
- 120V power comes from the L1 connection. If separate 120V power supply needs to be run, connect to a 10amp fuse block in the control panel (also applies to 480V systems)
- The Pellet Smoke Generator is plugged into the 120VAC cord located under the main control panel which is supplied power by the microprocessor
- The optional sawdust smoke generator has power supplied directly to it from the smokehouse with a 5-wire cord.
- Install a wall-mounted disconnect typically within arm’s reach of the smokehouse. Refer to local electrical codes
