SAFETY
- This Oven can be used by children aged 8 years and above and persons with reducedphysical, sensory, or mental capabilities or lack of experience and knowledge if they have been given supervision or instruction concerning the use of the Oven in a safe way and understand the hazards involved.
- Do not let children play with the Oven.
- Keep all packaging away from children and dispose of it appropriately.
- Keep children and pets away from the Oven when
- it operates or when it cools down. Accessible parts are hot.
- Children shall not carry out cleaning and user maintenance of the Oven without supervision.
- Children aged 3 years and under must be kept away from the Oven when it is in operation at all times.
GENERAL SAFETY WARNINGS
- The Oven and its accessible parts become hot during use. Care should be taken to avoid touching heating elements. Keep children less than 8 years of age away from the oven unless continuously supervised.
- Always use oven gloves to remove or put in accessories or ovenware.
- Always unplug the oven before maintenance to avoid the possibility of electric shock.
- Do not use a steam cleaner to clean the Oven.

- Only use the food probe included with this Oven.
INSTALLATION

ELECTRICAL CONNECTION
- The Oven must be plugged into a grounded outlet.
- Plug directly into a wall outlet.
- Do not use multi-plug adapters and/or extension cables.
- The Oven should not share a circuit with other major appliances, such as a refrigerator or toaster oven, that might be running at the same time as the Oven.
USAGE
- This is a cooking appliance. Parts and accessories will be hot when in use. Use oven gloves and trivets to protect hands and surfaces from burns. Handle hot items carefully.
- The Oven is for household use only.
- Do not change the specification of the Oven.
- Do not leave children alone or unattended in the area while the Oven is in use.
- Make sure that the ventilation openings are not blocked. The area around the vents will be hot during and after use.
- Stand to the side and be careful when you open the door while the Oven is in operation. Hot air and steam can be released. If using ingredients containing alcohol, be especially careful as the vapors are flammable.
- Do not apply pressure or rest items on the open door
- Do not use the Oven as a work surface or as a storage surface.
- Do not put flammable products or items that are wet with flammable products in, near or on the Oven.
- To prevent damage or discoloration to the steel:
- do not put aluminum foil directly on the bottom of the Oven.
- do not keep moist dishes and food in the Oven after you finish cooking.
- be careful when you remove or install the accessories.
- Discoloration of the steel has no effect on the performance of the Oven.
- Use a deep pan for moist cakes to prevent overflow. Fruit juices cause stains that can be permanent.
- The Oven is for cooking purposes only. It must not be used for other purposes such as room heating.
- Always cook with the oven door closed.
- Do not position the oven behind a furniture panel (e.g. a door) as heat and moisture can build up during operation that could cause subsequent damage to the Oven, housing unit, or floor.
STEAM COOKING
- Even when cooking without steam, steam may emerge from the exhaust outlet between the tanks and door.
- Released steam can cause burns. Stand to the side and be careful when you open the door when the steam function is activated or aftersteam cooking. Keep bare hands and face away.
- Do not use the Oven close to cabinetry. Excessive steam can cause damage to furniture and cabinetry.
MAINTENANCE
- Before maintenance, unplug the Oven and disconnect the plug from the power outlet.
- Make sure the Oven is cold. There is a risk that the glass panels may break if cleaned while hot.
- If the door glass panels become damaged or break, contact support immediately.
- Clean the Oven regularly to prevent deterioration of the surface material.
- Do not clean with any abrasive cleaning materials or agents, or with metal objects.
- If you use an oven spray, follow the safety instructions on the packaging.

GET STARTED
- The Oven is a countertop appliance. When finding a place for your Oven, ensure it has a minimum of 2 inches (5cm) of space on all sides and 4 inches (10cm) of space above the oven and there is an outlet close by.
- Remove all tape and packaging from your oven before first use.
- Attach the drip tray with the bowl side facing up under the door. It should click into place.
- There are two water tanks. The fresh water tank (upper), and the waste water tank (lower). Both water tanks may be removed by pushing the tank toward the back of the oven until you trigger the click-in/click-out mechanism. The tanks will pop out of the oven case and can slide out freely
- Clean the upper tank before first use. Do not fill beyond the MAX water line. Return the water tank to the Oven and click into place.
- The lower tank will catch any excess moisture that is not exhausted. It is also used during the descale process.
It is recommended you use distilled water to minimize scale buildup and
maintain the correct operating function.
During initial setup you will be prompted to complete heating element
preparation. Make sure the Oven is situated in a well-ventilated area. Some
vapor and odors are normal during the first cycle.
Clean the Oven and the accessories before first use.
- The Anova Precision™ Oven 2.0 requires a WiFi connection to receive software updates. An active subscription is required to access the latest guides, cooking modes, camera functionality, and recipes and to track your cook history on your oven.
- Follow the instructions on the screen and in the app to set up your Oven.
- To download the Anova Oven app and subscribe, please scan the QR code.
- NOTE: Wi-Fi connection, app, and subscription are not required to use the oven. However, some functions may not be available with manual use.
COOKING MODES
Each cook mode has been developed to provide simple and clear options to get cooking quickly. Below is a detailed list of each mode, its options, and tips on when/how to use it.
FEATURES
GUIDED COOKING
The guides section is a perfect place to get started and learn about the ideal
methods for cooking your favorite ingredients. With a growing list of options,
you’ll be able to explore everything from how to cook a perfect roast chicken
to steaming crisp-tender vegetables, making golden brown toast, and more.
CAMERA AND FOOD RECOGNITION
The oven’s high-definition camera has multiple functions, including food
recognition, to provide the best possible cooking experience. With a growing
list of items the oven can identify, you will be able to get cooking
immediately.
- To use the camera for cooking, simply insert your prepped and seasoned food into the oven. The camera will recognize the food and suggest the best ways to cook it using the optimal oven settings. Select your desired doneness (if applicable) and hit start. No need to heat the oven first.
ADDITIONAL CAMERA FEATURES
- A timelapse of your cook is automatically generated after a cook is finished. Save this as part of your own recipe or share it with your friends and family.
- Keep your oven up to date for access to the latest features.
NOTE: For best results, wipe the camera enclosure after each use.
COOK HISTORY
You have access to your full cook history right on the oven. You can recall
previously prepared recipes, guides, and manual cooks whenever you need them.
PERSONALIZED EXPERIENCE
You can edit the order of the home screen to match your preferences and most
used cooking modes. Simply scroll through the screen and tap the “edit order”
button. Set your preferred volume, brightness, temperature unit (Fahrenheit or
Celsius), and oven light functionality in settings.
USING THE FOOD PROBE THERMOMETER
- The food probe gives a live reading of the core temperature of the food, and in order to give the most accurate result, it is important to insert it correctly. The temperature sensor is located in the tip of the food probe, so this section of the probe should be inserted into the center of the food. The food probe measures core temperature up to 212°F (100°C).
- For boneless roasts and smaller items like steak, chicken breast, and fish, lay the probe on top of the food to find the depth to which you need to insert it in order to reach the center of the thickest area. Once you have this, use your fingers to mark the location on the probe and insert it into the food from the side, through and into the thickest section. For bone-in roasts, use the same insertion technique, but be sure to avoid touching the bone with the probe.
- For whole poultry like chicken, turkey, and duck, insert the food probe into the thickest part of one of the breasts using the same technique outlined above.
CONVERTING RECIPES IN CUSTOM MODE
The Anova Precision Oven’s Custom Mode offers the ability to control each and
every setting. This can be useful if you’re converting your favorite recipes
to the Precision Oven, but there are lots of components to think about. No
matter the settings, you’ll want to monitor your food closely the first time
you adapt a recipe so that you do not overcook the food.
Here are some good places to start.
SOUS VIDE
If you’re adapting a traditional oven recipe to the Precision Oven, don’t
worry about sous vide mode. Simply press the Sous Vide icon to turn it OFF. If
you’re converting a sous vide recipe, we recommend using the Sous Vide or Dry
Sous Vide Cooking Modes.
HEATING ELEMENTS AND RACK PLACEMENTS
The Precision Oven defaults to the rear heating element for all manual cooks;
this is a good heating element to start with when you’re converting recipes.
If you find that you’d like more browning on the top of your food, add the top
heating element the next time you cook. And if you are noticing that your food
isn’t brown enough on the bottom, switch to either top+bottom or rear+bottom
heating elements. We recommend using the 3rd oven rack placement for most
foods. Move your food closer to or further away from the heating elements as
needed to increase or decrease browning.
OVEN TEMPERATURE, CONVECTION, AND STEAM

The Precision Oven allows you to add steam and/or the convection fan to your cooks, and both of these elements increase the efficiency of the cooking process. If you add the convection fan, first try decreasing the oven temperature by 25°F (14°C) and then start checking for doneness 5 to 10 minutes sooner than you normally would. The convection fan will default to high; we recommend leaving it at this setting unless you notice that the fan is drying out the food or causing a delicate food, such as a souffle, to deflate.

You can further increase efficiency by cooking with steam. Like convection heat, steam speeds up heat transfer and can also decrease cooking time. We recommend starting with a relatively small amount of steam (10 to 50%). When adding steam to a non-sous vide cook, you can think about the percentage as the continuous steam output; 100% steam will be the maximum output of steam possible for the entire cook, while lower percentages will be fractions of that output. You can also use the oven to prepare foods that are traditionally steamed, such as artichokes, bao, or rice. We recommend using the Steam Cooking Mode for these dishes. Steamed foods do best when the air and steam are allowed to circulate on all sides. If you have a perforated pan, use

it. For larger items, such as artichokes, you can steam directly on an oven rack. If you don’t have a perforated pan and are steaming smaller or more fragile items, you can instead place the food on a wire rack and set that directly on the oven rack. Placing
a sheet pan on the lowest oven rack can help catch drips and make the oven easier to clean, but it is not necessary. Rice works best if it is steamed in a thin layer. Use a sheet pan or large baking dish. -
For bread recipes, a multi-stage cook can replicate a professional oven by using the Steam Bake Cooking Mode to start the baking process and improve oven spring. Afterwards, use the Convection Bake Cooking Mode to brown and finish baking the bread. Proofing can be incorporated

into a recipe program in the app by creating a three-stage cook, starting with the Proof Cooking Mode.

If you don’t add convection or steam, you can keep the times and temps the same as your traditional recipe; however, due to the higher level of precision control and smaller cavity size, we recommend checking 5 to 10 minutes earlier than the recipe suggests.
FOOD PROBE
If you’re cooking protein, you can utilize the food probe to ensure precision.
If you’re using a relatively high oven temperature, you won’t get the same
edge-to-edge even doneness as with Sous Vide Mode, but you will know exactly
when the protein has reached its perfect doneness. You can even use the probe
to monitor doneness with some baked goods, although it will be difficult to
insert securely in batter-based recipes.

CARE AND CLEANING
NOTES ON CLEANING
- Make sure the Oven is completely cool before cleaning.
- Clean the front of the Oven using a soft cloth with warm water and a mild cleaning agent.
- To clean metal surfaces, use a stainless steel cleaner.
- In case of scale build-up on the bottom of the interior, use a few drops of distilled vinegar mixed with warm water and a soft sponge to clean.
- Clean the Oven interior after each use. Fat accumulation or other food remains may result in a fire.
- Clean stubborn stains with an oven cleaner.
- Do not use abrasive sponges or aggressive detergents. They can cause damage to the stainless-steel parts.
- The top heating element can be rotated down for easier cleaning. Locate the clip in the center of the heating element and gently pull it forward to unhook. Rotate the element down. Once cleaned, rotate the element back up and press it into place until you hear a “snap” sound.
- The bottom heating element can also be rotated up for easy cleaning. Once cleaned, rotate the element back down until it is in contact with the bottom of the oven.
ACCESSORIES
- Clean the food probe with a sponge, warm water, and dish soap. Do not submerge the probe in water or put it in the dishwasher.
- Clean the included pan and wire racks in the dishwasher or by hand. Do not use abrasive cleaning agents, scrubbers, or sharp-edged objects. These can cause damage to the stainless steel.
- Clean all accessories after each use and let them dry.
- Check and empty the waste water tank and drip tray before and after each cook to ensure it does not overflow.
WATER TANKS
- Both water tanks may be removed by pushing the tank toward the back of the oven until you trigger the click-in/click-out mechanism. The tanks will pop out of the oven case and slide out freely for cleaning and filling.
- Remove the lid of the water tanks by lifting them directly up. DO NOT lift from one end or the other.
- Gently wash the water tanks and lids with a soft cloth or non-abrasive sponge, warm water, and dish soap.
- Rinse and let dry.
DO NOT USE ABRASIVE SPONGES. DO NOT PUT WATER TANKS INSIDE A DISHWASHER.
- Replace the lid and slide the tank back into the appropriate channel on the left side of the oven. Fill with distilled water using the fill hole. Push until the click-in mechanism locks it in place.
- Slide the waste water tank back into its channel and push until the click-in mechanism locks in place.
DESCALING
When the steam generator operates, there is a gradual accumulation and deposit
of limestone scale inside the boiler because of calcium contents in the water.
This can have a negative effect on the performance of the boiler, as well as
the food quality. Using distilled water slows down this process, but it will
still happen. To prevent scale build up, you will need to periodically descale
the oven. You can purchase descaling liquid on the Anova website or use any
generic descaling liquid of your choice.
The Oven will prompt you to descale the oven after 30 hours of steam usage.
You can also run the descale process at any time from the settings. The user
interface will guide you through the procedure. The duration of the complete
procedure is about 40 minutes.

or more should be maintained between the antenna of this device and persons
