Product Information

The product is an Oven/Proofer manufactured by Duke Manufacturing Company. It features a touch screen interface and is capable of both baking and proofing functions. The oven has a temperature range of 188°C (370°F).

Product Usage Instructions

  1. Start-Up:
    • Turn ON the TSC3 6/18 Main Power using the left side switch.
    • Wait for the boot up sequence to complete. The oven and proofer lights and fans will turn on briefly and then turn off, while the touch screen remains on. This process takes about 20 seconds.
  2. Oven Usage:
    • To turn on the oven, touch the “Oven” button on the touch screen.
    • The oven lights will turn on and it will start preheating.
    • The oven recipe information bar will display the temperature (370°F) and other relevant details.
    • You can select a specific recipe using the recipe buttons, which will be highlighted in blue.
    • The touch screen provides additional options and features, such as the sleep button and info button.
    • When the oven door is open, the main tool bar will indicate “DOOR OPEN” and the oven icon background will be orange.
    • Follow the instructions on the screen for further usage.
    • To start the dry-out cycle at the end of each day’s use, touch the respective button.
    • In case of an oven bake complete alarm, you can either press the “add 1 minute” button or open the oven door to cancel the alarm.
  3. Proofer Usage:
    • To turn on the proofer, touch the “Proofer” button on the touch screen.
    • The proofer lights will turn on and it will start preheating.
    • The proofer recipe information bar will display the temperature (370°F), humidity, and other relevant details.
    • You can select a specific recipe using the recipe buttons, which will be highlighted in blue.
    • The touch screen provides additional options and features, such as the sleep button and info button.
    • Follow the instructions on the screen for further usage.
    • During the proofer cycle, countdown timers will be displayed in the main tool bar.
    • In case of a proof complete alarm for the upper 1/3rd section, you can press the respective button to cancel the alarm.

Oven/Proofer Start-Up

Turn ON the TSC3 6/18 Main Power (left side switch)
NOTE: As part of the boot up sequence, the oven and proofer lights and fans will turn on (This takes 10 seconds) and go back off. Then the touch screen will stay on. This boot process takes about 20 seconds to complete.

  1. Boot Screen
  2. Automatically Transitions to Main Screen
  3. Oven, Proofer and Recipe Buttons will turn to BLUE background.
    Oven and Proofer lights will turn on and start preheating

Oven Operating Instructions

Oven Recipe Selected:

  • Oven Recipe Preheat Screen (if under temperature setpoint)

  • Oven Recipe Ready to Start Timer (Load and Touch   button to start)

  • Oven Count Down Timer (with Progress Bar)
    To cancel, press and hold the countdown timer  for 2 to 3 seconds.

  • Oven Bake Complete Alarm (with add 1 minute button +1)
    Touch the Timer or Open Oven Door to cancel the alarm.

  • Back to Ready

Proofer Operating Instructions

Proofer Recipe Selected:

  • Proofer Starting Up Screen (if under temperature setpoint)

  • 10 min. Starting Up Timer after reaching setpoint

  • Proofer Recipe Ready to Start 1/3rd Timers: (with Progress Bar)
    Load and Touch button to start First Section.

  • Proofer Count Down Timer (with add 5 minute button +5)

    • Touch button to start additional timers.
    • Alarm beeps and LOAD NEXT TRAY is displayed in the Main Tool Bar 1/3rd of the time thru the proofer cycle.
    • To cancel, touch and hold the countdown timer for 2 to 3 seconds.
  • Proof Complete Alarm for UPPER 1/3rd.
    Touch the Timer or the button to cancel the alarm.
