Dear Customer,
Thank you for purchasing this Hendi appliance. Read this manual carefully, paying particular attention to the safety regulations outlined below, before installing and using this appliance for the first time.

Safety regulations

  • This appliance is intended for commercial use.

  • Only use the appliance for the intended purpose it was designed for as described in this manual.

  • The manufacturer is not liable for any damage caused by incorrect operation and improper use.

  • Keep the appliance and electrical plug away from water and other liquids. In the event the appliance falls into water, immediately remove the power plug from the socket. Do not use the appliance until it has been checked by a certified technician. Failure to follow these instructions will cause life-threatening risks.

  • Never attempt to open the housing of the appliance by yourself.

  • Do not insert objects into the housing of the appliance.

  • Do not touch the plug with wet or damp hands.

  • Danger of electric shock! Do not attempt to repair the appliance by yourself, repairs are only to be conducted by qualified personnel.

  • Never use a damaged appliance! When it’s damaged, disconnect the appliance from the socket and contact the retailer.

  • Warning! Do not immerse the electrical parts of the appliance in water or other liquids.

  • Never hold the appliance under running water.

  • Regularly check the power plug and cord for any damage. When damaged it must be replaced by a service agent or similarly qualified person in order to avoid danger or injury.

  • Make sure the cord does not come in contact with sharp or hot objects and keep it away from open fire. Never pull the power cord to unplug it from the socket, always pull the plug instead.

  • Make sure that the power cord and/or extension cord do not cause a trip hazard.

  • Never leave the appliance unattended during use.

  • Warning! As long as the plug is in the socket the appliance is connected to the power source.

  • Turn off the appliance before unplugging it from the socket.

  • Connect the power plug to an easily accessible electrical socket so that in case of emergency the appliance can be unplugged immediately.

  • Never carry the appliance by the cord.

  • Do not use any extra devices that are not supplied together with the appliance.

  • Only connect the appliance to an electrical outlet with the voltage and frequency mentioned on the appliance label.

  • Never use accessories other than those recommended by the manufacturer. Failure to do so could pose a safety risk to the user and could damage the appliance. Only use original parts and accessories.

  • This appliance should not be operated by persons with reduced physical, sensory or mental
    capabilities, or persons that have a lack of experience and knowledge.

  • This appliance should, under any circumstances, not be used by children.

  • Keep the appliance and its power cord out of reach of children.

  • WARNING: ALWAYS switch off the appliance and unplug from power socket before cleaning, maintenance or storage.

Special Safety Regulations

  • This appliance is designed only for cooking vacuum-sealed food at a precisely controlled temperature. Any other use may lead to damage to the appliance or personal injury.
  • Use the appliance only as described in this manual.
  • This appliance should be operated by trained kitchen personnel of restaurants, canteens or bar, etc.
  • During removal of the lid steam can escape. Caution: danger of burns!
  • Never use this appliance without water.
  • Water can be hot at draining; Caution: danger of burns!
  • Always allow the appliance to cool down before cleaning.
  • Only use water. Do not use oil or fat in the container.
  • Risk of splashing! Slowly immerse the food into the water.
  • Attention! Do not fill water over MAX level.
  • Do not open the lid of the appliance while it is under operation. Heat and steam will come out.
  • Do not heat up the appliance without water. The appliance must be turned on after water is poured into the container.
  • Do not pour hot water into plastic containers. The containers may deform or even melt.
  • The tap can be hot during draining. Caution: danger of burns!
  • Sous vide appliance with content can be very heavy (over 20 kg!). Caution: place only on a stable surface!
  • The appliance should only be used with the supplied stainless steel lid and spacer with 4 compartments for item 225264 & 6 compartments for item 225448 respectively.

Intended use

  • This appliance is intended for professional use.
  • The appliance is designed only for cooking vacuum-sealed food at a precisely controlled temperature. Any other use may lead to damage to the appliance or personal injury.
  • Operating the appliance for any other purpose shall be deemed as a misuse of the device. The user shall be solely liable for improper use of the device.

Grounding installation
This appliance is classified as protection class I and must be connected to protective ground. Grounding reduces the risk of electric shock by providing an escape wire for the electric current. This appliance is fitted with a power cord that has a grounding wire and a grounded plug. The plug must be plugged into an outlet that is properly installed vand grounded.

Hendi sous vide device
Sous vide is a method of cooking food, sealed in plastic vacuum bags, in a water bath at precisely controlled temperatures in order to provide consistently high-quality results. The big advantage of the Hendi sous vide oven is that because of the high precision thermostat (0.5°C), food can be effortlessly prepared perfectly. If you make steaks in the sous vide oven medium rare, the steak will be medium rare throughout from edge to edge. No guesswork or critical timing. Your steak will be perfectly cooked if you set the time and temperature correctly, while no attention is required during operation. Because the products are cooked vacuum sealed, you prevent the loss of flavor and nutrition, keeping the food flavourful, tender and moist. Some long-duration settings even allow significant improvement in tenderness while keeping the flavor. The Hindi sous vide oven saves you time. You can prepare the food before peak times. If the sous vide settings are correct, no attention is required during operation. Effortless cooking. The Hindi sous vide saves you money. The food will shrink less, thus retaining more moisture. As pasteurization of food is possible, properly sous vide prepared food can be safely kept for up to 3 weeks longer than conventionally cooked food. The Hindi sous vide oven saves you work. You can add marinade/herbs directly to the food before cooking.

Preparations before using for the first time

  • Check to make sure the appliance is undamaged. In case of any damage, contact your supplier immediately and do NOT use the appliance.
  • Remove all the packing material and protection film (if applicable).
  • Keep the packaging if you intend to store your appliance in the future.
  • Clean the appliance with luke-warm water and a soft cloth.
  • Place the appliance on a level and steady surface, unless mentioned otherwise.
  • Make sure there is enough clearance around the appliance for ventilation purposes. Position the appliance in such a way that the plug is accessible at all times.

Important: For item 225448 (GN 1/1), please install and fix the drain tap to the appliance before use.

Use

Operation: SET TEMPERATURE

  1. Fill the container with (hot) water and make sure that the water will not come over the edge on the inner mark (groove) of the water tank. Remember that placing food in the water will also raise the water level – it should still not pass the aforementioned groove. Water should be filled up to the Max Mark no matter the amount of food you are going to put into the water bath for cooking.

  2. Connect the power plug to a suitable electrical power outlet.

  3. Press the ON/OFF Icon.

  4. Then blue LED in the ON/OFF Icon is ON. The upper-Temperature display will show the last SET TEMPERATURE. The lower display will show the appliance is in standby mode (—-).
    NOTE! The appliance beeps once for a short time.

  5. Press the INCREASE/DECREASE Icon, the lower display will show, the heating element is switched ON. At this moment, The Temperature Display will show the ACTUAL TEMPERATURE. The lower Timer Display will show the last set time.

  6. Now, press the Temperature Icon, the upper display will show the previous SET TEMPERATURE. Lower display will show °C for 1 ~ 2 seconds. And then show the time.

  7. Then, press the INCREASE/DECREASE Icon to adjust the SET TEMPERATURE within this 1 ~ 2 Seconds. The SET TEMPERATURE range is 35°C ~ 90°C. Press once for +0,1˚C / -0,1˚C. Press and hold for +1,0°C / -1,0˚C.

  8. When stop to press INCREASE/DECREASE Icon, the SET TEMPERATURE will be stored automatically.

  9. Under heating, the Temperature Icon will light up constantly & DECREASE icon will blink until the SET TEMPERATURE is reached. After reaching the SET TEMPERATURE, the Temperature Icon lamp will go off and keep stay of within a range of +0,5˚C / -0,5˚C. If the Actual Temperature over the SET TEMPERATURE about 1°C, the Temperature Display will show “H0t”.

NOTE!
If you don’t put water into the water bath and try to switch on the power by step 1.3 to 1.7, the thermal protection of the appliance will act to stop the power. The upper-Temperature Display will show the E2. The lower Timer Display will show —-. And long beep sound will be heard. The user can only switches OFF the appliance to stop this warning signal.

Operation: SET TIMER

  1. During cooking, you can activate the TIMER function.

  2. Press and hold TIMER icon for 2 ~ 3 seconds to set the TIMER. The upper display will show “t”. Then, press INCREASE icon / DECREASE icon once for +5,0 min / -5,0 min respectively. And the lower display will show the “SET TIMER”. And start count down after few seconds.

  3. The “:” will blink until 00:00 and “END” will be blinked continuously. Two short beep sound will be heard and the “Timer Icon” will also light off.
    Note: When the TIMER finish counting, the power of the appliance doesn’t switch OFF. The water tank will continue to operate and keep the temperature stable.

  4. You can also press TIMER icon to start count down from 00:00 in ascending order by pressing the TIMER icon once. Press again to cancel this function.

NOTE!
Time in count down can be adjusted all time

  • During Timer is counting, if the user presses the Timer icon, Timer counting will be suspended and shows the time left.
  • In this moment, the user can adjust the Timer value.

If during operation, water in the water bath has been dry up, the thermal protection of the appliance will act to stop the power. The upper-Temperature Display will show the E2. The lower Timer The display will show —-. And a long beep sound will be heard. The user can only switch OFF the appliance to stop this warning signal.

Switch it OFF

  1. Switch it off by press the ON/OFF switch Icon one time.

Closing the lid
After you set the time and temperature and put vacuumed food in the water tank, you need to close the lid. To position the lid correctly on the tray, open the vent valve first. Only then you can position the lid correctly. As soon as the lid closes well, close the vent valve Put the vacuumed pouch into the water when the water has reached the target temperature for cooking. If you use more bags, put them in the rack and be sure that all pouches are completely submerged.

Opening the lid
To remove the lid the vent valve should be opened first, because low air pressure under the lid will keep it in place. Warning: steam can escape. Caution: risk of burns.

After use
Drain the water out of the container by pressing the tap and turn it ¼ to the left. You close the tap again by pushing it and turn it ¼ to the right. Make sure that the button pops up slightly, this indicates the safety lock is engaged.

Note: The drain tap function is available for item 225448 only.

Cleaning and maintenance

  • Always remove the plug from the socket before cleaning the appliance.
  • Beware: Never immerse the appliance in water or any other liquid!
  • Clean the outside of the appliance with a damp cloth (water with mild detergent).
  • Never use aggressive cleaning agents or abrasives. Do not use any sharp or pointed objects. Do not use petrol or solvents! Clean with a damp cloth and detergent if necessary. Do not use abrasive materials.
  • Clean the ventilation slots (if applicable) with the vacuum cleaner.
  • Always remove the water after use to prevent limescale deposits.
  • Dry the inside of the water tank with a dry soft cloth.
  • Ensure that no limescale forms at the bottom of the water tank.

Basic principles of sous vide cooking
Vacuum packing
The food should always be packed vacuum or in any case packed in a plastic bag without air (no buoyancy) so that the heated water will have a direct contact to the food through the plastic. Spices and marinades can be added in advance so that these can be absorbed by the food and the juices and flavors will be kept. The best is to use an vacuum inside chamber packaging machine. The cheapest functional alternative is to use airtight ziplock bags that the air has been squeezed out of, though the  results of this method may be poor Times are always minimum times. The thickness of the product has a strong influence on the whole cooking process.

Some examples:

Steak:

  • Rare 54-56˚ C
  • Medium 56-58˚ C
  • Well done 58-64 ˚C at a time of 1 to 4 hours.

Succade:

  • 55-58 ˚ C for a period of at least 20 hours and it can reach up to 60 hours depending on thickness.

Pasteurization:
The storage time of vacuum-packed products that are cooked, can be extended considerably if they are cooled rapidly after cooking (with a shock cooler or in a basin with ice cubes). If stored at 2˚C they can be stored up to 3 weeks after preparation. Note that minimum times/temperatures apply to kill the bacteria, which are highly dependent on the product. It is food-safest to find basic sous vide recipes online and carefully modify them to your wishes.

Your statutory rights are not affected. If the appliance is claimed under warranty, a state where and when it was purchased and include proof of purchase (e.g. receipt). In line with our policy of continuous product development, we reserve the right to change the product, packaging and documentation specifications without notice.

Discarding & Environment
When decommissioning the appliance, the product must not be disposed of with other household waste. Instead, it is your responsibility to dispose to your waste equipment by handing it over to a designated collection point. Failure to follow this rule may be penalized in accordance with applicable regulations on waste disposal. The separate collection and recycling of your waste equipment at the time of disposal will help conserve natural resources and ensure that it is recycled in a manner that protects human health and the environment. For more information about where you can drop off your waste for recycling, please contact your local waste collection company. The manufacturers and importers do not take responsibility for recycling, treatment and ecological disposal, either directly or through a public system.
