Hints to obtain best results
Work in pulses. If pieces of food remain stuck to the sides of the jug (ham,
onions, etc.), use the spatula to release them and distribute them around the
jug before applying 2 or 3 additional pulses.
The measuring graduations on the jug take into account the volume occupied
with the blade fitted and are provided for information only.
RECIPES
Mousseline of apples
600 gm of apples, 1 half a lemon, 1 vanilla pod, 80 gm caster sugar, 1
tablespoon of rum Place the cooked apples, the lemon juice, sugar and rum in
the jug. Blend using the blade for 15 to 20 seconds. Leave to cool and serve.
Pesto sauce
150 gm Parmesan cheese, 5 sprigs of fresh basil, 3 cloves of garlic, 4 cloves,
15 walnut kernels, 1/2 glass of olive oil. Pour the basil, the garlic cloves
and cloves into the jug. Blend finely. Add the Parmesan cheeses in small lumps
along with the walnut kernels and chop fine for about 20s. Add the olive oil
and blend to obtain an even paste.

3 large avocado pears, 2 cloves of garlic, 6 chilli peppers, 1/2 onion, 3
sprigs of coriander, 1 dash of lemon juice, salt and pepper to taste. Chop the
garlic, onion, coriander and chilli peppers finely. Peel the avocado pears and

Pancake mix
For 0.6 litre of mix: 100 g flour, 2 eggs, 1 pinch of fine salt, 1/4 litre
milk, 1 tablespoon oil, flavouring. Put all the ingredients into the jug and
blend for about 15 to 20 seconds until you obtain an even mix.
USING THE EMULSIFYING DISC
Crème chantilly
200 ml of 35% fat UHT liquid cream. 20g caster sugar or 20 g of icing sugar
and 1 sachet of vanilla sugar.
Tip to obtain superb, really stiff Chantilly creams:
Use cold liquid cream straight from the refrigerator. Fit the disc in the jug.
Pour in the ingredients and place the seal and the motor unit on the jug.
Start up to continuous mix for 15 seconds to obtain a smooth cream or about 30
seconds to make Chantilly. Caution: Check the consistency of your preparation
after 45 seconds. If you mix for too long, you will obtain butter.
Mayonnaises
Tips to make really superb, stiff mayonnaise:
- Use ingredients at room temperature.
- Clean the jug and the disc with cold water.
- Respect the quantities of ingredients stated in each recipe.
Mayonnaise with mustard
Fit the disc to the jug. Pour in the ingredients: 1 egg yolk, 1/2 tablespoon
of vinegar, salt and pepper, 3 tablespoons of oil, 1 tablispoon of mustard.
Fit the lid to the jug. Run for 15 seconds. Remove the motor unit and the
sealing cup. Pour the oil in up to the maximum level on the disc (see drawing
above) Start up again on continuous operation for about 20 to 50 seconds
Mayonnaise with lemon
Fit the disc to the jug. Pour in the ingredients: 2 egg yolks, 1/2 tablespoon
of vinegar (optional), 3 tablespoons of oil, 1 to 2 tablespoons of lemon
juice, salt and pepper. Fit the lid to the jug and run for at least 15
seconds. Remove the motor unit and the sealing cup and add the oil up to the
maximum level on the disc (see drawing above). Start up again on continuous
operation for about 20 to 50 seconds If you wish to make a greater quantity of
mayonnaise, add oil and run for a further 20 seconds.
