GENERAL ADVICE

General safety notes

  • Make sure that the local main supply voltage corresponds to the information given on the type plate on the front panel of the espresso machine.
  • The installation of the machine should be carried out by authorised specialists according to the instructions in chapter 4.
  • Plug the machine into a grounded socket only and do not leave it unattended.
  • Make sure the machine is disconnected from the power supply during service and when replacing parts.
  • Do not roll or bend the power cord.
  • If the supply cord is damaged, it must be replaced by a service agent or similarly qualified persons, in order to avoid a hazard.
  • Do not use an extension cord/ do not use a multiple socket bar / multi socket power cord.
  • Place the machine on an even and stable surface. Only use the machine on a water resistant surface.
  • Never place the machine on hot surfaces.
  • Never submerse the machine in water; do not operate the machine with wet hands.
  • Make sure that no liquid gets on the power plug of the machine or on the socket.
  • The machine should only be used by experienced adult persons.
  • The machine is not intended for use by persons (including children) with reduced physical, sensory or mental capabilities, or lack of experience and knowledge, unless they have been given supervision or instruction concerning use of the appliance by a person responsible for their safety.
  • Children should be supervised to ensure that they do not play with the appliance.
  • Do not expose the machine to inclement weather (frost, snow, rain) and do not use it outdoors.
  • Keep the packing out of reach of children.
  • Only use original spare parts.
  • Water tank machines or machines in water tank use: Do not operate the machine with carbonated water, but with soft, potable water.
  • Do not operate the machine without water.
  • Please note that the surface of the machine, in particular the brew group and the steam wand, become hot during operation and there is a risk of injury.

Important
You should use water with a hardness of 4°dH in order to protect your machine from lime scale damage. To prevent lime scale damage, you can insert our water filter pads directly into the water tank.
If these measures are insufficient, a prophylactic descaling of the machine may be required. If you operate your machine with direct water connection, contact your specialised dealer before undertaking this measure. This will protect your machine against expensive repairs.
An already calcified machine may only be descaled by your specialised dealer because a partial disassembly of the boiler and the tubing may be necessary to prevent the system from being blocked by lime residues.
A late descaling can cause substantial damage to the machine.

Proper use

The PRO 800 has to be used for the preparation of coffee, hot water and steam only. The machine is not intended for commercial use.
Use of the machine other than for the above mentioned purpose is prohibited.
The manufacturer cannot be held responsible for damages due to unsuitable use of the machine and is not liable for recourse.

PID-Temperature Control

The PID-temperature regulation allows for an adjustment of the temperature in the boiler. This means that you can brew your coffee at different temperatures. The PID-display indicates the boiler temperature.

MACHINE INSTALLATION

Attach the lever handle to the brew group and make sure that it is properly fastened.

The installation is to be carried out by qualified specialists exclusively, according to the following instructions and in compliance with valid laws and local regulations.

Caution danger of injury!
If the portafilter is not inserted properly, there is a great risk of injury. Never remove the portafilter when there is remaining pressure in the piston of the brew group.

**** It is not possible to interrupt the brewing process. Do not remove the portafilter until the lever is back in neutral position (vertical).

Preparation for installation


  • Place the machine on an even and stable surface.
  • Never place the machine on hot surfaces.
  • Place the machine on a water-proof surface, as the machine may at some point leak water.

Electrical connection

Water supply connection

Important!
Make sure that the fixed water connection of the machine is hooked up to a potable water supply with an operational pressure of 2 bar (0,2 MPa) to 3 bar (0,3 MPa).
Please note that the pressure of the water supply may not always be consistent. As soon as 3 bar (0,3 MPa) of pressure are occasionally exceeded, install a pressure reducer.
A shut-off valve should also be used. This should be easily accessible to ensure that the water supply can be cut off at any time. 

Machine in use with a direct water connection

The boiler is filled by the line pressure, if you are using the Pro 800 with a fixed water connection. The pump is not activated when using a fixed water connection.
Make sure that the fixed water connection of the machine is hooked up to a potable water supply with an operational pressure of 2 bar (0,2 MPa) to 3 bar (0,3 MPa). Please note that the pressure of the water supply may not always be consistent. As soon as 3 bar (0,3 MPa). of pressure are occasionally exceeded, install a pressure reducer.

The water connecting hose 1.8” is to be connected to the water supply adapter 3.8” (image 1).

Always use the hose supplied with the machine to connect the machine to the water supply system, even if an old hose is already present.

When using the machine with direct water supply, the valve has to be turned towards the water supply adapter (image 1). The water supply adapter is located in the rear part of the bottom panel (image 1).
Additionally, place the switch behind the drip tray into position “1” (image 2). Please make sure that your water tap is always open during water- connection usage, so that the machine never runs out of water!

Important

  • Make sure that only a qualified specialist connects the machine to the water mains and installs the pressure regulator.

  • Proper instructions by your dealer how to the use of the PRO 800 is imperative.
    Danger of injury.

  • To avoid calcification of the machine, a water filter is recommended.

  • An already calcified machine may only be descaled by a qualified specialist because a partial disassembly of the boiler and the tubing may be necessary to prevent the system from being blocked by lime residues. A late descaling can cause substantial damage to the machine.

Residual water

The residual water is disposed off periodically by emptying out the water drip tray.

Alternatively, you can hook the machine directly up to a water drainage. Please proceed as follows:
Remove the sealing screw/rubber plug in the drip tray and fasten the drainage container to the rim below the drip tray. Connect a suitable hose (not included with delivery) to the drip tray and to an already installed drainage syphon.

FIRST USE

Read the instruction manual carefully prior to operating the machine.

**** Prior to starting the machine, check if:

  • the steam and hot water valves are closed.
  • the machine is switched off. (Power switch in the vertical position.)
  • the power cord is disconnected.
  • the drip tray is inserted accurately.

Now you can start up your machine:

Water tank machine or machine in use with water tank

  1. Lift the cup warming tray.

  2. Take out the water tank and rinse it thoroughly.

  3. Fill the water tank with fresh water deficient in lime, place it back into the water tank guides and replace the cup warming tray.

  4. Plug your machine into an outlet. Switch your machine on by placing the metal switch into the upward position. Now the boiler is being heated and the green signal lamp lights up.
    The pump is activated and fills the boiler with fresh water.

  5. Since much water is used for the initial filling of the boilers, the water tank has to then be refilled with water.

  6. As soon as the steam boiler is filled with water, the pump will become silent and the PID-display (below the drip tray) will show the current temperature of the boiler (reg. item 3.3). When the fresh water in the water tank drops to a certain level, the machine turns off the orange signal lamp and the PID-display goes off. You now have to refill fresh water. The machine automatically heats up again.

  7. Please wait until the boiler pressure gauge indicates a value of about 1.0 bar (0,1 MPa) – 1.25 bar (0,125 MPA).

  8. Manual boiler venting is not necessary because the PRO 800 contains a professional Anti-Vacuum valve, which vents the boiler during the heat-up phase.

  9. The machine is now operational. To always have pre-heated cups, place them on the cup warming tray and start enjoying your coffee.

Machine in use with direct water connection

  1. Plug the machine into an electrical outlet. Turn the machine on by placing the metal switch into the upper position. The coffee boiler is now being heated and the green control lamp will come on. In order to turn on the steam boiler as well, please press the switch located under the drip tray to position ‘1’.
    The orange control lamp now lights up. Caution! Please make sure that the switch for the direct water connection is in position ‘1’ (image 2). The machine is now on. The boiler is filled with fresh water through the pressure in the hose.

  2. As soon as the boiler is filled with water, the PID-display (behind the drip tray) indicates the current water temperature (reg. item 3.3). Please wait until the boiler pressure gauge shows a value of about 1.0 bar (0,1 MPa) to 1.25 bar (0,125 MPa).

  3. A manual boiler venting is not necessary because the PRO 800 contains a professional Anti-Vacuum valve, which vents the boiler during the heat-up phase.

  4. The machine is now ready for use. Put the cups on the cup heater tray in order to preheat them and enjoy your coffee.

Before preparing the first coffee, please rinse the machine by extracting about 2-3 water tank fillings. Let the water run out of the hot water wand

**** When using a shut-off valve, please be sure to close the valve after having finished operations. Make sure that the machine is placed in a watertight area.

**** Portafilter, cup warming tray and drip tray are not suitable for the dish washer.

USE OF THE MACHINE

Preparation of the machine

The switched off machine is to be placed into operation as follows:

Water tank machine or machine in use with water tank

  1. Fill the water tank.
  2. Make sure there is enough water in the tank.
  3. Now turn the machine on (the metal switch in the upper position and the right switch behind the drip tray in position ‘0’).
  4. Please wait until the gauge indicates a value of 1.0 bar (0,1 MPA)– 1.25 bar (0,125 MPA) and the desired temperature is reached.
  5. In general, the machine will be heated up in about 40 minutes, depending on the ambient temperature.
  6. The machine is now ready for use.
  7. Put the portafilter into the brew group to heat it to an optimal temperature.

Caution danger of injury!
If the portafilter is not inserted properly, there is a great risk of injury.
Never remove the portafilter when there is remaining pressure in the piston of the brew group.

Caution!
Please use the included portafilters only. Otherwise, there is a danger of injury.

Machine in use with direct water connection

  1. Please make sure that there is always water pressure in the water connection line.
  2. Now turn the machine on (the metal switch in the upper position and the right switch behind the drip tray in position ‘1’).
  3. Wait until the gauge indicates a value of 1.0 bar (0.1 MPa)– 1.25 bar (0,125 MPa.
  4. In general, the machine will be heated up in about 40 minutes, depending on the ambient temperature.
  5. The machine is now ready to use.
  6. Put the portafilter into the brew group to heat it to an optimal temperature.

**** It is recommended to leave the portafilter in the brew group, keeping it warm for an optimum temperature for coffee dispension.

If you would like to plumb your machine, installation through a qualified service technician is required.

Please take the following steps to program the temperature:

1. Switch the machine on in order to activate the boiler. The temperature of the boiler is of no importance in programming. The heater is inactive during programming.|

2.  Press + and at the same time until ‘t’ appears on the display.|
3. Press + in order to progress to the submenu of ‘t’ and to change the temperature value. The nominal temperature value is displayed.|
4.   Quickly press to decrease + to increase the nominal temperature value.| |
5. After a short period, the setting will be adapted and saved.|  |

Programming the ECO mode

The ECO mode allows you set a timer that will automatically switch off the machine when not in use.
The factory setting is 90 min.

The ECO mode is activated as soon as the machine is switched on. While not in use, the countdown is in progress. Please note it is not visible on the PID.
If the machine switches off because of ECO mode, it can be switched on by pressing the PID key or by switching it off and on again.

3. Press the button until you reach “Eco”. Press + to enter the Eco menu.|
4.   Now you can carry out the programming in steps of 30 min by pressing + and . The adjustable time is possible from 0 to 600 min.|
5. After a short period, the setting will be adapted and saved.|

****The counter for the ECO mode is reset when the boiler refills, e.g. after 1 – 2 brews of coffee or hot water.

Programming the Temperature Mode “o”
You can also set whether the temperature value is displayed in °C or °F.

To adjust this setting, proceed as follows:

1.    Press + and at the same time and “t1” will appear on the display.|

2. Press the button until you reach “o” Press + to enter the Eco menu..|
3. Now you can choose between C for Celsius and F for Fahrenheit by pressing . This will set.|
4. After a short period, the setting will be adapted and saved.|

Preparing coffee

Caution!
Please use the included portafilters only. Otherwise there is a danger of injury.

Use the portafilter with 1 spout and the corresponding filter (1 cup) for the preparation of 1 cup. Use the portafilter with 2 spouts and the big filter (2 cups) for the preparation of 2 cups.
Make sure that the filter is firmly locked into the portafilter.
Fill the finely ground coffee into the corresponding filter (The marking inside the filter basket can help you find the right amount of coffee).

Compress the ground coffee with the tamper (ø 58 mm). Clamp the portafilter firmly into the brew group.

If the portafilter is not inserted properly, there is a great risk of injury. Never remove the portafilter when there is remaining pressure in the piston of the brew group, i.e.the lever is not yet in neutral position.

Place the cup under the spout of the portafilter (for the preparation of 2 cups, put 1 cup under each spout).

Caution danger of injury!
Leave enough distance between your face/body and the lever when brewing espresso.

By using some force to pull the lever down completely, hot water flows into the piston of the brew group.
Pre-infusion starts. Pull the lever up some and release it slowly. Now the lever slowly returns to its neutral position (image 5). The espresso flows from the portafilter.

The longer you have pulled the lever down, the more hot water flows into the piston of the brew group.

Simply remove the cups from under the spouts once the desired amount of espresso has been brewed.
The remaining espresso coming from the portafilter can flow into the drip tray.

It is not possible to interrupt the brewing process. Do not remove the portafilter until the lever is back in neutral position.

There will be a slight hissing sound when the portafilter is removed.

If the coffee is ground too fine and no espresso flows from the portafilter, please never unclamp the portafilter or use force to press back the lever handle. Always wait until the lever handle has reached the neutral position again.

Caution!
If the lever has not reached the neutral/vertical position when removing the portafilter, coffee and hot water will spout from the brew group. This may cause injury.

  • Only freshly ground coffee allows for an optimal coffee result. Therefore, use a professional coffee grinder. In our assortment you will find a compact coffee grinder.
  • We recommend to use a stainless steel tamper with a diameter of 58 mm for optimum tamping.

Dispensing of hot water

  1. Place a suitable container (with heat-insulated grip) underneath the hot water wand. Now you can dispense hot water (e.g. for tea). When dispensing large amounts of water, it is advisable to turn the machine off so that no cold water is pumped out of the fresh water tank.
  2. After having dispensed hot water, turn the machine back on. The boiler is automatically refilled with fresh water.

**** When the machine is switched off, more hot water can be dispensed.
However, one does not necessarily have to switch off the machine for dispensing hot water.

Caution!
Always keep the hot water nozzle underneath the surface of the water while heating in order to avoid splashing. Risk of injury

Dispensing of steam
The PRO 800 makes it possible to generate large amounts of steam in order to heat or froth beverages, e. g. milk or punch. Therefore, within a few seconds, you can prepare milk froth. Please pay attention to the instructions below. Do not bring the milk to a boil, otherwise frothing milk will not be possible.

  1. Important: In order to get the best results when frothing milk, open the steam lever for approx. 5. seconds to release the condensation water in the pipe. This also prevents milk from being sucked into the boiler.
  2. Immerse the steam nozzle (at the end of the steam dispenser) into the liquid.
  3. Re-open the steam handle/steam lever.
  4. Heat and/or froth the liquid.
  5. After frothing or heating, release the steam into the drip tray to keep the holes of the steam nozzle clean.

You can purchase the following steam tips from your dealer:

Risk of injury
Always keep the steam nozzle underneath the surface of the liquid while heating or frothing in order to avoid splashing.

Important
After every application, clean the steam nozzle and the steam dispenser with a nonabrasive, damp cloth; This removes possible liquid residues.

Avoid skin contact with the steam dispenser while cleaning!

CLEANING AND MAINTENANCE

A regular and accurate care is very important for the performance, the longevity and the safety of your machine.

Caution!
Always switch off the machine (power switch in lower position), disconnect the power cord and let the machine cool down to room temperature (for at least 30 minutes) before cleaning.

General cleaning

Daily cleaning:
Portafilter, filters, water tank, drip tray require daily cleaning. Clean with warm water and/or with a food safe detergent.
Clean the shower screen and the group gasket in the lower part of the group and remove visible dirt without disassembling the parts.

Cleaning as necessary:
Clean the steam and hot water valve after every use.
Clean the body when the machine is switched off and cold.

**** Use a soft, damp cloth for cleaning.
Never use abrasive or chloric detergents!

Empty the water drip tray regularly and do not wait until it is full.

Brew group cleaning

Please clean the cold brew group with a damp cloth and a cleaning brush.

Caution!
Never clean the brew group by using a blind filter.

Caution!
Clean the brew group only when cold.

The steam nozzle is blocked

Clean the holes of the steam nozzle carefully with a needle or with a paper clip.
For this purpose, the steam nozzle may be unscrewed as well.

Important
Do not lose the small gasket situated between the steam nozzle and the thread!

Afterwards replace the steam nozzle.

Packing

The Pro 800 is delivered in a special carton and protected by a plastic cover and foam.

Keep packaging out of the reach of children!

Keep packaging and packing material for possibile transport! Do not throw it away!

  • Transport the machine only upright, if possible on a pallet.
  • Do not tilt or turn the machine over.
  • Do not stack more than three units on top of each other.
  • Do not place other heavy items on the packing.

TROUBLESHOOTING

Change the grind

If the machine will not be used for a long period of time, it is recommended to

.. clean the brew group (see instructions on page 29). Afterwards, please do not clamp the portafilter back into the group.

..to empty the boilers. Turn the switch of the operational machine to position off. Open the hot water valve and the boiler water is now discharged by the remaining pressure through the hot water release. Close the hot water valve after the water has been released. The coffee boiler is emptied out via the brew group.
Activate the brew group lever and release the water into the drip tray. Please make sure some water remains in the coffee boiler. Start-up of the machine is the same as initial start-up (item 5.1).

How to froth milk like a “Barista”

  • If possible, use cold, fresh milk with a fat content of approx. 1.5 % or 3 %. Even homogenized milk is suitable – if you prefer.

  • Use a frothing container (made of metal) with a minimum volume of 0.5 litres. The size of the container should not be too wide. A narrow and high container is perfect.

  • Open the steam valve for approx. 5 seconds to release the condensation water and to create dry steam.

  • Fill 1/3 of the frothing container with milk and place it under the steam nozzle. The nozzle should be immersed in the middle of the frothing container, just below the surface.

  • Slowly open the steam handle or the steam lever valve. Steam pervades the milk.

  • Keep the frothing container still.

  • After a few seconds you will notice a light suction in the milk jug. Proper frothing begins. Move the milk jug downwards while the milk level increases. The steam nozzle must be kept under the surface of the frothed milk.

  • Attention: When the desired amount of milk froth is reached, immerse the entire steam nozzle in the frothing container for a short time and close the steam handle or the steam lever valve.
    **** Milk proteins “froth” with a temperature up to 77° C.
    Once this temperature is exceeded, the milk does not froth any further.

  • Advice: When milk frothing is finished, just shake the frothing container a little bit in order to make the milk bubbles ascend to the surface and to get a compact milk froth. After frothing the milk, release the steam into the drip tray to avoid blockage of the steam nozzle
