Operating Instructions
Congratulations on your purchase of this professional fryer. We hope that it will bring you much pleasure and satisfaction. To help the fryer last longer, we recommend that you read the instructions in this manual carefully. The mechanical and electrical design of all our fryers is identical. Only the shape, the volume and the material chosen for the outer components vary.
Getting started
- First of all, make sure that the appliance is disconnected.
- Wash the lid, basket and basin in soapy water. Rinse and dry thoroughly.
- The control box and element can be cleaned using a damp cloth.
- In no circumstances must the control box and connecting cable ever be immersed in water.
- Reassemble the components (see pages 2- 14), ensuring that the control box slides prop- erly into the grooves.
- Unroll the cable, ensuring that it does not touch any neighbouring heat source.
- Fill the basin with oil. The ideal level is between the MIN and MAX level indicators in the basin. Always check the level in the fryer before use. Failure to comply with this instruction will lead to a readily identifiable breakdown, which is not covered by the Guarantee.
- If the fryer is started when the element is not completely covered, the safety thermostat will cut in, as its function is to cut off the supply as soon as the element overheats. Never connect the fryer before filling the basin. To restart the unit, press the RESET button at the rear of the housing
- Check that the voltage levels in your electricity are consistent with those shown on the rear of the control box.
Using the fryer
- Switch on the fryer by connecting it to the mains. Ensure that the socket is connected to an earth.
- The indicator light will come on.
- Remove the lid if it does not have a filter.
- Turn the control knob to the right until the desired temperature is reached. If the indi- cator light remains on, the desired tempera ture has not been reached. When the light goes out, the fryer is ready for use. Place the basket in its groove. Tip the neck of the bas ket outwards, ensuring that it fits into the fixed loop. Pressing lightly should fix it correctly.
- Lift the basket out of the cooking oil to ensure that no food sticks to it.
- Do not load the basket more than two-thirds full, otherwise there is a risk of overflow and all the undesired consequences of such an event.
- Always ensure that the indicator light is off before placing the basket in the cooking oil.
- When cooking is complete, remove the basket and shake it against the edge in order to remove excess cooking oil.
- When cooking fries, it is a good idea to shake the basket during the last fry, in order to separate the fries and produce a uniform gold colour.
After use
- Reset the temperature knob to the position
- Tip the neck of the basket inwards and replace it in the basin.
- Disconnect the connection cable.
- Allow the cooking oil to cool before replaCing the lid.
- Replace the connection cable in its bOx and store the fryer.
Safety instructions
- Before connecting the fryer, ensure that the voltage is the same as that shovwn on the information plate
- If the connection cable is damaged, it must be replaced by the manufacturer, the after sales department or a similarly qualified person in order to avoid danger.
- Never fill the basin above the max level, Botherwise an overflow may occur during frying with all the attendant consequences.
- Avoid breathing the hot vapours given off during cooking.
- Never carry out frying with the lid still on the fryer.
- We recommend that you touch only the temperature control knob and the handles.
- Disconnect the fryer from the mains and allow it to cool betore moving it, otherwise you or somebody close by may be burnt.
- Never place or operate the fryer on the floor, because of the risk of collision and burning.
- Pay close attention to the fryer while it is working, and always keep children away.
- Ensure that the basin is clean and dry when filling it with oil; even a few drops of water can cause splashing during fryinG
- Always disconnect the fryer when not in use, and ensure that everything has cooled betore taking the fryer down or replacing the lid. In the event of malfunction, do not use the tryer but allow an approved after-sales depart- ment to examine it.
- If the cable is damaged, have it replaced by a competent authorised person.
- Keep these operating instructions for future use.
- Breakdowns and/or damage caused by failure to respect these instructions are not covered by the guarantee.
- This fryer is designed for domestic use.
Frozen foods
If water or ice is placed in a fryer at high tem- perature, hot liquid will be splashed about and vigorous boiling will occur, causing the volume of the oil to increase greatly. For this reason, you are asked to:
- Minimise the amount of frozen food fried at any one time.
- Remove any ice crystals on the surtace of the food.
- Immerse the frozen food slowly into the cooking oil and remove it as soon as the indicator light comes on.
- Wait for the light to go out and then reimmerse the food in the cooking oil. Then refer to the cooking instructions shown on the packaging or in the table below.
- Never allow a basket full of frozen food to hang over insufficiently heated oil, as this will cause splashing.
Recommendations
- Never add fresh oil to used oil in the basin.
- Wipe food with absorbent paper BEFORE immersing it in the oil (in order to remove juices and liquids) and AFTERWARDS to remove excess fat.
- Replace the oil as soon as changes become apparent, such as darkening, a sour taste or a burning smell.
- Never mix oils of different qualities.
- Never salt or season food before frying or while they are suspended Over the Oi.
Advice in case of malfunction

DO YOU USE SOLID FAT?
Do not place the block of fat on the heating element. Melt the block of fat in
another receptacle and pour the melted fat into the fryer. Should the block of
fat come into contact with the element, the safety cutoff will be
triggered.Press the “reset” button (no. 10 on the detailed view). When heating
the fat, make certain to pierce one or more holes in it to help it melt and to
avoid little explosions.
TIPS FOR GREAT FRIES
- Wash the fries twice in hot water.
- Rise them in cold water.
- Dry the fries.
- Set the thermostat on the fryer to 170°C.
- Wait for the light to go out.
- Slowly immerse the fries in the oil in the Tryer.
- When the light comes on again, remove the fries trom the fryer.
- When the light goes out, place the tries back in for 4-5 minutes.
- Take the fries out again.
- Set the thermostat on the fryer to 190°C.
- Wait for the light to go out again.
- Once the light is out, re-immerse the fries for 1-2 minutes.

Our best advice for you
- Leave the basket empty in the basin during heating, to prevent sudden cooling on immersion.
- Fill your basket no more than two-thirds full with food.
- When heating solid fat, make sure that several small holes are pricked in it. This will ease circulation and prevent small explosions.
- Check the level of the oil before using it; too much oil or fat will cause an overtlow, too little inter feres with the cooking process.
- Always immerse fresh or frozen products at a high temperature, then remove then as soon as the indica- tor light comes on. Then follow the operating in- structions tor cooking.
- Avoid immersing ice or water together with food, to prevent the danger of burning splashes.
- The electrical control panel must not be immersed in water or in any other liquid.
- Disconnect the fryer from the mains and allow it to cool before moving it, so that neither you or anyone near risks being burnt.
