You can flavor your yogurts. Refer to the “Recipe tips” section in these instructions.

It takes at least 9 hours with whole milk or 12 hours with skimmed milk to make a sufficiently firm yoghurt. However, you can vary the fermentation time according to your taste and texture preferences. The smoothness of the yogurt depends on the fermentation time and the quality of the ferments used during preparation.

  5. Preparation begins. The time is counted down in hours on the display screen, then the last hour is counted down in minutes.

When complete

  1. The appliance stops automatically at the end of the selected time, the display screen and the appliance go into standby mode. You can also interrupt the cycle by pressing the on/off button.

  3. Place the yoghurt pots with their lids in the refrigerator for at least 2 hours before serving. You can store the yogurts in the refrigerator for 7 to 10 days maximum.
  4. Serve the yogurt any way you want: as it is or by adding, for example, sugar, jam, honey, cereals, chocolate, chopped or mixed fruit, etc.

The colored lids will help you identify the flavor that you may have added to your yogurts.

useful operating tips

Choice of milk

  • You are advised to use whole milk (for a creamier result) or semi-skimmed milk. Be aware that skimmed milk makes the consistency of the yoghurts more delicate.
  • If the milk is already sterilised (UHT}, you can use it directly when it is cold.
  • If you are using raw milk or pasteurised milk, you should first boil it, wait for it to cool, then remove the skins.

Choice of fermenter
You can use either:

  • Natural yoghurt from the supermarket,
  • Natural yogurt from a previous production. The yoghurt obtained can be reused up to 7 times as a fermenting base. After that, fresh yoghurt must be used for more active fermentation.
  • A freeze-dried fermenter is available in pharmacies or in specialist stores {allow an additional 2 hours for fermentation).

The ferments are activated at a very low temperature (45°C} and die beyond that. This is why you should not boil them with the milk.

Useful information on the yoghurt maker

  • You must wait several hours for the yoghurts to form. As a result, we recommend preparing the yoghurts in the evening. The next morning, place the yoghurts in the refrigerator for at least 2 hours before serving them.
  • Condensation forms on the lid of the yoghurt maker when it is in use. This is normal. Be careful not to let water drip into the yoghurts when you remove the transparent lid.

Recipe tips

  • For thicker yoghurts, you can add powdered milk to the mixture (2 or 3 tablespoons for 1 litre of milk).
  • Use a container fitted with a pouring spout to make your mixtures, as it is more practical for pouring liquids into pots.
  • You can add creme fraiche to the mixture for a creamier yoghurt.
  • You can make savoury sauces to accompany starters: Greek sauce, cucumber, garlic and herbs, basil, tarragon or any other aromatic herbs.
  • Fruits must be cooked before being incorporated into the mixture. However, when you plug in your yogurt maker, all of the yoghurt’s ingredients should be cold or at room temperature.
  • Fresh, raw fruits often release too much water and the results are not as good as with cooked, drained fruits.
  • You can sweeten your yoghurts during preparation or just before eating with honey, cane sugar, maple syrup, etc.

Whey:
It is found on the surface of yoghurts. It is a residual liquid rich in lactose, proteins, vitamins and minerals.

  • You can drink plain whey to enjoy its benefits.
  • You can reuse it for your next batch of yoghurts.
  • You can reuse it for making pancakes, breads, brioches, etc. to replace water or milk.
  • Whey keeps for 2 to 3 days in the refrigerator.
