Safety Information
CAUTION!!
READ THE INSTRUCTIONS BEFORE USING THE OVEN!
- This appliance shall be installed in accordance with current regulations and used only in a well-ventilated space. Refer to the instructions before installing and using this appliance.
- Installation must be performed by qualified installer only.
- Keep the oven area free and clear of all combustibles such as paper, cardboard and flammable liquids and solvents.
- For gas models the location must provide adequate clearance for the air opening into combustion chamber.
- Caster Installation: Install casters with locking devices on the front. Install non-locking casters on the rear.
- This appliance may not be used by children or people with limited physical, sensor or mental capacity or those without the necessary experience and/or knowledge, unless such people are supervised by a person who is responsible for their safety
- Risk of burns – always open the cooking cabinet door very slowly (hot vapors).
- Risk of burns – the external temperatures of the unit may exceed 60°C. Only touch the unit at the controls.
- The rooms in which these appliances are installed must be well ventilated, in order to prevent an unacceptable build-up of harmful combustion products. Danger of suffocation!
- The conversion of gas type may only be carried out by the service agents or qualified personal.
- Maintenance and servicing (like air shutters and gas pressure) may only be carried out by trained/qualified personal in accordance with the local regulations.

INSPECTION, MAINTENANCE OR REPAIR WORK.
Delivery and Location
DELIVERY AND INSPECTION
All Blodgett ovens are shipped in containers to prevent damage. Upon delivery
of your new oven:
- Inspect the shipping container for external damage. Any evidence of damage should be noted on the delivery receipt which must be signed by the driver.
- Uncrate the oven and check for internal damage. Carriers will accept claims for concealed damage if notified within fifteen days of delivery and the shipping container is retained for inspection.
The Blodgett Oven Company cannot assume responsibility for loss or damage suffered in transit. The carrier assumed full responsibility for delivery in good order when the shipment was accepted. We are, however, prepared to assist you if filing a claim is necessary
OVEN LOCATION
The well planned and proper placement of your oven will result in long term
operator convenience and satisfactory performance.
- Place the oven in a properly ventilated area.
- Place the oven at least 30mm from each side and back wall.
WARNING!!
The top and front surfaces of the appliance are hot while in operation. DO
NOT place flammable materials on or near the appliance.
The rooms in which these appliances are installed must be well ventilated, in order to prevent an unacceptable build-up of harmful combustion products. Danger of suffocation!

Oven Assembly
NOTE: This appliance shall be installed in accordance with current regulations and used only in a well ventilated space. Refer to the instructions before installing and using this appliance.
LEG ATTACHMENT
Legs are available in 82,5 cm, 70 cm, 48,3 cm, 30,5 cm, and 18 cm lengths.
- Place the unit on a lift truck.
- Attach each leg with bolts to the bottom of the oven
CASTER ATTACHMENT
- Bolt the square legs to the oven with 1/2-13 hex head bolts. Casters with brakes should be facing front of oven.
- Carefully place oven onto the casters. Engage brakes on front casters.
- Attach the strain relief bracket.
OVEN DECKS
Rokite Decks
- Slide the deck pieces into the unit until they drop into the shelf supports.
- Push together until the center gap closes. Use only Blodgett Rokite decks.
Steel Decks
- Slide the deck pieces into the unit until they drop into the shelf supports.
- Push together until the center gap closes.
- Attach the retaining clip in the front of the decks.
- Attach the three deck clips in the rear of the oven.
OVEN STACKING (if applicable) 900 Series Ovens
- Place two boards on top of the lower oven.
- Slide the upper oven on top of the boards.
- Slide a board under the top oven. Lift up to re- move the left board.
- Slide the top section into position Remove the right board.
1000 Series Ovens
- Fasten 30,5 cm legs to lower section.
- Remove the sheet metal flue cover on the bottom of the UPPER OVEN ONLY. Save the two screws.
- Fasten the spacers to the bottom of the upper oven. See Figure 5.
- Insert oven flue connector into the bottom of the oven flue. Push until it is flush with the bottom of the upper oven. Temporarily hold in place with tape.
- Place the upper oven on top of the bottom oven.
- Remove the tape. Slide the flue connector into position over the collar of the bottom oven.
- Fasten flue connector to bottom oven with the screws from the flue cover.
Ventilation
A mechanically driven, canopy type exhaust hood is required. The hood should completely cover the oven with an overhang of at least 15 cm on all sides not adjacent to a wall. The distance from the floor to the lower edge of the hood should not exceed 2.1m.
- Place the diverter over the flue connector with the open area facing the front of the oven.
- Secure with the sheet metal screws provided.
WARNING!!
Failure to properly vent the oven can be hazardous to the health of the
operator and may result in operational problems, unsatisfactory baking and
possible damage to the equipment.
Damage sustained as a direct result of improper ventilation will not be covered by the manufacturer’s warranty.
Gas Connection and Initial Startup
Connect the oven to the gas line with the proper type of gas according to Local and National Installation Standards. Setting Equipment for Other Types of Gas — 1000 Series Only
NOTE: The 900 Series ovens are not convertible. Data given on the following page is for information only.
CAUTION!!
The conversion of gas type may only be carried out by the service agents or
qualified personal.
- Shut off the gas valve and turn off the operating switch.
- Dismantle the manifold by means of a coupling. Remove the bolts holding the manifold to the brackets. Remove the manifold.
- Replace the injectors.
- Adjust the air shutters to the proper air opening. Refer to the table on the following page.
- Reinstall the manifold.
- Remove the two screws holding the pilot bracket.
- Remove the pilot tube from the pilot assembly.
- Loosen the set screw on the left side of the pi- lot bracket. Remove the thermocouple. Remove the pilot bracket assembly.
- Insert the thermocouple into the new pilot bracket assembly. Tighten the set screw.
- Install the new pilot bracket assembly with the screws removed in step 6.
- Install the pilot tube in the new pilot bracket assembly.
INITIAL STARTUP
All the oven to burn off for four hours. Set the thermostat to 140°C. Increase
the temperature by 55° every hour up to 315°C. This procedure may produce
smoke.

900 Series Control Panel
NOTE : Operation is restricted to qualified personnel.
LIGHTING
- Turn the MANUAL CONTROL VALVE (1) to ON.
- Press the SAFETY PILOT IGNITION BUTTON (2)
- Light the pilot burner with a match. Continue to hold the safety pilot ignition button for 30 seconds.
OPERATION
- Set the THERMOSTAT (3) to the desired cooking temperature.
- Load product when the oven has reached operating temperature.
NOTE: DO NOT allow the pans to touch each other or the sides of the oven.
To turn the oven off
Turn the MANUAL CONTROL VALVE (1) to OFF.

- Turn the SAFETY PILOT IGNITION KNOB (2) to the light position.
- Light the pilot burner with a match. Continue to hold the safety pilot ignition knob for 30 seconds.

- Set the THERMOSTAT (3) to the desired cooking temperature.
- Load product when the oven has reached operating temperature.
NOTE: DO NOT allow the pans to touch each other or the sides of the oven.
To turn the oven off

Cleaning and Replacement of Parts
CLEANING
WARNING!!
DO NOT spray the oven with a water jet.
Daily
- Saturate a cloth with light oil. Wipe the oven exterior when it is cold. Dry the oven with a clean cloth.
- Clean stainless surfaces with a non-toxic industrial stainless steel cleaner. Apply the cleaner when the oven is cold, and always rub with the grain of the metal.
- Brush residue from beneath doors.
Weekly
- Brush oven cavity, control area and cooling fans
REPLACEMENT OF PARTS
Baking Compartment Door
- Open the oven door.
- Remove the left corner trim panel and column.
- Remove the two bolts in the left counter weight.
- Remove the retaining rings and door arms.
- Remove the two bolts in the left hinge assembly.
- Remove the inner bolt on the right side of the door. Loosen the outer bolts.
- Slide the right hinge pin to the left. Note the number of spacer washers used on the right hinge pin.
- Remove the door.
Burner Compartment Door
- Remove left hand door support arm.
- Remove the inside bolt on the left hand hinge pin. Loosen the outer bolt.
- Pull the left side of the door forward to remove.
Control Stack Assembly
- Remove thermostat knob, main manual control valve handle and control panel cover.
- Open oven door. Remove the thermostat bulb guard. Straighten out capillary.
- Disconnect pilot tubing at the safety valve on the control stack. 4. Open combustion compartment door. Remove screws holding the pilot burner to the bracket on the right hand main burner.
- Disconnect safety valve capillary from pilot burner. Remove the pilot burner.
- Disconnect upper and lower unions on the control stack.
- Pull the control stack assembly forward. Disconnect thermostat capillary. Remove through the front of the control area.
Main Burner
- Open combustion compartment door. Remove screws holding the pilot burner to the bracket on the right hand main burner. Move pilot burner assembly out of the way.
- Open combustion compartment door. Remove screws holding the pilot burner to the bracket on the right hand main burner. Move pilot burner assembly out of the way.
- Remove the two bolt holding the burner manifold to the brackets of the burner compartment.
- Remove the two burner manifold brackets, the combustion compartment door.
- Remove first the right, then the left main burners.
Pilot Burner
- Open combustion compartment door. Remove screws holding the pilot burner to the bracket on the right hand main burner.
- Loosen the hex head screw on the pilot burner bracket. Remove the capillary bulb.
- Disconnect the gas supply tubing from the pilot burner.
