SEVERIN ZB 5591 Meat Grinder and Shortbread Attachment
Dear Customer,
Before using the appliance, read the following instructions carefully and keep
this manual for future reference. The appliance must only be used by persons
familiar with these instructions.

Safety instructions
- The attachment may only be used in conjunction with the KM 3896 food processor. Therefore, the safety instructions for KM 3896 also apply.
- When the attachment is used, the mixing bowl with splash guard lid must also be attached, as the mixer also rotates.
- Warning! The 4-blade knife and other accessories are very sharp. Risk of injury. Therefore, proceed carefully when cleaning and changing these parts.
- Clean the accessories immediately after use with warm water with and detergent.
- For more information on cleaning, please refer to the Cleaning and Care section.
- Do not wear long necklaces, earrings, scarves, wide sleeves or long open hair when operating the appliance.
- If meat becomes clogged, do not force meat through opening. Under no circumstances, press with your hands. In this case, disconnect from mains power, disassemble the attachment and clean it.
- Always use only the plunger to push in the filler neck. Never push in with your hand or other objects.
- Never let the appliance run without contents.
- Never touch moving parts of the appliance, risk of injury!
- The appliance must be switched off and mains power must be disconnected before mounting, changing, removing accessories or cleaning the appliance. Wait for the motor to come to a complete standstill after switching off.
- The appliance must only be operated with the original accessories provided with it and for the purpose described.
Before using for the first time
Clean the attachment before using it for the first time, as described in
Cleaning and Care.
Short operation
This appliance is designed with a short operating time (10 mins), i.e. you can
use it for a maximum of 10 minutes in one go. Then the unit needs to be
switched off for 20 minutes to cool down.
Operation
Meat mincer attachment

Slide the worm into the worm housing.

Place the 4-blade knife on the square of the worm in such way that the cutting edges point to the front.

Select the hole insert:
- Large holes for coarse mince
- Small holes for fine mince

Place the hole insert in front of the blade in such way that the recess of the insert fits into the pin in the worm housing.

Hand-tighten the screw ring clockwise using the handle.

Remove the cover on the front of the food processor. To do this, reach into the gap at the bottom of the cover.

Place the worm housing on the appliance and lock it in place by turning it counter-clockwise. The filler neck must point upwards.

Place the food tray on the filler neck.

Cut the raw, well-cooled meat into cubes of about 3 cm to make it easier to pass through the opening.
Attention!
Only fill meat that is free of tendons, cartilage, and bone debris. -
Fill the food tray and filler neck with the meat pieces.

Place a tray under the screw ring.

Insert the power plug into a wall socket.

Set the control knob to the desired speed level between 3 and 8.

Use only the plunger to refill the filler neck.
Tip! The meat mincer attachment can also be used to mince fish, cooked vegetables or fruit.
Sausage filler
- Slide the worm into the worm housing.
- Place the white filler disc on the square of the worm in such way that the recess of the disc fits into the pin in the worm housing.
- Place the desired sausage filler on the filling disc.
- Hand-tighten the screw ring clockwise using the handle.
- Remove the cover on the front of the food processor. To do this, reach into the gap at the bottom of the cover.
- Place the worm housing on the appliance and lock it in place by turning it counter-clockwise. The filler neck must point upwards.
- Place the food tray on the filler neck.
- Slide the prepared sausage casing onto the sausage filler.
- Fill the food tray and the filler neck with the prepared sausage mixture.
- Insert the power plug into a wall socket.
- Set the control knob to the desired speed level between 3 and 8.
- Use only the plunger to refill the filler neck.
- Fill the sausage casing with the sausage mixture and twist to the desired sausage size. If necessary, switch off the appliance in between.
Shortbread attachment
- Slide the worm into the worm housing.
- Place the white filler disc on the square of the worm in such way that the recess of the disc fits into the pin in the worm housing.
- Insert the shortbread attachment into the screw ring.
- Hand-tighten the screw ring clockwise using the handle. When doing so, align the shortbread attachment.
- Remove the cover on the front of the food processor. To do this, reach into the gap at the bottom of the cover.
- Place the worm housing on the appliance and lock it in place by turning it counter-clockwise. The filler neck must point upwards.
- Place the food tray on the filler neck.
- Insert the slide into the slot in the pastry attachment and adjust it to the desired design.
- Form the prepared, well-chilled dough into a roll with a diameter of approx. 3 cm and place it in the filling spout.
- Insert the power plug into a wall socket.
- Set the control knob to the desired speed level between 3 and 8.
- Cut off the strip of dough of the desired size at the output and place on a baking tray.
- Use only the plunger to refill the filler neck.
After use
- After use, switch off the appliance and disconnect from mains power.
- Unlock the attachment clockwise and remove it.
- Replace the cover in such way that the lines (− −) are opposite each other.
Cleaning and Care
- Before cleaning, switch off the appliance, disconnect from mains power and wait for the motor to come to a complete standstill.
- Do not use harsh or abrasive cleaning agents.
- Clean the accessories immediately after use with warm water and detergent.
- All plastic parts, the shortbread attachment, and the slider can be cleaned in the dishwasher.
- All other metal parts are not dishwasher safe.
Tip! Some accessories can be stored in the pusher to save space.
Disposal
Devices marked with this symbol must be disposed of separately from your household waste, as they contain valuable materials which can be recycled. Proper disposal protects the environment and human health. Your local authority or retailer can provide information on the matter.
