Congratulations on your SCANPAN Black Iron cookware purchase.
Favoured by professional chefs around the world for generations, Black Iron pans have superior frying abilities when it comes to achieving a crispy and delicious crust. There is no better material than Black Iron to achieve the “Maillard0 reaction” where the surface of the meat caramelizes while retaining all moisture within to create the optimal texture and flavour. The goal with our Black Iron pan is to build up a natural nonstick layer over time without removing it with aggressive dishwashing liquids. Made from pure iron this pan has been pre seasoned from the factory for good rust protection, and to initiate the nonstick layer process.
Your Black Iron pan will continue to improve over time – the more you use it, the better the cooking results!
BEFORE FIRST USE
IMPORTANT: BEFORE FIRST USE
- Wash the pan in boiling hot water with a brush. DO NOT USE dishwashing liquid. Dry the pan carefully.
- Add a few teaspoons of vegetable oil (rapeseed, canola, grapeseed or similar) to the pan and spread with a paper towel.
- Heat until the pan starts to smoke (seasoning), let it smoke for a few minutes. Make sure to have good ventilation.
- Put the pan aside to let it cool off enough to wipe off the excess oil with paper towel. The pan has now been “re-seasoned” to create a natural nonstick surface.
- Wash the pan again in hot water only. DO NOT USE dishwashing liquid.
- Dry the pan thoroughly and store.
HOW TO USE
Add cooking oil or butter to the pan and heat until the pan becomes hot. Be aware that heating time is very fast on induction cooktops compared to other pans. Please allow the food to form a crisp surface before you turn in the pan. Reduce the heat when the desired crispy surface has been achieved.
USER TIP
- To achieve an enhanced flavour and crisp surface, let your food come to room temperature before cooking.
- The pan is not suitable for oil/fat free cooking – oil or fat is required to prevent the food sticking to the pan.
AFTER USE
IMPORTANT
- Do not soak the pan or place in the dishwasher.
- Simply wash the pan in hot water ONLY and rub the surface with a stiff brush or sponge without dishwashing liquid (not a metal sponge).
- Dry the pan thoroughly before it is stowed away.
IF RUST FORMS ON PAN
Simply rub off as much as possible with a rough sponge, wash off in hot water and let it dry completely. Then add oil to the pan and season until it starts to smoke. Wipe off the excess oil after cooling down to create a new natural nonstick surface. Your pan is as good as new again.
IF A THICK LAYER OF CARBON (BURNED FOOD RESIDUE) BUILDS UP ON PAN
When dry you can rub the pan with sea salt and a sponge to remove the carbon build-up. After thorough rubbing, wash the pan in hot water (no dishwashing liquid) and season again with oil to prevent rust and re-establish the natural nonstick surface.

- DO NOT OVERHEAT OR USE THE BOOSTER FUNCTION ON INDUCTION HOBS.
- IF THE STEEL HANDLE BECOMES HOT – PLEASE USE HOT POT HOLDER/GLOVE OR SIMILAR.
