LIGHTING THE FIRE
- Remove the lid, upper layer, cooking grates and drip pan.
- Ensure the charcoal grate is inside the pan, which needs to secure on all three legs.
- Open the lower layer, and face towards the wind for better air circulation.
- Place charcoal or wood (not pine) into a pyramid shape at the centre of the grate.
- Start the fire without the lid, upper layer, and drip pan.
- Allow charcoal/wood to burn for approximately 25 minutes. The coal should be slightly coated in ash before cooking.
- Spread the coal/wood evenly over the grate. Close the door of the lower layer.
KEEP THE BARBEQUE GOING
- Securely place the drip pan on the three support brackets of the lower layer.
- You can fill the pan with a tiny amount of water.
- Place the grate directly on top of the drip pan. Place food on the grate, with spaces between each piece, allowing smoke and heat to circulate evenly.
- Place the upper layer on top of the lower layer, and keep the door closed.
- Position the other grate on the support brackets of the upper layer. Make sure the rim of the grate is resting firmly on the support brackets. Place food on the grate.
- Put the lid onto the barbeque and start cooking.
COOKING TIPS
- Do not lift the lid to check food during the cooking process.
- When removing lid during cooking, put it towards the side. Do not lift straight up, as it creates an air flow that will suck up ashes onto the food.
REGULATING THE FIRE
- Keep a consistent heat of +/- 70°C inside the barbeque.
- If the fire is too hot, put the lid on the barbeque and close the air vent. You can also add wet wood chips on the fire. This will lower the temperature.
- If there is not enough heat, open the air vent and door to the lower layer. This will create better air circulation and build up the fire.
ADDING WATER DURING COOKING
- Slowly pour water with a funnel or jug though the door of the upper layer.
ADDING CHARCOAL/WOOD DURING COOKING
- Slowly remove the lid, and carefully open the lower layer, using mitts.
- Use a tong to add charcoal or wood
- Close the door and place the lid back on the barbeque once the charcoal or wood is properly burning.
EXTINGUISHING FIRE
- Place the lid on the barbecue.
- Close all the air vents and doors to put out the fire.
- You can also cover the coals with sand.
- Do not use water.
