Safety Information
DANGER!
General Safety
- ALWAYS obey ALL applicable local and national laws and regulations for the installation, adjustment, use, maintenance, and repair of this product. One such important standard is NFPA 96, which was published by the National Fire Protection Association (NFPA) and specifically addresses fire safety in commercial kitchens and cooking operations. If required by local regulations, have a certified technician install this product with correct gas connections to ensure FULL compliance with local building codes and safety standards.
- ONLY use this product for its intended purpose, preparing a variety of foods typically in commercial kitchens. ANY use NOT specified herein could potentially damage this product, pose risks, and void ALL warranties implied.
- Operators should read ALL these instructions carefully before installation and use, keep them in a safe and easily accessible place for future reference, provide them to anyone who will operate, maintain, or repair this product, and provide them with this product if it is ever given or sold to a third party. If any point is unclear, contact customer service for clarification and assistance. Failure to do so may result in gas leaks, fires, or explosions, causing serious property damage and severe personal injury, possibly including death.
Workspace Safety
- This product was primarily designed for use in commercial kitchens. If you intend to use it at home or outdoors, ensure that your location meets ALL relevant codes and standards and is adequately protected from the elements. DO NOT operate this product in humid environments or small confined areas.
- ALWAYS ensure that the gas supply is FULLY turned off before installation to prevent any residual gas in the area where this product is going to be installed.
- ALWAYS keep your work area clean and well lit. Cluttered or dark areas invite accidents.
- ONLY use this product in well-ventilated locations to allow fumes, heat, and airborne oil to dissipate quickly. For best results, use exhaust hoods or other suitable equipment to enhance the ventilation.
- DO NOT allow children or pets to access the work area during and shortly after use. If necessary, restrict access to the area using appropriate warning signs or barriers.
- ANY purchaser of this product MUST prominently display detailed instructions for responding to the smell of gas. Obtain these instructions from the local gas supplier or other authorities.
- ONLY place this product on flat, stable, nonslip, nonflammable, and heat-resistant platforms, which should be able to easily bear the full weight of this product, its oil, and your food at ALL times.
- ALWAYS maintain a minimum clearance of 6 inches (15 cm) from a wall on each side of this product for safe and efficient operation. ALWAYS use the provided support legs to ensure adequate clearance and proper ventilation underneath this product.
- NEVER place any flammable, explosive, or corrosive materials near this product, such as carpets, curtains, clothes, papers, wooden utensils, ethanol, gasoline, batteries, chargers, lighters, firecrackers, and aerosol cans. DO NOT use aerosol sprays or similarly dangerous fumes around this product.
- ALWAYS keep a fire extinguisher nearby. The extinguisher should be rated to handle grease fires. (This might be marked as “Class B” or “Class K” depending on your area.) ALL operators should be shown the extinguisher’s location and trained in its use.
Personal Safety
- DO NOT allow use by children, anyone who has not read these instructions, or any person whose mental or physical impairment precludes safe use. ANY bystanders should be made aware of the potential danger of this product. Besides, DO NOT permit children or pets to play with ALL packaging materials, which may cause accidents and injury.
- DO NOT use this product while you are tired or under the influence of drugs, alcohol, or strong medication.
- If you begin to develop symptoms such as headaches, dizziness, drowsiness, or nausea during use, stop using this product, turn off the gas supply, and get fresh air I MMED I ATELY. If symptoms persist or worsen, seek medical help as soon as possible. NEVER continue use until the issues are FULL addressed.
- ALWAYS wear personal protective equipment (PPE) appropriate for your task, including close-fitting clothes as well as close-toed and nonslip footwear. Heat-resistant gloves are recommended, particularly during prolonged use.
- DO NOT wear loose clothing or jewelry and tie back long hair during use.
- DO NOT touch the cooking plate or any other metal parts, especially those stained with grease, oil, and food residues, with BARE skin during and shortly after use, as they may remain hot.
Operational Safety
- ONLY use this product with natural gas (NG) or liquid propane gas (LPG). ANY use with other fuels may cause inefficient combustion and erratic flame behaviors, posing gas leaks, fires, explosions, and other safety hazards.
- NEVER mix up the NG and LPG settings of this product. Correct conversions MUST be made before one fuel is switched to the other. Failure to do so may result in incorrect fuel-air mixture and lead to a series of safety risks.
- NEVER operate this product if the gas pressure exceeds 4″ WC for NG or 10″ WC for LPG. For optimal safety and performance, equip the gas line with a dedicated pressure gauge to ensure continuous supervision.
- ALWAYS per form a pre-use check to ver i f y that the gas supp ly is proper ly connected and there is NO looseness, wear, or damage on the supply line or this product. NEVER confuse the ports marked with “IN” and “OUT” on the gas regulator, which MUST be connected to the gas supply line and the griddle’s gas inlet respectively.
- ALWAYS ensure that this product is in a level position with ALL its support legs having been adjusted to the same length.
- ALWAYS ensure that the cooking plate, pilot lights, burner control knobs, and other exterior parts of this product are clean, free of debris, and in good working condition before use. NEVER leave the protective sheet on the cooking plate during use.
- ALWAYS ensure that ALL burner control knobs are in their “OFF” positions before igniting the pilot lights.
- DO NOT leave this product unattended as long as its gas supply remains on.
- In the event that a gas odor is detected, I MMED I ATELY shut off the gas supply, evacuate ALL people from the area, and PROMPTLY ventilate the area. DO NOT re-enter the area until ALL gas-related issues are FULLY addressed.
- Preheat the cooking plate and adjust the heating controls properly. Stay alert and use common sense, discretion, and good judgement at ALL times.
- NEVER allow ANY water or ice near heated oil. In hot kitchens, this includes careful operation to avoid any sweat coming in contact with the oil. NEVER handle any component with wet hands. NEVER cook frozen food still displaying any visible ice. ANY water will sink under heated oil and instantly boil, expanding 1700 times in volume and creating an enormous risk of fires and burns.
- DO NOT use this product WITHOUT the collection tray or other similar containers under its drain hole. Be mindful of the tray during each use and empty it as needed to prevent spills and potential hazards.
- DO NOT overreach during use. Keep proper footing and balance at ALL times.
- DO NOT allow any foreign objects to enter the holes outside the pilot lights during use.
- After each use, shut down the gas supply COMPLETELY and ensure ALL pilot lights ARE extinguished.
- ALWAYS wait for at least 5 minutes before reactivating the gas supply to reuse this product.
- Food scraps MUST be disposed of properly after each use to prevent the risk of spontaneous ignition if they come into contact with certain oily substances.
- Grease fires MUST be handled properly. Refer to the Grease Fires section below for details.
Maintenance Safety
- ALWAYS turn off the gas supply to this product and wait for ALL heated components to cool before undertaking any emptying, cleaning, adjustment, relocation, maintenance, or servicing.
- ALWAYS use 2 or more people to raise or move this product. Set it in place slowly and carefully.
- Periodically check for wear, breakage, and malfunction of components or any other conditions that may affect this product’s safe operation. If damage is detected, repair or replace any problematic parts before further use. Seek professional assistance from certified technicians as needed. NEVER replace any components with nonidentical ones.
- Oil and grease ARE highly flammable. Handle them with care to avoid fire hazards.
- Maintain ALL labels on this product. If any of them comes loose or becomes illegible, replace it before further use.
Grease Fires
DANGER!
Performed properly, frying is a fast and easy way to produce a wide range of
delicious food time after time after time. However, there is always the
potential of the superheated oil, shortening, or fat to cause a grease fire
and the instinctive responses of many people—to use water or to move the
fire—can greatly worsen the fire’s damage and the risk of injury.
- ALWAYS have a safe work area and ALWAYS be prepared. ALWAYS train EVERY operator on how to most safely handle a grease fire so they are prepared if one occurs. Consult with your local fire department or police department to see if professional training is available in your area.
- NEVER use water on an oil fire.
- NEVER use wet towels or other objects on an oil fire.
- NEVER move the fire or splash the burning oil.
- DO warn everyone nearby of the danger. They should evacuate the area in any orderly way.
- DO remove ANY source of heat. Unplug ANY heating element or turn off its circuit breaker.
- DO stop providing additional air. Turn off ANY exhaust hood or fan or turn off its circuit breaker.
- DO cut off the fire’s access to oxygen IF you can do so safely. Cover the tank with its lid or any similar large metal covering, but DO NOT throw anything in a way that might cause burning oil to splash. (ONLY use a fire blanket for this purpose if it is specifically rated to safely handle grease fires. Many are not.)
- DO use your fire extinguisher IF the fire is NOT yet contained under a cover. If it is contained, allow time for it to die out but keep the extinguisher ready. If you need to use your fire extinguisher, use it from a safe distance and be careful that its pressure does NOT cause the burning oil to splash.
Baking soda or salt can be also used to stop small fires or nearly contained fires but NEVER apply either one in a way that might splash the burning oil. NEVER use flour or other fine powders. Despite their similar appearance, most of them ARE highly flammable at the oil’s temperature and will only worsen the fire.

Preparation
Selecting the Location
- Select an appropriate location for your new griddle, which should adhere to the local building and safety codes.
- Ensure proper ventilation in the work area to allow for the safe dispersal of any fumes or exhaust.
- Keep curtains, papers, and other combustibles away from the area to prevent fire and explosion hazards.
- Check that the platform for this countertop griddle is nonflammable, level, stable, and capable of bearing its weight.
Clearing the Work Area
- Remove any obstacles and other unrelated objects from the work area to ensure enough space for the safe and smooth operation of your griddle.
- Keep children, pets, and other bystanders away from the area, restricting access with prominent signs or barriers as needed.
Inspecting the Gas Supply
- Verify that your gas supply line has been correctly installed and leak-tested and meets the local codes and regulations.
- The main valve of your gas supply line should be in good working condition and can be readily accessed in case of an emergency.
- If necessary, have a certified gas professional address the issues as soon as possible.
- When things are in order, turn off your gas supply completely.
Preparing Helpful Tools and Equipment
- The installation of your griddle may require several tools, such as an adjustable wrench, impact driver, and spirit level.
- For safe use, keep a leak detector and fire extinguisher nearby in case of an emergency.
Putting on Protective Gear
- Don appropriate personal protective gear, such as safety goggles, gloves, and clothes.
Installation
General Instructions

Unpack the packaging crate of your griddle carefully and properly. Be cautious NOT to drill or saw deep into the crate, which may cause damage to the external surface of this griddle. Exercise caution if loosening any fasteners with a hammer. After the crate is opened or disassembled, inspect the griddle and all its accessories for wear and damage, asking for replacements or repair if needed.
NEVER use the griddle if any of its components are broken or damaged.
DO NOT let children or pets play with any packaging without close and constant supervision. -
Adjust the length of each support leg. While holding its upper part, turn the lower part clockwise or counterclockwise until your preferred length is reached.

Use one or more persons to raise and hold one of the griddle’s bottom corners. Screw one support leg onto the hole at this corner using its threaded top bolt. Install the other legs in the same fashion, ensuring that the griddle stands level. (To test this, a spirit level is recommended.)

Move the griddle to your platform with care, being sure it remains in its level position.

Unscrew the cap of the griddle’s gas inlet, which is located at the lower left corner on its back.

Pull the blue caps out of the gas regulator’s inlet and outlet.

Position the gas regulator against the griddle’s gas inlet using the threading of its outlet (“OUT”).
Turn the regulator clockwise until it becomes firmly attached. -
Connect your gas supply line to the regulator’s ¾″ inlet (“IN”) using a compatible fitting. For your safety, install a dedicated pressure gauge (not included) to the gas line.

Remove the protective sheet from the cooking plate at the top of the griddle.

Slide the collection tray onto its support rails underneath the griddle using its lips.
NG-LPG Settings Conversion
DANGER!
This griddle was preset for natural gas (NG) application at the factory. For
use with liquid propane gas (LPG), measures MUST be correctly taken to convert
its NG settings to LPG settings before the griddle is connected to its gas
regulator and supply. Failure to do so may lead to incorrect fuel-air mixture,
which WILL cause incomplete combustion and inefficient energy use, posing a
range of safety hazards including gas leaks, fires, and explosions.
Adjusting the Gas Regulator
- Unscrew the hex cap from the top port of the gas regulator, exposing the NG-LPG conversion adapter with the marked “LP” at the top and “NAT” at the bottom.
- Unscrew the adapter from the cap, flip its “LP” and “NAT” positions, and screw it back onto the cap.
- Replace the adapter into the regulator and seal its top port by completely retightening the cap.
Changing the Orifices
- Pull the burner control knobs away from the griddle. If it is hard to do so, turn the knobs completely counterclockwise and loosen their locking bolts using a Phillips screwdriver (not included) beforehand.
- Unscrew the four screws from the corners of the griddle’s front panel and then remove this panel, exposing the hex rings of the NG orifices preinstalled at the shafts of the burner control knobs.
- Loosen the pilot lights’ nuts and unscrew these marked bolts. Then the manifold should come loose.
- Remove the inner brackets at the left and right sides. Then, pull the manifold until the knob shafts are disconnected from the burner assembly, exposing the NG orifices’ main bodies.
- Unscrew the No. 37 NG orifices and replace it with the provided No. 51 LPG orifices.
- Replace the inner brackets and fasten them into place using their locking bolts. For your convenience, use one or more persons to raise and hold the griddle to provide easy access to the lower part of these brackets.
- Replace the manifold using its locking bolts, pushing until the LPG orifices are firmly seated in their slots on the burner assembly. Retighten the previously loosened locking nuts until the pilot lights become secure.
- Replace the front panel and secure it in place using its locking screws.
- Push the removed knobs back onto their shafts, retightening their locking bolts as needed.
Operation
DANGER!
Again, ensure that ALL of the following conditions ARE fulfilled BEFORE using
the gas griddle.
- The work area is well-ventilated.
- All gas connections are secure.
- No gas leaks are detected.
- The griddle stands level.
- The protective sheet is fully removed from the cooking plate.
- The drain hole in front of the cooking plate remains hollow.
- The collection tray is already placed under the drain hole.
- All burner control knobs are in their “OFF” positions.
- The pilot lights are uncovered and clean.
- No flammable or explosive materials are placed around.
- A fire extinguisher rated for grease fires is kept nearby.

Open the main valve of your gas supply line, allowing gas to flow into the griddle.
Check the gas pressure gauge if you have already installed one. If it reads higher than the gas regulator’s preset pressures (4″ WC for NG and 10″ WC for LPG), close the main valve I MMED I ATELY. For safe decompression, open the regulator’s pressure relief valve (“VENT”) by unscrewing its yellow cap. Have a certified professional address the issue before continuing work. -
Ignite a pilot light using a burning match or an electric igniter (not included), ensuring that the initial flame’s height reaches ½ inches (13 mm) or so. If necessary, use a flathead screwdriver (not included) to adjust the pilot valve until an optimal flame is achieved. Repeat this for the other pilot light(s).

When the pilot lights are lit, activate the burners by turning their control knobs counterclockwise.
Then, the flames should grow higher. If they fail, rotate the knobs to “OFF” and turn the pilot valves counterclockwise to boost the initial flames. -
Adjust each flame using its burner control knob. The further you turn it counterclockwise, the higher the flame should be. To moderate a flame, turn the knob back (clockwise) as needed.

Preheat the griddle’s cooking plate as needed. Then, place your oil and food items on the heated plate and use appropriate utensils to cook.
Exercise caution with ANY heated surfaces. Wear specialized gloves, aprons, and any other necessary PPE during use.
Pay attention to the collection tray under the drain hole. Dispose of the collected wastes in time to prevent accidental spills, which may lead to property damage and personal injury. -
When finished with cooking, turn the burner control knobs to “OFF”. Then, the pilot lights should remain lit, serving a constant ignition source for the burners.

Close your main gas valve to stop the gas supply to the griddle. The pilot lights should come off.
After cooking, be cautious of ALL heated surfaces and make sure your ventilation or exhaustion system continues operating to prevent potential health issues.
Maintenance
DANGER!
Ensure that ALL the following precautions are met BEFORE performing cleaning,
servicing, and other maintenance for the gas griddle.
- Your gas supply is completely turned off.
- The griddle is already deactivated.
- No gas fumes or leaks exist.
- No inflammables or explosives are placed nearby.
- Proper ventilation remains ensured in the area.
- All surfaces of the griddle have cooled down.
- All proper PPE necessary for your work is put on.
Cleaning the External Surfaces
Clean the cooking plate, splash boards, and all the other external surfaces
after each use. Remove any grease, grime, and food residues using a wire brush
or grill scraper and wipe off any remaining debris using a soft, damp, and
warm cloth or paper towel. If needed, apply food-grade detergent BUT be sure
to thoroughly rinse it away with clean water. NEVER use caustic chemicals.
Emptying the Collection Tray
Hold the front lip of the collection tray, slide it away from the griddle, and
pour the collected wastes into appropriate containers or permanent facilities,
which should comply with local and national codes and regulations. Clean the
tray in the fashion above and then dry it completely.
Maintaining the Cooking Plate
After the cooking plate is cleaned and fully dries, it is essential to take
proper rust-preventing measures to maintain its good performance and food
safety. For this, we strongly recommend the so-called “seasoning” method.
- Preheat the cooking plate to 300–350°F (150–180°C).
- Pour a few tablespoons of cooking oil onto the plate, adding more if needed.
- Use a brush or lint-free cloth to evenly distribute the oil across the entire cooking surface, creating a thin and non-stick protective coating that can guard against moisture and oxygen. Wipe off any excess oil as needed.
- Repeat Steps 2–3 until the cooking plate has a smooth and mirror-like surface.
Inspecting the Equipment
Check the gas connections and lines for any signs of looseness, wear, damage,
and leaks between uses. If necessary, have a certified technician address the
issues as soon as possible.
Periodically inspect the gas regulator, pilot lights, burner control knobs,
and any other components of the griddle for any signs of damage and
malfunction. Repair or replace any problematic parts with new identical ones.
If necessary, seek professional assistance from certified technicians.
Troubleshooting

Slow heating up on the cooking surface| Ensure that the pilot lights and
