SOUS VIDE (#3)
What is Sous vide?
The Sous vide cooking method is based on preparing food that is cooked in a
vacuum bag at a low temperature in water. Sous vide enables optimal control of
the cooking process and allows food to be cooked evenly. The Sous vide method
makes it possible to achieve the perfect cooking level and to maintain it for
much longer; a capability not possible with conventional cooking methods.
The Sous vide cooking cycle
- Place the inner pot in the device and fill it with water. Turn the rotary knob to Sous vide.
- Set the cooking time and the desired temperature, and press the Start button to confirm.
- Cover the pot with the glass lid.
- The device will beep when the water reaches the desired temperature. Place the vacuum bag(s) in the water. The timer will start when the water reaches the desired temperature, and will beep when the time is up.
CAUTION: Hot vacuum bags should be removed with plastic tongs to avoid damaging the bag and being burned by hot water. Always use oven gloves.
TIP
When using the Sous vide function, the timer will only start when the desired
water temperature has been reached. It can take up to 30 minutes to achieve
the desired cooking level.
What are the basic steps?
- The food must placed in a plastic or vacuum bag that must be sealed.
- Do not immerse the bags in the water until it has reached the desired temperature.
- Allow the food to cook for at least the amount of time specified in the recipe.
- Then carefully remove each bag from the water.
NOTE: Meat, poultry and fish can be sautéed in a hot pan immediately before serving to give a crispy edge.
Use a glass lid when using the Sous vide method (#3)

Tips
- Smaller-sized ingredients or pieces of food tend to take less time to cook than larger ones.
- Larger quantities of food require a longer cooking process than smaller quantities.
- Stir small foods in the middle of the cooking process, to make sure all pieces are cooked evenly.
- Adding some vegetable oil to fresh potatoes is recommended for a crispier result. If you are adding oil, do so before cooking, and sprinkle a small amount over the potatoes.
- Snacks that are normally cooked in the oven can also be roasted on this grill.
- Use ready-made dough to prepare filled snacks quickly and easily. Ready-made dough requires a shorter cooking time than homemade dough.
- You can also use the device to reheat food. Simply set the temperature to the desired value.
Shake/Turn (for hot air frying)
To guarantee even cooking, some foods need to be shaken or turned during the
cooking process. Remove the inner pot from the device. Shake and turn the
contents carefully, before returning the inner pot to the appliance to
continue the cooking process.
CAUTION: The inner pot is hot. Wear oven gloves when performing this
procedure.
- Place the inner pot on a heat-resistant surface.
- Shake the ingredients in the inner pot.

Can I use any type of pan in the appliance?
No, you may only use the inner pot that is supplied with the device. -
Does the appliance become hot when you cook?
The appliance heats up when cooking and stays hot for a while after use, until it has cooled down. Avoid touching the device with bare hands during and after use. Always use oven gloves or a cloth when adding or removing food or touching parts of the appliance while it is in use or cooling down.
Cleaning and storage
Easy maintenance
BE SURE TO LET THE APPLIANCE COOL DOWN AND UNPLUG IT FROM THE WALL SOCKET
BEFORE CLEANING.
- When cleaning the inner pot, make sure it cools down completely before washing. Never immerse the hot cooking pot in water, as this could permanently deform it.
- Cleaning the inner pot is quick and simple. Wash in hot water with a mild detergent or washing-up liquid after each use. Rinse it thoroughly and immediately dry it off with a kitchen towel. If food residues remain, fill the pot with hot water and washing up liquid, and allow the residues to soak until the water is lukewarm, then use a sponge or soft cloth to remove the remaining food residue.
- Do not use wire wool or other metal abrasive pads. These can irreversibly scratch the coating.
- To keep the appliance clean, wipe away the enclosure with damp cloth and then dry it with a clean, dry cloth. Never immerse the main body of the appliance in water for cleaning!
- To protect against electric shock, DO NOT immerse the main parts of the appliance, cord, or plug in water or other liquids.
- Make sure the device is properly cleaned before storing it in a dry place.
Removal of stubborn residues
If foodstuffs burn on the cooking surface, stubborn black residues can be left
behind. If the residues cannot be removed with the usual cleaning method, soak
in hot water and add a little citrus-free washing-up liquid, and leave for 15
minutes. Wait until the water is lukewarm before you empty it, and then rinse
the pot. Then use a plastic spatula or a non-abrasive sponge to remove the
residue. Repeat this process if necessary.
Dishwasher safe
Only the inner pot and the glass lid are dishwasher-safe. Although these
utensils can be cleaned in the dishwasher, we still recommend cleaning them by
hand. This increases the service life of the saucepans and reduces visible
wear and tear. When cleaning using a dishwasher, please note the following:
- Always be careful when handling the dishes. Other dishes and cutlery can scratch the surface of the inner pot.
- Remove the coarsest dirt from any dishes and cutlery that you put in. These residues can have an abrasive effect on non-stick coatings.
- We always recommend using detergent that is free from citrus extracts.
- Regular cleaning in the dishwasher can scratch the surface.
- NEVER use white spirit to clean, as it could damage the exterior of the housing and the display.
- DO NOT use or store flammable, acidic or alkaline materials or substances in the vicinity of the device, as these can reduce the usable life of the device or are even capable of causing deflagration (fire) when the device is operated.
- DO NOT stack heavy objects on top of the device. Excessive weight can damage the device
- To protect yourself from the risk of electric shock, NEVER submerge the device or cable in water or any other liquid.
