The Miele Gourmet oven dish (oven dish for short) is available in different sizes. The oven dish can be used in the oven, steam combination oven, and on solid and ceramic glass cooktops. The HUB 5001-XL/M dishes are also suitable for use on induction cooktops. The oven dish can be used for bakes, casseroles, gratins, pasta dishes, soups, roasts, roulades, or poultry. However, it should not be used for baking cakes or bread. The oven dish has a non-stick coating, making it easy to remove food after cooking without sticking.

Product Usage Instructions

Ovens and Steam Combination Ovens
The oven dish can be placed directly on the runners in the oven. To prevent the oven dish from slipping off the runners when partially pulled out of the oven, there is a safety notch at the back of the side supports. Make sure to place the oven dish in the oven with the Miele logo visible.

Solid/Ceramic Cooktops
When using the oven dish on a ceramic glass surface, be careful not to cause scratches or damage. Small particles of soiling between the base of the oven dish and the ceramic glass could cause scratches. Place the oven dish down on the cooktop carefully and avoid pushing it backwards and forwards over the glass.

Not Suitable for Speed Ovens
The width of the Gourmet oven dish hinders the optimum circulation of air around the oven cavity. Using it on the lowest shelf level could result in poor cooking results and damage to the oven cavity. Do not use the Gourmet oven dish in a speed oven.

Not Suitable for Cooking Functions that Use Microwave Power
The Gourmet oven dish is not microwave safe as the metal reflects microwaves and could create sparks. Do not use the Gourmet oven dish with Microwave Solo or Microwave combination programs.

Not Suitable for Gas Cooktops
The Gourmet oven dish is larger than the permitted base size for pans over gas. Using it on a gas cooktop could force the gas flames outwards, causing damage to worktops and surrounding furniture. The temperature within the gas flames is also too high for the Gourmet oven dish and could damage the non- stick coating. Do not use the oven dish on a gas cooktop.

Tips for Use

Fire hazard!
Oils and fats can ignite if allowed to overheat. When cooking with oil or fats, never leave the Gourmet oven dish unattended. Never attempt to put out oil or fat fires with water. Switch off the appliance and carefully extinguish the flames with a lid or fire blanket.

Use

Ovens and steam combination ovens

  • The oven dish, unlike other roasting dishes, can be placed in the oven directly on the runners.
  • There is a safety notch at the back of the side supports to prevent the oven dish slipping off the runners in the oven when you only wish to pull it part of the way out of the oven.
  • Place the oven dish in the oven with the Miele logo visible.

Solid/Ceramic cooktops

  • Because the dish is heavy, small particles of soiling between the base of the oven dish and the ceramic glass could cause scratches to the surface of the cooktop and to the underside of the dish.
  • This could result in damage to the surface of the cooktop and also to the base of the oven dish.
  • When using the oven dish on a ceramic glass surface, place it down on the zone carefully. Do not push it backwards and forwards over the glass.
  • The Gourmet oven dish can be used on solid or ceramic glass cooktops and, depending on model, also on an induction cooktop.
  • If you are not sure whether your oven dish is suitable for use on an induction cooktop, you can test it using a magnet. Induction-compatible oven dishes are magnetic.
  • It is ideally suited for use on the extended zone of a cooktop. If your cooktop does not have an extended cooking zone, the oven dish should be used on the largest circular zone or over two small round zones situated one behind the other.

Not suitable for speed ovens
The width of the Gourmet oven dish will hinder the optimum circulation of air around the oven cavity.

  • Although it will fit on the rack on the lowest shelf level, this could result in poor cooking results and damage to the oven cavity.
  • Do not use the Gourmet oven dish in a speed oven.

Not suitable for cooking functions that use microwave power

  • The metal reflects the microwaves and this could lead to the creation of sparks.
  • Do not use the Gourmet oven dish with Microwave Solo or with Microwave combination programmes.

Not suitable for gas cooktops
The Gourmet oven dish is larger than the permitted base size for pans over gas.

  • The base of the dish would force the gas flames outwards causing damage to worktops and surrounding furniture and fittings, with the risk of setting them alight. The temperature within the gas flames is also too high for the Gourmet oven dish and could damage the non-stick coating.
  • Do not use the oven dish on a gas cooktop.
Tips for use

  • Extinguish the flames carefully with a lid or fire blanket.

Non-stick coating

  • Because food does not stick to the non-stick coating, only very little fat or oil suitable for frying is necessary when cooking with this dish. This has the added advantage of keeping down the calorie count.
  • Use a low to medium heat for cooking.
  • Before searing or frying food on the cooktop, pre-heat the Gourmet oven dish on a high setting with nothing in it for a maximum of 1 – 2 minutes.
  • Remember to turn the heat down once the food is seared and continue cooking on a lower setting.

To prevent damage to the non-stick coating:

  • Do not overheat the Gourmet oven dish. Turn the temperature down in good time.
  • Do not use metal or sharp utensils in it. Only use plastic or wooden utensils.
  • Do not leave food in the Gourmet oven dish to marinate for long periods of time.
  • Hot sauces or dishes with a high acidic content could adversely affect the non-stick coating if left in the oven dish for a long period of time. Such dishes, however, can be cooked in the oven dish without any problems.

Shelf level
The oven dish must not be inserted into shelf level 1.

  • This would cause damage to the oven cavity floor. The build-up of heat could cause the enamel to blister and flake. Do not place the oven dish on the upper support of shelf level 1 as it is not secured by the anti-tip protection.
  • For some appliances the shelf level numbering is visible when the oven door is open. Otherwise count the shelf levels from the bottom upwards. Shelf level 1 is the lowest level.
  • The oven dish should generally be used on shelf level 2 in ovens and steam combination ovens.
  • A higher shelf level can be used for browning food (shelf levels 3 or 4 in ovens with 5 shelf levels and in DGC 6x6x/7x6x steam combination ovens).
  • Do not brown food for longer than 10 minutes on these shelf levels when using Full Grill or Economy Grill .
  • If the Gourmet oven dish does not fit in the shelf runners of your appliance, it should be placed on the rack.

Using your own recipes

Quantities
Based on recipes for four:

  • For the larger oven dish, multiply the quantities by four.
  • For the smaller oven dish, multiply the quantities by three.

Duration
Due to the larger quantities, the cooking duration is generally 20–40 minutes longer than stated in recipes.

Temperature
If your recipe does not specify a temperature:

  • With Fan Plus select a temperature between 160–180 °C.
  • With Conventional Heat select a temperature between 180–210 °C.

Cleaning and care

  • To prevent damage to the non-stick coating, never use abrasive or aggressive cleaning agents such as grill/oven sprays, stain or rust removers, scouring agents, abrasive sponges or sharp utensils.
  • Clean the Gourmet oven dish with a solution of washing-up liquid and hot water using a soft brush or a soft sponge.

Before using for the first time
Clean the Gourmet oven dish with a solution of washing-up liquid and hot water using a soft brush or a soft sponge.

After using

  • Most residues can be removed with a solution of washing-up liquid and hot water and a soft brush.
  • Soak for a while to remove more stubborn stains.
  • The Gourmet oven dish may be cleaned in the dishwasher. In certain circumstances, marks may appear on the surface of the dish. They are harmless, and will not affect its use.
Accessories

Stainless steel HBD lids for the Gourmet oven dishes are available from Miele as optional extras.

When ordering a lid, please specify the oven dish with which it is to be used:

HBD 60-22 for HUB 500x-M:

Oven dish cannot be used in conjunction with its lid in ovens with three shelf levels because the total height of these two items exceeds the height of the cavity.

Tips for use
The lids are heat resistant and can be used on the cooktop and in the oven.

  • Please be aware that lids and handles will get hot when used in the oven.
  • Please use oven gloves to avoid burning yourself.

The following dishes need to be covered during cooking:

  • Casserole
  • Soup
  • Stew

Do not use the lid with Microwave Solo or with Microwave combination programmes, or with cooking functions using the grill.

Cleaning and care

  • Lids should be cleaned using a solution of washing-up liquid and warm water and a soft cloth.
  • They can also be washed in the dishwasher.
