SAVE THESE INSTRUCTIONS
⚠ WARNING
To avoid the risk of fire in the oven cavity:
a. DO NOT overcook food. Carefully attend oven when paper, plastic, or other combustible materials are placed inside the oven, due to the possibility of ignition.
b. Remove wire twist-ties from paper or plastic bags before placing the bag in the oven.
c. If materials inside the oven ignite, keep the oven door CLOSED, turn the oven off and disconnect the power cord, or shut off power at the fuse or circuit breaker panel.
d. DO NOT use the cavity for storage. DO NOT leave paper products, cooking utensils, or food in the cavity when not in use.
⚠ WARNING
Liquids such as water, coffee, or tea are able to be overheated beyond the boiling point without appearing to be boiling due to the surface tension of the liquid. Visible bubbling or boiling when the container is removed from the microwave oven is not always present. THIS COULD RESULT IN VERY HOT LIQUIDS SUDDENLY BOILING OVER WHEN A SPOON OR OTHER UTENSIL IS INSERTED INTO THE LIQUID. To reduce the risk of injury to persons:
i. Do not overheat the liquid.
ii. Stir the liquid both before and halfway through heating it.
iii. Do not use straight-sided containers with narrow necks.
iv. After heating, allow the container to stand in the microwave oven for a short time before removing the container.
v. Use extreme care when inserting a spoon or other utensil into the container.
⚠ CAUTION
To avoid personal injury or property damage, observe the following:
To avoid personal injury or property damage, observe the following:

  1. Do not deep-fat fry in the oven. Fat could overheat and be hazardous to handle.
  2. Do not cook or reheat eggs in a shell or with an unbroken yolk using microwave energy. Pressure may build up and erupt. Pierce the yolk with a fork or knife before cooking.
  3. Pierce the skin of potatoes, tomatoes, and similar foods before cooking with microwave energy. When skin is pierced, steam escapes evenly.
  4. Do not operate equipment without load or food in the oven cavity.
  5. Microwave popcorn should not be popped into the oven.
  6. Do not use regular cooking thermometers in the oven. Most cooking thermometers contain mercury and may cause an electrical arc, malfunction, or damage to the oven.
  7. Do not use metal utensils in the oven.
  8. Do not use aluminum foil in the oven
  9. Never use paper, plastic, or other combustible materials that are not intended for cooking.
  10. When cooking with paper, plastic, or other combustible materials, follow the manufacturer’s recommendations on product use.
  11. Do not use paper towels that contain nylon or other synthetic fibers. Heated synthetics could melt and cause the paper to ignite.
  12. Do not heat sealed containers or plastic bags in the oven. Food or liquid could expand quickly and cause a container or bag to break. Pierce or open a container or bag before heating.
  13. To avoid pacemaker malfunction, consult a physician or pacemaker manufacturer about the effects of microwave energy on pacemakers.
  14. An authorized servicer MUST inspect equipment annually. Record all inspections and repairs for future use.

Grounding and Installation

Grounding/Earthing Instructions
The oven MUST be grounded. Grounding reduces the risk of electric shock by providing an escape wire for the electric current if an electrical short occurs. This oven is equipped with a cord having a grounding wire with a grounding plug. The plug must be plugged into an outlet that is properly installed and grounded.
⚠ WARNING

To avoid the risk of electrical shock or death, this oven must be grounded and the plug must not be altered.
Consult a qualified electrician or servicer if grounding instructions are not completely understood, or if doubt exists as to whether the oven is properly grounded.
Do not use an extension cord.
If the product power cord is too short, have a qualified electrician install a three-slot receptacle. This oven should be plugged into a separate circuit with the electrical rating as provided in product specifications. When the combination oven is on a circuit with other equipment, an increase in cooking times may be required and fuses can be blown. External Equipotential Earthing Terminal (export only)
The equipment has a secondary earthing terminal. The terminal provides an external earthing connection used in addition to earthing prong on the plug. Located on the outside of the oven back, the terminal is marked with a symbol shown on right.
Installation
STEP 1 – Unpack Oven

  • Inspect the oven for damage such as dents in the door or inside the oven cavity.
  • Report any dents or breakage to the source of purchase immediately. Do not attempt to use the oven if damaged.
  • Remove all packing materials from the oven interior.
  • If the oven has been stored in an extremely cold area, wait a few hours before connecting the power.
  • If you plan to program via Ethernet, remove the plastic plug from the port on the right rear of the oven. Gently use pliers if necessary.

STEP 2 – Place Oven on Counter

  • Recommended countertop surface depth is 28” (71 cm).
  • Do not install an oven next to or above the source of heat, such as a pizza oven or deep fat fryer. This could cause the oven to operate improperly and could shorten the life of electrical parts.
  • Do not block or obstruct oven filters. Allow access for cleaning.
  • Install the oven on the level countertop surface.
  • The outlet should be located so that plug is accessible when the oven is in place.

STEP 3 – Install Cook Plate

  • Install oven cook plate
    1. Oven cavity must be cool to touch.
    2. Place the cooking plate in the oven with a curved edge toward the front of the cavity.

⚠ DO NOT cook food directly on the floor of the oven.
⚠ WARNING
Excessive Weight Hazard
Use two or more people to move and install the oven.
Failure to do so can result in a back or another injury

XpressChef MRX2BL High Speed Commercial Combination Oven - FIG
4

Oven Clearances
A. Allow at least 2” (5.1 cm) of clearance around the top of the oven. Proper airflow around the oven cools electrical components.
With restricted airflow, the oven may not operate properly and the life of electrical parts is reduced.
B. There is no installation clearance requirement for the back of the oven.
C. Allow at least 1/2” (1.27 cm) of clearance around the sides of the oven.
D. Install the oven so the oven bottom is at least 3 feet (91.5 cm) above the floor.

Cooking Tips

Cooking Tips

  1. Metal containers can be used in the XpressChef™ 3i oven with a height of no more than 1½ inches (38mm). Different types of metal conduct heat at different speeds. Aluminum heats faster than stainless steel. Avoid using silicone pans and accessories

  2. Stage cooking aids in retaining the quality of frozen and delicate foods.
Finishing baked goods at 0% Microwave and Fan is a great way to get the added browning and crisping without overcooking.

  3. Take advantage of the accessories:
    • Cook Plate Shelf Accessory (CP10): Aids in browning and crisping of bread, pizzas, and more.
    • Non-Stick Basket (SB10S, TB10S, MB10S): Aids in browning and crisping of food. Also makes cleaning up easier.
Great for breaded products like chicken fingers, fries, mozzarella sticks, and jalapeno poppers. (SB10S, TB10S, and MB10S have solid bottom)
    • Pizza Stone(ST10R): Aids in crisping and browning bread and pizzas.
    • Panini Grill Accessory (RGR10): Aids in adding grill marks on a product.
    • Oven Paddle (PA10, PA10R): Aids in the removal of sandwiches and pizza from XpressChef™ 3i high-speed combination oven. PA10R paddle designed to store under XpressChef™ 3i oven with installed LG10 leg kit (purchased separately).
    • Non-Stick Liner Kit (TL10R): Make cleanup easier and protect oven components.
    • Leg Kit (LG10): Lifts oven 4 inches (102 mm).
    • Oven Back Cover (BC10R): Color-matched back cover hides spacers, power cords, vents, and labels. Allows for an open platform, front-of-the-house installation.
    • Stacking Cart (SC10R): Cart used for stacking neatly installing 2 ovens, one on each shelf, with an accessory shelf below
    • Top Shelf Accessory (TS10R): Accessory rack with sides for top-of-oven installation. Allows operators to conveniently store and access paddles, baskets, etc.
    • Ceramic Dish: Great for foods that need to be contained such as ready-to- serve foods, cut vegetables, or soups. (Available off the shelf)

  4. The most frequently used oven temperature is 520º F (270º C).
Reduce the oven temperature if the product is cooked for an extended period of time.

  5. Line pans with parchment paper for easy removal of food after heating and cleaning.

  6. Muffin tins (6 cups) work great for individual cakes & brownies.
Spray with cooking spray prior to cooking for easy removal of food after heating.

  7. Frequent cleaning prevents unnecessary buildup that may affect the oven performance.

  8. Use a cleaner such as ACP Oven Cleaner (CL10 (US), CL10W (EU)) & ACP Oven Shield Protectant (SH10 (US), PR10W (EU)), or another cleaning product that does NOT contain ammonia, phosphates, chlorine, sodium hydroxide or potassium hydroxide as they can damage critical oven parts and may void the warranty on those parts. For best results, use non-stick liners and replace them whenever you encounter excessive peeling or wear.

  9. Items will be hot when finished cooking. Use an oven mitt, tongs, or pizza paddle to safely remove items from the oven.

When to Use Stage Cooking
Stage cooking enables you to use up to four different cooking cycles or stages to be used consecutively without repeated input from the user. Stage cooking can be set to defrost food initially, then cook it, and then keep the food warm until serving time.
Note: Maximum cook time cannot exceed 99:99 (100 minutes and 39 seconds).
