GENERAL SAFETY GUIDELINES
Keep all loose clothing away from moving parts when the grinder is in use.
WARNING: Keep fingers and hair away from moving parts when grinder is in
use.
DO NOT run grinder without meat in the grinder head. Severe damage to the head
and auger may occur.
Turn grinder off before unplugging from outlet.
Always unplug grinder when cleaning, changing parts (head, plates, blades
stuffing tubes, etc.) or disassembling.
Remove all tendons, bone, and shot from meat before grinding.
Adult supervision is necessary when any appliance is used near children.
When carrying the unit, be sure to hold the motor housing with both hands.
Never remove or attach hopper plate, head, or cap when motor is running.
WARNING: Do not disassemble the grinder or place anything (especially
fingers, spoons, forks, etc.) in the grinder during operation.
Do not use the grinder if the power cord is broken. Please return the unit by
contacting customer service at

To protect against risk of electrical shock do not put the machine in water or
other liquid.
WARNING: Avoid contacting moving parts. Never feed food by hand. Always
use food pusher. Do not use fingers to scrape food away from discharge disc
while appliance is operating. Cut type injury may result.
Do not operate any appliance with a damaged cord or plug or after the
appliance malfunctions, or is dropped or damaged in any manner. Return
appliance to the nearest authorized service facility for examination, repair,
or electrical or mechanical adjustment.
The use of attachments not recommended or sold by the manufacturer may cause
fire, electric shock, or injury.
Do not use outdoors.
Do not let cord hang over the edge of the table or counter.

INTRODUCTION
Thank you for purchasing a MEAT! 5 HP Dual Grind Grinder (#8). This Dual Grind
Grinder will enable you to fine grind meat with one pass and get the same
consistency as if you did a 2-grind process! This will save you time and
eliminate the frustration that often comes with the 2-grind process. No more
cooling and waiting between grinds. One pass and done!
Your grinder comes complete with everything you need to safely and easily
grind meat and stuff sausage. Please take a few minutes to read through this
booklet to learn more about your MEAT! grinder. Your grinder s made of high
quality materials to ensure extended use for all of your meat processing
needs.
WARNING: Never assemble, disassemble, work on, or clean grinder if it is plugged into an electrical outlet. Unplug the grinder before assembly, disassembly, and cleaning.
BEFORE USE
Disassemble the grinder head and wash each part thoroughly in warm soapy
water.
Remove all packing grease and oil from the surfaces.
Dry all parts before re-assembly.
Keep packing material for future storage of grinder and grinder parts.
ASSEMBLY INSTRUCTIONS
Loosen the Grinder Head Locking Knob (2) until the threads are not exposed
nside the Gearbox Housing opening. Insert the Grinder Head (3) into the
Gearbox Housing with the Feed Chute oriented vertical. Tighten Grinder Head
Locking Knob by turning clockwise until Grinder Head is secure. Ensure Nylon
Sleeve (4) is assembled within Grinder Head before proceeding to the next
step.
Insert the Auger (5) by aligning the splined auger shaft with the output shaft
of the Gearbox Housing. This may require rotating the auger to ensure items
fit together properly.
Orient First Grinding Plate (6) onto auger making sure it aligns with notch on
the bottom of the Grinder Head.
Place the Dual Edge Cutting Knife (7) onto the square portion of the Auger
shaft.
*Note:* The Cutting Knife is a one-way-fit design. The letters need to be
facing outwards when assembled (away from the machine).
Place the Second Grinder Plate (Ba or 8b) onto the Auger shaft making sure it
aligns with notch on the bottom of the Grinder Head.
Note:** The Second Grinder Plate will only fit one way and will protrude
approx. 1 /8″ out of the grinder head when installed.
*Note: It is recommended to start with Bb (10mm Second Grinding Plate),
then move to Ba (4.5mm Second Grinding Plate) in a separate operation if
consistency of meat is not obtained.
Attach the Front Head Ring Nut (1) and turn the Front Ring Nut clockwise until
it is snug against the Grinder Plate.
Place the Meat Tray (9) onto the Feed Chute Opening and press down until it is
secure.
Use Meat Stamper (10) only when grinding meat. Always use Meat Stamper to move
meat through the grinder head assembly.
GRINDING INSTRUCTIONS
For best results, trim all excess tendons, cartilage, cords, and blood clots
and remove meat from bones.
Optimal results occur when meat is chilled to 32-34 °F before grinding.
Cut meat nto pieces that will easily fit in throat of grinder head.
(Approximately 1 inch squares.)
Place cubed meat into tray. Be sure not to over fill the tray. Make sure the
throat opening of the tray remains clear and open.
Place a dish, bowl, or tray under grinder head to catch ground meat.
Switch grinder to grind position. Carefully begin to feed meat down the
throat. Use meat stamper to push meat. DO NOT use fingers or utensils other
than the meat stamper provided; bodily injury may occur and you could damage
your grinder.
WARNING: Never place fingers or body parts into grinder as personal
injury or death will occur.
IF JAMMING OCCURS OR PERFORMANCE SLOWS
Shut grinder off immediately.
Remove power cord from outlet.
Carefully remove Grinder head ring cap, grinder plate and cutting blade.
Carefully clean grinder plate holes thoroughly and remove any tendons from
around cutting blade.
Replace cutting blade, grinder plate and screw ring cap back onto grinder
head.
Plug the grinder back in.
Continue grinding.
Repeat steps as necessary to enhance grinder performance.
CAUTION: After turning the switch from ON position to OFF position,
please wait until the motor stops completely. Then turn the switch to ON
position. Otherwise, the motor will be damaged.

SAUSAGE STUFFING ASSEMBLY
Be sure grinder s unplugged.
Attach grinder head to motor and install auger as previously described in
General Assembly Instructions.
Slide the Stuffing Star (11) onto auger. Grinding blade is not used when
stuffing.
Slide one of the Stuffing Tubes (13) through Stuffing Tube Flange (12).
Note: Clean and sanitize all surfaces immediately after use.
Place Stuffing Tube/Flange Assembly through Front Ring Nut and secure to
Grinder Head. (Make sure sausage tube faces out).
Attached the Front Ring Nut and turn the Front Ring Nut clockwise until t s
snug against the Flange Assembly.
SAUSAGE STUFFING DIRECTIONS
Properly prepare casings as directed on casing packaging. Place artificial or
natural intestines onto sausage funnel.
Load hopper with prepared meat and feed meat nto grinder head opening before
operating unit. Reminder: Do not operate grinder without meat in grinder head.
Damage to auger and/or motor can occur.
Plug in and turn switch to forward position when ready to start.
Begin to feed sausage mixture into the hopper opening.
Hold the casing on the sausage tube in one hand and slowly let the meat output
pull the casing from the tube. Fill casing as desired by holding casing back
on tube.
Twist or tie the sausage into links as desired. Tie end of casing into a knot.
It is recommended that 2 people perform sausage stuffing.
Add small amounts of water to your ground meat when stuffing sausage to
improve output of meat through sausage stuffing tube.
Clean and sanitize all surfaces immediately after use.
Store food or cook properly after processing.
AFTER USE
Disassemble all parts and wash thoroughly in soapy water (grinder components
are dishwasher safe).
You must remove all foreign material from all appliance parts.
Dry all surfaces.
Do not use bleach or chlorine based chemicals to clean. Discoloration of
plastic parts can occur.
Wipe down all non stainless steel parts with a food grade spray.
Alternatively, wipe down with oil to keep from rusting.
Do not immerse motor housing in water. Damage to motor can occur.
GRINDER TROUBLE – SHOOTING GUIDE

grinder to warmer area.
If this does not work contact customer service.
Grinder runs slowly and erratically| Possible cold gear grease problem. Move
grinder to warmer area.
If this does not work contact customer service.
Meat is backing up at the back of the grinder| Auger is not able to handle
large portions of meat. Cut meat into smaller pieces so auger can work
properly.
Meat is only turning around the auger and compressing against the head| Meat
is too warm. Cool meat to a temperature around 40°F.
Meat does not flow through the grinder| Make sure grinder head is properly
assembled.
Check sharpness of knife blade.
Meat is backing up at the head and will not flow| Meat may be snagging on the
auger or other parts. Lubricate internal parts with food-grade silicone spray.

GROUNDING
This appliance must be grounded while in use to protect the operator from
electrical shock. This grinder uses a grounded, three prong plug (Figure A)
that should be connected directly to a grounded 120 Volt, 60 Hz three prong
grounded wall outlet receptacle (Figure B). Grounded plugs are used on metal-
encased electric appliances in order to provide protection from an electric
shock. DO NOT change or alter the plug in any way. NEVER break off a grounding
prong from a 3-conductor plug. Doing so voids the warranty and may result in
electric shock.
